Ingredients And Substitutions
Here are the main ingredients needed to make this prime rib sandwich recipe. The full list can be found in the recipe card.
- Leftover Prime Rib: I created and tested this recipe using one 1/4″-1/2″ slice of beef, cut against the grain, from a leftover prime rib roast. Use a sharp knife or meat slicer to create shaved prime rib if you prefer that texture. Just start with cold meat as it’s easier to cut thin slices.
- Bread: any hearty roll will work, such as French roll, ciabatta bread, hoagie roll, or baguette. You can also buy garlic bread, which will save you the time of making the garlic butter spread.
- Cheese: add slices of provolone cheese, Swiss, or cheddar to add creaminess to the sandwich.
- Onions: sweet onions work best, but yellow onions and red onions will work as well. To cut down on time, use sautéed onion instead.
- Au Jus: If you have leftover prime rib au jus this is a great way to use it up. If not, whip up a batch using homemade au jus mix or a store bought packet.
- Creamy Horseradish Sauce: leave off this element if you’re not a fan of horseradish. The garlic bread and au jus provides ample flavor so a classic “prime rib sandwich sauce” isn’t needed.

Ingredients
CARAMELIZED ONIONS:
- 2 tbsp unsalted butter (*Note 1)
- 1 small onion, thinly sliced
- 1 tsp apple cider vinegar
GARLIC BREAD:
- 1 French sub roll (*Note 2)
- 2 tbsp unsalted butter, softened
- 2 cloves garlic, minced
Instructions

Pre-heat a medium-size sauce pan over medium heat.

Add the butter. Once melted, add the onions and toss to combine. Cover and let the onions cook, uninterrupted, for 5-6 minutes. Remove the lid, and stir for 1 minute.

Turn the heat to low (towards the high-end of low) and stir every 6-7 minutes for 30-35 minutes, or until the onions are dark brown. Add the vinegar and use a wooden spoon to deglaze, making sure to scrap up the brown bits on the bottom of the pan. Cover and set aside.

When the onions are close to finishing, pre-heat the oven to high broil.

Add ¼ cup of au jus to a large skillet and turn the heat to medium-high. Once simmering, turn the heat to medium. Add the slice of prime rib and let cook for 1 minute per side. Remove and place on a paper towel lined plate. (*Note 5)

Cut the bread in half (lengthwise) and place on a baking sheet. Add the butter and minced garlic to a small bowl and mix to combine. Evenly spread the garlic butter mixture over the rolls.

Broil for approximately 3-4 minutes, until your desired brownness is achieved. Remove from oven.

Layer the cheese across the bottom piece and broil for 1-2 minutes, or until the cheese is melted.

Top the cheese with the warm slice of prime rib and caramelized onions. Lather the other piece of bread with horseradish sauce and place on top of the bottom half.

Serve with the warmed au jus and enjoy immediately.
Notes
Note 2 – You can also use Hoagie Rolls, pre-made garlic bread, large French bread, ciabatta, or any other sturdy bread.
Note 3 – Any leftover prime rib will work well. Keep in mind the prime rib rub utilized will influence the final flavor of the sandwich.
Note 4 – You can use homemade or store bought for the horseradish sauce or au jus.
Note 5 – Total time will depend on the thickness of the prime rib slices. Also keep in mind when you dip the sandwich in the hot au jus it will further heat up the beef.
