  • International student arrivals take a dive under Trump

    The number of international student arrivals in the U.S. dropped by nearly a fifth at the onset of this academic year, according to federal data, the latest sign of a hit to colleges’ foreign student enrollment as the Trump administration has ratcheted up scrutiny of their visas.

    International visitors arriving in the U.S. on student visas declined 19% in August compared with the same month in 2024, according to the preliminary data released by the National Travel and Tourism Office. The numbers also declined in June and July, but August is the summer month that typically sees the most international student arrivals — 313,138 this year.

    As the federal government has clamped down on student visitors, industry groups have warned of international enrollment declines that threaten school budgets and American colleges’ standing in the world. Although the extent of the change remains to be seen, the new data suggest a turnaround in international enrollment that had been rebounding in the U.S. from a decline worsened by the COVID-19 pandemic.

    About 1.1 million international students were in the United States last year — a source of key revenue for tuition-driven colleges. International students are not eligible for federal financial aid, and many pay full tuition.

    The picture in California

    Many California campuses, including the University of California system, have not yet released data on fall enrollment but prepared for potential hurdles in attracting internationals.

    For fall 2025 admissions — not enrollment — UC said its nine undergraduate campuses had offered seats to 3,263 more first-year international students, an increase of 17% over last year, according to data reported over the summer. UC also admitted 100,947 first-year California students, up more than 7% from last year,

    UC said it increased international admits because of “rising uncertainty of their likelihood of enrollment.” It noted that the share of accepted internationals who choose to enroll is generally “substantially lower” than that of California residents and that the cost of being a non-Californian at UC has gone up. Last year, the UC Board of Regents approved a 10% increase of the “nonresident” tuition fee from $34,200 to $37,602.

    At USC, the California campus that typically attracts the largest share of internationals in the state, there were also concerns over a potential dip in foreign student enrollment.

    The campus saw a small decline in overall international enrollment, from 12,374 last academic year to 11,959 this fall. Chinese and Indian students made up more than half of the total foreign population, matching trends statewide.

    But USC also grew its first-year international community, according to university data about this fall’s new undergraduate class.

    Of the 3,759 new first-year students enrolled this fall, about 21%, or 789, are internationals. Last year, about 17% of the 3,489 first-years — 593 — were in the U.S. on visas.

    California usually attracts the largest international college community of any state. In 2024, in addition to USC, the biggest draws were UC Berkeley, which enrolled 12,441 students; UC San Diego, 10,467 students; and UCLA, 10,446 students, according to data from the Institute of International Education. STEM fields — science, technology, engineering and math — were the most popular.

    Visa challenges and travel bans blocked some students

    Nationally, many students who had plans to study in the U.S. could not enter the country because of difficulty lining up visas. In late May, the State Department paused the scheduling of visa interviews for foreign students, which resumed three weeks later with new rules for vetting visa applicants’ social media accounts.

    The timing of the pause had “maximum possible impact” for visa issuances for the fall semester, said Clay Harmon, executive director of the Assn. of International Enrollment Management, a nonprofit membership association.

    A travel ban and other restrictions for 19 countries that the Trump administration announced in June created even more uncertainty for some students. Most of the countries included in the ban were located in Africa, Asia and the Middle East.

    The federal data on international dips show those regions experienced the largest declines in international student arrivals this August, with drops of 33% from Africa, 17% from the Middle East and 24% from Asia — including a 45% decrease from India, the country that sends the most students to the U.S.

    The data include new as well as returning students, but some who were already in the U.S. avoided traveling outside the country this summer for fear of problems reentering.

    Students have concerns about the political climate, research funding and cost

    Some international students and their families have been wary of the Trump administration’s wider crackdown on immigration. In the spring, the federal government stripped thousands of international students of their legal status, causing panic before the Trump administration reversed course. Trump also has called for colleges to reduce their dependence on foreign students and cap international enrollment.

    Syed Tamim Ahmad, a senior at UCLA who grew up in Dubai, said he was considering applying to medical school in the U.S. before last spring, when sudden student visa cancellations and government suspensions of research funding to Harvard and other elite campuses began to intensify.

    “When I was a freshman, it seemed that out of every country the U.S. provided the most opportunities in terms of access to research funding and resources,” said Ahmad, whose major is physiological science. “But by my senior year, a lot of these pull factors became push factors. Funding was cut down, affecting labs, and there is fear among international students about what they put on social media and what they put online. That sense of having freedom of speech in the U.S. isn’t the same.”

    Ahmad is now planning to enroll at medical school in Australia.

    “There is a similar feeling among many students — that if they are going to graduate school or continuing their studies they should go outside the U.S.,” said Ahmad, who previously served in UCLA’s undergraduate student government as an international representative. “But it’s not everyone. There are also still many people who believe that there are good opportunities for them in the United States.”

    Zeynep Bowlus, a higher education consultant in Istanbul, said interest in U.S. universities among the families she works with had been declining over the last few years largely because of financial reasons and skepticism about the value of an American degree. Policy changes in the U.S. are adding to their concerns, she said.

    “I try not to make it too dramatic, but at the same time, I tell them the reality of what’s going on and the potential hurdles that they may face,” Bowlus said.

    Institutions in other countries have seized the opportunity to attract students who might be cooling on the U.S. Growing numbers of Chinese students have opted to stay in Asia, and international applications to universities in the United Kingdom have surged.

    Elisabeth Marksteiner, a higher education consultant in Cambridge, England, said she will encourage families looking at American universities to approach the admissions process with more caution. A student visa has never been guaranteed, but it is especially important now for families to have a backup plan, she said.

    “I think the presumption is that it’s all going to carry on as it was in the past,” Marksteiner said. “My presumption is, it isn’t.”

    How To Freeze Chili And Reheat Later:
    • COOL: make sure the chili is completely cool before freezing. Never place hot or very warm items in the freezer (or fridge!) as it can thaw and negatively affect the nearby food.
    • PORTION: when cool, divide chili into portions. Whether it’s a single serving, two or four, portion the cooled chili into either freezer safe bags or air-tight containers. I prefer using freezer safe bags and removing as much air as possible, this helps with storing.
    • FLATTEN: once portioned, lay flat on a rimmed baking sheet and freeze for a few hours. Like in this post.
    • STORE: stack the flat frozen chili portions vertically or horizontally saving so much freezer space. Store chili in the freezer for up to 6 months.
    • REHEAT: I prefer to thaw frozen chili overnight in the fridge. However you can soak in a sink of lukewarm water for 20 to 30 minutes – flip every so often and change out the water at least once or twice. You can also defrost in the microwave until thawed. Lastly, add thawed chili to saucepan or dutch oven and heat until thoroughly heated throughout.

    FOR THE CHILI:

    • 2 teaspoons olive oil
    • 1 medium yellow onion, diced
    • 3 cloves fresh garlic, minced
    • 2 pounds lean ground turkey, or sub with ground chicken or lean ground beef
    • 2 teaspoons chili powder
    • 2 teaspoons ground chipotle powder
    • 2 teaspoons kosher salt, more or less to taste
    • teaspoon ground cumin
    • 1/2 teaspoon dried oregano
    • 3 (15 ounce) cans great northern beans or navy beans, rinsed and drained
    • 2 (15 ounce) cans tomato sauce

    FOR SERVING (optional):

    • cilantro, chopped
    • plain nonfat greek yogurt or sour cream
    • grated extra sharp white cheddar cheese
    • lime wedges
    • tortilla chips
    • Add oil to a deep sided pan or Dutch oven and preheat over medium heat.

    • Add in onion, garlic and a pinch of salt, and sauté for 8-10 minutes or until soft.

    • Next add the ground turkey, use a wooden spatula to break up into small crumbles. Cook until no longer pink.

    • Measure and add in chili powder, chipotle powder, salt, cumin and oregano. Stir and cook for 1 minute.

    • Add in the beans, tomato sauce and roughly 1/2 cup of water.Note: I like to add the water to the empty cans and swirl it around to catch and pick up any leftover sauce.
    • Stir, cover and simmer on low heat for 30 minutes.

    • Spoon chili into bowls and top with desired toppings.

  • Jack-o-Planterns: How to Make Pumpkin Planters

    This is a fun Halloween project for gardeners! It’s silly and quirky, and it puts a smile on everyone’s face. Turn your Jack-o-Lantern into a Jack-o-PLANTern this year for a fun garden therapy project using these simple DIY instructions.

    I love decorating with pumpkins. I get giddy when I start to see them available at the farmer’s markets and grocery store. I applaud those who even go through the effort of growing one themselves to carve and decorate with later.

    These jack-o-planterns are a fun gardeners take on the classic jack-o-lantern. You can use up the last of the plants remaining from your summer and fall planters, or get some on discount from the garden centre.

    This quick project is also fun to do with the kiddos. Let me show you!

    How to Make a Jack-o-Plantern

    Making your own is a really simple project. Heading out to a garden centre will be the most time consuming and, might I add, dangerous. You will have to show some restraint if you don’t want to come home with a carload of colourful grasses, kale, and other fall beauties.

    Materials

    • Pumpkin
    • Soil
    • Grasses, cabbage, sedum, & ornamental kale
    • Marker
    • Knife

    For a budget-friendly option, upcycle plants from your summer planters.

    Make It!

    Cut the top off your pumpkin to make a hole in the top. If it is fairly empty, then you don’t need to spend a bunch of time scooping it out. I removed the seeds and roasted them and left the rest of the junk in there. It will all compost together in the end anyhow.

    Use you marker to draw a face on the best side of the pumpkin and use the knife to carve out the holes.

    Don’t worry about cleaning your pumpkin guts out completely.

    Now add some soil to the bottom of the pumpkin. You can use a container mix soil, although I found that my plants had quite a bit of container soil in them and I didn’t really need to add much more in the way of peat moss or perlite.

    Contrary to typical container planting instructions, you really want to pack the soil down at the bottom to create some firm areas where the plants can sit. These planters will not last long enough for the roots to struggle and will have lots of moisture and organic matter from the pumpkin itself.

    I also don’t think drainage holes are necessary but add them if you choose.

    Now for the fun part (it is even more fun than carving a jack-o-lantern)! Plant some ‘hair’ with grasses…

    Fill soil around the roots of the plants (remove the plastic pots) and pack it in through the eyes and mouth. Leave space for sedum and ornamental kale as eyes and teeth.

    Use succulents as “teeth”

    I tried swapping out the kale and sedum in different jack-o-lantern eyes until I got the look that I liked.

    Set your pumpkin out in the cool fall air and water periodically. After Halloween, remove the plants and make a pretty fall planter or use them to pretty up the garden. Compost the whole pumpkin and the soil and you will be well on your way to a greener garden next year.

    How long do pumpkin planters last before they begin to rot?

    It depends entirely on the weather conditions. The cooler the pumpkin, the longer it will last. If possible, keep it from sitting in the sun. If it’s warm, your pumpkin may last only a few days. Cooler temperatures and it could last a couple of weeks.

    How can I make my pumpkin planter last longer?

    The most important aspect is picking a good pumpkin. Avoid any with soft spots or visible damage or browning.

    Sun will accelerate decomposition, while rain will promote rot. Snow can help preserve the pumpkin if it sticks around, but freezing and then thawing will end up with a pumpkin puddle. Your best bet is to place it in a shady, covered area, and wait for the cool weather to kick in.

    I have found that those tips and hacks like adding petroleum jelly or bleach actually don’t work, and means you can’t compost your pumpkin after. Read more about that here.

    Where to see the fall leaves in Upstate South Carolina? Blue Wall Preserve in Landrum, SC is one of the top options! You’ll find beautiful mountain views, reflective ponds, and even a waterfall depending on how far you decide to hike. Read on for everything you need to know from local mom, Sarah Burnett!

    A Local Favorite for Fall Color

    Looking for a low-stress way to see the fall leaves without driving all the way to the North Carolina mountains? Blue Wall Preserve in Landrum, South Carolina might be your new favorite fall day trip. Just a short drive from Greenville and Spartanburg, this 575-acre nature preserve is completely free and offers mountain views, reflective ponds, and a waterfall!

    This protected area is part of a larger 22,000-acre conservation effort in the Southern Blue Ridge Escarpment, an beautiful area recognized for its dramatic elevation changes and biodiversity. The Audubon Society designated Blue Wall Preserve as an Important Bird Area—over 100 bird species have been seen there! Keep your eyes on the trail as you walk, and you have a decent chance of spotting some unique animal tracks…and lots of dog tracks!

    Choose Your Own Adventure

    The Blue Wall Preserve is an ideal hiking destination in part because you can hike different routes depending on the challenge you’re wanting. And the best news? One of the best views is available on the easiest part of the trail!

    EASY: First Pond Trail

    If you want the best view with the easiest hike, then I recommend just tackling what I call the First Pond Trail. When you park in the gravel lot off Pennell Road, just follow the paved road down the hill past the gate. As you approach the first bridge over Vaughn’s Creek, the path will turn to gravel.

    The distance from the parking lot to the first pond in Blue Wall Preserve is a little less than a mile. You’ll find some moderate inclines along the way, but they are pretty manageable as long as you’re not carrying much. I did recently complete this trail while pushing my kids in a stroller wagon (which I do NOT recommend!) and that was a lot more challenging. Even with several stops to catch my breath, it only took us about an hour to reach the pond and return to the parking lot.

    At the far point in this trail, you’ll be rewarded with a stunning view of three mountaintops over a large, reflective pond. It is truly beautiful at any time of year, but this view is hands-down one of the most beautiful views in all of Upstate South Carolina when the fall foliage reaches peak color. The best vantage point will be right where you first find the pond, but you can check out a couple more if you follow the fork in the path to your left. This stretch of the trail dead-ends at the other end of the pond.

    MODERATE: Waterfall Loop Trail (Twin Ponds Trail)

    If you follow the fork in the path to your right, you’ll start up the more challenging Waterfall Loop Trail, also called the Twin Ponds Trail on some maps. If you follow the complete loop out and back to the parking lot, you will have hiked about 3.5 miles. Hiking without my kids (and stopping for the occasional pictures), this route takes me about an hour and half.

    The Waterfall Loop Trail narrows significantly as you go along, sometimes only wide enough for one person at a time to hike comfortably. The ground is more natural and uneven, with a lot of roots and some muddy stretches along the way. It will take you up to the second pond in Blue Wall Preserve and all the way around it, before bringing you back to the fork in the trail at the first pond.

    About halfway through the Waterfall Loop hike, on the far side of the second pond, you’ll find a sign for Lanny’s Cascade. Also known as the Blue Wall Waterfall, this pretty sight is just a few feet off the trail and makes an excellent picnic spot! I recommend bringing a picnic blanket, but as long as the ground’s not wet, you might also enjoy just sitting on the rocks near the base of the waterfall.

    DIFFICULT: Blue Wall Passage

    If you’re really up for a challenge, then you can hike the full 6.5-mile route through the Blue Wall Preserve to Vaughn’s Gap. This is known as the Blue Wall Passage of the Palmetto Trail.

    You’ll see your first sign for Vaughn’s gap as soon as you reach the second pond. You can follow the fork to your left to head straight to it, but I personally recommend following the Waterfall Loop down the fork to your right. Both ways will take you down the length of the pond before splitting off towards Vaughn’s gap, but following the trail to the right will lead you past the waterfall.

    Once you’ve traversed the length of the pond, you’ll see a second sign for Vaughn’s Gap. This is where the Blue Wall Passage separates from the Waterfall Loop Trail, and it will take you into tougher terrain and elevation gains.

    What to Know Before You Go

    No Cell Service: It’s important for hikers to note that cell service is virtually nonexistent in the Blue Wall Preserve. I managed to get one bar at the top of Pennell Road, but it took a lot of walking around to find it. I highly recommend downloading any maps you want on your phone before you go. You may also want to text a family member or friend where you are hiking and how long you expect to be gone when you are at least a few minutes out from the preserve. Once you get close, there is no guarantee that you’ll find a signal.

    Limited Parking: The parking lot for Blue Wall Preserve is very small, and this is a popular local hike. When I’ve visited right when the preserve opens at 7am, I have usually been the only one in the parking lot, especially in the cooler months when the sun rises later. When I’ve visited around 9am, there have typically been several cars already there. By 11am, even on a weekday, the parking lot is usually full. I recommend getting there as early as you can, and try to carpool if you’re hiking with a group.

    Trail Safety: This might go without saying, but these trails are going to take you through secluded woods, near mountain drop-offs, and across multiple water features. I definitely recommend the buddy safety so you’re not out there hiking alone, and you’ll want to wear good shoes, bring a water bottle, and consider bug spray or even bear spray. Be vigilant on the trail, and keep a close eye on any children with you.

    Hiking with Kids: If you’re hiking with children, I recommend a chest or backpack carrier for little ones and letting school-aged kids walk along with you. I did push a stroller wagon on the First Pond Trail once, so it’s possible, but I don’t think I’ll be doing that again and don’t recommend it for anyone else. My preschooler probably could have handled hiking the First Pond Trail, but I would be concerned about the drop-offs along the path, especially as we crossed a couple bridges over the water. Talk to your kids about trail safety, the importance of staying close and listening, and what to do in different emergency situations before hiking with them.

    Blue Wall Preserve Policies: The preserve is open 7 am to 7 pm. Pets are welcome, but they must be on a leash. No horseback riding, biking, motorized vehicles, smoking, or camping is allowed in the preserve. Fishing is allowed in the twin ponds with proper permits. There are no restrooms on-site, and all visitors are expected to follow Leave No Trace principles.

    The Rare Steak Championship takes over at Post Houston, 401 Franklin, on Wednesday, October 23. Steak enthusiasts can join over 25 of Houston’s top steakhouses and chefs for an evening of unlimited steak sampling, creative cocktails, live music and spirited competition. Doors open at 5:30 p.m. and tickets start at $145.31.

    Trill Burgers and ChòpnBlọk mark the final cycle of ChòpnBlọk’s Celebration Circuit honoring its one-year anniversary of its Montrose flagship with a special takeover.     Winter mulching of annual crops is primarily done to keep the ground warm and prevent it from freezing for as long as possible, thus prolonging the harvest season for as long as possible.

    Depending on your climate, crops, and thickness of mulch, sometimes this process can even allow crops to be harvested through the winter.

    Mulch annual crops in the fall before the ground freezes. 

    Crops such as carrots, parsnips, turnips, beets, kohlrabi, and kale can often last well into the winter with extra layers of insulation to keep soil from freezing.

    In the harsher climates of Zones 1 to 3, crops may need additional protection such as floating row covers, hoop houses, or cold frames to survive.

    How to Mulch

    To prepare annual crops for an extended harvest, cover plants with a one- to two-foot thick layer of straw, leaves, or other organic material before the ground freezes.

    Topping the whole thing off with a row cover, old bed sheet, or garden blanket will help hold it all in place, preventing material from blowing away during winter storms.

    You can secure the cover with rocks, logs, or garden staples. Also remember to mark your beds with tall stakes, since you may have trouble finding them again under feet of snow!

    Tip: Crops like kale and collard greens can be protected by surrounding plants with stakes wrapped in burlap and stuffing the space between with leaves or straw for insulation.

    Some crops, such as garlic and certain varieties of onions are planted in the fall for a spring or summer harvest.

    Cover these beds with a thick layer of leaves or straw to protect bulbs through the winter.

    In spring, move leaves to the side to allow foliage to poke through and reach the sunlight more quickly.

    Fallow Beds

    Unplanted fallow beds can be covered over with organic material anytime during the fall.

    This will protect bare soil, helping the soil to retain moisture, reduce erosion, and build up nutrients.

    So when you go to plant again in spring, the soil will be nutrient rich, healthy, and moist!

    Lasagna mulching is a great technique for protecting fallow beds where you are planning to grow nutrient loving annual crops in the spring, or for anywhere you want to improve the soil.

    To build a lasagna bed, simply stack four or more layers of organic materials.

    Each layer should be a few inches thick. Try to alternate layers of greens and browns material just like you would in a compost bin:

    Greens (nitrogen rich material): Aged manure, compost, garden waste, grass clippings

    Browns (carbon rich material): Leaves, straw, hay, sawdust, wood shavings

    Use any combination of ingredients you have on hand.

Everything about the twists and turns of life in Rosewood keeps us on our toes. From the endless “A” reveals to the beyond stellar music that moves the show along to fashion choices that truly shaped our high school closets, this show has everything. Plus, it features the best “mean girl” in a TV show of all time with Alison DiLaurentis, and a theme song we would recognize anywhere.

    Gilmore Girls

    Gilmore Girls is the ultimate comfort show. Everything about the world of Stars Hollow makes us want to wrap up in a blanket with a cup of coffee and binge-watch. This show is as feel-good as it gets. Even in moments where it may get emotional, it is generally a low-stakes show. You can watch Lorelai and Rory and escape into their world for the entirety of an episode.

    Only Murders In The Building

    We aren’t sure if it’s the “Knives Out as a TV show vibes” or if it’s the fact that Martin Short and Steve Martin on camera automatically make us feel warm and fuzzy inside, but Only Murders in the Building definitely puts us in the perfect mood for this time of year. Our fellow Crime Junkie Selena Gomez as Mabel is also, of course, our current fall fashion icon.

    The Haunting Of Hill House

    If you’re looking for something that plays into the spookier side of the fall season, The Haunting of Hill House is clearly the way to go! This show is expertly written and features some of our favorite acting that has graced our TV Screens, specifically with Victoria Pedretti. You will become addicted after the first episode, and we would be surprised if you didn’t binge the whole show in a day or two.

    Wednesday

    To finish out this list, we had to give flowers to this modern take on a universally beloved character, Wednesday. Wednesday Addams has been a pop cultural mainstay since the 60s, and with the help of the incredibly talented Jenna Ortega and an industry titan in the form of Tim Burton, this show carries that legacy beautifully.

  • My Homemade Pumpkin Bread Recipe Is Way Better than Starbucks’

    Place 2 cups granulated sugar, 1 (15-ounce) can pumpkin purée, 1/2 cup vegetable or canola oil, and 3 large eggs in a large bowl and whisk until smooth and combined. Add 1 tablespoon pumpkin pie spice, 1 1/2 teaspoons baking powder, 3/4 teaspoon baking soda, and 1/2 teaspoon kosher salt, and whisk to combine. Add 2 1/4 cups all-purpose flour and fold it in with a rubber spatula until just combined. Pour the batter into the prepared pan and spread into an even layer. Sprinkle with 1/4 cup roasted pumpkin seeds, then gently press them into the batter to ensure they stick.
