    The first time I had a thumbprint cookie, I was in elementary school and my mom had this little cookbook for kids. That was so cute with these darling little graphics of kids cooking almost precious moments style. Remember those little kids that were so popular? The only problem was the recipe turned out dry and boring.

    I’ve been hesitant to share a thumbprint cookie ever since, but this one is absolute perfection and it’s almost like a cross between a sugar cookie and a melt in your mouth butter cookie. I prefer to use a seedless jam, but do whatever you’ve got on hand. My extra touch? A little drizzle of white chocolate and making the indents into the shape of a heart really takes these to the next level for Valentine’s Day.

    Ingredients For Valentine’s Day Thumbprint Cookies

    You don’t need anything fancy to make these Valentine’s thumbprint cookies! Just a handful of pantry staples that come together to create the perfect treat.

    • Butter: Creates a rich, tender cookie base.
    • Sugar: Sweetens and helps the cookies spread.
    • Brown Sugar: Adds moisture and a soft texture.
    • Egg Yolk: Binds the dough and keeps it chewy.
    • Vanilla: Enhances the overall flavor.
    • Almond Extract: Adds a light, nutty warmth.
    • Salt: Balances the sweetness.
    • Flour: Gives the cookies structure.
    • Cornstarch: Keeps the cookies soft and thick.

    How to Make Thumbprint Cookies

    These thumbprint cookies are a fun take on a classic, and they’re easy enough for kids to help make. Here’s how to bake them step by step:

    1. Prep Chocolate: Chop the white baking bark or white chocolate chips and set aside.
    2. Cream Butter: Beat the butter until soft and fluffy.
    3. Add Sugars: Mix in both sugars and the salt until smooth.
    4. Mix Wet Ingredients: Beat in the egg yolk, vanilla, and almond extract.
    5. Add Dry Ingredients: Slowly mix in the flour until a soft dough forms.
    6. Shape Cookies: Roll dough into balls, place on a lined tray, and press a thumbprint in the center.
    7. Chill Dough: Freeze cookies for 30 minutes so they hold their shape.
    8. Fill & Bake: Warm the jam, fill each thumbprint, then bake at 375°F until edges are golden.
    9. Cool: Let cookies cool completely on a wire rack.
    10. Drizzle: Melt the white chocolate and drizzle over the cooled cookies.

    Make Ahead and Storage Instructions

    These thumbprint cookies are easy to make ahead of time. You can prepare and shape the dough, then freeze it until you’re ready to bake. Just add the jam and bake straight from the freezer. You can also freeze fully baked cookies for up to two months. Thaw at room temperature and add the white chocolate drizzle before serving for the best taste and texture.

    Once baked, let the cookies cool completely and store them in an airtight container at room temperature for up to three days.

    Prepare the White Chocolate

    Make the Cookies

    • In a standing mixer or bowl with a handheld mixer, beat the butter on medium speed until softened.

      1 Cup Butter

    • Add the sugars and beat until combined.

      ⅓ Cup Sugar, ⅓ Cup Brown Sugar

    • Beat in egg yolk and extracts.

      1 Egg Yolk, ½ teaspoon Vanilla, ¼ teaspoon Almond Extract

    • Beat in the flour, cornstarch and salt.

      2 ¾ Cup Flour, ½ teaspoon Salt, 2 teaspoons Cornstarch

    • Scoop cookie dough into 1 Tablespoon-sized balls and roll very well (so that the dough is round and no cracks/seams show).

    • Place on a wax-paper covered plate or small cookie sheet.  Use your thumb or the rounded back of a teaspoon to gently press an indent in the center of the cookie dough. You can do two thumbprints side by side to make a heart if you want. Repeat until all of the dough has been used.

    • Transfer cookie dough to freezer and chill for 30 minutes.

    • Meanwhile, place your jam in a small microwave-safe bowl. Heat for 5-10 seconds or until jam is no longer firm and is easy to stir.

      ½ Cup Seedless Jam

    • Spoon jam into each thumbprint, filling each indent to the very brim.

    • Place cookies at least 2″ apart on a parchment paper-lined cookie sheet and bake at 375℉ for 9-11 minutes or until edges are just beginning to turn golden brown.

    • Allow cookies to cool completely. Then transfer to a wire rack to cool.

    Prepare the Topping

    • Melt 4 oz white chocolate over low heat, stirring constantly.

    • Drizzle each cookie with some of the melted mixture.

    In certain areas, you might need to reduce the flour by 2 Tablespoons so they dough doesn’t end up too dry.
    Store in an airtight container or ziplock bag for up to 3 days at room temperature.

  • The Best Red Velvet Poke Cake for Valentine’s Day

    This is the most deliciously moist Red Velvet Poke Cake recipe! The sweetened condensed milk gets poured all over and the fluffy cream cheese frosting makes it a truly decadent dessert everyone can’t stop eating!

    This easy red velvet poke cake is perfect for holidays like Valentine’s Day or Christmas, but it’s just as good for birthdays or “just because” baking days. It’s simple to make, stunning to serve, and always gets rave reviews!

    I see red velvet poke cakes everywhere, but they all have a thick pudding on top, and I gotta be honest, that’s not my thing. So, I went back to the basics and started with a simple sweetened condensed milk topping and guess what? I’ll never make it another way! It’s so good!!!

    What is a Poke Cake?

    A poke cake is a cake that is baked and then poked with holes all over. The holes are then filled with a creamy mixture (like pudding, sweetened condensed milk, caramel, or cream cheese). For this recipe, the red velvet makes it extra festive for Christmas or Valentine’s Day! Red velvet desserts are perfect for the holidays!

    What Flavor is Red Velvet Cake?

    Red velvet is a perfect blend of both chocolate and vanilla. It has a subtle cocoa flavor and has a lot of red food coloring added to give it the signature red color.

    Ingredients You’ll Need

    • Red Velvet Cake Mix: The base of the cake — gives that signature red velvet flavor, color, and soft texture without extra steps.
    • Instant Red Velvet Pudding: Adds rich flavor and extra moisture, keeping the cake soft and tender after baking.
    • Sour Cream: Brings tanginess and creaminess while making the cake ultra-moist and fluffy.
    • Canola Oil: Adds moisture and tenderness — helps the cake stay soft even after chilling.
    • Eggs: Bind the ingredients and provide structure, helping the cake rise properly.
    • Whole Milk: Adds richness and helps blend everything smoothly for a velvety batter.

    1. Prep: Preheat oven to 350 ℉ and grease a 9×13″ pan.
    2. Combine: Add all the ingredients for the cake to a mixing bowl and stir to combine.
    3. Bake: Pour the cake batter into the prepared baking pan and bake for 10 minutes longer than it says on the back of the cake mix box for a 9×13″ cake.
    4. Poke: Remove the cake from the oven and let it cool for about 5 minutes and use the handle end of a wooden spoon and poke all over the cake.
    5. Pour: Open the can of sweetened condensed milk and slowly pour it all over the holes on the cake. Place in the fridge to cool while you make the frosting.
    6. Make the Frosting: Add the cream cheese and butter to the bowl of a stand mixer and beat together until smooth. Then add the confectioners’ sugar and vanilla and beat on medium-high speed until fluffy.
    7. Spread: Add the frosting to the top of the cake and spread evenly over the top.
    8. Refrigerate: Place the cake in the fridge and let it set up for at least 4 hours or up to overnight.
    9. Garnish: Sprinkle with mini chocolate chips or holiday sprinkles.

    For this version of the cake, I used mini chocolate chips (obviously), but feel free to change the decorating up or omit the decorations altogether. Here are a few ideas:

    • Crushed Oreos
    • Chocolate curls
    • White chocolate chips or curls
    • Heath bits
    • Colored sprinkles – for Christmas, Valentine’s Day or 4th of July

    Storage and Make-Ahead Tips

    This cake is best stored in an airtight container in the refrigerator. It will keep for up to 4-5 days.

    This cake also freezes great. It will freeze better without the frosting. Poke the cake and add the sweetened condensed milk, then let it cool completely and wrap in plastic wrap and then foil. It will keep for up to 3 months. Let it thaw in the fridge overnight and then add the frosting.

    • Preheat oven to 350 ℉ and grease a 9×13″ pan and check the back of the box for cooking time on a 9×13″.

    • Place the cake mix, pudding, sour cream, oil, eggs and milk in a bowl and mix to combine.

      1 Box Red Velvet Cake Mix, 3.4 ounce Instant Red Velvet Pudding, 1 Cup Sour Cream, 1 Cup Canola Oil, 4 Eggs, ½ Cup Whole Milk

    • Pour into a cake pan and add about 10 minutes onto the back of the box cooking time.

    • Remove the cake from the oven, allowing it to cool for about 5 minutes, and then using the blunt end of a wooden spoon, poke holes over the cake.

    • Slowly pour the sweetened condensed milk mixture over the holes.

    Sirloin Steak: Lean, versatile, and affordable. Not as rich as ribeye but still flavorful and perfect for everyday cooking.

    We typically use a ribeye or a filet. We love the beefy flavor and the tenderness of the meat!

    Reheating and Storing Steak

    To store leftover garlic butter steak, let it cool completely, then wrap it tightly in foil or place it in an airtight container and place in the refrigerator for up to three days.

    When reheating, avoid the microwave, which can dry out the meat. Instead, warm the steak in a low oven on a foil-lined pan until heated through, then quickly sear it in a hot pan to crisp the outside. Serve with extra garlic butter to bring back that fresh, juicy flavor.

    How to Make Easy Garlic Butter Steak

    • To make the garlic steak butter, combine butter, garlic, salt, and pepper. Transfer the mixture to parchment paper; shape into a log. Roll in parchment to 1 ½ inches in diameter, twisting the ends to close. Refrigerate until ready to use, up to 1 week.

      1/2 Cup Unsalted Butter, 3 Cloves Garlic, 1/4 teaspoon Freshly Ground Black Pepper, 1/2 teaspoon Kosher Salt

    • Preheat oven to broil. Place an oven-proof skillet, we prefer to use our Lodge Cast Iron Skillet, in the oven.
    • Using paper towels, pat both sides of the steak dry. This is essential to get a nice caramelization on the steak. Drizzle with olive oil; season with salt and pepper evenly to taste.

      3 Rib-Eye Steaks, 4 Tablespoons Olive Oil, Kosher Salt and Freshly Ground Black Pepper

    • Remove the skillet from the oven and heat over medium-high heat on the stovetop.

    • Once the pan is hot, place the steak in the middle of the skillet and cook until a dark crust has formed, about 1 minute. Using tongs, flip, and cook for an additional 60 seconds.

    • Remove the skillet from the stove.

    • Place your skillet into the oven and cook until desired doneness is reached, about 4-5 minutes for medium-rare, flipping once. Let rest for 3-5 minutes, tented, not wrapped with foil.

    • Serve immediately with a slice of garlic butter.

    I used to think my One-Bowl Chocolate Cake was easy, but then I created this microwave cake recipe and now I’m hooked. I’m so hooked that I’ve created protein mug cake recipe too that you totally need to try! Made from scratch, fluffy, and flavorful, I bet you have all the ingredients you need for this recipe on hand right now.

    What’s in This Peanut Butter Mug Cake?

    Now, microwave mug cakes are small and we’re trusting the microwave to cook it perfectly, so it’s important to get the right balance of ingredients. Here’s what you’ll need to make this best mug cake:

    • Peanut butter and chocolate are of course the main flavor components here.
    • Vegetable oil helps to keep the cake moist – no dry mug cakes here.
    • Egg white gives the cake structure and helps it to be light and fluffy.

    • Finally, cake regulars, flour and baking powder do the job of structure and lift.

    Can I Make a Cake in a Mug Without an Egg?

    How to Make a Mug Cake

    Mug desserts are as easy as it gets. Here are the basic steps to making this microwave cake in a cup:

    1. Start by combining the wet ingredients and sugar in a large microwave-safe mug. Give it a good whisk with a fork.
    2. Add the dry ingredients and stir the cake batter until just combined
    3. Cook on high for 70 seconds, then devour at will.

    How Much Does This Recipe Make?

    There’s no getting around it, this peanut butter cake is a decadent treat and the recipe fills a regular mug – about 1 cup worth of cooked cake. Perfect as a decadent dessert, but if you want smaller ones, you can certainly divide the batter between two ramekins.

    And while this batter is made directly in the cup (read: only 1 cup, 1 fork, and 1 spoon to wash up), you could make a bigger batch in a bowl and then pour it into the cups – great idea if you have more than a couple to make.

    • Vanilla – add 1/4 teaspoon vanilla extract for that comforting vanilla flavor

    Let’s not be fooled here, it’s still cake! One thing I love about mug cakes is that your portion is controlled, but they are still fairly high in calories and fat. They do have a lot of protein though…16 grams!

    Tips for Making a Microwave Mug Cake

    • Microwaves vary, so the cooking time may vary too. Test it after a minute then add 10 second increments until you have your perfect timing worked out. It’s ready when you touch the top lightly and it doesn’t create a deep dent.
    • If you are cooking more than one mug cake at a time, they will take longer to cook
    • If you split the batter for one into two ramekins, they will cook much quicker.

    3. More than one: The cooking time will also vary if you cook more than one mug cake at a time.

    “We started with the pre-chop bites (so, so good): Blacklock Potted Meats & Kimchi, Egg & Anchovy (thought I’d hate it, but loved it) and Cheese & Pickle. Then, we tucked into the Mushrooms on Toast while we decided on our cut of steak. The staff were ever-so-helpful in helping us navigate the vast selection (which is written with chalk on a blackboard every day for diners to choose from). We were feeling fancy, so we chose the Sirloin, and paired it with a classic peppercorn sauce, Beef Dripping Chips, Kale & Parmesan and Heritage Summer Tomatoes. The latter sides were divine for injecting a bit of freshness.

    “Alongside a few-too-many glasses of red wine, we finished our meal with cheesecake – which was brilliantly served in the dish it was created in with two spoons and a napkin. (Panic not: we had ordered the last slice. Hygiene, obviously, is considered). I left feeling fat, happy and desperate to return – and convinced I’d eaten the best steak I ever would.”

    Why is it the perfect romantic restaurant? “Most of the food – from the starters to the steak – are served on boards, which makes it perfect for sharing. It’s fun to choose a cut of meat together from the blackboard, and if you get a sofa seat around the edge of the restaurant, you can sit close to eachother between courses.”
