    It’s the start of Thanksgiving week, the time when home cooks across America suddenly recognize the daunting task ahead.

    More than 90% of people in the U.S. celebrate the food-centric holiday and more than 1 in 4 attend meals that include more than 10 other people, according to the Pew Research Center.

    Under that kind of pressure, what host wouldn’t want the best tools to make sure the holiday dinner goes off without a hitch?

    With that in mind, we asked national food safety experts which kitchen devices and aids are essential to ensure a safe and tasty Thanksgiving meal.

    Here are their top four suggestions for aids that can make or break your holiday dinner, plus two bonus tips for after the meal:

    Our panel of experts unanimously agreed that an instant-read digital thermometer is vital to making sure roast turkey and other dishes reach 165 degrees Fahrenheit (74 degrees Celsius) to eliminate the risk of food poisoning from germs like salmonella and Campylobacter.

    “This is non-negotiable,” said Darin Detwiler, a Northeastern University food safety expert. “A reliable thermometer ensures you’re not guessing, because guessing is not a food safety strategy.”


    Color-coded cutting boards

    In the hustle of a holiday kitchen, the risk of cross-contamination is real. That’s when germs from one food, such as raw turkey, may be spread to other foods, such as fresh vegetables or fruits.

    It’s best to use dedicated cutting boards for each type of food, and color-coding — red for meat, yellow for poultry, green for veggies — can help, said Barbara Kowalcyk, director of the Institute for Food Safety and Nutrition Security at George Washington University.

    “I try not to use wooden cutting boards,” said Kowalcyk, noting that they can retain bacteria that thrive and grow to large enough quantities to cause illness.

    As an emergency medicine doctor who has stitched up many Thanksgiving injuries, Dr. Tony Cirillo urges home cooks to make sure their kitchen knives are sharp.

    A sharp knife cuts cleanly, while a dull knife requires more pressure that can cause dangerous slips, said Cirillo, a spokesperson for the American College of Emergency Physicians.

    Pulling a hot turkey out of the oven is tricky, especially if the pan you cook it in is flimsy, Cirillo added. Use a sturdy metal roasting pan or, in a pinch, stack two foil roasting pans together for strength.

    “I’m a big fan of double-panning,” Cirillo said. “Dropping the turkey is generally not good on Thanksgiving.”

    Just as important as getting food to the table is making sure it doesn’t sit out too long, said Don Schaffner, a food safety expert at Rutgers University.

    Use a cooking timer or clock alarm to make sure to pack away leftovers within two hours to prevent bacterial growth that can cause illness.

    And when you’re storing those leftovers, make sure to put them in shallow containers, Schaffner said.

    Measure using a ruler — or even the short side of a credit card — to make sure that dense foods like stuffing and sweet potatoes reach a depth of no more than 2 inches (5 centimeters) to allow for quick and complete cooling in the refrigerator.

  • 4.2 million Floridians to hit the road this Thanksgiving

    SANFORD, Fla. — Millions across the country are gearing up for the busiest travel period of the year.

    This year, AAA is projecting that there will be 4.2 million Floridians traveling by car for Thanksgiving, which is up by 2% compared to last year.

    Florida Highway Patrol officials say this is because people are changing their plans following recent airline disruptions caused by the government shutdown.

    As officials brace for the upcoming travel period, safety remains top of mind.

    FDOT officials are reminding drivers to avoid any distractions and to be prepared.

    “Buckle up every time you get behind the wheel. Make sure that you are avoiding distractions. You don’t need to look at your text messages while you’re driving. You can wait until you stop, until you pull over at the next rest area,” FDOT District 5 Public Information Director Cindi Lane said.

    Lane said distracted driving attributed to 43% of last year’s road fatalities.

    In the event of a roadside emergency, whether it’s an accident or a flat-tire, drivers are being reminded to call the *FHP or *347 number for roadside assistance.

    Road Ranger Program Manager Garrett Popovich warned, “Be prepared. You’re going to encounter traffic. There’s no way around that. Plan your trip. Make sure your vehicle has plenty of fuel — your tires are properly inflated.”

    Meanwhile, the Florida Highway Patrol will increase the number of state troopers on the roads to keep an eye out for reckless drivers.

    “The number one cause of crashes and fatalities here in Florida is reckless driving, so that’s making sure that you put that GPS in before you start driving. Give yourself plenty of time before you hit the road so that you have that extra buffer of time so you’re not tailgating, you’re not speeding,” FHP Public Affairs Officer Lt. Tara Crescenzi explained.

    Crescenzi also urges drivers to call *347 if they see reckless driving on the road.

    AAA expects the busiest road travel days to be Tuesday, Wednesday, and the Sunday after Thanksgiving.

  • The shutdown is over. Flights have resumed. Thanksgiving travelers might wonder: What now?

    The turbulence caused by the longest government shutdown on record may still be fresh on travelers’ minds this Thanksgiving, but experts say preparing for the usual holiday crush of winter weather, heavy traffic and crowded airports can help ease those jitters.

    “I think the shutdown at this point is history for air travel. The airlines understand this time of year so well. They know exactly what they need to do,” said Sheldon H. Jacobson, an airport and airlines operations expert. “The real challenge is making sure travelers can help themselves.”

    Here’s a guide to navigating the busiest travel week of the year:

    Travel forecasts point to packed airports and roads.

    A week after lifting the unprecedented flight restrictions it placed on commercial airlines during the shutdown, the Federal Aviation Administration is preparing for its busiest Thanksgiving week in 15 years, with more than 360,000 flights scheduled between Monday and next Tuesday. That’s more than 17.8 million people who will be screened by the Transportation Security Administration.

    AAA projects 1.3 million more travelers will be on the roads than last year, pushing the total number of people traveling by car to at least 73 million.

    You can’t control the weather, but you can control how prepared you are if a winter storm hits. If your flight is canceled or delayed, will you drive instead or postpone or cancel your trip? Knowing your options ahead of time can reduce stress if a storm leaves you stranded.

    James Belanger, vice president of meteorology at the Weather Company, recommends checking the forecast frequently while planning your trip.

    The Weather Channel offers a Thanksgiving weekly forecast highlighting major airports and highways that could be affected by bad weather — including snow, ice and rain — along with a free online tool that shows how the weather might impact your travel route.

    On Tuesday, the FAA’s busiest day with more than 52,000 flights scheduled, forecasters say rain could cause problems in the Pacific Northwest and for much of the eastern U.S. Airports in Atlanta, Chicago, New York, Philadelphia, Seattle and Washington, D.C., could be impacted, according to the Weather Channel.

    Jacobson, whose research contributed to the design of TSA PreCheck, recommends starting your packing by unpacking.

    Check every pocket in case TSA-restricted items, like full-sized bottles, were left behind from a previous trip. This simple scan can help you get through security faster, especially when airports are crowded.

    If you’re traveling with gifts, Jacobson suggests wrapping them at your destination because TSA agents may need to open them.

    When deciding which clothes and shoes to pack, Belanger says to check the “feels like” temperature for a better sense of the weather, especially if you’re not used to the cold.

    And don’t forget a REAL ID is required to fly within the U.S., or you’ll need to bring another accepted form of ID, like a passport or military ID.

    People with iPhones can now also add their U.S. passport details to Apple Wallet, which can be scanned at participating airports if travelers don’t have a REAL ID. More than a dozen states already accept some form of a mobile ID at airport checkpoints, and travelers can go to the TSA website for more details.

    Whether driving is your top choice or backup plan, AAA spokesperson Aixa Diaz suggests checking your tires, car battery and fluids, then hitting the road with a full tank of gas as early as possible to avoid traffic. Last year, AAA said, it responded to nearly 600,000 emergency roadside assistance calls during the Thanksgiving travel period to help drivers stranded by dead batteries, flat tires and empty tanks.

    According to an analysis by Google Maps:

    — Traffic on Wednesday is expected to be 14% heavier than usual between 10 a.m. and 4 p.m., with peak traffic from 1 p.m. to 3 p.m.

    — On Thanksgiving Day, the roads will be busiest between noon and 3 p.m.

    — When it’s time to head home, avoid driving from 12 to 3 p.m. on Saturday and Sunday, when traffic is heaviest.

    “…is an informed passenger,” Jacobson likes to say.

    Download your airline’s app to track your flight status, and check it regularly as your travel date approaches. That way, if your flight is canceled the day before, you can quickly look for alternatives.

    Driving or flying, leave earlier than you think you need to. Knowing you won’t have to rush to your destination can help calm any nerves, whether it’s lingering anxiety from the shutdown or because you’re traveling with young kids or someone who needs extra help getting around.

    “These are some very simple things to think about, but they’re important things to think about,” Jacobson said.

    2. Cook the Pasta: In a large pot of salted water, cook the pasta until al dente.

  • Stores keep prices down in a tough year for turkeys. Other Thanksgiving foods may cost more

    CHELSEA, Mich. — Old Brick Farm, where Larry Doll raises chickens, turkeys and ducks, was fortunate this Thanksgiving season.

    Doll’s small farm west of Detroit had no cases of bird flu, despite an ongoing outbreak that killed more than 2 million U.S. turkeys in the last three months alone. He also avoided another disease, avian metapneumovirus, which causes turkeys to lay fewer eggs.

    “I try to keep the operation as clean as possible, and not bringing other animals in from other farms helps mitigate that risk as well,” said Doll, whose farm has been in his family for five generations.

    But Doll still saw the impact as those diseases shrank the U.S. turkey flock to a 40-year low this year. The hatchery where he gets his turkey chicks had fewer available this year. He plans to order another 100 hatchlings soon, even though they won’t arrive until July.

    “If you don’t get your order in early, you’re not going to get it,” he said.

    The shrinking population is expected to cause wholesale turkey prices to rise 44% this year, according to the U.S. Department of Agriculture. Despite the increase, many stores are offering discounted or even free turkeys to soften the potential blow to Thanksgiving meal budgets. But even if the bird is cheaper than last year, the ingredients to prepare the rest of the holiday feast may not be. Tariffs on imported steel, for example, have increased prices for canned goods.

    As of Nov. 17, a basket of 11 Thanksgiving staples — including a 10-pound frozen turkey, 10 Russet potatoes, a box of stuffing and cans of corn, green beans and cranberry sauce – cost $58.81, or 4.1% more than last year, according to Datasembly, a market research company that surveys weekly prices at 150,000 U.S. stores. That’s higher than the average price increase for food eaten at home, which rose 2.7% in September, according to the U.S. Bureau of Labor Statistics.

    Datasembly showed a 2% decline in the retail price of a 10-pound turkey as of Nov. 17. Pricing out Thanksgiving meals isn’t an exact science, and the firm’s tally differed from other estimates.

    The American Farm Bureau Federation, which uses volunteer shoppers in all 50 states to survey prices, reported that Thanksgiving dinner for 10 would cost $55.16 this year, or 5% less than last year. The Wells Fargo Agri-Food Institute, using NielsenIQ data from September, estimated that feeding 10 people on Thursday using store-brand products would cost $80 this year, which is 2% to 3% lower than last year’s estimate.

    Grocery chains are also offering deals to attract shoppers. Discount grocer Aldi is advertising a $40 meal for 10 with 21 items. Kroger said shoppers could feed 10 people for under $50 with its menu of store-brand products.

    Earlier this month, President Donald Trump touted Walmart’s Thanksgiving meal basket, which he said was 25% cheaper than last year. But that was because Walmart included a different assortment and fewer products overall this year.

    “We’re seeing some promotions being implemented in an effort to draw customers into the store,” David Ortega, a professor of food economics and policy at Michigan State University, said.

    That’s despite a sharp increase in wholesale turkey prices since August. In the second week of November, frozen 8-16 pound hens were averaging $1.77 per pound, up 81% from the same period last year, according to Mark Jordan, the executive director of Leap Market Analytics, which closely follows the poultry and livestock markets.

    Avian viruses are the main culprit. But another reason for turkey’s higher wholesale prices has been an increase in consumer demand as other meats have gotten more expensive, Jordan said. Beef prices were up 14% in September compared to last year, for example.

    “For a big chunk of the population, they look at steak cuts and say, ‘I can’t or I don’t want to pay $30 a pound,’” Jordan said.

    That’s the case for Paul Nadeau, a retired consultant from Austin, Texas, who plans to smoke a turkey this week. Nadeau said he usually smokes a brisket over Thanksgiving weekend, but the beef brisket he buys would now cost more than $100. Turkey prices are also up at his local H-E-B supermarket, he said, but not by as much.

    “I don’t know of anything that’s down in price since last year except for eggs,” Nadeau said.

    Trump’s tariffs on imported steel and aluminum are also raising prices. Farok Contractor, a distinguished professor of management and global business at the Rutgers Business School, said customers are paying 10 cents to 40 cents more per can when companies pass on the full cost of tariffs.

    Tariffs may be partly to blame for the increased cost of jellied cranberry sauce, which was up 38% from last year in Datasembly’s survey. But weather was also a factor. U.S. cranberry production is expected to be down 9% this year, hurt by drought conditions in Massachusetts, according to the U.S. Department of Agriculture.

    In Illinois, where most of the country’s canning pumpkins are grown, dry weather actually helped pumpkins avoid diseases that are more prevalent in wet conditions, said Raghela Scavuzzo, an associate director of food systems development at the Illinois Farm Bureau and the executive director of the Illinois Specialty Growers Association. Datasembly found that a 30-ounce can of pumpkin pie mix cost 5% less than last year.

    Back at Old Brick Farm, which has been in his family since 1864, Doll walked among his turkeys the week before Thanksgiving, patting their heads as they waddled between their warm barn and an open pasture. In a few days, he planned to deliver them to an Amish butcher.

    Doll sold all 92 turkeys he raised this year, with customers paying $6.50 per pound for what many tell him is the best turkey they’ve ever tasted. He enjoys a little profit, he said, and the good feeling of supplying a holiday meal.

    “I just love it, to think that, you know, not only are we providing them food, but the centerpiece of their Thanksgiving dinner,” he said.

  • The Shutdown Is Over. Flights Have Resumed. Thanksgiving Travelers Might Wonder: What Now?

    “I think the shutdown at this point is history for air travel. The airlines understand this time of year so well. They know exactly what they need to do,” said Sheldon H. Jacobson, an airport and airlines operations expert. “The real challenge is making sure travelers can help themselves.”

    Here’s a guide to navigating the busiest travel week of the year:

    Travel forecasts point to packed airports and roads.

    A week after lifting the unprecedented flight restrictions it placed on commercial airlines during the shutdown, the Federal Aviation Administration is preparing for its busiest Thanksgiving week in 15 years, with more than 360,000 flights scheduled between Monday and next Tuesday. That’s more than 17.8 million people who will be screened by the Transportation Security Administration.

    AAA projects 1.3 million more travelers will be on the roads than last year, pushing the total number of people traveling by car to at least 73 million.

    You can’t control the weather, but you can control how prepared you are if a winter storm hits. If your flight is canceled or delayed, will you drive instead or postpone or cancel your trip? Knowing your options ahead of time can reduce stress if a storm leaves you stranded.

    James Belanger, vice president of meteorology at the Weather Company, recommends checking the forecast frequently while planning your trip.

    The Weather Channel offers a Thanksgiving weekly forecast highlighting major airports and highways that could be affected by bad weather — including snow, ice and rain — along with a free online tool that shows how the weather might impact your travel route.

    On Tuesday, the FAA’s busiest day with more than 52,000 flights scheduled, forecasters say rain could cause problems in the Pacific Northwest and for much of the eastern U.S. Airports in Atlanta, Chicago, New York, Philadelphia, Seattle and Washington, D.C., could be impacted, according to the Weather Channel.


    What to pack (and what to skip)

    Jacobson, whose research contributed to the design of TSA PreCheck, recommends starting your packing by unpacking.

    Check every pocket in case TSA-restricted items, like full-sized bottles, were left behind from a previous trip. This simple scan can help you get through security faster, especially when airports are crowded.

    If you’re traveling with gifts, Jacobson suggests wrapping them at your destination because TSA agents may need to open them.

    When deciding which clothes and shoes to pack, Belanger says to check the “feels like” temperature for a better sense of the weather, especially if you’re not used to the cold.

    And don’t forget a REAL ID is required to fly within the U.S., or you’ll need to bring another accepted form of ID, like a passport or military ID.

    People with iPhones can now also add their U.S. passport details to Apple Wallet, which can be scanned at participating airports if travelers don’t have a REAL ID. More than a dozen states already accept some form of a mobile ID at airport checkpoints, and travelers can go to the TSA website for more details.

    Whether driving is your top choice or backup plan, AAA spokesperson Aixa Diaz suggests checking your tires, car battery and fluids, then hitting the road with a full tank of gas as early as possible to avoid traffic. Last year, AAA said, it responded to nearly 600,000 emergency roadside assistance calls during the Thanksgiving travel period to help drivers stranded by dead batteries, flat tires and empty tanks.

    According to an analysis by Google Maps:

    — Traffic on Wednesday is expected to be 14% heavier than usual between 10 a.m. and 4 p.m., with peak traffic from 1 p.m. to 3 p.m.

    — On Thanksgiving Day, the roads will be busiest between noon and 3 p.m.

    — When it’s time to head home, avoid driving from 12 to 3 p.m. on Saturday and Sunday, when traffic is heaviest.

    “…is an informed passenger,” Jacobson likes to say.

    Download your airline’s app to track your flight status, and check it regularly as your travel date approaches. That way, if your flight is canceled the day before, you can quickly look for alternatives.

    Driving or flying, leave earlier than you think you need to. Knowing you won’t have to rush to your destination can help calm any nerves, whether it’s lingering anxiety from the shutdown or because you’re traveling with young kids or someone who needs extra help getting around.

    “These are some very simple things to think about, but they’re important things to think about,” Jacobson said.

    Preheat your oven to 350℉ (180℃).

    • 3 cups leftover stuffing

  • Denver Rescue Mission preps 3,500 Thanksgiving meal boxes amid rising demand

    DENVER — Families across Colorado are preparing for Thanksgiving in their own ways, while the Denver Rescue Mission readies its 31st annual Banquet-in-a-Box event.

    “I make some decorations, like placemats,” said 10-year-old Caroline.

    Her mother, Alexxa Gagner, works for the Denver Rescue Mission.

    “We do all the traditional things: turkey stuffing, mashed potatoes,” Gagner said.

    In addition to their own family traditions, the folks at the Denver Rescue Mission also prep for thousands of other families in a giant parking lot, with cones and two trucks filled with frozen turkeys.

    “We will give away almost 3,500 Thanksgiving Banquets-in-a-box to families in need,” Denver Rescue Mission CEO Dennis Van Kampen said.

    The Denver Rescue Mission’s annual turkey drive helps supply the Mission’s event, which will be held on Monday.

    But there was something notably different this year.

    “It usually takes a few days to fill all the registrations. We were filled in a day and a half,” Van Kampen said.

    He said that really shows the need is greater than usual in the community.

    “We have had so many phone calls coming into our offices earlier than ever, about, ‘Can you help me? I can’t get enough food,” he said.

    It’s a need the Rescue Mission is prepared to meet.

    “So as long as we still have turkeys and boxes to give, we’ll keep giving them away,” Van Kampen said.

    While registration for this year’s Banquet-In-A-Box event is full, there will still be time for other families to pick up a turkey with all the trimmings.

    “We will have some left over for those people who come first-come, first-served,” Van Kampen said.

    As unsettled as November has been for so many Coloradans, volunteers said every family should be able to end the month on a high note: with their loved ones, around the table, filled with food.

    Those with vouchers should follow the directions on the registration and only arrive during their assigned time.

    For those who didn’t register and are hoping for help, they are welcome to come to the Empower Field at Mile High Parking Lot C between noon and 1 p.m. on Monday, while supplies last.

  • ‘Anything with raisins’: What not to bring to this week’s Thanksgiving feast – WTOP News

    In the lead-up to Thanksgiving, WTOP heard from folks in the D.C. region about what dishes will and won’t be making an appearance on their table.

    Every year, many folks are left momentarily stunned while trying to figure out what their contribution to the Thanksgiving table will be. But, for some, it’s more about what plates to avoid like the plague.

    For one Virginia resident hosting his very first Friendsgiving, a big no-go for the dinner table are dishes with dried grapes.

    “Anything with raisins, especially potato salads,” J.J., a native of South Africa, told WTOP’s Jimmy Alexander. “Don’t bring that to my house. Please, don’t.”

    For others, like St. Louis’ own Lauren O’Connor, any creations of the sweet potato variety are a bust.

    “Anything that has to do with the sweet potato,” she said. “The sweet potato casserole with the marshmallows on it, disgusting. I want it gone.”

    And then there’s the cranberry of it all.

    Regardless of whether it’s homemade or out of a can, Logan Takac, who was visiting the National Mall with her friends, said the sauce is “disgusting.”

    “Personally, please don’t bring any cranberry sauce. I think it’s disgusting,” she said. “Out of the can and it still has the, like, impression of the can on it. It’s a no. It’s a no. Get it away from me.”

    But, what about the turkey-ham divide? Is one meant for Thanksgiving and the other just for Christmas dinner?

    Ray Wallace, visiting D.C. from Fort Meyers, Florida, said his guests shouldn’t anticipate seeing a ham — boneless or otherwise — making an appearance for his family’s Thanksgiving spread.

    “I’m a turkey guy on Thanksgiving,” Wallace said. “Ham is on Christmas.”

    An outlook shared by the National Weather Service (NWS) shows what temperatures the U.S. can expect during Thanksgiving week.

    Why It Matters

    The map—for the November 26-30 period—offers a chance to plan ahead for the holiday week, with the American Automobile Association (AAA) projecting that nearly 82 million people will travel up to 50 miles from home from November 25 to December 1.

    The central U.S. may experience cooler-than-average temperatures during Thanksgiving week, while parts of the West and Florida are likely to run warmer than normal, the NWS said in a social media post on Saturday.

    “La Nina, the Madden-Julian Oscillation (MJO), and the potential for a rare November Sudden Stratospheric Warming event (you’re likely to have heard of this referred to as the “polar vortex“) may combine to drive winter-like conditions across much of the U.S. late November into early December,” the agency said.

    “What does this translate to in terms of temperatures next week? Below-normal temperatures are favored for the Central and Northern U.S., including northern parts of the Pacific Northwest, the Great Plains, parts of Texas, and the interior Mid-Atlantic,” said the NWS. “Below-normal temperatures may start as early as November 25, with spatial coverage and confidence increasing during the Nov 26-30 period,” it added.

    “The MJO is a tropical disturbance that propagates eastward around the global tropics with a cycle on the order of 30-60 days,” the National Oceanic and Atmospheric Administration (NOAA) explains.

    It affects rainfall, atmospheric circulation, and surface temperatures across the tropics and subtropics. While the MJO doesn’t cause El Nino or La Nina, NOAA notes that it can influence how quickly these events develop and how strong they become.

    As for La Nina, this is the cool phase of a natural, recurring climate cycle known as the El Nino-Southern Oscillation. The warm phase is El Nino.

    The Climate Prediction Center (CPC) previously said that La Nina conditions are expected to remain weak, thus less likely to result in the typical impacts, which during the winter months include drier conditions for more southern regions and wetter conditions for parts of the Midwest and Northwest.

    CPC meteorologist Scott Handel told Newsweek previously: “We are currently in a La Nina Advisory, and the increased precipitation that we have seen thus far this month across the Pacific Northwest and the dryness across the Lower and Middle Mississippi Valley, Southeast, and Mid-Atlantic are consistent (on average) with what has occurred during previous La Nina this time of year.

    “However, other factors, such as the Madden-Julian Oscillation, can and often do have a heavier influence. The MJO will likely usher in a large-scale pattern change, later this month and into December, including a potential significant cold air outbreak across the West and Northern Plains.”

    An uptown Minneapolis church put its money where its mouth was Saturday — or at least, where its communities’ mouth was.

    For the fifth year in a row, volunteers from Regents of Christ Assembly handed out more than 150 turkeys, complete with all the fixings, to community members in need.

    For the church of 100 or so people, it’s an extension of their mission.

    “Giving is an act of worship,” said Hannah Oliha Donaldson. “It’s an act of investing in our community. Of pouring back into our community.”

    The church, which also operates the Joy Community Food Shelf, says it sees the growing need for community support.

    “In the midst of the last few months – Target has fired a bunch of people. Amazon has fired a bunch of people. As we were preparing for doing the work this year, we knew the need would be great,” said Oliha Donaldson. “We are a community that is richly blessed. And as a result of that blessing, we believe we have a responsibility to pour out what is poured into us.”

    It may have felt like the recent rain would never end in Los Angeles, but the record-breaking precipitation in Southern California has failed to translate into a much-desired dumping of snow at ski resorts across the state.

    While Friday was originally set as the opening date of the Heavenly and Northstar ski resorts in the Lake Tahoe area, officials said mild weather and stubbornly insufficient flurries have delayed those plans.

    Vail Resorts, which owns both resorts, has yet to announce an updated opening date. But the forecast ahead does not look promising.

    “A dry forecast is in store for the next week through Thanksgiving and Black Friday,” Open Snow wrote in its Tahoe area forecast Friday. “We could see a change in the pattern the weekend of the 29th with colder air moving in and maybe some snow. Overall, through the long-range, there are no big storms showing up, but hopefully that changes as we go deeper into December.”

    Mammoth Mountain, California’s highest-elevation ski resort, was also recently forced to delay the start of its season.

    The Sierra Nevada resort had initially announced a Nov. 14 opening date, but pushed it off as an atmospheric river storm swept across the state. While forecasters hoped the low-pressure system would blanket the slopes in Mammoth, mountainside temperatures remained too warm for serious snow.

    Disappointed skiers and snowboarders took to social media to share videos of the muddy slopes.

    Fortunately, thanks to a moderate storm earlier this week and robust use of snow machines, Mammoth was able to open for the season Thursday with around one-third of its lifts running. Nevertheless, season snowfall totals remain below average.

    Other major Golden State ski resorts are eyeing late November and early December openings. Palisades Tahoe is scheduled to open on Wednesday, just in time for Thanksgiving. Kirkwood resort, located south of Lake Tahoe, is hoping to open on Dec. 5.

    Those seeking to hit the slopes closer to Los Angeles will have to have patience. Big Bear Mountain Resort in San Bernardino County has yet to set an opening date and currently has just 1 to 2 inches of snow on the ground.

    Climate change has made the art of predicting and managing snowfall at California’s ski resorts much more challenging.

    Recent years have been characterized by extreme boom and bust cycles, going from alarmingly low-snow winters in 2020 and 2021 to extreme accumulations in the 2022-23 season, when Mammoth Mountain received a record-breaking snowfall of more than 700 inches at its main lodge.

    “We’re going through this climate whiplash of extreme drought years to extreme wet years — there are just no average years anymore,” Doug Obegi, a senior attorney at the National Resources Defense Council, said in a statement on 2023’s record-breaking season. “And we’re seeing that we are not prepared for either of those extremes.”

    Overall, snow seasons are expected to trend warmer and drier. Researchers predict that from the 2050s to 2100, rising temperatures could push average snowlines 1,300 feet to 1,600 feet higher across the Sierra Nevada compared to a century earlier.

    And extreme snow years, while welcomed by snowsport enthusiasts, come with their own challenges.

    When snow falls in extreme storms as opposed to steadily over the course of the season, it increases the risk of avalanches and can force resorts to stop running lifts due to safety concerns. Then in the spring, deep snowpacks melt faster than normal, which can lead to dangerous flooding and even worsen the upcoming fire season.

  • Turkey safe to eat despite bird flu

    Turkeys are supposed to go “gobble-gobble,” not “Ah-CHOO!” 

    But bird flu is on the rise in the U.S. again. 

    The recent jump in cases might hike the price of your Thanksgiving, but it won’t make dinner unsafe. Cooking poultry to 165°F kills the virus. Plus, infected poultry is unlikely to appear in the food supply in the first place. 

    To ease your mind, here’s a quick flap through need-to-knows about bird flu ahead of the holiday week.

    What is bird flu?

    Bird flu, or avian influenza, is a naturally occurring disease among wild birds, including ducks and geese, that can also infect domesticated birds, such as chickens and turkeys.

    The U.S. has been battling flu outbreaks in commercial poultry flocks since 2022. After a summer lull, cases are rising again. Because avian flu spreads quickly and is untreatable in animals, if even one bird in a flock is infected, the entire flock is culled.

    The American Farm Bureau reported in October that since the beginning of the outbreak, 18.7 million turkeys were affected. Including chickens and other poultry, over 180 million birds across more than 1,800 flocks had been affected as of Nov. 20. 

    Bird flu raised wholesale turkey prices, retail price impact is unclear

    The outbreak is pushing wholesale turkey prices higher. The U.S. Department of Agriculture’s latest Weekly National Turkey Report (yes, that’s a thing) from Nov. 14 lists the cost of a whole frozen turkey as $1.77 a pound for an 8 to 16 pound bird. That’s up from 97¢ per pound during the same week last year. 

    It’s less clear how that affects retail prices. 

    The American Farm Bureau’s annual Thanksgiving dinner survey found the average retail price for a 16-lb turkey was down 16% percent from last year, at an average of $1.34 per pound. This price drop, despite rising wholesale costs, might be from grocery stores offering Thanksgiving deals to draw consumers in. Retailers often treat turkeys as a “loss leader,” which means companies accept losses on that item and make up the difference from customers’ purchases of other, higher-margin items.

    Purdue’s Center for Food Demand Analysis & Sustainability, on the other hand, estimates the price will be higher than last year at $2.05 per pound, a 25% increase. 

    Prices for a turkey can vary by size, quality, and the store where you buy it, so shop wisely. 

    Cooked turkey is safe to eat

    Unless you’re looking for an excuse to cancel, you can tell Aunt Marge turkey dinner is still on. 

    Cooking poultry and eggs to 165°F kills viruses, including bird flu. Assuming that your food is properly prepared and cooked, it’s safe to eat. This is also a reminder to thaw your turkey!

    You should follow safe cooking guidelines no matter what, but there are other safeguards in place to prevent bird flu from entering the food supply.

    Laws require that all meat and poultry sold commercially pass USDA safety inspection

    A USDA spokesperson told PolitiFact that inspectors are present at all federally regulated processing and slaughtering facilities. “Our inspectors verify that facilities maintain sanitary conditions, handle animals humanely, and that their food safety systems are working to prevent contamination with harmful bacteria like E. coli and Salmonella.”  

    The USDA’s Food Safety and Inspection Service also samples and tests products to make sure they meet safety standards. 

    Can humans get bird flu? 

    Yes, but it’s rare. Infections can happen when the bird flu virus enters a person’s eyes, nose or mouth, or is inhaled.

    But you can be infected only by an animal. There have been no cases of human-to-human transmission.

    People who work with livestock are most at risk of contracting the virus. Since 2024, the CDC has confirmed 71 human cases in the U.S., resulting in one death. The CDC says the public health risk is still low.

    Cows get bird flu, too 

    Since 2024, bird flu has also been detected in dairy cows and their milk. The USDA is monitoring the milk supply; the best way to stay safe is to drink pasteurized milk, not raw milk. 

    Pasteurization, which involves briefly heating milk to below boiling, kills bird flu and other viruses. Most grocery store milk and dairy products are pasteurized. 

    The USDA has found no evidence of the virus in the beef supply. Plus, a safety study the agency conducted found that even after injecting beef patties with high levels of the virus, cooking them to 145°F killed the virus.

    Prep The Pie Crust:

    Preheat oven to 350℉ (or 180℃).

    Roll the prepared and chilled pâte sucrée out and fit into a 9-inch pie pan. Trim excess dough, fold edges and crimp. Pop the pie shell into the freezer for 15 minutes. Remove, line with parchment, fill with pie weights and partially bake for 15 minutes. Remove from the oven and let cool, carefully removing the parchment paper and pie weights when it’s safe do so.

    Salted Maple Pie

    This Salted Maple Pie is luxurious and incredibly flavorful. In this custard pie, maple syrup, brown sugar and heavy cream are combined with butter, eggs and vanilla and is baked in a sweetened pie crust. The maple flavor really shines through and the flaky salt adds a pop of texture and contrast to the sweetness of the pie.

    • 1 recipe pâte sucrée , (sweet pie dough)
    • 8 tablespoons unsalted butter, melted
    • 1 cup grade B maple syrup, at room temperature
    • 3/4 cup packed light brown sugar
    • 1/4 cup fine ground yellow cornmeal
    • 1/4 heaping teaspoon kosher salt
    • 3 large eggs, at room temperature
    • 1 egg yolk, at room temperature
    • 3/4 cup heavy cream, at room temperature
    • teaspoons pure vanilla extract
    • egg wash, for pie crust
    • flaky salt, for serving
    • Preheat oven to 350℉ (or 180℃).

    • Roll the prepared and chilled pâte sucrée out and fit into a 9-inch pie pan. Trim excess dough, fold edges and crimp. Pop the pie shell into the freezer for 15 minutes. Remove, line with parchment paper, fill with pie weights and partially bake for 15 minutes. Remove and let cool, carefully removing the parchment paper and pie weights when it’s safe do so.

    MAKE THE FILLING:
