LIMA BEANS WITH HAM OVER RICE – (BUTTER BEANS)

    [ad_1]

Lima Beans, also known as Butter Beans, are delicious. This easy dish is comfort food at its best and a fantastic way to enjoy a hearty meal.

Lima Beans and Ham - Butter BeansLima Beans and Ham - Butter Beans

If you love this hearty dish, you will also love this delicious Pork Roast and White Beans. It’s one of our most popular crock pot dishes. Of course both require cornbread!

    ❤️WHY WE LOVE THIS RECIPE

We love easy recipes with lots of taste and won’t keep you in the kitchen for hours. This is one of those recipes, and it’s budget-friendly too. This Butter Bean recipe is perfect on a cold day and it reheats well too. This recipe can be made in the crock pot too!

ARE LIMA BEANS AND BUTTER BEANS THE SAME?

Yes, they are the same bean, but they are sometimes picked at different stages of maturity. They also go by different names depending on the region. In the South, they are known more as Butter Beans. (source)

    🍴KEY INGREDIENTS

    • Bag of large dried lima beans
    • Ham hock with some meat still on the bone or 1 cup chopped ham of your choice
    • Onion, chopped
    • Minced garlic
    • Pepper
    • Salt
    • 2 – 4  cups rice, cooked according to package directions depending on how many people you are serving (See Tip Section)

    SWAPS

You could always use bacon as the meat source and add other seasonings your family likes. You can just eat these as soup beans and not serve them over rice, that is your decision.

    🍽️HOW TO MAKE

This dish is very easy to make, the longest part of the process is soaking the beans, which we do overnight.

    COOKING STEPS

    Step 1
Rinse and sort beans and soak them overnight in a large pot of water. Next morning, drain the water and rinse the beans.

    Step 2
Add six cups of fresh water, the chopped onion, garlic,  pepper, and ham or ham hock.  Simmer beans with lid tilted on pot for about 3 hours until tender, then add salt. (I always salt dried beans after they are done. They take longer to cook if you salt them during the cooking process.)   If using a ham hock, remove it from pot and take the ham from the bone and add back to the beans. Serve over rice.

    Step 3 – Crock Pot
These beans can be cooked in the crock pot as well.  Cook on high for 4 hours or low for about seven hours until tender.

    ⭐TIP

When making rice, 1 cup of uncooked rice, will make 2 cups cooked. So remember that when making rice for this dish. If you want 2 cups of cooked rice for this dish, then you will only need to make 1 cup of rice.

RECIPE VARIATIONS – SOUTHERN BUTTER BEANS

    • You can add different seasonings if you are a fan of heat, then add some Cajun seasoning to the pot. Here is our recipe for cajun seasoning.
    • You can use any meat you like: bacon, smoked sausage, andouille sausage (for spice)
    • You could also add in some vegetables to make it more soup/stew like. Celery is always a good addition or carrots, etc.
    • You could also cook the beans in broth, beef or chicken for added flavor.

    ❓FREQUENTLY ASKED QUESTIONS

Do you rinse the beans in hot or cold water?

You rinse them in cold water.

How do you know when the beans are done?

Some people like their beans really cooked and others like them with less mush. It’s really up to you to find what you like best.

    STORING AND REHEATING

We store these in a big pot in the fridge and reheat on the stove. If we made them in the crock pot, we just put them back on low until they are warm.

    SERVING SIZE

This makes around 8 servings and you can always stretch this meal with the rice.

  • MANDARIN ORANGE SALAD

    MANDARIN ORANGE SALAD

    [ad_1]

This Mandarin Orange Salad is a wonderful addition to any holiday or potluck. It’s so easy to make and everyone loves it. Super versatile!

    Mandarin Orange SaladMandarin Orange Salad

If you love mandarin oranges, you need to try this Mandarin Orange Cake. It’s one of our most popular and it’s a classic for a reason! It’s perfect for any gathering and always a hit!

    ❤️WHY WE LOVE THIS RECIPE

I love how pretty this mandarin orange salad is and how good it looks on a buffet table in a pretty bowl.  You can just about add any fruit and make it your own.  It keeps for several days in the refrigerator.  You could double the recipe for a large crowd.

    🍴KEY INGREDIENTS

    • Cool whip
    • Vanilla instant pudding, dry (do not make the pudding add the dry mix)
    • Mandarin oranges, drained
    • Crushed pineapple, undrained
    • Miniature marshmallows
    • Coconut
    • Chopped green or red seedless grapes
    • Chopped maraschino cherries

    SWAPS

This mandarin orange salad is very versatile. You can swap out any fruit in this dish and leave it out if you don’t like it. If you are not a fan of coconut, leave it out! Use only mandarin oranges and the pudding mix, whipped topping and marshmallows. Make it your own!

    🍽️HOW TO MAKE

The hardest part about this recipe is getting out the ingredients!

    COOKING STEPS

Mix together the cool whip and dry vanilla instant pudding with a spoon.  Fold in the rest of the fruit and mix with a spoon.  You may want to leave out some of the fruit to decorate the top of your salad. Makes 6 cups.

    ⭐TIP

Be sure to drain the mandarin oranges; they come in a lot of liquid, and that would be too much for this salad. The crushed pineapple doesn’t so it’s okay, BUT if you use chopped pineapple or a fruit in a lot of liquid you want to drain it.

APPLE BISCUITS – The Southern Lady Cooks -Delicious with Honey

    [ad_1]

These apple biscuits are so easy to make, and adding cheese is lovely! Great right out of the oven with butter and honey!

    Cheese Apple BiscuitsCheese Apple Biscuits

If you have never tried cheese and apples together, you need to, it’s a delicious combination. This Cheesy Apple Casserole is one of our favorite side dishes. Everyone who has tried it loves it and it has great reviews.

    ❤️WHY WE LOVE THIS RECIPE

We love to start our day with biscuits, and if you have followed us for any amount of time, you know that biscuits are one of our favorites. These were a great addition, they are easy to make and a wonderful way to enjoy apples!

    🍴KEY INGREDIENTS

    • All-purpose flour
    • Baking powder
    • Baking soda
    • Salt
    • Sugar
    • Butter
    • Egg
    • Buttermilk
    • Apples, peeled and grated
    • Shredded cheese of your choice (I used cheddar)

    SWAPS

You can switch out the cheese or leave it out altogether. You could use milk to make these biscuits but we do like the buttermilk, it has a better fat content for making biscuits.

    🍽️HOW TO MAKE

These biscuits are easy to make; if you are new to making biscuits, the flour will always vary. All flour is made differently so you may need to add more to reach your desired consistency.

    COOKING STEPS

    Step 1
In a large bowl whisk together the flour, baking powder, baking soda, salt and sugar.  Cut the butter into the flour until it resembles crumbs.

    Step 2
Add egg and buttermilk mixing with a spoon.  Fold in grated apples and cheese.

    Step 3
Pour dough out onto a floured surface.  Pat to about 1/4 to 1/2 inches thick. (I just use my hands and pat the dough out.)  Cut with biscuit cutter into rounds.

    Step 4
Place on a sprayed baking sheet and bake in a preheated 400-degree oven for about 15 minutes until brown on top.

    ⭐TIP

When making biscuits, please remember that all flours are different. Flour comes from different regions, and it’s always going to be dependent on how much you use and the way the flour is made. So if a recipe calls for 2 cups, you may need 2.5 or even 3. You must add flour until the dough is the consistency you need to make the biscuits.

    RECIPE VARIATIONS

We love biscuits and some of our most popular are:

     SERVE THIS WITH

Do you grate the cheese yourself?

    ❤️WHY WE LOVE THIS RECIPE

This bread has a wonderful flavor and it’s easy to make. It’s a quick bread so you just throw it all together and bake. It would be the perfect addition to any breakfast or brunch but could also be a dessert. I goes great with coffee!

    • Salt
    • Baking powder
    • Baking soda
    • White granulated sugar
    • Eggs
    • Butter
    • Coconut extract (could use vanilla extract)
    • Buttermilk
    • Sweetened flake coconut

    SWAPS

You could use unsweetened coconut if you want to, we just like the sweetened version. I think this recipe would also work fine with regular milk, but the buttermilk really makes it moist.

    🍽️HOW TO MAKE

So easy to make and not a lot of ingredients! This coconut bread is a definite winner!

    COOKING STEPS

    Step 1
Whisk together the flour, salt, baking powder and baking soda and set aside.  Cream sugar, butter and eggs in a mixing bowl.

    Coconut BreadCoconut Bread

    ⭐TIP

Don’t over-mix the bread; it can cause it to dry out during the cooking process. You can also use parchment paper instead of cooking spray in your pan if you prefer.

  • SOUTHERN SHRIMP AND GRITS

    SOUTHERN SHRIMP AND GRITS

    [ad_1]

Shrimp and Grits is a classic Southern dish full of flavor. Creamy grits, topped with delicious sauteed shrimp and topped with bacon. You can’t go wrong with this dish!

    Shrimp and GritsShrimp and Grits

If you love this classic dish of Shrimp and Grits, you will also love this Southern Red Rice. It’s a classic from Charleston and absolutely delicious.

    ❤️WHY WE LOVE THIS RECIPE

This dish is loaded in flavor but doesn’t take hours, which is always a huge plus. This dish was primarily a breakfast dish for a long time, but many people now enjoy it for dinner. So many things we love bout this dish but the flavor is wonderful and the grits are creamy. This dish is a Southern favorite and has been around a long time for a reason.

    🍴KEY INGREDIENTS

    • Bacon
    • Medium or large shrimp peeled and deveined
    • Bacon drippings
    • Butter
    • Green onion
    • Green pepper
    • Celery
    • Garlic
    • Cajun seasoning (check out our recipe to make your own Cajun seasoning)
    • Black pepper
    • Hot sauce or pinch cayenne
    • Grits:
    • Milk (can use whole or 2 per cent)
    • Butter
    • Salt
    • Old-fashioned grits – NOT instant
    • Sharp cheddar cheese
    • Salt and Pepper to taste

    SWAPS

You can switch out the cheese to different flavors if you like, but the sharp cheddar gives it a good taste. Some people don’t like celery, so leave it out if you like. You can use turkey bacon if you want a lower-fat dish, but the pork bacon, cooked to a crisp, is our favorite.

    🍽️HOW TO MAKE

This dish is very easy to make, and you can make the grits while you cook the shrimp!

    PREPARATIONS

Organize all of your ingredients makes it much easier.

    COOKING STEPS

    Step 1
Cook the bacon, remove from pan and set aside.  Combine two tablespoons bacon drippings, 1 tablespoon butter, green onion, green pepper, celery, garlic, Cajun seasoning, and black pepper in a skillet and cook until vegetables are tender.  About 8 to 10 minutes.  Add shrimp and hot sauce or cayenne and cook about four more minutes until shrimp are done.  Set aside and prepare grits

    Step 2
Put milk, butter and salt in a saucepan and bring to a boil.  Using a whisk and stirring constantly add the grits a little at a time.  This keeps the grits from clumping.  Lower the heat, cover and cook five to six minutes or until grits thicken.  Remove from heat and gradually stir in cheddar cheese.  Stir until cheese melts.

    HOW TO PLATE

Put several spoonfuls of grits in a bowl and layer some shrimp mixture over the top.  Crumble bacon on top of the shrimp and garnish with chopped green onions.

    Shrimp and GritsShrimp and Grits

    ⭐TIP

If grits get too thick you can always add a little water to thin them, but we actually like them to have a little thicker consistency. It’s all about what your family likes.

We also use Old Fashioned Grits, not instant. The Old Fashioned Grits is the way to go in this recipe.

You may also love these Garlic Cheese Grits, this recipe is wonderful.

Go for the larger shrimp when making this dish. We also like good bacon; it’s just worth it to splurge a little and get great ingredients for this classic.

A hoecake is basically fried cornbread instead of baked. Hoecakes are fried like a pancake and can be served with syrup or honey or savory with collard greens or soup.

Are hoecakes and Johnny cakes the same thing?

Most are regional differences as in where they originated. The johnny cake originated in the Caribbean.

No, they are flat and crisp and don’t rise.

    STORING AND REHEATING

We store in an airtight container and heat for a few seconds in the microwave.

    HOW TO EAT HOECAKES?

We enjoy hoecakes as a side to soup or stew or hearty dish. That is our favorite way to enjoy hoecakes. Some people enjoy them for breakfast with butter and syrup. They are wonderful both ways. Make them for breakfast and then serve what is left over with a a delicious crock pot soup that afternoon!

    • Stew meat (Could use leftover roast beef, too)
    • Onion
    • Beef broth
    • Water
    • Carrots

If you make a roast and have any leftovers, make this soup! Roast is wonderful in this recipe.

    🍽️HOW TO MAKE

Many people will first brown the meat in a pan, but we don’t always do that. We add all the ingredients to a big pot and let it cook! The meat really soaks up the flavors of the juice this way. However we have seared the meat if we want it to cook faster, it’s really your personal preference.

    COOKING STEPS

Bring all ingredients to a boil in a large pot on top of the stove.  Decrease the heat to simmer and let cook 1 1/2 hours until meat and potatoes are done.

    CROCK POT VERSION

Just cook 7 or 8 hours on low or 4 to 5 hours on high.

    Coconut Macaroons-The Southern Lady Cooks-Only 3 Ingredients

    [ad_1]

These super easy coconut macaroons are so good and a great addition to any gathering. Perfect for afternoon coffee or tea.

3- Ingredient Coconut Macaroons3- Ingredient Coconut Macaroons

If you love easy and delicious recipes, you will want to check out these delicious Southern Pecan Pralines. They are a classic for a reason and go great with these coconut macaroons. Only a few ingredients and easy to make.

    ❤️WHY WE LOVE THIS RECIPE

This recipe is only three ingredients and takes about 15 minutes to put together, so that is a huge plus. These macaroons are delicious and only take about 10-12 minutes to bake, so you have a great little treat in around 30 minutes. Easy recipes are always a plus and not everything in the kitchen should take a long time or be hard.

    🍴KEY INGREDIENTS

    • Sweetened Shredded Coconut
    • Sweetened Condensed Milk
    • Vanilla Extract
    • Toppings (optional)

    SWAPS

The one thing you could swap out in this recipe is different extracts. I think almonds go great with coconuts, so that would be a great swap. You can also add what you like on the top, one addition could be chocolate chips if you want some chocolate with the coconut.

    🍽️HOW TO MAKE

These could be more simple to make, but they are a little messy!

    COOKING STEPS

    Step 1
Combine coconut flakes, vanilla extract and condensed milk in a large bowl.  Line a baking sheet with parchment paper.

    Step 2
Use either an ice cream scoop or your hands to roll into a walnut size (walnut out of the shell) ball and pat down a little and place on lined baking sheet. Place a pecan or half a cherry on the top or whatever you wish to use as a topping.

    Step 3
Bake in preheated 350-degree oven for 10 to 12 minutes or until edges are browned.  Remove from baking sheet immediately when you take them out of the oven and let cool.  Makes about 2 1/2 dozen macaroons.

3- Ingredient Coconut Macaroons3- Ingredient Coconut Macaroons

    ⭐TIP

If you are rolling these out with your hands, I always spray a little cooking spray on my hands to keep them from sticking as badly. We also think these are wonderful cold, so once they cool, we pop them in the fridge, which helps them to cool down and they seem to hold the ball shape well too.

    SERVE THIS WITH

These little treats go great with just about any other snack, but if you are making them for an event like a baby shower, wedding shower or the holidays you may want to add:

    Thumbprint CookiesThumbprint Cookies

If you love these cookies, definitely check out our Classic Sugar Cookies. They are a wonderful Christmas cookie and so fun to decorate during the holiday season.

    ❤️WHY WE LOVE THIS RECIPE

These thumbprint cookies are delicious sugar cookies, rolled in sugar (which you can leave off) and then your favorite jam in the center. They have a wonderful taste and I don’t think they are “overly” sweet. They have the perfect amount of sweetness and are great for Christmas, Easter, Mother’s Day, etc.

We love to add these cookies with all of our other Christmas cookies into decorative tins to give to our neighbors for Christmas. These make a wonderful gift.

    🍴KEY INGREDIENTS

    • Powdered sugar
    • Butter, softened
    • Egg
    • Vanilla extract
    • Almond extract
    • Salt
    • All-purpose flour
    • White granulated sugar
    • Jams, preserves or jellies.

    SWAPS

You could switch out the extract in this recipe and use coconut, maple, etc. Use whatever you think will be a great flavor with the jam you choose.

    🍽️HOW TO MAKE

The longest step in making these cookies is chilling the dough for 30 minutes. You want the fat to harden in the dough, so you can’t skip that step.

    COOKING STEPS

    Step 1
Mix powdered sugar, butter, egg, vanilla extract, almond extract and salt with mixer.  Fold in flour with a spoon and make ingredients into a large ball.  Refrigerate for 30 minutes.

    Step 2
Pinch off pieces of dough roll into small balls with your hands. I pinch off about a tablespoon of dough for each cookie. Have the 1/3 cup of granulated sugar in a bowl. Roll the balls in the sugar and place on a baking sheet.

    Step 3
I use the end of a wooden spoon to make a hole in the middle of the cookie balls.  You can use your thumb or whatever works for you.  Add your favorite jams, preserves or jellies to the center hole in each cookie.  Bake in a 325-degree preheated oven for 15 minutes.

Note: I used blackberry jam and apricot preserves in this recipe. Makes about 2 dozen cookies depending on the size you make them. You can use one and one-half teaspoons of vanilla extract in the recipe if you don’t have the almond extract.

    ⭐TIP

If the dough gets warm and to hard to work with, just put it back into the refrigerator for a bit. If your dough is sticky, you need to add more flour to work with it.

This recipe for bourbon balls is an old-fashioned classic! This Southern favorite is one anyone will love. Being from Kentucky, we know all about bourbon balls!

    Bourbon BallsBourbon Balls

If you love this candy, you will also love these No Bake Orange Balls. They are an old-fashioned classic only a few ingredients and are absolutely wonderful for the holiday season!

    ❤️WHY WE LOVE THIS RECIPE

These bourbon balls are a classic candy that has been around for many many years. They make a wonderful gift during the holiday season. They are only a few ingredients, not hard to make and always a hit. Put them in a pretty tin and give them as a gift!

    🍴KEY INGREDIENTS

    • unsalted butter
    • powdered sugar
    • crisco
    • pecans, finely ground
    • 100 proof Kentucky bourbon (can use more or less and could use another kind of bourbon) *see swaps
    • vanilla extract
    • semi-sweet chocolate chips
    • pecan halves for garnish

    SWAPS

If you are not a bourbon fan or don’t have bourbon, you can use apple or orange juice in it’s place. We have made them with apple juice, and they were so good! Everyone loved them. You don’t have to use crisco but we find it adds a smoothness to the chocolate that is helpful and makes it cover the balls well.

🍽️HOW TO MAKE KENTUCKY BOURBON BALLS

These are easy to make but they do have a few steps of putting them in the refrigerator to chill. So that part adds time to the process.

    DIRECTIONS

    Step 1
Cream butter and sugar.  Add pecans, bourbon and vanilla extract mixing well with mixer.  Chill this mixture in the freezer for 30 minutes or refrigerator for an hour.

    Step 2
Remove from freezer and make into balls using about a teaspoon of mixture for each one.  Place on wax or foil paper on cookie sheet and put back in the freezer for 30 more minutes or refrigerator for an hour.

    Step 3
When 30 minutes are up, melt the chocolate chips and crisco about 2 minutes in the microwave. (The smaller the container or bowl you use to melt the chips the easier it is to dip the bourbon balls in the chocolate).  Some people use a toothpick to hold the bourbon balls. It is easier for me to just drop them in the chocolate and use a wooden spoon or fork to cover.

    Step 4
Remove each bourbon ball and place on a clean piece of wax paper or foil on cookie sheet. Add a pecan half on top.  Place in refrigerator for at least 30 minutes until chocolate hardens.  Store in refrigerator.  Makes about 15-20 bourbon balls, depending on the size you make them.

    Bourbon BallsBourbon Balls

    ⭐TIP

These authentic Kentucky bourbon balls are always a hit and this recipe is one many people love. Just check the comments. If the chocolate begins to get too hard for dipping, just heat it up again and stir it well. If the balls start to warm before you dip them in the chocolate, you can always set them back in the fridge to harden up some. Take your time, and we put them in and out of the fridge a few times so we can get the coated the way we like.

When melting the chocolate in the microwave, only do about 20-30 seconds at a time and then stir.

    RECIPE VARIATIONS

If you read the swaps above you can switch out the bourbon, and you could also switch out the vanilla with other flavors too. However, for authentic Kentucky Bourbon Balls this is the way to make them.

    ❓FREQUENTLY ASKED QUESTIONS

Is the 1/2 cup of pecans in the recipe before chopping?

That is correct, measure out a 1/2 cup and then chop them up for the recipe.

Can you taste the bourbon in the recipe?

Yes, you can taste it since these are no bake, the bourbon isn’t “baked” out.

Do I need to keep them in the fridge?

No, you do not need to keep them in the fridge but we think they are great cold, so we do.

    STORING

  • CROCK POT CRANBERRY SMOKIES – 3 Ingredients

CROCK POT CRANBERRY SMOKIES – 3 Ingredients

    [ad_1]

These Three Ingredient Crock Pot Cranberry Smokies are the perfect appetizer and couldn’t be easier to make. The hardest part is opening the can of cranberry sauce.

Crock Pot Cranberry SmokiesCrock Pot Cranberry Smokies

If you love simple appetizers you will also love this Olive Nut Spread. It’s wonderful on wheat thins or small rolls.

    ❤️WHY WE LOVE THIS RECIPE

The taste of the little smokies with the chili sauce and cranberry sauce is delicious. It’s so easy which is always a plus and you don’t need any extra stuff when serving. You can easily leave it in the crock pot, set you some toothpicks and it’s perfect for a party.

    🍴KEY INGREDIENTS

    • Little Cocktail Smokies
    • Chili Sauce
    • Cranberry Sauce

    SWAPS

You can always use grape jelly and many people have in the past but we do love the cranberry flavor too.

    🍽️HOW TO MAKE

This really doesn’t need a “how to make” section since you just dump everything in the crock pot. That is how simple this is.

    COOKING STEPS

    Step 1
Open can of cranberry sauce and dump everything in the crock pot! That easy! We do use 2 packages of the smokies, so 24 ounces. We couldn’t find the larger package when I was remaking this recipe.

    ⭐TIP

The little smokies come cooked, so they really just have to heat up with the chili sauce and cranberry sauce. You just want them to have time to marinate in the sauce. You can put these in any size crock pot, just be aware if its a large one and the smokies are shallow, they will cook much faster and could burn. So you will want to stir them.

    RECIPE VARIATIONS

Someone commented you can add a can of pineapple, we have never tried that, but it sure sounds delicious.

    SERVE THIS WITH

These easy appetizers go great with our Amish Onion Patties or Hot Artichoke Dip! You can easily double this recipe.

HAM SLIDERS – The Southern Lady Cooks – Best Ever

    [ad_1]

These Ham and Swiss Sliders are some of the best you will ever have. I always have to double the recipe because they go so fast!

Ham and Swiss SlidersHam and Swiss Sliders

If you love these sliders you need to check out our Cheesesteak Sloppy Joe Sliders. They are always a hit too.

    ❤️WHY WE LOVE THIS RECIPE

We love these ham and swiss sliders because they are simple to make and the addition of brown sugar with the mustard gives these the best taste. They are wonderful right out of the oven and I can never eat just one. You can buy deli meat, grab some swiss cheese, a few more ingredients and you have a fantastic appetizer.

    🍴KEY INGREDIENTS

    • Sweet Hawaiian rolls or something similar
    • Deli Ham
    • Swiss Cheese
    • Mayonnaise or Miracle Whip
    • Yellow mustard (Could use honey mustard or spicy mustard)
    • Butter
    • Onion flakes
    • Worcestershire sauce
    • Brown sugar
    • Poppy seeds (optional)

    SWAPS

You could always swap out the meat or the cheese in these sliders. Or make half turkey and cheese and half ham and swiss. I do think the sweetness of the ham is what makes these so good!

    🍽️HOW TO MAKE

These sliders are so easy to throw together, the hardest part is just getting the ingredients out. You can throw these together in five minutes.

    COOKING STEPS

    Step 1
Make your sandwiches by splitting the rolls, spreading with mayo, adding a piece of cheese and ham. Add tops and place in a 9X13 baking dish.

    Step 2
Melt the butter in a small bowl in the microwave, add poppy seeds, mustard, onion flakes and Worcestershire sauce.  Whisk together with wire whisk.  Brush the tops of the rolls using all the mixture.  Sprinkle the brown sugar over the tops after brushing with butter.  Note: I didn’t have any poppy seeds when I remade these for photos, so they are not in the picture and they are optional either way.

    Step 3
Bake in preheated 350 degree oven for 15 to 20 minutes.  Remove the foil and bake uncovered for about 5 minutes.  Makes 12 sandwiches.

    ⭐TIP

Hawaiian King Rolls now makes slider buns and so does Pepperidge Farm, which I think makes this much easier than having to split the rolls. I suggest buying those if you can find them.

    RECIPE VARIATIONS

If you love sliders, then give these Chili Dog Sliders a try! They are so easy to make and you could easily make those at the same time you make these.

    SERVE THIS WITH

If you are making sliders then you will more than likely need other appetizers. We love these Mexican Sausage Balls, Homemade Fried Dill Pickles and Crock Pot Cranberry Smokies.

Ham and Swiss SlidersHam and Swiss Sliders

    ❓FREQUENTLY ASKED QUESTIONS

    Why were my buns soggy?

Once you add the butter mixture, you need to bake them immediately so they won’t be soggy.

Do you have to use the poppy seeds?

No, you can easily leave them out.

    STORING AND REHEATING

We just store these in tupperware in the fridge and reheat in the microwave, unless we are heating the ALL back up we do it in the oven. 350 for a 5-8 minutes should work.

  • COCA COLA CAKE – The Southern Lady Cooks – Southern Recipe

COCA COLA CAKE – The Southern Lady Cooks – Southern Recipe

    [ad_1]

Coca-Cola Cake is a Southern classic. It’s a decadent old-fashioned chocolate cake with rich chocolate frosting that never disappoints.

If you like this cake, you may want to try our lunch lady brownies, old-fashioned sweet chocolate pie, and our Southern chocolate pound cake.

    WHY WE LOVE THIS CAKE

This is a chocolate lover’s dream cake, and makes me happy just to have it in the house!  There are lots of recipes for this cake, but this one is my favorite. The classic cake is so moist because of the coke and buttermilk, and the frosting is fudgy and delicious! The marshmallows are a must in this cake! I promise you’re gonna love this old-fashioned Southern cake.

    🍴KEY INGREDIENTS

    • Sugar
    • All-purpose flour
    • Ground cinnamon (Optional) (I think the cinnamon brings out the chocolate flavor even more)
    • Butter
    • Coca-Cola (I always use regular Coke, do not use diet)
    • Pure cocoa
    • Buttermilk
    • Baking soda
    • Miniature marshmallows
    • Eggs
    • Vanilla extract

    FROSTING INGREDIENTS

    • Butter
    • 100% pure cocoa
    • Coca-cola
    • Powdered sugar ( Note: 1 pound of unsifted powdered sugar= about 4 1/4 cups.  1 lb. of sifted powdered sugar = about 4 3/4 cups. I used 4 cups of unsifted powdered sugar, and it works fine for this frosting)
    • Vanilla extract
    • Pecans or nuts of your choice (Optional)

    SUBSTITUTES

✔Please see the comments on this cake to see how others have used different colas in it. Many have had great success with cherry coke, and several loved it with Sprite.

    👩‍🍳HOW TO MAKE

This cake is so easy; you don’t even have to pull out the mixer!

    COOKING

Step 1: Combine sugar, flour, and cinnamon in a large bowl and mix well using a wire whisk.

Step 2: Combine butter, 1 cup of Coca-Cola, and cocoa in a pot on the stove and bring to a boil, stirring often.

Step 3: Remove from heat and pour over the flour mixture. Mix with a spoon.

Step 4: Mix buttermilk and baking soda together and pour into the cake mixture. Add marshmallows and continue stirring (your marshmallows will not melt). Add in eggs and vanilla extract.

Step 5: Pour into a sprayed 9 x 13 inch pan and bake in a preheated 350-degree oven for 30 to 35 minutes, testing for doneness.

    FROSTING INSTRUCTIONS

Bring margarine, cocoa, and Coca-Cola to a boil on top of the stove. Remove from heat and add vanilla and powdered sugar until the frosting is of a spreading consistency. You can either stir in nuts or sprinkle them on top of the cake. Spread over hot cake.

    PRO TIP

Make the frosting while the cake is in the oven baking. Then, you’re ready to frost the cake while it’s still warm.

    FREQUENTLY ASKED QUESTIONS

I don’t like Buttermilk. Can I use regular milk?

Buttermilk is an essential ingredient when baking. It adds flavor and texture to cakes. You don’t taste the buttermilk. I don’t recommend using regular milk; it will change the texture and moisture of this cake. However, if you don’t have buttermilk, here is a substitute that will work.

    Does it taste like Coke?

Ironically, no! You don’t taste Coca-Cola in this cake. It just produces a very moist cake with a fudge-like frosting.

    STORING AND FREEZING

Store this cake in an airtight container in the refrigerator for up to 5 days. You can easily freeze this cake. Just bake and frost it, and then I do recommend cutting it. Cover and freeze for up to 3 months.
