    There were certain things that every kid wished their house had when they were growing up. Okay fine, I’m a ’70s/’80s kid, but these things were (and in some cases are) pretty universal.

    Since TV was our babysitter and we watched a lot, that was in most cases the basis for pretty much everything we wanted, whether that be sugary cereal (happened) or trips to Disney World (never happened).

    I knew a kid who lived in a very humble home in a subdivision from the ’50s. Every room in this house had an intercom on the wall, even the bathrooms. Did they all work? Heck no. The funny thing was that the house was so small that we would use the half-dead intercom to talk to each other in different rooms, and since you had to shout, his mom would scream, “Will you kids stop shouting in the house?!” Now, with smart speakers, you can pretty much do the same thing, but like most things now, it’s less fun.

    I knew one kid with an indoor pool. I only remember swimming in it once because it was always in some state of dangerous disrepair. The smell of the chlorine also made you want to—ironically—run outside. All that said, I remember thinking, “It’s a pool – but inside!” How incredibly magical.

    When I say “treehouse,” I’m not referring to what we had—just a plank precariously nailed into three weak branches, almost guaranteeing a broken limb (both yours and the tree’s) and a complimentary tetanus shot. I mean the ones you see in movies: a proper treehouse. A house… in the tree, complete with windows, curtains, a floor, a lockable door, and an actual roof. Bonus points if you had a cool rope ladder that actually worked.

    It wasn’t uncommon for a friend to have a single pinball machine in the garage, but what about those folks who had an ENTIRE arcade in their basement? Dad was likely a collector, and you were only allowed to play one game, usually the knock-off one that he didn’t care much about. Still, the whole setup looked and sounded just like a real arcade.

    I’m probably going to get in trouble for admitting this, but hear me out. I was a good kid—like, really good. But let me tell you, whenever I found myself in a house with one of those stair lifts, a rebellious streak emerged. I couldn’t help but daydream about shedding my goody-two-shoes image and riding that bad boy to the top floor.

    However, deep down, I knew it was meant to assist people less mobile than myself. So, even though I fantasized about reenacting that famous scene from Gremlins, it just never happened for me.

    A Sweet Hardly-Finished Attic (aka “Greg’s Groovy Attic”)

    You can have your luxurious attic (“What a fantastic use of unused space!”), but all we desired was a hideaway nestled in the highest reaches of the house’s eaves, complete with the occasional risk of encountering bats, lack of ventilation, and a creaky pull-down door situated in the hallway ceiling. Why? It’s mostly thanks to The Brady Bunch—the recreation of the iconic and highly coveted Brady kids’ retreat, brought to life in the photo above by the team at HGTV.

    The latest trailer for Venom: The Last Dance confirmed that Knull will appear in the film. The use of this Marvel baddie as the antagonist for the third (and supposedly final) Venom movie could have a huge impact not just on that film, but on upcoming Sony Spider-Man movies —and maybe even the Marvel Cinematic Universe as well.

    That’s the subject of our latest Marvel video.     For years and years I’ve wanted to share these fantastic Italian sandwiches with you all but never took the time to snap pictures until now! They are perfect for a picnic or a special lunch!

    How to Make Italian Presseds Sandwiches Video

    Time for a Picnic!

    You see, picnics are kind of my thing. I adore them. I always have. Growing up we would make a delicious bowl of potato salad, pick up KFC (I KNOW, but don’t judge, KFC and picnics was a thing and I bet you did the same thing!) and head to some park or up into the mountains. Especially in July when our church would hold a huge Stake picnic, an entire day of games, water slides, family activities etc. It was incredible!

    Sometimes when we would ditch KFC, we would haul sandwiches and sides and that was truly my favorite kind of picnicking. There’s something so free and wonderful about unplugging and finding respite in the hills. So, in case you’ve forgotten that joy-especially the one you were reminded of during quarantine (come on, did we so quickly forget the lessons we learned?!) then let me remind you, a stacked sandwich, a bunch of fresh fruit, salty chips and maybe a dessert like our lemon drop cookies will bring all kinds of happy to you and your favorite people.

    You can try all sorts of flavors for pressed sandwiches such as mayo and turkey blt style, turkey, cheese and avocado, heirloom tomatoes, mozzarella, peppers and eggplant, etc. The sky’s the limit!

    What is a Pressed Sandwich?

    A pressed sandwich is exactly what it sounds like. It is a sandwich that is loaded with lots of amazing ingredients layered between a delicious bread, like a ciabatta or baguette, which is then wrapped in plastic wrap and pressed for an extended period of time with a heavy object. This allows the flavors to all meld together making the most tasty bites of sandwich.

    What Ingredients Do You Need for Pressed Italian Sandwiches?

    If you’re headed to the store to buy all the items for your next picnic, here is your shopping list for these sandwiches:

    • Italian Bread (ciabatta, focaccia, or your favorite)
    • Prosciutto
    • Italian Meats (genoa salami, varzi, calabrese)
    • Tomato
    • Roasted Red Bell Peppers or Sun-dried Tomatoes
    • Balsamic Glaze
    • Fresh Mozzarella
    • Baby Spinach (or Basil)
    • Pesto

    I recommend a bag of crisp grapes and some kettle cooked potato chips! These sandwiches are totally customizable! If there are certain meats you prefer over others, do it! Change the meats, veggies, cheese, spreads…make it the way you want it! The measurements for each ingredient in the sandwiches can be found in the recipe card at the end of the post.

    How to Make Pressed Italian Sandwiches

    There’s not much to making a sandwich which is why they are so awesome! Here are the basic steps:

    1. Slice open the bread and spread loads of pesto on one side.
    2. Drizzle the other side with a little olive oil.
    3. Lay the tomatoes and roasted red peppers (see section below) flat on the side with olive oil. Drizzle with balsamic glaze.
    4. Layer the meats, cheese, and spinach (or basil).
    5. Place the top of the bread on and wrap in plastic wrap. Store in the refrigerator and put a heavy skillet (or anything flat and heavy) on top to press it down.
    6. Serve with your favorite picnic sides!

    How Do I Press a Sandwich?

    I’ve seen all sorts of methods, but the easiest for me is to just place the wrapped sandwich on a cookie sheet and then set my heaviest cast iron skillet on top. I’ve also seen people put another cookie sheet on top and then pile dumbbells on top. You can do whatever works best for you. You just want the sandwich to be pressed between two flat surfaces.

    How to Roast Red Peppers

    Put your oven on broil and place your pepper(s) on a cookie sheet right under the coils. Roast them for 8-10 minutes turning them occasionally so they blister on all sides. Pull the cookie sheet out and let the peppers cool until they are cool enough to handle. Then peel off the skin, slice them open and remove the seeds.

    How to Keep My Pressed Sandwich from Getting Soggy?

    Pressed sandwiches are prone to getting soggy with so many layers of goodness inside, but it is easily avoided. There’s nothing worse than soggy bread! First, use the pesto as a barrier on the inside of the bread. You could even spread butter on one side if you don’t want pesto on both.

    Second, pat dry any of the wet ingredients like tomatoes, roasted red peppers, sun-dried tomatoes with a paper towel before adding them.

    Lastly, use the cheese and meats as a bread barrier for the wetter layers.

    What to Serve at a Picnic?

    I love these sandwiches with some crunchy chips and a simple side salad or fruit. For a picnic, here are few other great side options:

    These Italian pressed sandwiches are hearty, packed with flavor, and so portable which make them perfect for a picnic, potluck, baby (or bridal) shower, or brunch. You can make them a day ahead of time, and they also store well for the next day. You’re going to just love these!

    Servings: 6 Small Sandwiches

    Prep Time: 15 minutes

    Resting Time: 6 hours

    Description

    Prevent your screen from going dark

    • Slice open the bread and spread one side liberally with pesto. On the other half drizzle a very small amount of olive oil.

      1 Loaf Italian Bread, 1/4 Cup Pesto

    • Lay the tomatoes or roasted red pepper flat. Drizzle with a little balsamic glaze.

      4-6 Slices Tomato, 2 Red Bell Peppers, Balsamic Glaze

    • Layer the meats, cheese and spinach (basil if desired).

      3 Ounces Prosciutto, 6 Ounces Italian Meats Mix, Fresh Mozzarella, 1 Cup Baby Spinach

    • Close the sandwich and wrap in plastic wrap. Place in the fridge with a heavy skillet or anything very heavy on top for 6 hours or up to overnight.

    • Serve with chips and salad!

    *Heat the oven to broil and place the pepper on a cookie sheet under the coils. Roast, turning occasionally for 8-10 minutes. Allow to cool and peel off the skin. Slice open and remove seeds.

    This pork carnitas recipe is so flavorful and moist and the best part? They are crazy easy to make with only a few ingredients and a slow cooker!

    We had a little Mexican Pot luck in my neighborhood the other night. It was tons of fun and so nice to have everyone out together and just enjoy each others’ company. Everyone brought a dish to share and it turned out perfect. I decided to go with carnitas. I looooooove this pork. It is one of the most simple ways to make carnitas, but it is so juicy and flavorful. I love that you just throw it in the crockpot and don’t think about it all day. You may wonder if with so few ingredients it’s really that delicious, but it is.

    I made one big fat error this time around. You may not think it’s that big of a deal, but for me it is. At about 12:30 in the afternoon I realized that I had not placed the pork in the crock. DANGIT!!!! I am a huge, huge believer in letting roasts, and all kinds of pork cook for 8 hours in the crock on low. It is soooooooooo much more juicy, tender and flavorful. I promise. This pork still turned out well, but it would have been 1 million times better if I had been more on top of things. SO, when you try this, don’t forget to slooooooow cook it.

    Ingredients for Slow Cooker Pork Carnitas

    The ingredients for crockpot pork carnitas are simple and pack so much flavor. You will need a few ingredients for a dry rub and then a few items for cooking the pork in the slow cooker. The orange juice and lime juice add the punch of citrus you want in carnitas! This is what you will need:

    • Corn Tortillas
    • Queso Fresco
    • Cilantro

    For the Rub

    • Seasonings: Dried Oregano, Ground Cumin, Smoked Paprika, Kosher Salt and Pepper
    • Garlic
    • Oil

    For the Pork

    • Pork Shoulder/Butt
    • Onion
    • Garlic
    • Jalapeno
    • Fresh Black Pepper
    • White Vinegar
    • Kosher Salt
    • Oranges
    • Limes

    The measurements for each ingredient can be found in the recipe card at the end of the post so keep scrolling for all the details!

    How to Make Pork Carnitas

    Now we come to my favorite part of this slow cooker carnitas recipe…the simplicity! Here are the basic steps:

    1. Combine: Add all the ingredients for the dry rub together in a small bowl and then rub it all over the outside of the pork. Place it in the slow cooker.
    2. Add: Juice the oranges over the pork and leave one of the oranges in the slow cooker. Add the rest of the ingredients to the slow cooker.
    3. Cook: Set the slow cooker to low heat and cook for 10-12 hours or until the meat falls apart.
    4. Shred: Using two forks, shred the pork and leave it in the juice in the crockpot. Pull out the orange peels.
      • OPTIONAL: If you crave those crispy edges on your carnitas, place the pork on a baking sheet and stick it in the oven to broil for a few minutes.
    5. Serve: Dish up the pork into warmed corn tortillas with some cilantro, diced red onions and queso fresco on top. Avocado slices also make a great addition!

    What are Carnitas?

    Carnitas are the Mexican version of pulled or shredded pork and can be used for tacos, burritos, quesadillas, nachos, enchiladas, tostadas or just to eat plain. The meat is cooked low and slow and is so tender that it practically melts in your mouth.

    The meat is usually braised or roasted in lard until it is super tender. We have a roasted pork carnitas recipe that is super popular on the blog if you want to go the traditional route. We also have an Instant Pot Carnitas recipe that gives you carnitas in a fraction of the time.

    What is Queso Fresco?

    Queso Fresco is a semi-soft cheese, white in color. It is often used in Mexican cuisine. It is mild in flavor and slightly tangy.

    You really want to use pork shoulder or pork butt because they have a higher fat content which makes them super tender and juicy. Pork loin is a little too lean for carnitas, but if you have a pork loin that you want to use up, try our rosemary pork tenderloin! It’s fabulous!

    Homemade crockpot carnitas can be topped with pico de gallo, fresh salsa or guacamole. If you are looking for delicious side dishes, here are some ideas:

    Storing and Reheating

    Pork carnitas should be stored in the refrigerator in an airtight container. They will keep for 3-4 days.

    Carnitas also freeze extremely well. Allow them to cool completely and then place them in a freezer safe container. They will keep in the freezer for up to 3 months.

    To reheat carnitas, I prefer to sauté them on the stove top to recreate those crispy edges. Add a little oil to a skillet and heat them up until warmed through.

    I looooooove this pork. It is one of the most simple ways to make carnitas, but it is so juicy and flavorful.

    Prevent your screen from going dark

    • Combine the dry rub ingredients and rub it all over the pork. Place in the slow cooker.

      1 Tablespoon Dried Oregano, 2 teaspoons Ground Cumin, 1 teaspoon Smoked Paprika, 1 Tablespoon Kosher Salt, 3 Cloves Garlic, 1 Tablespoon Oil, 4 lbs Pork Shoulder/Butt, 1/4 teaspoon Pepper

    • Juice the oranges and leave one of the oranges (2 halves) in the pot. Add all remaining ingredients.

      1 Onion, 3 Cloves Garlic, 1 Jalapeno, 1/4 teaspoon Fresh Black Pepper, 1 Tablespoon White Vinegar, 1 1/2 teaspoons Kosher Salt, 2 Oranges, 1 Lime

    • Cook for 10-12 hours or until the meat is falling apart.

    • Using two forks, shred the pork and leave it in the juice in the crockpot. Pull out the orange peels.

    • OPTIONAL: Place the pork on a baking sheet and stick it under the broiler for a few minutes. You can also sauté it in a skillet with a little oil in batches. Then place it back in the juices in the crockpot to serve.

    • We like to serve ours with warmed corn tortillas, cilantro, diced red onions and cotija or queso fresco and sometimes a little avocado.

    Kamala Harris is said to have lined up Senator Mark Kelly as one of her top picks for a running mate in the US presidential race – whose daughter uploaded a video showing marijuana and ecstasy.

    One of Kamala Harris’ favorite running mate picks is at the center of a drug scandal.

    RadarOnline.com can exclusively reveal Senator Mark Kelly’s apparently clean-cut daughter has wiped all of her social media accounts – after she posted a video showing bags of marijuana and outlawed party drug Molly on her Instagram.

    Claire Kelly uploaded a clip of the drugs – which also featured a cat – with the caption: “Pussy Molly Weed”.

    It was soundtracked to a R and B tune and you can view the video, which has now been stripped from the Internet, below.

    Senator Mark Kelly’s daughter Claire has axed her social media profiles after uploading a video of Molly and marijuana to social media.

    She also shared a screengrab of a text message that appears to be from her 60-year-old Democrat dad – a former astronaut and Navy fighter pilot – warning her to clean up her social media pages.

    It said: “Been busy today. Got 1 call and 2 emails about your Instagram account.

    “I’m not interested in looking but I suspect what you posted would not be in anyone’s best interest. At least not yours or mine.”

    An apparent text exchange between Claire and her worried add about the contents of her now-deleted Instagram account.

    A reply that seemed to be from Claire said: “No my Instagram is fine. Check for yourself” – to which her dad apparently responded: “I’ll pass.”

    Claire’s caption on the post mocked the worry about her edgy social media content, and said: “You know that b**** when you cause all this conversation. Always stay gracious, best revenge is you.”

    She added at the bottom of the post: “1 call and 2 email? Come on guys. (Laughing face emoji.)”

    Molly – a concentrated form of ecstasy famously sung about by Miley Cyrus – is classed as a “dangerous drug” in Sen Kelly’s home state of Arizona, with its use and possession charged as felonies.

    Arizona legalized recreational marijuana use in 2020 – but the drugs post on Claire’s account will rattle her father.

    The drugs post is now being spread online by right-wing MAGA conspiracy theorists who have been accused of misogyny, racism and hate speech.

    Claire used her socials to praise her dad’s political rise before she shut them down.

    One of them – who we are not naming to avoid giving them publicity – has been relentlessly trolling the Kelly family and Claire over the post, and sneered online Claire was “Hunter Biden 2.0”.

    The bile-filled blogger added in an online rant: “Daddy won’t be able to save you from this screw up… Claire Kelly visited the White House and met with@JoeBiden and Kamala Harris in July 2022. Claire Kelly is Hunter Biden 2.0.”

    They were referring to President Joe Biden’s son Hunter’s struggles with addiction, which saw him found guilty in June of illegal possession of a gun and lying about his drug use when it was bought.

    The dad-of-two – who also has daughter Claudia – has a history of defeating candidates endorsed by Donald Trump.

    The Kelly family – including the senator’s granddaughter Sage Sundman, 3 – full of grins on a trip to the White House to meet President Joe Biden.

    He won his seat in 2022, beating Republican rival Blake Masters – a Trump-backed ultra-MAGA candidate, who, like J. D. Vance, is a disciple of venture capitalist Peter Thiel.

    Kelly – who flew combat missions during the Gulf War as a naval aviator before being selected as a NASA Space Shuttle pilot in 1996 – stepped into the political arena when his wife, former congresswoman Gabby Giffords, was shot in the head and forced to retire in 2011.

    She was targeted on January 8, 2011, when a gunman opened fire at a Congress on Your Corner event in Tucson.

    The attack claimed six lives, many more were injured – and Gabby was shot in the head.

    It came two days before she was due to go into hospital for fertility treatments so she and Kelly could have a child together.

    Kelly and his wife Gabby Giffords – who survived a horrific shooting – pose for another wholesome family snap with daughters Claudia and Claire.

    Her trauma from the shooting forced the pair to give up the process, and they said in a joint article in June: “With everything the shooting forced us to leave behind, we weren’t ready to let go of our dream of having a child together.

    “But eventually, we had to. That loss was its own agony.”

    Since the attack, Kelly has become an outspoken advocate for ending gun violence – an issue that will almost certainly be key to Harris’ agenda, especially after the Trump assassination attempt.

    Ingredients for Airfryer Whole Chicken

    Cooking an entire chicken in an air fryer couldn’t be easier! It tastes just like the yummy rotisserie chicken you can buy at the grocery store only you control all the ingredients. Here is what you will need:

    • Whole Chicken
    • Olive Oil
    • Butter
    • Seasonings: Smoked Paprika, Kosher Salt, Garlic Powder
    • Thyme
    • Honey

    The measurements for each ingredient can be found in the recipe card down below. This is just meant to be an overview of what you will need.

    How to Cook a Whole Chicken in the Air Fryer

    Airfrying a whole chicken is so simple! All you need to do is pat it dry, season it and let it cook in the air fryer. Here are the step-by-step instructions:

    1. Dry: Pat the chicken dry with paper towels.
    2. Rub: Mix the butter and spices together in a small bowl and then rub it all over the outside of the chicken and under the skin.
    3. Tie: Using kitchen twine, tie up the legs and wings.
    4. Air Fry: Place the chicken breast-side down in the air fryer preheated to 350 degrees F for 30 minutes.
      • NOTE: If you don’t have an air fryer, I would recommend following our roasted chicken recipe and just cook it in the oven.
    5. Flip: Using paper towels, turn the bird over and cook for another 20-30 minutes. Use a meat thermometer to check the internal temperature. It should be 165 degrees F.
    6. Rest: Remove the chicken from the air fryer and let it rest for 10 minutes.
    7. Drizzle: Drizzle honey all over the top of the chicken and then slice and serve.

    Tips for Achieving Crispy Skin

    Patting the chicken dry before adding the butter and seasonings is critical to achieving that crispy delicious skin. Drying the chicken removes excess moisture which will allow the butter to help crisp up the skin. Afterall, it’s the crispy skin that we all want, right?! Flipping the chicken halfway through the air frying also helps the chicken cook evenly.

    Cooking Time and Temperature Recommendations

    Depending on the size of your whole chicken, it will take about 50-60 minutes to cook in the airfryer. You will start by cooking the chicken with the breast side down, and then flip it over and cook until the internal temperature measures 165 degrees F in the thickest part of the thigh. That will take an additional 20-30 minutes.

    Alternative Seasoning Options

    We love the simple combination of smoked paprika, salt, garlic powder and fresh thyme, but you can definitely experiment with different seasonings. You can change up the fresh herbs and use rosemary, basil, oregano, and/or sage. You could also add some lemon zest for a bright citrus burst of flavor. If you want to use the chicken for a Mexican meal, use cumin, chili powder or a taco seasoning blend. The options are really endless!

    What to Eat with a Whole Chicken

    This air fryer whole chicken recipe is so flexible when it comes to finding sides to go with it. Here are a few suggestions:

    There is a lot to like about Star Wars’ latest series, The AcolyteIt’s presented one of the more complex images of Jedi in history; on this show they are far more flawed and complicated than they’ve typically been shown in the past. There have been some really intriguing mysteries about Mae and Osha and their shared past. And the show has also featured some really fun use of wirework and lightsaber battles as well.

    But there’s something that’s holding this show back — and it’s an issue we have encountered on other Disney+ Star Wars series. Parts of this show don’t look great. The creature design, the costumes, all that stuff is typically excellent. But the cinematography as a whole doesn’t seem as epic or as rich as it does in Star Wars movies, or even comparable TV shows of this scale, like House of the Dragon.

    This isn’t your normal one skillet recipe. This honey mustard bacon chicken skillet is healthier for a few reasons but still totally craveable!

    Serve up this bold honey mustard chicken recipe with a loaf of crusty artisan bread and a bright, fresh tomato cucumber salad, and you have a winning dinner the whole family will love!

    A while back, we made honey mustard bacon brats and let me tell you, they are delicious. Like major good. It’s hard to want a brat any other way now. But as Cade and I were cleaning up dinner he said, “That sauce tastes so good I want to eat it on everything!” and as he snagged one last piece of saucy bacon from the pan to gobble it down before washing the skillet, I had the idea.

    This really would be good on anything. Like really. At first I was really going to go to town and make a crunchy chicken but Cade and I are trying really hard to make good eating choices during the week, which is difficult today as I just photographed the best, oh my goodness amazing pumpkin cookies ever and I can hear them calling my name from the kitchen, “Carrian, you know you could have just half a cookie and you’d feel so happy…”

    Ingredients for Honey Mustard Bacon Chicken Skillet

    Ok, I digress…back to this tasty one skillet chicken recipe! Here are the ingredients you will need:

    • Chicken Thighs: You can use boneless chicken or use bone-in. If you use bone-in chicken, it will just need a little longer to cook through.
      • NOTE: Chicken breasts (boneless, skinless) also work great with this recipe if you want a more lean dinner.
    • Water: helps with the base of the honey mustard sauce
    • Honey: adds flavor and natural sweetness
    • Dijon Mustard: any brand works great or you could go with spicy brown mustard too if you want a little kick
    • Cilantro: adds a bright pop of freshness
    • Bacon: because you never need a reason for bacon
    • Olive Oil: helps finish off the sauce and sauteing
    • Garlic: adds flavor

    How to Make Bacon Honey Mustard Chicken

    Here is a quick run through of the instructions for making this easy chicken dinner recipe. It gets extra bonus points for all being cooked in one dish!

    1. Heat a nonstick skillet over medium-high heat and cook the bacon.
    2. Once the bacon is crispy and cooked, remove the bacon to a plate lined with paper towels.
    3. Add the chicken to the skillet and reduce the heat to medium low. Let it cook for 5-6 minutes and then flip it and let it cook for 5-6 minutes more.
    4. While the chicken is cooking, whisk all the ingredients for the sauce together.
    5. When the chicken is done, remove it to a plate and add the sauce mixture to the skillet. Let it simmer until it thickens slightly.
    6. Chop the bacon and add it to the sauce.
    7. Add the chicken back to the skillet and spoon the sauce over the chicken.
    8. Remove from the heat and let the chicken rest. Serve and enjoy!

    Can I Use Chicken Breasts Instead?

    Yes, chicken breasts work great for this recipe! They will probably need a little less time to cook through so make sure you keep your eye on that internal temperature. You want it to be 165 degrees F.

    Are Chicken Breasts Healthier Than Thighs?

    Both chicken thighs and breasts are good sources of lean protein. In comparison, one key difference between the two is the fat content. Chicken thighs tend to be more fatty than their leaner companion, so yes, there is more fat on a thigh (dark meat) than is on a breast (white meat). However, this fat is the good kind.

    What is the Difference Between a Skillet and a Frying Pan?

    The difference between a sauté pan and a skillet is a subtle but important one, and it all comes down to shape.

    A sauté pan, from the French verb meaning “to jump” (sauter), has a wide, flat bottom and relatively tall, vertical sides.

    A skillet, on the other hand, has sides that flare outward at an angle.

    What to Eat with Honey Mustard Chicken with Bacon

    Storing and Reheating

    It is best to store leftover honey mustard chicken in an airtight container in the fridge. Leftovers will keep for up to 3-4 days. You can reheat this meal in the microwave or on the stove top. If I have the time, I like to use the stove to heat it back up.

    • Heat a nonstick skillet over medium high heat then add the bacon.

      6 Slices Bacon

    • Cook the bacon until crispy, flipping one time. Remove the bacon to a plate lined with paper towels.

    • Add the chicken to the skillet and turn to medium low.

      4 Chicken Thighs

    • Allow to cook for 5-6 minutes, flip and cook an additional 5-6 minutes or until cooked through.

    • While the chicken is cooking, whisk together the water, honey, mustard and cilantro in a small bowl.

      ¼ Cup Water, ¼ Cup Honey, 1 Tablespoon Dijon Mustard, 2 Tablespoons Cilantro

    • When the chicken is done, remove it to a plate. Increase the temperature to medium and add the olive oil and garlic to the skillet and stir until the garlic is fragrant.

      ¼ Cup Pure Olive Oil, 2 Clove Garlic

    • Add the sauce mixture to the skillet. Reduce the heat to low and let the sauce simmer until it thickens slightly.

    • Chop up the bacon and add the bacon to the sauce. Stir everything together.

    • Add the chicken back to the skillet and spoon the sauce over the chicken.

    • Take off the heat to rest for 3 minutes and serve.

    Tender, flaky salmon fillets rubbed in a bold smoky rub, stuffed with a creamy spinach artichoke filling and baked to perfection! You’ll feel like you’ve ordered stuffed salmon from a fancy restaurant!

    It seems like salmon recipes are the rage all over the place, so I have been working on loads of different recipes to cook salmon in different ways and with different flavors.

    We have a classic garlic butter salmon, a BBQ salmon in the air fryer, a teriyaki salmon, a baked maple mustard maple salmon, a grilled salmon, an Asian sticky salmon, and a sweet and spicy orange salmon. I’m still working on a smoked salmon, so stay tuned! But this stuffed salmon has a story behind it…

    Spinach Artichoke Stuffed Salmon

    This last spring my family was just about to board a cruise ship with my parents when we got a text that changed everything; “Tom isn’t doing well. They’ve brought in hospice.”

    You see, my entire life my parents were best friends with Tom and Peggy Glem. No, best friends doesn’t really describe it. More like family, they were family. Our kids matched up well in ages. Our vacations were often spent together, holidays were moments and memories and laughter and even our recipes seemed to run together. But no one was closer than mom and Peggy.

    I always say that to have a “Peggy” means that you have the best kind of friendship possible. Because of Mom and Peggy, dad and Tom really didn’t have a choice but to become close as well. He was all about the tease, the lemon meringue pie, the fishing and the adventure. He was genuine and he loved his family. Like really loved them. Regardless of who walked in his door and how they were living their lives Tom truly tried to see them and love them.

    Tom made it just a few short days and then all gathered for his funeral. Much like Peggy, Tom was taken far too soon, and far too young. This last year has brought a lot of change and chaos into our lives. There have been miracles, blessings, memories and laughter for sure, but I also can’t help but notice how quickly my life is changing.

    A daughter about to head off to college, the friends of my parents, whom I have known and love for all my life, struggling through grief, death, poor health, and tragedies and the world spinning, and confusion, it’s a year unlike any other I’ve ever experienced.

    I have found myself wanting to really be present to acknowledge those who have come before me to acknowledge the life that I’ve had, and the life that is still ahead of me and so to most, this will just be a stuffed salmon recipe with the most delicious spinach artichoke filling that’s like a combination of your favorite appetizer and dinner all in one but for me this is something special this recipe gives a nod to Peggy and how I will honor her forever for the friendship and love she showed to my sweet mother, as well as the salmon a fish that reminds me of Tom and his adventures spirit, and for the friendship, he gave my father.

    For friends really are one of the greatest gifts of life but when a man has a best friend, that seems to be something extra special, so I’m grateful for those two. I hope that my life will be filled with such friendships.

    Ingredients for Stuffed Salmon

    You’re going to a need a few ingredients to make this stuffed salmon happen. There are items for the spinach artichoke filling, seasonings for the rub and then ingredients for the garlic butter sauce that gets poured over top. Here is what you will need:

    • Salmon Fillets
    • Filling: Cream Cheese, Mayonnaise, Artichokes Hearts, Garlic, Dill, Salt, Grated Parmesan Cheese, and Frozen Chopped Spinach
    • Rub: Chili Powder, Smoked Paprika, Garlic Powder, Salt and Olive Oil
    • Sauce: Butter and Garlic
      • Note: If you have to have lemon with your salmon, squeeze the lemon juice from half a lemon and whisk it into the garlic butter sauce.
    • Cherry Tomatoes

    What is the Best Type of Salmon for Stuffed Salmon?

    The type of salmon is less important than the thickness of the salmon fillets. You want nice thick fillets so you have plenty of room for stuffing them. A king Salmon or Atlantic salmon are usually thick and meaty and should work great.

    How to Pick Good Fresh Salmon

    Buying salmon at the grocery store can be intimidating, but it doesn’t need to be! There are a few things to look for…

    • Touch – when you gently press the salmon, it should bounce back and not leave an indentation
    • Smell – good fresh salmon should not have a fishy smell
    • Color – vibrant, deep shades of red/coral/pink is what you are after and there shouldn’t be any brown spots anywhere on the fillet
    • Appearance – it should look moist and not dried out

    How to Make Stuffed Salmon

    Stuffed salmon is decadent and fancy but the beauty of it is that it’s super easy to make! Anyone can do it! Here are the basic steps:

    1. Make the filling. Blend everything for the filling together in a blender.
    2. Stir in the spinach.
    3. Cut slits in the side of each salmon fillet with a sharp knife to create little pockets. Stuff with the spinach artichoke mixture.
    4. Prepare the dry rub. Drizzle a little olive oil on each fillet and then sprinkle the dry rub all over them and rub it in.
    5. Place the fillets in a sprayed baking dish, toss a couple handfuls of cherry tomatoes around the fillets and bake uncovered.
    6. While the salmon is baking, prepare the garlic butter. Then drizzle it over the top of each fillet.

    What is the White Stuff that Comes Out of Salmon When It Cooks?

    When salmon bakes, there is a protein inside salmon called albumin that coagulates and becomes solid. It’s the same protein that is in egg whites. It is common for it to seep out of the salmon as it cook. It’s harmless and flavorless.

    What to Eat with Stuffed Salmon

    How to Store Stuffed Salmon

    Leftover spinach artichoke stuff salmon should be stored in an airtight container in the refrigerator and it will keep for 1-2 days.

    I recommend reheating the salmon in the oven rather than the microwave. Place the leftover stuffed salmon in a baking dish and place foil loosely over the dish. Reheat at 350 degrees F until warmed through.

    If you have followed us for long, you will know that I’m not a huge seafood lover, but there is a demand out there for salmon recipes. And I get it! It’s healthy and mild in flavor. It’s a beautiful fish. Stuffed salmon with creamy spinach and artichokes is my newest favorite salmon recipe!

    Description

    • Stir in the spinach.

      1/4 Cup Frozen Chopped Spinach

    • Mix together the rub.

      1 teaspoon Chili Powder, 1/2 teaspoon Smoked Paprika, 1/2 teaspoon Garlic Powder, 1/4 teaspoon Salt

    • Drizzle olive oil over the filets and then the rub over that. Place the filets into a sprayed baking dish and add about a cup of grape or cherry tomatoes around the filets.

      Olive Oil, 1 Cup Cherry Tomatoes

    • Bake at 375 degrees F for about 15 minutes or until desired doneness.

    • Meanwhile, melt the butter in a saucepan with the garlic over medium heat until the garlic is fragrant. Remove from heat.

      4 Tablespoons Butter, 2 Cloves Garlic

    • Pour over the baked salmon and enjoy!

    Sweet sliders are becoming my new obsession and these cherry cheese danish sliders are like eating a cherry cheese Danish and a cherry cheesecake at the same time.

    Sweet cherry pie filling and tangy cheesecake filling all enclosed in sweet Hawaiian rolls, baked to golden perfection and topped with a creamy glaze and sliced almonds.

    I made a big batch of cherry pie filling to shoot a bunch of cherry recipes and then I got creative with how to use it. I had a package of slider buns in the freezer and I thought, why not make some cherry sliders? I’d photographed the s’mores sliders the day before sooooo…let’s keep a good thing going!

    Whether you are looking to change things up for Saturday breakfast or you want a simple fruit dessert, these cherry cream cheese sliders can please a crowd and they take less than 30 minutes to make.

    Ingredients for Cherry Cheese Danish Sliders

    Pull your phone out and start adding these items to your grocery pick up list! You’re going to want make these ASAP…

    • Hawaiian Sweet Rolls: you can use store bought or make your own if you have the time
    • Cream Cheese: make sure it is room temperature and preferably full fat
    • Powdered Sugar: adds all the sweetness to the cheesecake filling
    • Lemon Juice: adds a pop of acidity
    • Egg Yolk: makes the cream cheese filling extra creamy and rich
    • Butter: mixed with the sugar and brushed on the bottom of the pan to help the sliders not stick and to create a sugary crust on the bottom
    • Sugar: adds a sweet caramel-y crust to the bottom of the sliders
    • Cherry Pie Filling: homemade or store-bought will work just fine. You could also use any filling you want…strawberry, apple or blueberry.
    • Egg: combined with water, creates an egg wash for the tops of the buns
    • Water: whisked with egg to create an egg wash

    Drizzle

    • Powdered Sugar: the sweetness and structure for the drizzle
    • Whole Milk: helps create the drizzle
    • Sliced Almonds: adds texture to the sliders and resembles a classic cherry cheese danish

    How to Make Dessert Sliders

    Here are the step by step instructions for making these cherry sliders:

    • Prep: Preheat the oven to 350 degrees.
    • Cut: Using a sharp bread knife, cut an entire sheet of Hawaiian sweet rolls in half and set them aside.
    • Filling: Make the cream cheese filling by beating the cream cheese, powdered sugar, lemon juice and egg yolk with a hand mixer until smooth.
    • Melt: In a small bowl, melt the butter and add the sugar. Mix to combine and then pour into the bottom of a 9×13 baking dish and brush around to cover the whole bottom.
    • Layer: Place the bottom of the rolls into the pan and then spread the cream cheese filling all over the rolls. Spread the cherry filling on top of that and then add the top of the roll.
    • Whisk: In a small bowl, whisk together the water and egg to create an egg wash and brush it all over the top and sides of the rolls.
    • Sprinkle: Sprinkle the rest of the sugar all over the tops of the rolls.
    • Bake: Place the baking dish into the oven and bake for 12-15 minutes
    • Whisk: While the sliders are baking, whisk together the ingredients for the glaze.
    • Drizzle: Once the sliders have baked, drizzle the glaze all over the top and then sprinkle with the sliced almonds.

    Tips for the Best Cherry Cheese Danish Sliders

    When I go to make any type of slider, I take a whole pack of King’s Hawaiian rolls and slice through them with a long bread knife all at once. It makes them easier to transfer them and to spread the toppings all over them, almost like a sheet of rolls.

    Pretty much any time you use cream cheese in baking, you want it to be at room temperate so it can mix with other ingredients smoothly. You don’t want cream cheese lumps in your filling!

    Brushing an egg wash over the tops of the buns helps the sliders become golden, crispy and slightly shiny.

    Storing Cherry Cream Cheese Sliders

    Cherry pie sliders should be stored in an airtight container in the refrigerator. They will keep for up to 4-5 days.

    Prevent your screen from going dark

    • Preheat the oven to 350 degrees F.

    • Using a bread knife, cut the entire 12 rolls in half creating a top and bottom. Set aside.

      1 Package Hawaiian Sweet Rolls

    • In a bowl, add the cream cheese, powdered sugar, lemon juice, and egg yolk to a bowl and using a hand mixer, mix until smooth.

      1 Cup Cream Cheese, 1/4 Cup Powdered Sugar, 1/2 teaspoon Lemon Juice, 1 Egg Yolk

    • In a small bowl, melt the butter and add 1 Tablespoon of sugar. Pour into the bottom of a 9×13 baking pan and spread around to cover the bottom. Place the bottom of the Hawaiian rolls in the pan.

      1 Tablespoon Butter, 4 Tablespoon Sugar

    • Spread the cream cheese filling onto the bottom half of buns. Top with cherry pie filling. Place the top of the buns on the filling.

      2 Cups Cherry Pie Filling

    • Whisk together the water and egg. Brush the egg wash onto the tops and sides of the sweet rolls. Sprinkle the tops and sides with the sugar.

      1 Egg, 1/4 Cup Water, 4 Tablespoon Sugar

    • Bake for 12 to 15 minutes or until warmed. Remove and whisk together the glaze and drizzle all over the top.

      1 Cup Powdered Sugar, 2 teaspoons Whole Milk

    • Sprinkle a few sliced almonds and enjoy!
