    I love Ethiopian food. For a small amount of money, you can make yourself a healthy feast that tastes amazing. I went to the market and bought some injera, Ethiopian flatbread (the one part I can’t make myself) and cooked up some great toppings which I then ate with my injera (eating it is an art- see here how). As you can see, I made 6 different toppings for my injera. But my favorite was misir wot, Ethiopian red lentil stew, top left. It is so simple, yet so terrific. 

    My sons aren’t always the biggest lentil fans, but when I made this dish, they gobbled it up. It was also wonderful as leftovers on rice. 

    This recipe is frugal, easy, vegan, gluten free, allergy friendly, and just all around a great recipe. Highly recommended.

    Misir Wot Recipe — Ethiopian Red Lentil Stew — Gluten Free, Vegan, and Delicious

    Ingredients:

    3 tablespoons oil (traditional would actually be niter kibbeh, a spiced clarified butter, but I used olive oil, and you can use any)
    2 large onion
    6 cloves garlic
    2 cups red lentils
    6 cups water
    2 tablespoons berbere powder
    1 1/2 teaspoons salt
    2 heaping tablespoons tomato paste

    Instructions:

    1. Dice your onions and mince your garlic.

    2. Saute until lightly golden.

    3. Add the lentils and water, bring to a boil, and simmer covered until the lentils are fully soft. This can take up to 40 minutes, but often takes less. Check to make sure water remains and if needed add more.) 

    4. Add the rest of the ingredients and adjust to taste.

    5. That’s it! I told you it’s easy.

    6. Eat with injera or by the spoonful or however else you want.

    Trails

    Of the many offerings, the park boasts, my favorite trail for hiking with little ones is the Carrick Creek Trail. This was the first trail I hiked when I first moved here to South Carolina and it’s been a favorite ever since. Beginning at the Nature Center, this trail starts out paved and immediately opens up to the beautiful Carrick Creek Falls where your kiddos can wade around in a cool, shallow lagoon fed by a cascading waterfall. There is a wooden platform where people can sit or leave their shoes before they wade into the water.

    Beyond the waterfalls, the pavement ends and the trail becomes a bit more moderate as it follows the creek for a while and then loops around back to the falls for a grand total of two miles. It’s generally an easy trail but some parts are hilly. If the water is high, you may get your feet wet during the water crossings.

    The lakeside trail is the easiest one at the park as is meanders around the lake for just under two miles. The Civilian Conservation Corp (CCC) started this trail in the 1930s but it wasn’t finished till many years later in 2011. Table Rock is one of several Upstate parks created by the CCC.

    There are a few other trails in the park you can venture off on but be sure to always carry enough water and food with you, especially during the hotter months. It gets very hot and humid there.

    Table Rock Trail to the Summit

    If easy or moderate trails aren’t enough of an adventure for your crew, there are plenty of other longer and more difficult trails to choose from with overlooks and waterfalls to seek. Namely, the Pinnacle Mountain Trail which leads to Mill Creek Falls and Bald Rock Overlook. I have not done those, although they are on my list. However, I have completed the Table Rock Trail to the summit of the large granite dome multiple times (and each time I wonder why I wanted to do it….joking, kind of).

    The Table Rock Trail is one of the most strenuous trails in the Upstate. It’s a little over seven miles round trip and involves a lot of stairs and steep treks up rock hewn steps. Think going on a stair stepper for a few hours. The trail splits from Carrick Creek about a mile in and you start really ascending the mountain. You’ll climb through boulders and up steep inclines and then more steep inclines. About halfway up, you will reach a little shelter where you can grab some water before really getting into the toughest part of the trail. When you reach Governor’s Rock, you can rest again and enjoy the sweeping views.

    Then you’ll need to huff and puff up to the summit. The parts of the trail right before Governor’s Rock and then right before the summit are the toughest spots. Once you reach the summit, you’ll see a sign that literally says “Table Rock Mountain Summit” but don’t stop there (sorry). Keep going for another quarter mile to reach the truly awesome views you just worked so hard for. You’ll be looking out over the Table Rock reservoir and directly at Caesars Head State Park. Wave to them since they’ve got binoculars over there.

    The park says to allow at least 5-6 hours to do this trail. I’ve completed it anywhere between 4-5 hours with some time spent at the top to enjoy the view and eat lunch.

    Taking Kids up to the Summit

    First of all, the Table Rock Trail is not a beginner trail. It is very, very difficult. I make it a point to hike hard trails and this is easily one of the hardest I’ve ever done. One big thing is that you absolutely need to do is to carry enough water and make sure you have enough time to complete it before the park closes.

    That said, if you have kids that hike often, they will likely be fine. Just carry enough snacks and water and stop when you need to. I’ve hiked this with my kids, ages 11 and 8, and they did great. I know families who have hiked this with their kids who were much, much younger, and they also did really well. This really depends on your kids but if you all are up for a challenge, this is it.

    As with any trails and time spent outdoors, leave no trace and pack out what you pack in.

    The Beach and Playground

    Table Rock SP also has a small beach with plenty of sand. You can also rent boats to paddle around the lake for a fee. Entrance to the lake is included in your entrance fee.

    There is an admission charge to enter the park, which you can find updated on the park’s website. If you have an All Park Passport, there is no admission charge.

    There are bathrooms and changing rooms near the beach and picnic area but don’t expect a five star resort experience. Especially during the summer, there are bugs and spiders but you’re outdoors so it’s expected.

    The playground is across from the beach and consists of monkey bars, swings, and slides. You can also camp at the park and there are cabins to rent for those of you who need something softer than a blowup pad on the ground.

    Things to do Near Table Rock

    Table Rock is located in one of the prettiest areas of South Carolina with lots of lakes and hiking trails nearby.

    Caesars Head State Park

    Right across the valley from Table Rock is Caesars Head State Park, where you can enjoy miles and miles of hiking trails and waterfalls. You can also check out the view from the summit at Caesars Head without any hiking at all and look directly at Table Rock. During the fall, falcons are often seen from here as they migrate.

    Bald Rock Heritage Preserve

    Just minutes from Caesars Head is Bald Rock Heritage Preserve, a huge outcrop where you can hang out and enjoy the views. On a clear day, you can see the Greenville skyline. My kids and I love to take our hammocks up here on a nice day, string them up, and read and relax.

    Wildcat Wayside

    Located right on Highway 11 about 15 minutes from Table Rock is Wildcat Wayside, a mile long loop trail that also has a roadside waterfall. This spot is hugely popular in the summer as parents bring their kids to wade in the shallow pool at the bottom of the falls.

    Table Rock Tea

    The Upstate’s only tea farm is quite literally in the shadow of Table Rock. It’s a really neat place where you can tour the farm (by appointment) and learn all about how tea is grown and made and, of course, purchase your own tea right from the farm.

    Pretty Place

    This famous open air chapel is located on the property of YMCA Camp Greenville and is just stunning. If you go, be sure you check the schedule beforehand since it may be closed for private events.

    Where to Eat Nearby

    There are not a lot of restaurants in the area but here are a few places to grab a bite near Table Rock.

    Pumpkintown Mountain Opry

    The Pumpkintown Mountain Opry serves a deli style lunch Thursday – Monday from 11 am – 5 pm. They also have coffee and a market on Saturday mornings. They are a seasonal business and not open in the winter.

    Mountain House

    Mountain House is only open Saturdays and Sundays (definitely check their social media pages before going) and serve fudge, ice cream, and some breakfast and lunch fare. They are only a minute down the road from Caesars Head State Park.

    Tropical Burger

    Tropical Burger is about 25 minutes from Table Rock and if you hiked the summit trail, this will be your reward, I promise. They have some of the very best burgers I’ve ever had and the owner is the kindest guy. I love, love, love eating here.

    Five years ago, my daughter turned thirteen. That year, shopping with me wasn’t her favorite thing to do anymore. Instead of watching movies or shows together, she wanted to stay in her room. When I’d kiss her goodbye she made it known I was embarrassing her and if she had a friend over, she acted like I was a secret she was trying to hide.

    It was a really tough year for me. I wanted it to be a phase but I knew deep down it wasn’t. We had always been really close. I had already gone to the “pulling away stage” with her older brother and was expecting this. It was unsurprising but that didn’t make it any easier.

    I would look at my youngest and wonder when he would pull away

    I was a mother of three and felt like my two older kids had semi-left me and I’d look at my youngest and think, You are next. I soaked in every moment I could with him; he was ten and I knew in a few years’ time he’d be hiding in his room instead of snuggling on the sofa with me. He wouldn’t want me to walk near him in public anymore and everything I’d say would get an eye roll. I held on tight for the next few years but, of course, just like his brother and sister, he drifted further and further away from me.

    Holidays and birthdays weren’t the same. It didn’t matter how much sweat and tears I put in, there was no getting my kids to come back to the people they used to be– kids who felt the magic, appreciated the little things and got excited about pancakes on a Saturday morning. 

    It was hard to get my kids to do anything with me

    It was rare I got them to do anything with me. Their free time was spent with friends or sleeping. Instead of sitting at the dinner table, they wanted to take their food up to their rooms. When I wouldn’t allow that, we’d sit there in silence and eat.

    If I asked them questions about their days it seemed like it was physically painful for them to answer. They were all so quiet and there were nights I’d be eating alone or watching television by myself and it seemed impossible to me that I had three other humans living with me. 

    I was sad. I missed my kids so much I’d constantly look at pictures of them when they were younger or watch old home movies. All of which made it worse of course but I needed to mourn who they used to be as I was accepting who they were becoming. 

    Most teens go through this and as I talk to other moms we all feel the same: it kind of creeps up on us. It seems to happen overnight and even if we are exhausted and drained and feel like we can’t take on another thing, the quiet that comes when your kids are teenagers is unsettling. It makes you feel like something is missing in your life; something that you can never get back. 

    I finally gotten to the other side of the struggle with my teens

    But, here I am on the other side of the struggle. Your teenagers really do come back and for me, this has been my favorite part of parenting so far. My kids are now nineteen, almost eighteen, and sixteen and my youngest has just started to dip into what I call the Coming Back stage. 

    For my oldest, this didn’t start to happen until he was seventeen. One evening he sat downstairs with me and watched a show. I wondered if anything was on his mind so I asked him. I wasn’t used to being graced with my kids’ presence after dinner. When he said nothing was wrong and got up to make a snack, he asked me if I wanted anything. We talked more that evening than we had in years and that was the start of my oldest coming back to me.

    Now, we are best buds. He goes to the gym with me and isn’t embarrassed to be seen with his mother. We have a standing date almost every Saturday night and if anything starts falling apart around the house, he is here to fix it. He’s rarely in his room and now asks me if I want to do things with him.

    My daughter came back about a year ago. She also comes to the gym with me, wants to help me with dinner regularly, and loves finding shows or movies for us to watch together. She often asks me if I want to take a ride with her to Target or to get tea and we listen to Podcasts and talk about them. She is now downstairs with us all every night after dinner and we’ve made some of our best memories these past few years just being silly talking about when they were young, sharing our dreams, or discussing the news.

    My youngest came back to me earlier than the other two

    My youngest came back earlier than my older two did. Maybe it’s just his laid-back personality or the fact he saw his brother and sister want to be around their mom more and he wanted to join in the fun. It doesn’t matter to me, I’ll take it.

    This is the sweet spot of parenting I think. My kids are independent but I still get to see them. They are able to help me with things and still willing to take my advice and let me help them. They want to hang out with me and we can do adult things together. They let me know they appreciate me, and I no longer feel unseen in my own home. 

    If you are struggling because your kids are pulling away, I just want you to know they do come back. It might feel like an eternity but when they do want to hang out with you again it will make the heartache and struggle you felt when they were so distant worth it.

    I have a son who has ADHD. Throughout his academic life, it’s been a great struggle for him and us, his parents. At first, we chose not to medicate him. When his ADHD became too overwhelming, we allowed him to decide to try medication. Unfortunately, through a series of events, he became suicidal. We were unsure if it was the medication or that he was going to school online and lacked friends. Either way, we decided together to stop the medicine.

    My son also loves gaming, spending hundreds of hours on his computer. There were dozens of distractions right in front of him. Then, to make matters worse, COVID hit, and we went to online school…again. This time, he had friends, but we couldn’t limit screen time when his entire academic life was online.

    Other parents limited their teen’s screen time; we could not

    I watched other more conventional parents set screentime limits, push their kids to excel and play sports, whether they liked it or not, and guide them firmly towards college. I did none of those things. It wasn’t because I did not care about my son. It wasn’t because I am a bad mom. At least I wasn’t trying to be a bad mom. It was because I cared about him and wanted him to be happy. I also believed in him.

    I enrolled him in a school that could manage his outbursts in class and his constant talking out of turn. I enrolled him in a school where teachers would not destroy his self-esteem and self-confidence by putting him down and making him feel like a loser. Was he difficult for teachers to manage? Absolutely.

    Did we have countless parent/teacher meetings to figure things out? Yes. Did we have schools that asked him not to return? Definitively. And all the while, I fought hard as his mom to ensure he always felt loved and accepted. I refused to let him think less of himself because he struggled with ADHD.

    My son was a boy who built his computer without any help at 12. Since then, he has helped several other friends make their computers. He is a boy who knew from a young age that he did not want to attend college. He is also a boy who has learned to manage his ADHD without medication. He recently shared that he was glad he had the tools to manage his ADHD. 

    My son decided on his own to take college courses during his senior year in high school. To keep up with the coursework, he removes himself from the computer and works in a different room while listening to classical music. On his own, he decided to consider attending a community college for two years while figuring out what he wanted to study in college. He said he did not want to waste money going to a 4-year-college when he could first look at a community college. 

    He also has ambitions to become an entrepreneur, like me. He started taking business classes, so he would have the skills he needed to be successful. He is considering starting a salsa business once he is out of high school. 

    We did not parent the conventional way; we let our son take the lead

    All this is to say that I did not follow the traditional way of raising a child. I allowed him to lead, as I supported his decisions. The course may not have been what I wanted, but he needed to learn to make decisions and live with the consequences.

    His decision not to apply to a 4-year college might not have been the same as mine, but he has learned to think critically about his life and the choices he must make. He thinks deeply about finances, learning to drive, and his grades.

    The most important thing for me is that he is happy, kind to others, and thoughtful. I have always chosen a road less traveled path regarding parenting. The gift I give them is control of their own lives.

    My son is free to make whatever choices he wishes. He knows that I love and support him in all he does. I am the wind beneath his wings, and I know that he will soar.

    Theatrical Productions at the South Carolina Children’s Theatre

    The South Carolina Children’s Theatre is pretty special, and their professional theatrical productions are a great way to entertain your children.  Productions are all family oriented and designed to elicit wonder and excitement in your child (and you!) The SCCT events calendar is the best way to keep track of what’s to come. Below, you will find information we gathered about their Bell Stage and Younts 2nd Stage Performances, Weekday School Performances, and the SCCT Flex Pass.

    Bell Stage and Younts Stage Performances

    These are the big performances from the South Carolina Children’s Theatre held on the Bell Stage or the Younts Stage. These theatre productions are detail-oriented, bursting with color and costume, and bring to life and reimagine a popular story or play. Theatre productions run by season, with each season having around 8 performances spread out over several months. Each production has multiple showings, so you can plan a date night out with your kids! Both stages are also accessible, so productions can be enjoyed by everyone.

    Bell Stage performances use large set designs, costumes, puppets, and anything else needed to help bring the story from the pages of the book or script onto the stage. You can find big musicals and plays on this stage. Bell Stage productions have longer run times with intermissions, some upwards of 2 hours or more long. So, plan accordingly. There are also assigned seating for Bell Stage productions, so make sure you purchase tickets early if you have large groups that want to sit together.

    Younts 2nd Stage performances also offer the pop, color, and costumes that the Bell Stage productions do, but performances are more intimate and held on a smaller stage. This allows performers to really engage with the audience. These productions are shorter, approximately 45 minutes to an hour long, so they are an excellent choice for younger (with shorter attention spans) audience members. Tickets for Youths Stage are also cheaper than Bell Stage productions, so that’s great on the budget! 

    All theatre productions at SCCT have an age range recommendation, so be sure to check to see which performance best suits your child. SCCT does recommend that most productions are for children 3 and older. The majority of these theatre productions are held on Friday, Saturday, or Sunday, with daytime and evening showings available, so they make an excellent parent/child date day!     Weekday School Performances

    Want to see a stage performance for a field trip? If you’re a teacher or homeschooling group, you can check out performances at SCCT through their weekday school performances on the Bell Stage and the Youths Stage. All students, teachers, chaperones, and bus drivers will need a ticket to view the performance.

    Support your child’s interest in the performing arts with classes at The South Carolina Children’s Theatre! SCCT’s Theatre Arts Conservatory offers a variety of classes for kids interested in learning about acting, drama, stage management, directing, musical theater, and so much more! Classes use a lot of fun activities to strengthen your child’s imagination, self-expression, confidence, and self-discipline. These classes also build a foundation for theatre arts concepts. Classes build onto one another, so SCCT encourages parents to not rush their child through the classes, but to allow them to make natural progress. Classes are grouped by age, so even your budding three-year-old Broadway star can enjoy these immersive classes!

    • Ages 3-6: Children in this age range will play games, sing songs, explore characters, and engage their imagination in a low-pressure environment. Classes are typically once per week for one hour. Multiple classes are offered, with classes in theatre exploration, singing, and stage production available. 
    • Grades 1-6: Children in this age range will explore theatre training through improv activities and high energy games. There are several classes available for this age range where they can learn about process acting, singing, musical theatre, or improvisation.
    • Grades 6-12: Classes for this age range become more technical and build on their knowledge of the performing arts. Kids can learn about process acting, singing, musical theatre, solo singing, and improvisation.
       
    • All The Colors of the Spectrum: For children in 2nd through 12th grade with developmental or processing challenges, SCCT offers All The Colors of the Spectrum!     • Acting for Adults: SCCT offers FREE classes for adult’s college age and up! Classes are for both beginner and seasoned actors to engage in the theatre arts. 

    Workshops at the South Carolina Children’s Theatre

    Sometimes you need a date night, or a morning out. Sometimes you even need some extra help when your kids are out for holidays. SCCT can help you out with through their workshops!  

    • Workday Workshops occur during school break days when children are out of school on a random Monday or Friday for a teacher workday. These workshops engage children in group-based activities but are not usually themed.
    • Kids Night Out happens once per month, where parents can drop off their kids for a few hours. Kids Night Out is a fun night of themed activities, with theatre games followed by a movie and snack. Kids Night Out is from 6 pm to 10 pm, with pre-registration required. 
    • Saturday Morning Mania is when parents can drop off their kids for a few hours of shopping or a fancy brunch in Downtown Greenville. Saturday Morning Mania happens once per month. There are themed drama games and activities with a picnic lunch. Parents should preregister ahead of time.

    The celebrations, the speeches, the excitement…that is the best part of enjoying college graduation. They come home, unload a ridiculous amount of stuff, and need a well-deserved break from the stress of school.

    But then the feeling sets in…how long are you supposed to wait, or tiptoe around the subject, that your grad needs to search for a job? You want to give them the space they need to process the last four years, but at some point, the topic needs to be addressed.

    As a parent who has lived through this with my own college grad, here are my tips as an expert…and a mom.

    6 tips to help guide your grad to find a job

    1. Have the conversation

    Have a conversation with them when they are ready, and usually after some time off. I also find that feeding them a favorite meal first can be helpful. Even taking a drive where you don’t have to look them in the eye but they are “trapped” in the car with you can work as well. Before speaking, ask them what they are thinking about or have on their mind about the job search process.

    2. Start with their skills

    Your first thought may be to tell them to just make some phone calls or start applying for jobs online. Instead, help them get clarity on what skills they can bring to an employer first. It’s very hard for young adults to have this self-awareness. They might say, “Well, I’m hard working and I’m responsible.”

    Instead, help them hone in on not only what they know how to do but how they actually do it with an example from school work or an internship. Are they analytical? Are they great writers? Creative? Problem solvers? Help them figure out what that is. And help them pick their top 3 skills.

    3. Reach out…with a plan 

    Your first instinct may be to connect them with a friend or colleague who can lead them to a job. Referrals are great. However, your grad needs to be prepared when meeting anyone you may introduce them to. All too often parents make introductions and the kids blow it because they were too casual and thought mom or dad would take care of things. Referrals with preparation have the most success.

    4. Encourage them to network

    People like to hire people that they’ve met or have something in common with. Suggest they reach out to alumni who tend to be receptive to speaking with grads. LinkedIn is a great platform to access alumni. When speaking with an alumnus they should ask questions, seek common ground, be curious, and be willing to learn. 

    5. Stress professionalism

    A hiring executive told me, “It takes 5 minutes to make an impression and 2 seconds to get rid of it.” Re-enforce expected manners such as making good eye contact and showing appreciation for the meeting. They should be dressed professionally…even if the video call or workplace they are visiting is casual. Be sure they clean up their social media profile in case the employer decides to “google” them. 

    6. And most importantly, they should send a thank-you note

    Twenty-four hours after every meeting, they should send a thank you note to the people they met with.

    Parents often give great advice, it’s just hard for grads to hear it since it comes from Mom or Dad. The job search is a marathon, not a sprint. Patience and persistence will yield success.
