  • Airbnb says a third of its customer support is now handled by AI in the US and Canada | TechCrunch

    Airbnb says its custom-built AI agent is now handling roughly a third of its customer support issues in North America, and it’s preparing to roll out the feature globally. If successful, the company believes that in a year’s time, more than 30% of its total customer support tickets will be handled by AI voice and chat in all the languages where it also employs a human customer service agent.

    “We think this is going to be massive because not only does this reduce the cost base of Airbnb customer service, but the quality of service is going to be a huge step change,” CEO Brian Chesky said during the company’s fourth-quarter earnings call this week. This seems to suggest he believes the AI would do a better job than its human counterparts in resolving some issues.

    The company also touted its recent hire of CTO Ahmad Al-Dahle, poached from Meta for his AI expertise, and its plans to create an AI-native experience.

    With his guidance, Chesky said that Airbnb was poised to introduce an app that doesn’t just search for you, but one that “knows you.”

    “It will help guests plan their entire trip, help hosts better run their businesses, and help the company operate more efficiently at scale,” Chesky explained, adding that’s why Airbnb brought Al-Dahle on board.

    “Ahmad is one of the world’s leading AI experts. He spent 16 years at Apple, and most recently led the generative AI team at Meta that built the Llama models. He’s an expert at pairing massive technical scale with world-class design, which is exactly how we’re going to transform the Airbnb experience,” Chesky noted.

    Like other businesses poised for disruption by AI, Airbnb’s leadership is pushing the idea that it has a unique database and product that other AI chatbots can’t replicate.

    “A chatbot doesn’t have our 200 million verified identities or our 500 million proprietary reviews, and it can’t message the hosts, which 90% of our guests do,” Chesky told analysts during the earnings call. Instead, he pitched the idea of layering AI over the Airbnb experience, which he claimed would help to accelerate growth.

    The company forecast revenue growth would be in the “low double digits” this year, after pulling in $2.78 billion in the fourth quarter, above estimates of $2.72 billion. This quarter, it expects revenue of $2.59 billion to $2.63 billion, above Wall Street forecasts of $2.53 billion.

    Investors still wanted to know if AI platforms could be a risk in the long-term, assuming they moved into the short-term rentals market. Chesky, however, pushed back at that idea, saying that Airbnb isn’t just the consumer-facing app; it’s also the host app, the customer service, and the protections it offers, like insurance and user verifications.

    “We’ve built this over 18 years. We handle more than $100 billion in payments through the platform,” he said.

    Meanwhile, AI chatbots serve a function similar to search, in that they deliver top-of-funnel traffic, he noted. That traffic also converts at a higher rate than traffic from Google, Chesky pointed out, suggesting that the shift to AI would benefit Airbnb.

    The company is already using AI to power its search, with the feature now enabled for a “very small percentage” of Airbnb’s traffic, while it experiments with making its search more conversational. Later, the company plans to integrate sponsored listings within search.

    While Spotify this week told investors its best developers hadn’t written a single line of code since December, thanks to AI, Airbnb offered a more high-level metric on its own internal AI adoption. The company said that 80% of its engineers now use AI tools, and it’s working to get that to 100% soon.

  • Commentary: After a year of insults, raids, arrests and exile, a celebration of the California immigrant

    What comes next is a mystery, but I’d like to share a note of appreciation as 2025 fades into history.

    If you came to Greater Los Angeles from Mexico, by way of Calexico, Feliz Navidad.

    If you once lived in Syria, and settled in Hesperia, welcome.

    If you were born in what once was Bombay, but raised a family in L.A., happy new year.

    I’m spreading a bit of holiday cheer because for immigrants, on the whole, this has been a horrible year.

    Under federal orders in 2025, Los Angeles and other cities have been invaded and workplaces raided.

    Immigrants have been chased, protesters maced.

    Livelihoods have been aborted, loved ones deported.

    With all the put-downs and name-calling by the man at the top, you’d never guess his mother was an immigrant and his three wives have included two immigrants.

    President Trump referred to Somalis as garbage, and he wondered why the U.S. can’t bring in more people from Scandinavia and fewer from “filthy, dirty and disgusting” countries.

    Not to be outdone, Homeland Security chief Kristi Noem proposed a travel ban on countries that are “flooding our nation with killers, leeches and entitlement junkies.”

    The president’s shtick is to rail mostly against those who are in the country without legal standing and particularly those with criminal records. But his tone and language don’t always make such distinctions.

    The point is to divide, lay blame and raise suspicion, which is why legal residents — including Pasadena Mayor Victor Gordo — have told me they carry their passports at all times.

    In fact, thousands of people with legal status have been booted out of the country, and millions more are at risk of the same fate.

    In a more evolved political culture, it would be simpler to stipulate that there are costs and benefits to immigration, that it’s human nature to flee hardship in pursuit of better opportunities wherever they might be, and that it’s possible to enact laws that serve the needs of immigrants and the industries that rely on them.

    But 2025 was the year in which the nation was led in another direction, and it was the year in which it became ever more comforting and even liberating to call California home.

    The state is a deeply flawed enterprise, with its staggering gaps in wealth and income, its homelessness catastrophe, housing affordability crisis and racial divides. And California is not politically monolithic, no matter how blue. It’s got millions of Trump supporters, many of whom applauded the roundups.

    But there’s an understanding, even in largely conservative regions, that immigrants with papers and without are a crucial part of the muscle and brainpower that help drive the world’s fourth-largest economy.

    That’s why some of the state’s Republican lawmakers asked Trump to back off when he first sent masked posses on roundups, stifling the construction, agriculture and hospitality sectors of the economy.

    When the raids began, I called a gardener I had written about years ago after he was shot in the chest during a robbery attempt. He had insisted on leaving the hospital emergency room and going back to work immediately, with the bullet still embedded in his chest. A client had hired him to complete a landscaping job by Christmas, as a present to his wife, and the gardener was determined to deliver.

    When I checked in with the gardener in June, he told me he was lying low because even though he has a work permit, he didn’t feel safe because Trump had vowed to end temporary protected status for some immigrants.

    “People look Latino, and they get arrested,” he told me.

    He said his daughter, whom I’d met two decades ago when I delivered $2,000 donated to the family by readers, was going to demonstrate in his name. I met up with her at the “No Kings” rally in El Segundo, where she told me why she wanted to protest:

    “To show my face for those who can’t speak and to say we’re not all criminals, we’re all sticking together, we have each other’s backs,” she said.

    Mass deportations would rip a $275-million hole in the state’s economy, critically affecting agriculture and healthcare among other industries, according to a report from UC Merced and the Bay Area Council Economic Institute.

    “Deportations tend to raise unemployment among U.S.-born and documented workers through reduced consumption and disruptions in complementary occupations,” says a UCLA Anderson report.

    Californians understand these realities because they’re not hypothetical or theoretical — they’re a part of daily life and commerce. Nearly three-quarters of the state’s residents believe that immigrants benefit California “because of their hard work and job skills,” says the Public Policy Institute of California.

    I’m a California native whose grandparents were from Spain and Italy, but the state has changed dramatically in my lifetime, and I don’t think I ever really saw it clearly or understood it until I was asked in 2009 to address the freshman convocation at Cal State Northridge. The demographics were similar to today’s — more than half Latino, 1 in 5 white, 10% Asian and 5% Black. And roughly two-thirds were first-generation college students.

    I looked out on thousands of young people about to find their way and make their mark, and the students were flanked by a sprinkling of proud parents and grandparents, many of whose stories of sacrifice and yearning began in other countries.

    That is part of the lifeblood of the state’s culture, cuisine, commerce and sense of possibility, and those students are now our teachers, nurses, physicians, engineers, entrepreneurs and tech whizzes.

    If you left Taipei and settled in Monterey, said goodbye to Dubai and packed up for Ojai, traded Havana for Fontana or Morelia for Visalia, thank you.

    MANCHESTER-BY-THE-SEA — With the spirit of Christmas-by-the-Sea on its way, the Manchester-by-the-Sea Museum, 10 Union St., is hosting several holiday events this weekend and beyond.

    First up is an Open House and Children’s Art Workshop, both free, on Friday, Dec. 5, 3-8 p.m., during the town’s Holiday Stroll event.   • MediaWorld Accidentally Sold iPads for 15 Euros. Then It Asked for Them Back

    On November 8, an offer for loyalty card holders appeared on the website of MediaWorld, a European electronics retailer. The deal: an iPad Air for 15 euros (about $17) instead of the usual €879 (about $1,012). No catch, no strings attached. The proximity to Black Friday only made the offer more plausible. And so several consumers immediately purchased the product by choosing the “payment and pickup in store” opetion, on paper the safest to avoid unexpected problems.

    The process was seamless, even for those ordering online. According to the accounts of some users on Reddit, their order was accepted, and after about 40 minutes they received an email confirming the availability of the product.

    In the store, the €15 payment went through successfully and MediaWorld delivered the iPads as expected. The terms and conditions attached to the order make no mention of any clause regarding pricing errors or the possibility for the company to request subsequent additions.

    MediaWorld’s About-Face

    Eleven days later, however, MediaWorld sent a simple email—not a formal communication via certified mail—stating that the published price was “clearly incorrect.” The company then asked affected customers to choose between two solutions: Keep the iPad and pay the difference to match the price, but with a €150 discount, or return it and receive a refund of the €15 and a €20 discount voucher for their inconvenience.

    MediaWorld’s Response

    Following the incident, WIRED contacted MediaWorld for comment. “We confirm that, in a very short period of time, due to a clearly recognizable technical error caused by an extraordinary and unexpected glitch on our ecommerce platform, some products were mistakenly displayed at prices that, due to their clear and objective disconnect from the true market value and the correct promotional price, should never have been displayed. This was a manifest error, making it economically unsustainable and not representative of our commercial offering,” a MediaWorld spokesperson explains.

    Regarding the subsequent intervention to try to recover the products sold, the representative added: “By virtue of the provisions of the current regulations, we found it necessary to intervene, resorting to a legal principle aimed at preserving the contractual balance in the event of an error of this magnitude. Our approach was to prioritize the relationship with the customer and to offer solutions that went beyond the mere application of law. For this reason, we promptly contacted all affected buyers, proposing two alternatives.”

    The MediaWorld spokesperson also confirmed to WIRED the two solutions first highlighted by Reddit users. “We offer product retention: The customer has the option to keep the purchased item, paying the difference between the price paid and the correct promotional price. We have also offered a further discount on the amount to be paid. Or return the product: The customer can choose to return the item free of charge, receiving a full refund of the amount already paid. In this case too, we have offered a MediaWorld shopping voucher. We firmly believe that these proposals demonstrate our willingness to support customers and maintain transparency and fairness. We continue to work to improve our shopping experience and maximum protection for our consumers.”

    The Legal Issue: Is the Error Really Recognizable?

    On the web, many lawyers point out that Article 1428 of the Italian Civil Code allows a contract to be voided if the error is fundamental and recognizable. But the issue, according to consumer lawyer Massimiliano Dona, is more nuanced than it seems.

    “The premise is that the November 19 letter—in which MediaWorld demanded the return or purchase of the iPad at near-real price—is not a formal warning or formal notice, especially if sent by ordinary mail, as it is a proposal for a binary agreement. If the consumer ignores it, MediaWorld will evaluate whether to take formal action,” Dona says.

    “That’s why the key issue is whether, from a legal standpoint, MediaWorld’s claim is well founded or not. To void a contract, it is necessary to demonstrate the consumer’s awareness of abusing the seller’s error. But to have this proof, it is not enough to claim that the 98 percent discount makes the error obvious in the eyes of the customer.” Furthermore, Dona also points to the fact that “today prices are not as standard as they once were. Between limited-time offers, flash sales, promotions, and contests (offered mainly on social or in apps), everything is more variable, plus now we are in the midst of the Black Friday discount season. Given these elements, perhaps we can consider it reasonable that the consumer thought it was an advertising technique.”

    How Does MediaWorld Test Consumer Awareness?

    Dona also claims that there is no threshold beyond which the customer must necessarily notice the mistake: “There are other factors to consider. If the buyer is Mrs. Maria, who finds a deal and decides to take it, that’s one thing. If, on the other hand, it’s someone who buys five tablets and then immediately puts them back on sale, or even someone who resells electronics for a living, that’s another matter. In that case, the awareness of the mistake would be more obvious.”

    The decisive issue, he says, is the recognizability of the error: “From a legal point of view, everything revolves around the buyer’s ability to recognize that the price was incorrect. This is the real deciding factor, which must be contextualized both with respect to sales channel used by MediaWorld and the buyer’s professionalism.”

    For now, then, the picture remains an evolving one: a public offer completed without dispute, a U-turn that came days later via email, and a legal assessment that would revolve around whether the consumer was able to recognize the error.

  • Trump Takes Aim at State AI Laws in Draft Executive Order

    US President Donald Trump is considering signing an executive order that would seek to challenge state efforts to regulate artificial intelligence through lawsuits and the withholding federal funding, WIRED has learned.

    A draft of the order viewed by WIRED directs US Attorney General Pam Bondi to create an “AI Litigation Task Force,” whose purpose is to sue states in court for passing AI regulations that allegedly violate federal laws governing things like free speech and interstate commerce.

    Trump could sign the order, which is currently titled “Eliminating State Law Obstruction of National AI Policy,” as early as this week, according to four sources familiar with the matter. A White House spokesperson told WIRED that “discussion about potential executive orders is speculation.”

    The order says that the AI Litigation Task Force will work with several White House technology advisors, including the Special Advisor for AI and Crypto David Sacks, to determine which states are violating federal laws detailed in the order. It points to state regulations that “require AI models to alter their truthful outputs” or compel AI developers to “report information in a manner that would violate the First Amendment or any other provision of the Constitution,” according to the draft.

    The order specifically cites recently enacted AI safety laws in California and Colorado that require AI developers to publish transparency reports about how they train models, among other provisions. Big Tech trade groups, including Chamber of Progress—which is backed by Andreessen Horowitz, Google, and OpenAI—have vigorously lobbied against these efforts, which they describe as a “patchwork” approach to AI regulation that hampers innovation. These groups are lobbying instead for a light touch set of federal laws to guide AI progress.

    “If the President wants to win the AI race, the American people need to know that AI is safe and trustworthy,” says Cody Venzke, senior policy counsel at the American Civil Liberties Union. “This draft only undermines that trust.”

    The order comes as Silicon Valley has been upping the pressure on proponents of state AI regulations. For example, a super PAC funded by Andreessen Horowitz, OpenAI cofounder Greg Brockman, and Palantir cofounder Joe Lonsdale recently announced a campaign against New York Assembly member Alex Bores, the author of a state AI safety bill.

    House Republicans have also renewed their effort to pass a blanket moratorium on states introducing laws regulating AI after an earlier version of the measure failed.

  • I’ve Been Writing About Black Friday for 12 Years. Here’s My Advice

    Black Friday used to actually just be one day long. Shoppers would camp outside of stores, paper circulars in hand, eagerly awaiting the chance to bust down some doors and save a ton of cash. Over time, the sales event has grown. Now, the entire month of November is a hydra where the heads are “slashed prices” and the sword-wielding hero is an overwhelmed customer.

    Nearly every deal is available online, meaning you don’t need to leave the couch to participate. But all the marketing and chaos can get confusing. How can you tell if a deal is worth your time and money? When do sales start and end? Do you really need that gadget? I’m a Black Friday veteran who’s been shopping the sales since early childhood and writing about them since 2013, and I’m here to help.

    When Is Black Friday?

    In 2025, Black Friday falls on November 28. It’s followed by Cyber Monday on December 1, 2025. Most of the official sales start on Wednesday or Thanksgiving, though some of the best deals start on Friday, sometime in the early hours.

    I have been Black Friday shopping for over 20 years. My advice, if you’re on the hunt for killer deals, is to stay up late the day before Thanksgiving to check for online sales starting around midnight Eastern time on Wednesday, November 26. WIRED will also cover major sales later in the day on Thanksgiving. Early Black Friday deals are available now, as they usually are during the weeks leading up to the event.

    Can You Get Black Friday Deals Online?

    You can—and should. We exclusively cover online deals at WIRED because the majority of Black Friday deals are available on the web. The best deals often sell out quickly, so it’s a good idea to pay attention to your favorite store’s sale pages (and our coverage).

    Make a list of what you want to buy ahead of time—this can help you keep a clear head when it’s time to start shopping. You shouldn’t buy things just to buy them. Everyone’s on a tighter budget these days; sales will happen again. Take a deep breath and don’t get sucked into the frenzy.

    Which Retailers Will Have Black Friday Deals?

    Nearly all of them. There are obvious stores, like Amazon, Target, Walmart, and Best Buy, but chances are every retailer and brand will have some sort of sale, spanning deals on clothing, shoes, books, electric scooters, tech, health and beauty items, or fitness specialty goods, to name just a few categories. There might even be promotions going on at your favorite coffee shop or restaurant. When in doubt, visit a retailer’s website. Usually, Black Friday sales are highlighted proudly on the homepage.

    Is Black Friday Worth It?

    In a word: Usually. Most of the time, Black Friday deals are the best we see all year, and they set the precedent for what dictates a good price in the months that follow.

    However, some Black Friday deals aren’t all that great or are repetitive from year to year. For instance, you’ll predictably see low prices on some smart-home tech, like the Amazon Echo Dot or Google Nest Mini. In previous years, those speakers have sold for around $20 or so, every single November. This year, they’ll probably dip to the same price. Even if a price is technically a historic low, consider whether you truly need another cheap little speaker before you place your order—especially considering that these deals tend to pop up repeatedly throughout the year.

    Discounts aren’t jaw-dropping if the products go on sale every few months, and unfortunately, we have seen more and more repeat sales as the shopping holidays start to blur into one big ball of madness. But the deals are still worth it if you are in the market for a specific item and want to save some cash. Just keep in mind that price research is important, and if you miss out on a deal, don’t fret; there’s a strong chance it will come around again at some point in the future.

    How Much Money Can I Save on Black Friday?

    That depends on what you’re shopping for. There are so many deals up for grabs in so many categories that it’s impossible to list them all here.

    For example, TVs are usually a great purchase to make around Black Friday, if you can find the right model. They are at their cheapest this time of year, especially if you don’t want to wait until Super Bowl season. In the same vein, you’ll be able to save on clothes, toys, and home goods, but those deals may not be as enticing when you look at specific dollar amounts. It’s safe to assume that everything is less expensive than usual, though.

  • Supreme Court urged to block California laws requiring companies to disclose climate impacts

    The U.S. Chamber of Commerce and other business groups urged the Supreme Court on Friday to block new California laws that will require thousands of companies to disclose their emissions and their impacts on climate change.

    One of the laws is due to take effect on Jan. 1, and the emergency appeal asks the court to put it on hold temporarily.

    Their lawyers argue the measures violate the 1st Amendment because the state would be forcing companies to speak on its preferred topic.

    “In less than eight weeks, California will compel thousands of companies across the nation to speak on the deeply controversial topic of climate change,” they said in an appeal that also spoke for the California Chamber of Commerce and the Los Angeles County Business Federation.

    They say the two new laws would require companies to disclose the “climate-related risks” they foresee and how their operations and emissions contribute to climate change.

    “Both laws are part of California’s open campaign to force companies into the public debate on climate issues and pressure them to alter their behavior,” they said. Their aim, according to their sponsors, is to “make sure that the public actually knows who’s green and who isn’t.”

    One law, Senate Bill 261, will require several thousand companies that do business in California to assess their “climate-related financial risk” and how they may reduce that risk. A second measure, SB 253, which applies to larger companies, requires them to assess and disclose their emissions and how their operations could affect the climate.

    The appeal argues these laws amount to unconstitutional compelled speech.

    “No state may violate 1st Amendment rights to set climate policy for the Nation. Compelled-speech laws are presumptively unconstitutional — especially where, as here, they dictate a value-laden script on a controversial subject such as climate change,” they argue.

    Officials with the California Air Resources Board, whose chair Lauren Sanchez was named as defendant, said the agency does not comment on pending litigation.

    The first-in-the-nation carbon disclosure laws were widely celebrated by environmental advocates at the time of their passage, with the nonprofit California Environmental Voters describing them as a “game-changer not just for our state but for the entire world.”

    Sen. Scott Wiener (D-San Francisco), who authored SB 253, said at the time that the laws were “a simple but powerful tool in the fight to tackle climate change.”

    “When corporations are transparent about the full scope of their emissions, they have the tools and incentives to tackle them,” Wiener said.

    Michael Gerrard, a climate-change legal expert at Columbia University, described Friday’s motion as “the latest example of businesses and conservatives weaponizing the 1st Amendment.” He pointed to the Citizens United case, which said businesses have a free speech right to unlimited campaign contributions, as another example.

    “Exxon tried and failed to use this argument in 2022 when it attempted to block an investigation by the Massachusetts Attorney General into whether it misled consumers and investors about the risks of climate change,” he said in an email. “Exxon claimed this investigation violated its First Amendment rights; the Massachusetts courts rejected this attempt.”

    Under the Biden administration, the Securities and Exchange Commission adopted similar climate-change disclosure rules. Companies would have been required to disclose the impact of climate change on their business and what they intended to do to mitigate the risk.

    But the Chamber of Commerce sued and won a lower court ruling that blocked those rules.

    And in March, Trump appointees said the SEC would retreat and not defend the “costly and unnecessarily intrusive climate-change disclosure rules.”

    The emergency appeal challenging California’s disclosure laws was filed by Washington attorney Eugene Scalia, a son of the late Justice Antonin Scalia.

    The companies have tried and failed to persuade judges in California to block the measures. Exxon Mobil filed a suit in Sacramento, while the Chamber of Commerce sued in Los Angeles.

    In August, U.S. District Judge Otis Wright II in Los Angeles refused to block the laws on the grounds they “regulate commercial speech,” which gets less protection under the 1st Amendment. He said businesses are routinely required to disclose financial data and factual information on their operations.

    The business lawyers said they had appealed to the U.S. 9th Circuit Court of Appeals asking for an injunction, but no action has been taken.

    Shortly after the chamber’s appeal was filed, state attorneys for Iowa and 24 other Republican-leaning states joined in support. They said they “strongly oppose this radical green speech mandate that California seeks to impose on companies.”

    The justices are likely to ask for a response next week from California’s state attorneys before acting on the appeal.

    There are few foods more synonymous with New York City than the bagel—a simple ring of boiled and baked dough that somehow embodies the spirit of the city itself. Equal parts humble and iconic, the bagel has risen from its immigrant origins on the Lower East Side to become a global culinary symbol. Today, bagels are fueling a thriving cultural and economic ecosystem that stretches from Brooklyn bakeries to international markets, generating billions in annual revenue while preserving the heritage of craftsmanship that first defined the New York bagel.

    From immigrant bread to city symbol

    The story of the bagel is the story of New York. Brought to the United States in the late 19th century by Eastern European Jewish immigrants, the beygel found a new home in the tenements and bakeries of Manhattan’s Lower East Side. Early bagel bakers, organized under the Bagel Bakers’ Local 338 union, were fiercely protective of their craft, hand-rolling, boiling and baking every piece with care. By the early 1900s, New York had nearly 70 bagel bakeries, and the bread had become a staple of working-class life. By the mid-20th century, the bagel had evolved into an American breakfast essential. Industrial innovations like the rotary oven and the Lender brothers’ mass-produced frozen bagels made it a national phenomenon. Today’s artisan revival—driven by hand-rolled, malt-boiled, crusty bagels—reclaims the authenticity that first made the New York bagel famous.

    “Bagels are a New York staple,” says Jesse Spellman, co-owner of Utopia Bagels in Whitestone, Queens. “They always will be. Keeping our recipes and traditions consistent for over 40 years gives people a taste of the New York culture of the past.” Spellman’s family has been hand-rolling, kettle-boiling and baking bagels in a 1947 carousel oven since 1981, and their commitment to heritage has made Utopia one of the city’s most celebrated institutions

Iconic institutions like Ess-a-Bagel and H&H Bagels have evolved from family-owned shops to major producers and franchised brands. Ess-a-Bagel recently opened a 7,500-square-foot manufacturing facility in Harlem, while H&H plans 70 new franchise locations across the country. 

    “The economics of the bagel business is the same as the rest of the restaurant industry,” says Craig Hutchinson, chef and owner of Olmo Bagels in New Haven, Connecticut. “But the difference is how willing you are to be transparent with your guests and your team. We stress the importance of making guests feel seen and special. That free kindness helps our guests justify the rising costs of living in 2025 and beyond.” For Hutchinson, community and hospitality are part of the recipe. “We embraced the community and used the bagel as our hospitality vehicle. We all fell in love with the fast-paced bagel industry and never looked back.”

    That sentiment is echoed by Jimmy Stathakis, founder and CEO of Bagel Market, who has reimagined the traditional shop through modern design and digital innovation. “The bagel is a cornerstone of New York life: fast, familiar and full of character. It reflects the city’s diversity and resilience. At Bagel Market, we see ourselves as part of that cultural fabric, offering a space where heritage meets contemporary taste.” He adds, “Margins remain challenging in the food service industry, particularly in New York City, but strong brand positioning and operational discipline create room for growth. We focus on scalable systems, efficient supply chains and consistent quality.”

    In Maine, Jeremy and Marina Kratzer, owners of Dutchman’s Wood Fired Bagels, bring a small-town perspective to the same story. “Being as smart as you can on labor, and really managing the food costs, are keys to success in today’s ever-changing industry,” Jeremy explains. “Building relationships with your purveyors is a great way to ensure that you have someone to trust and look out for you when you need things.”

    Across the Pacific, Talia and Kelly Bongolan-Schwartz, owners of Tali’s Bagels & Schmear in Hawaii, share a similar struggle, but their story is a testament to dedication. “Hand-rolling bagels is very labor-intensive,” says Tali. “It’s always difficult to balance that with pricing, payroll and profit—especially living in Hawaii, where all ingredients are imported and rent is at a premium.” Despite these challenges, they’ve built a loyal following: “About 90 percent of our customers are regulars.”

    Adding to the evolving economics, Orly Gottesman of Modern Bread & Bagel underscores how growth comes from multiple lanes: “Margins in retail food are generally tight… Growth potential exists if you find ways to diversify revenue. We supplement our retail business with direct-to-consumer shipping, retail mixes and catering.”

    From the Pacific Northwest, Brittany Erwin of B’s Bagels & Butters points to where revenue concentrates: “In Washington there is definitely growth potential, but not in the form of a traditional bagel shop… any growth is in the form of sandwiches or catering.” Erwin adds, “In Washington there has been a bagel explosion in the last 3 years, and the majority of shops are leaning away from NY style.  Most of them are leaning towards the sourdough bread craze and serving airy, hard crusty bagels.”

    Nationally, the U.S. bakery sector worth over $60 billion with bagels maintaining rapid growth. The global bagel market reached $5.58 billion in 2024 and is projected to hit $7.35 billion by 2030, growing at nearly 5 percent annually. Europe and Asia have embraced the bagel as both a fashionable food and a cultural export. 

    In Denmark, Emily Bridges, founder of Bagel Belly in Copenhagen, is part of that international wave. “For Americans living in Copenhagen, bagels are an everyday food; they’ll grab one on the way to work or stock up for the week. For Danes, it’s more of a special and unique treat, and something fun to enjoy on weekends or share with friends” she says. “For many of my customers, my bagel is the first bagel they’ve ever tried, which is always exciting and a big responsibility!”

    The bagel as cultural currency

    More than just a breakfast, the bagel carries deep symbolic weight: of identity, comfort and connection. Declared New York’s official state bread in 2008, it remains a culinary shorthand for the city’s diversity and drive. “NY bagels are iconic because of their long-standing history in a busy, busy world,” says Hutchinson. “We realized that the real secret wasn’t just the bagel itself, it was dedication to community, to early hours and to always baking fresh. Those are the shops that become staples.”

    Stathakis adds, “New York bagels have a texture, flavor and history that are unmatched. The secret lies not only in the city’s water but more importantly in its culture: the precision, the pace and the pride of generations who perfected this craft.”

    For Yero Rudzinskas, owner of Baltik’s Bagel in Richmond, Virginia, the story has gone national: “The bagel has outgrown the five boroughs and occupies a special place in the imagination of Americans broadly. Of course, the bagel is one of the most recognizable New York culinary exports, but at this point, everyone has the right to expect a freshly baked bagel close enough to enjoy every day of the week.”

    From Copenhagen to Honolulu, the New York bagel’s DNA travels well, even as it adapts. “People are hungry for bagels all over the world,” says Bridges. “A bagel transforms any time it’s made in a new location: ingredients, taste, even the malt syrup, but the soul stays the same. The soul of a New York bagel is rooted in tradition but never stops evolving.”

    Modern Bread & Bagel’s Gottesman frames that tradition through inclusion. “Bagels are one of NYC’s most culture-centric foods… contributing to that identity meant making our version open to everyone, those avoiding gluten and those who just want a delicious, authentic bagel, so people don’t feel like they’re giving anything up.” 

    And in Washington State, Erwin sees the culture expanding via social buzz and community ritual. “The bagel boom has spread to TikTok which means bagels are trendy for all ages,” she says, noting that what began as a treat has become a daily staple for many regulars.

    The new wave: festivals, global influence and social impact

    The modern bagel is no longer confined to the five boroughs. It’s a global connector. The rise of BagelFest, founded by Sam Silverman in 2019, has elevated the humble bagel into a worldwide cultural event. Hosted annually at Citi Field, with this year’s event on November 16, the festival attracts thousands of attendees and dozens of competing bakeries, each vying for the title of “Best Bagel.”

    Silverman’s mission extends beyond the event itself. Through BagelUp, he and his team are teaching bagel-making to new audiences and using food as a bridge between cultures in New York, one of the most diverse cities in the world. BagelUp offers immersive hands-on classes where locals and international tourists alike can learn the art of crafting authentic New York bagels. These classes draw aspiring bakers from around the world eager to experience the city’s culinary traditions firsthand.

    BagelFest partners are spreading that same spirit of connection globally. Among the most inspiring collaborations is between BagelUp exhibitor Olmo Bagels, which has partnered with Oído, a nonprofit culinary school in Mexico’s Yucatán Peninsula led by Chef Gabe Erales, the winner of season 18 of Top Chef. Together, they’re building cross-cultural culinary programs that celebrate craftsmanship and community, from New York kitchens to Mexico’s rural classrooms.

    “Many of these kids have never had the means to travel outside their community,” Erales explains, “but through food they can connect to the world. When they see the cultural tie between bagels and New York, it’s like a window into another culture. Earlier this year, we took a group of students to Oaxaca to visit a friend’s cooking school. It was their first time on a plane, and for them, it was like going to Disneyland.”

    The taste of tomorrow

    As New York continues to evolve, so does its most famous food. The next generation of bakers is blending tradition with innovation: experimenting with sourdough starters, regional grains and globally inspired toppings while honoring the heritage that made the bagel a symbol of community.

    Gottesman sees the future in “continued diversification: more dietary-inclusive options, more direct-to-consumer retail products and technology integration for ordering and fulfillment,” alongside neighborhood shops that “combine excellent product with smart operations.” Erwin is blunt about the operational direction: “More sandwiches… in this economy we need to be building bigger check averages,” she says, while hoping quality won’t slip as the category scales.

    “I think the bagel business is heading in a strong direction,” says Spellman. “It’s one of the few foods that everyone, across ages and backgrounds, continues to love. It’s hard on the outside, soft on the inside—like a true New Yorker”.

    From the bustling counters of Queens to the teaching kitchens of Quintana Roo, the bagel continues to unite people across borders. Whether in New York, New Haven or Mexico, it remains more than bread. It is a bridge between cultures, a testament to resilience and a rising symbol of how simple food can inspire extraordinary connection.

  • Waymo dips its wheels back into delivery, this time with DoorDash | TechCrunch

    The sprawling metropolis of Phoenix continues to be a testbed for Waymo, and not just on the technical front. The Alphabet-owned company has used its first testing and commercial market to experiment with its business model, too, including delivery.

    Waymo is known for its robotaxis, but it has tested how its tech could be used for delivery. The company previously tapped UPS and Uber Eats for pilot programs, and it also put considerable staff and resources towards developing self-driving trucks under its Waymo Via arm, before shuttering that program in 2023 to focus on robotaxis.

    Now, it seems Waymo is ready to test the delivery waters through a strategic, multi-year partnership with DoorDash. Waymo doesn’t have any other active delivery-focused testing, operations, or partnerships, according to a company spokesperson.

    The partnership will match DoorDash customers ordering food and groceries within a 315-square-mile area of Phoenix with a self-driving Waymo, the company wrote in a blog post.

    Not every DoorDash order will result in a Waymo delivery. Initially, the Waymo delivery service will deliver orders from DashMart — DoorDash’s convenience, grocery, and retail stores. The companies said that, over time, more local Phoenix merchants and a wider variety of offerings will be added.

    David Richter, Vice President of Business and Corporate Development at DoorDash, said the deal with Waymo will give customers a “new and delightful experience, while advancing our vision for a multi-modal autonomous
    future of local commerce.”

    DoorDash isn’t new to the autonomous vehicle technology arena. The company has partnered with sidewalk delivery bot company Serve Robotics to cover parts of Los Angeles. It also has its own in-house autonomous vehicle tech team that developed and produced an autonomous delivery bot called Dot. The delivery bot, which was revealed in September, is being tested in the Phoenix area.

    The deal with Waymo won’t involve DoorDash’s Dot vehicle, however. Instead, food or groceries will be placed in the trunk of a Waymo vehicle — a driverless Jaguar I-Pace that will navigate on its own to the customer. From here, the customer will have to retrieve the items from the trunk via the DoorDash app.

    This last step, which requires the customer to walk out to the car and grab the delivered items, will be the big test for both companies, hoping to determine if receiving groceries delivered by an autonomous vehicle outweighs the convenience of a human handing over the items at their door.
