    “I try not to use wooden cutting boards,” said Kowalcyk, noting that they can retain bacteria that thrive and grow to large enough quantities to cause illness.

    As an emergency medicine doctor who has stitched up many Thanksgiving injuries, Dr. Tony Cirillo urges home cooks to make sure their kitchen knives are sharp.

  • Thanksgiving dinner picks: a buffet every day, and more deals

    More choices from the Thanksgiving lunch buffet, adding to a previous list:

    The chowdown starts early. Like, a full day early.

    The legendary holiday season lunch buffet at Neiman Marcus’ downtown Dallas store will start Wednesday, Nov. 26 at 11 a.m. It’s served seven days a week non-stop through Dec. 31.

    Yes, it’s $60.

    But part of the fun is seeing Neiman’s decorations, a tradition continued by new owner Saks.

    The buffet is on the store’s sixth floor in the Zodiac restaurant. It’s open daily until 3 p.m.; 1618 Main St., 214-573-5800.

    A little coffee bar on the first floor also sells Neiman’s fabled popovers, sandwiches and salads; neimanmarcus.com.

    Blue Mound Cafes

    The five Blue Mound Cafe locations in Fort Worth, Arlington, Saginaw and North Richland Hills will be open and will serve a turkey-and-dressing lunch for about $17.

    Don’t sleep late. Blue Mound starts serving at 10:30 a.m., and the lines will only get longer, particularly in neighborhoods with few other cafes like Saginaw and North Richland Hills.

    Co-owner Dustin Bunney said Blue Mound lined up 300 turkeys for lunch or its take-home family dinners.

    Blue Mound Cafe is at 4120 W. Vickery Blvd. or 3701 E. Belknap St., Fort Worth; 5410 S. Blue Mound Road, Saginaw; 4650 Little Road, Arlington; or 6455 Hilltop Drive at Rufe Snow Drive, North Richland Hills.

    Boulevard Cafe in North Richland Hills is open and will serve an $18.99 lunch including pie.

    Rex’s Bar & Grill in Fort Worth has a $27.99 lunch and dinner featuring herb-garlic-roasted turkey, and also has a giant TV on a dog-friendly patio. Neighbor Ol’ South Pancake House is also open.

    The high-dollar dinners

    Prime steak and seafood houses with tables available as of midweek: B&B Butchers, Capital Grille (Fort Worth and Southlake), Del Frisco’s Double Eagle, Eddie V’s, the Keg, Keller Chophouse, Lonesome Dove, Mercury Chophouse, Rosebud, Ruth’s Chris, Toro Toro, Truluck’s and Wicked Butcher.

    The Gaylord Texan hotel still has tables. So do both the Live by Loews! hotel and Loews Arlington hotel, next to AT&T Stadium amid the Dallas Cowboys game atmosphere.

    But the Omni and Crescent hotel brunch buffets, the Bowie House and 97 West at the Drover are mostly booked.

    • Warren Buffett once joked he would have faced a fast-food Thanksgiving without the 2008 bailouts.

    • “If the government hadn’t acted, I would be eating Thanksgiving dinner at McDonald’s,” he quipped.

    • Buffett often eats McDonald’s for breakfast, and owns one of the restaurant chain’s gold cards.

    Warren Buffett would have celebrated Thanksgiving with a Big Mac, fries, and a milkshake in 2008 if US officials hadn’t bailed out the banks, he joked in a CNBC interview in 2010.

    “If the government hadn’t acted, I would be eating Thanksgiving dinner at McDonald’s,” he quipped.

    The billionaire investor and Berkshire Hathaway CEO was underscoring the enormous threat posed by the financial crisis in 2008. However, few would put it past him to follow through on a fast-food Thanksgiving.

    Buffett typically grabs breakfast at McDonald’s during his morning drive to the office, opting for a pricier bacon-egg-and-cheese biscuit if he’s feeling especially wealthy. He also carries one of the restaurant chain’s gold cards, which entitles him to free McDonald’s meals for life in his hometown of Omaha, Nebraska.

    “That’s why the Buffett family has Christmas dinner at McDonald’s,” he joked in a CNBC interview in 2007.

    Buffett isn’t shy about showing his love for McDonald’s or his thriftiness — even when he’s spending time with Bill Gates, one of the wealthiest men in the world.

    “Remember the laugh we had when we traveled together to Hong Kong and decided to get lunch at McDonald’s?” Gates wrote in a public letter to Buffett in 2017. “You offered to pay, dug into your pocket, and pulled out…coupons!”

    Giving thanks to the government

    Buffett joked about celebrating Thanksgiving at McDonald’s shortly after he praised the US government’s financial-crisis interventions in a New York Times op-ed article.

    “The challenge was huge, and many people thought you were not up to it,” he wrote. “Well, Uncle Sam, you delivered.”

    The investor signed the letter “Your grateful nephew, Warren.”

    There are few people more qualified than Buffett to judge the federal response in that period. When credit markets seized up, Berkshire invested billions of dollars in blue-chip companies including Goldman Sachs and General Electric, and it loaned much-needed cash to ailing businesses such as Harley-Davidson.

    The investor also called Treasury Secretary Hank Paulson in October 2008 to suggest the US government invest directly in the banks instead of only buying their assets, inspiring a program that might have staved off an even deeper recession.

    What Does It Mean to Care About COVID Anymore?

    After nearly three years of constantly thinking about COVID, it’s alarming how easily I can stop. The truth is, as a healthy, vaxxed-to-the-brim young person who has already had COVID, the pandemic now often feels more like an abstraction than a crisis. My perception of personal risk has dropped in recent months, as has my stamina for precautions. I still care about COVID, but I also eat in crowded cafés and go mask-free at parties.

    Heading into the third pandemic winter, things have changed. Most Americans seem to have tuned out COVID. Precautions have virtually disappeared; except for in the deepest-blue cities, wearing a mask is, well, weird. Reported cases are way down since the spring and summer, but perhaps the biggest reason for America’s behavioral let-up is that much of the country sees COVID as a minor nuisance, no more bothersome than a cold or the flu.

    And to a certain degree, they’re right: Most healthy, working-age adults who are up-to-date on their vaccinations won’t get severely ill—especially now that antivirals such as Paxlovid are available. Other treatments can help if a patient does get very sick. “People who are vaccinated and relatively healthy who are getting COVID are not getting that sick,” Lisa Lee, an epidemiologist at Virginia Tech, told me. “And so people are thinking, Wow, I’ve had COVID. It wasn’t that bad. I don’t really care anymore.”

    Still, there are many reasons to continue caring about COVID. About 300 people are still dying every day; COVID is on track to be the third-leading cause of death in the U.S. for the third year running. The prospect of developing long COVID is real and terrifying, as are mounting concerns about reinfections. But admittedly, these sometimes manifest in my mind as a dull, omnipresent horror, not an urgent affront. Continuing to care about COVID while also loosening up behaviors is an uncomfortable position to be in. Most of the time, I just try to ignore the guilt gnawing at my brain. At this point, when so few people feel that the potential benefit of dodging an infection is worth the inconvenience of precautions, what does it even mean to care about COVID?

    In an ideal epidemiological scenario, everyone would willingly deploy the full arsenal of COVID precautions, such as masking and forgoing crowded indoor activities, especially during waves. But that kind of all-out response no longer makes sense. “It’s probably not realistic to expect people to take precautions every time, perpetually, or even every winter or fall, unless there is a particularly concerning reason to do that,” Jennifer Nuzzo, an epidemiologist at Brown University, told me.

    But, now more than ever, we must remember that COVID is not just a personal threat but a community one. For older and immunocompromised people, the risks are still significant. For example, people over 50 account for 93 percent of COVID-related deaths in the U.S., even though they represent just 35.7 percent of the population. As long as the death rate remains as high as it is, caring about COVID should mean orienting precautions to protect them. This idea has been around since the pandemic began, but its prominence faded as Americans put their personal health first. “If you’re otherwise healthy, it’s so easy just to think about yourself,” Lee said. “We have to think very carefully about that other part of infectious disease, which is the part where we can potentially hurt other people.”

    Orienting behavior in this way gives low-risk people a way to care about COVID that doesn’t entail constant masking or skipping all indoor activities: They can relax when they know they aren’t going to encounter vulnerable people. Like the productivity adage “work smarter, not harder,” this perspective allows people to take precautions strategically, not always. In practice, all it takes is some foresight. If you don’t live with vulnerable people, make it second nature to ask: Will I be seeing vulnerable people anytime soon? If the answer is no, do whatever you’re comfortable with given your own risk. If you are a healthy 30-something who lives alone, going to a Friendsgiving with other people your age is different from spending Thanksgiving dinner with parents and grandparents.

    If you will be seeing someone vulnerable, the most straightforward way to avoid giving them COVID is to avoid getting infected yourself, which means wearing a good mask in public settings and minimizing your interactions with others the week before, in what some experts have called a “mini-quarantine.” Not everyone has that luxury: Parents, for example, have to send their kids to school.

    Spontaneous interactions with vulnerable people are trickier to plan for, but they follow the same principle. On a crowded bus, for example, “there’s no question that if you’re close enough to someone who could be hurt by getting COVID and you could have it, then, yeah, a mask is the way to go,” Lee said. Of course, it isn’t always possible to know when someone is high-risk; young people, too, can be medically vulnerable. There’s no clear guidance for those situations, but remaining cautious doesn’t require much effort. “Carry a mask with you,” Lee said. “It’s not a big lift.”

    Get boosted—if not for yourself, then for them. Just 11.3 percent of eligible Americans have gotten the latest, bivalent shot, which potentially reduces your chances of getting COVID and passing it along. It also means getting tested, so you know when you’re infectious, and being aware of respiratory symptoms—of any kind. Alongside COVID, the flu and RSV are putting many people in the hospital, especially the very young and the very old. No matter how low your personal risk, if you have symptoms, avoiding transmission is crucial. “A reasonable thing to prioritize is: If you have symptoms, take care to prevent it from spreading,” Caitlin Rivers, an epidemiologist at Johns Hopkins University, told me.

    As we move away from a personal approach to COVID, we have an opportunity to expand the idea of what caring looks like. Low-risk people can, and should, take an active role in bolstering the protection of vulnerable people they know. In practical terms, this means ensuring that people in your life who are over 50—especially those over 65—are boosted and have a plan to get Paxlovid if they fall sick, Nuzzo said. “I think our biggest problem right now is that not everybody has enough access to the tools, and that’s a place where people can help.” She noted that she is particularly concerned about older people who struggle to book vaccine appointments online. Caring “doesn’t mean abstaining, per se. It means facilitating. It means enabling and helping people in your community.” This holiday season, caring could mean sitting down at a computer to make Grandma’s booster appointment, or driving her to the drugstore to get it.

    If you have lost your motivation to care about COVID, you might find it in the people you love. I didn’t feel a personal need to wear a mask at the concert I attended yesterday, but I did it because I don’t want to accidentally infect my partner’s 94-year-old grandfather when I see him next week. To have this experience of the pandemic is a privilege. Many don’t have the option to stop caring, even for a moment.

    Barring another Omicron-esque event, we thankfully won’t ever return to a moment where Americans obsess over COVID en masse. But this virus isn’t going away, so we can’t escape having a population that is split between the high-risk minority and the low-risk majority. Rethinking what it means to care allows for a more nuanced and liveable idea of what responsible behavior looks like. Right now, Nuzzo told me, the language we use to describe one’s position on COVID is “black-and-white, absolutist—you either care or you don’t.” There is space between those extremes. At least for now, it’s the only way to compromise between the world we have and the world we want.

    As much as we look forward to holiday parties and dinners, many of us suspect we’ll overindulge and gain weight.  

    Indeed, the average American eats and drinks 4,500 calories and 229 grams fat (as much as in 3 sticks of butter) on a traditional Thanksgiving day? Studies show that the average American gains 1 pound during the winter holiday season. Year after year, they  can add up, and contribute to overweight or obesity later in life.

    Although we may not all gain weight over the holidays, there is no question we tend to eat and drink more — and exercise less. With the hustle and bustle of holiday shopping, parties and festive traditions, healthy eating and exercise are usually the first things to go.

     

     

    No one wants to be on a strict diet during the holidays. We want to enjoy the bounty of traditional favorite foods. How can you enjoy the holidays without gaining weight? Dietitians say it’s not so hard, with a little planning.

    • First,  change your mindset. If you’ve been trying to lose weight, when mid-November rolls around, shift your focus from weight loss to weight maintenance. “The holiday season is tough enough to just maintain your weight let alone try to lose weight. So do yourself a favor,” says Joan Salge Blake, MS, RD, Boston University clinical assistant professor. “Allow yourself a few treats and set your goal on weight maintenance so you can enjoy the holiday foods and wait until the New Year to get back on your weight loss plan.”
    • Second, get strategic with calories. If  you are the host of dinners and parties, trim calories wherever you can without compromising tradition or flavor. You’ll help everyone enjoy the bountiful food without unneeded calories. Keep in mind that it is much harder to lose weight than it is not to gain it in the first place.

    Here are 10 tips to lighten up your holiday meals.

    1. Shop Smart for Healthy Holidays

    Plan your menu to include plenty of fruits, vegetables, lean meats, seafood, whole grains, and low-fat dairy.

    Consult the nutrition label to choose foods rich in nutrients but lower in fat, calories, and sugar.

    To shave calories, go easy when adding nuts, cheese, cream sauces, gravy, butter, and whipped cream.

    2. Start the Party Light

    Most appetizers tend to be loaded with calories. And it is so easy to overeat them before the meal.

    Make it easier on your guests by offering light and satisfying appetizers. For delicious yet healthy appetizers, serve shrimp cocktails, whole-grain crackers with reduced-fat cheese, vegetables with a low-fat yogurt dip, or fresh fruit skewers.

    3. Harness the Diet Power of Produce

    Add more simple vegetable and fruit dishes to your menu instead of heavy dishes with sauces. Your guests will fill up on healthy fiber without lots of extra calories.

    For example, green bean almandine with a squeeze of lemon is healthier than traditional green bean casserole. Simple peas or corn are healthier than creamed peas or corn. But if you must have casserole, use low-fat soup, increase the veggies, and top it with a crunchy whole-grain cereal instead of fried onions.

    4. Go Frozen in Winter

    Fresh is usually the best when fruits and vegetables are in season. But when prices are higher in winter, head to the frozen food aisle.

    “Frozen fruits and vegetables are usually less expensive and can be more nutritious because they are picked at their peak ripeness and frozen immediately” says  Sarah Krieger, RD. Buy frozen produce in bags, use only what you need, and save more by not wasting spoiled produce.

    Canned foods can also be a healthy option. Read the nutrition labels to find fruits and vegetables with less added sodium and sugar, Krieger says. Reduce the sodium and sugar solutions even more by rinsing the vegetable or fruit under cold water before you cook.

    5. Respect Special Requests

    As you plan your holiday menu, ask if guests have any food preferences or intolerances. For example, a dear friend may be lactose intolerant. A favorite cousin may have cut red meat from his diet.

    You can’t please everyone. But you can include a wide variety of healthy foods. Then, your guests can pick and choose, filling their plate with a satisfying meal no matter their food issue.

    6. Shave Calories With Simple Swaps

    Create healthier versions of your holiday favorites by shaving calories wherever you can.

    “Simple swaps of lower-fat ingredients are easy ways to save calories — and no one will even notice the difference” says Cheryl Forberg, RD.

    Use chicken stock, fat-free yogurt, light cream cheese, and low-fat milk in place of high-fat ingredients. Substitute non-fat yogurt or applesauce for oil in baked goods.

    7. Roast or Grill for Rich Flavor With Fewer Calories

    Roasting or grilling meat, seafood, vegetables, and potatoes, is a simple, low-calorie cooking style that brings out the natural sweetness and flavor in foods.

    Roasted sweet potatoes with a sprinkle of cinnamon sugar and a spritz of butter spray are delicious substitutes for the traditional calorie-laden casserole.

    Grilled pork chops served with a mango salsa are great to replace pork chops slathered in mushroom cream.

    8. Serve Healthier Desserts

    For dessert, try chocolate-dipped strawberries for a colorful and delicious finale.

    If you want to offer pie, choose the healthier pumpkin pie. Make it with non-fat evaporated milk. Top it with fat-free whipped topping.

    9. Spritz Your Drinks

    Eggnog and other holiday beverages can add a huge number of calories. Offer your guests plenty of low-cal beverages such as diet soda, sparkling water, or a low-calorie punch.

    Alcohol releases inhibitions and can increase hunger. That’s a combination that can lead to eating more than you planned. So do yourself and guests a favor: Offer simple alcohol choices such as wine and beer without the heavy cocktail mixers. And make sure you have mocktails or other no-alcohol options for those who don’t drink.

    10. Plan and Scan to Avoid Holiday Weight Gain

    “In anticipation that you will be eating and drinking more than usual, try to trim your calories and make sure you fit in fitness everyday so you can enjoy a ‘controlled’ feast without the guilt” says Joan Salge Blake, MS, RD, clinical assistant professor at Boston University.

    “Scan the buffet and fill your plate with foods that are simply prepared, without sauces or fried, sit down and take your time to taste and savor every bite,” she says. Resist the urge to go back for more by waiting at least 20 minutes for your brain to register that you are comfortably full. If you are still hungry, eat more vegetables and drink water.

    Remember, the holidays are marked with many traditions, but the real meaning is about spending time with family and friends.

    If you keep these tips in mind, you’ll get through the holidays without gaining a pound. And if you do splurge, just  get right back to normal eating and exercising, and try to do make better choices at the next party.
