  • Bojangles, a Southern staple, returns to NYC with Brooklyn store

    EAST FLATBUSH, BROOKLYN — Bojangles, a Southern fast-food staple, is back in Brooklyn after a decades-long absence.

    Bojangles recently opened at the corner of Ralph Avenue and Church Avenue in the heart of East Flatbush.

    It’s the first modern New York City location in East Flatbush, Brooklyn, following a previous short-lived presence in the 1980s, making this a significant return for the chain.

    Marshall Scarborough is the vice president of menu and culinary innovation at Bojangles. He says his love for the brand started very early.

    “My love affair with Bojangles began at a very young age. I was a youngster, I got to grow up with Bojangles,” Scarborough said.

    Habib Hashimi says his family working in the restaurant industry inspired him to become a franchise owner of Bojangles.

    “My family has been in the restaurant business for decades,” Hashimi said.

    “I wanted to find a brand that was exciting and had amazing food, and I saw this crazy following behind it. And I looked on social media, I looked on TikTok, I looked on Instagram, and people were so excited about the brand, it was part of their daily lives, and when I tried the food, I understood why that was.”

    According to Scarborough, Bojangles is known as the Carolina legend.

    “I like to describe it like, we are cooking like grandmas, but we also appeal to her grandson. Our culinary north star is being authentically Southern with a modern twist,” Scarborough said.

    Bojangles is not your typical fast-food restaurant. The chain cooks on stove tops, and all the chicken is hand-breaded.

    The biscuits are also hand-made and scratch-made, taking a total of 49 steps to make them.

    “They’re soft, they’re buttery and delicious,” Hashimi said.

    At Bojangles, one of their signature menu items is the Bo’s chicken biscuit. It’s tender, juicy, crispy chicken between a soft, fluffy buttermilk biscuit.

    “We’re using marinated chicken and hand-breading it to order,” Scarborough said.

    You can also order just chicken tenders, which is the flagship product on Bojangles’ menu for lunch and dinner. They’re made from thick pieces of tenderloin marinated with Bojangles seasoning and batter-breaded in a buttermilk coating system.

    Scarborough believes Bojangles is different from other fast-food chains.

    “I can’t speak to a whole lot of fast-food restaurants where they’re taking the time and energy it takes to produce such high-quality food,” Scarborough said. “I think it’s cool that we’re bringing the Southern culture, the Southern traditions of food to you guys to share what we’ve been keeping our secret this whole time,”

    The pandemic was crushing for many Black-owned businesses, but there are exceptions, including Ruby’s Southern Comfort Kitchen.

    The pandemic was crushing for many Black-owned businesses around the country, and the years since 2020 have been especially hard on restaurants locally and nationwide — but there are exceptions.

    After starting as a takeout joint in what owner Candi Dailey calls “a hole in the wall” in Bowie, Maryland, her restaurant, Ruby’s Southern Comfort Kitchen, found itself moving to a much bigger spot where you can sit down and enjoy your food, rather than having to drive out of the way just to pick it up and take it home.

    “But I’d like to say that we’re still a takeout, right? There’s no waitstaff here,” Dailey pointed out. She started Ruby’s as a restaurant that operated with the catering company her family owns and operates.

    “What we noticed is that, at our old location, people wanted to sit down even though it was takeout. But we only had like four seats in there. But people always wanted to sit,” Dailey said.

    “And so we knew that when we moved we wanted people to be able to sit down if they wanted to. And so it still works in the same way. If you come in here at lunchtime, or in the evening, you’re going to see a crowd full of people that are just sitting down, enjoying one another’s fellowship and breaking bread,” she said.

    But getting to that location, which moved from an out of the way spot to a much bigger store front next to stores like Target and Lowes, just off Routes 301 and 50 in Bowie, meant taking a big risk, and making a much bigger monthly rent payment.

    “We believe that this is something that the community wanted, and that takeout didn’t have to be a hole in the wall. And so how do we bring that vision to life? Honestly, it took us like two years, a long time, and a lot of money and a lot of red tape to get this to be what we thought takeout could be,” she said.

    She’s not ready to say they’ve made it all the way through the pandemic yet.

    “The cost of building it out was a lot more than we expected, and just the challenges as a small, Black entrepreneur, trying to obtain financing, that has its own challenges,” she said.

    Dailey said that the restaurant business can be tumultuous and all they could do was hope that things would work out in the end.

    The one thing Dailey feels like they have is the support from the neighboring community. She saw it firsthand after people went out of their way to show her support in the years prior to and during the pandemic.

    “We want guests that feel like they’re family when they come in. Ruby was my grandmother. She kind of had this open door policy,” Dailey said.

    “My parents did the same thing. They’re going to take care of their neighbors. … And I think Ruby’s is just an extension of still opening the door, still welcoming the community and supporting where we can,” she added.

    Every year around Juneteenth, Ruby’s holds what it calls its “Family Reunion.” It’s really an event to say thanks to the customers who fill up on its Southern-style comfort food. Dailey said that last year about 18,000 people registered and attended.

    “The DMV area in general … it’s different here,” she said. “You feel like you can thrive here. You feel like you can do more here. The community is extremely supportive here.”

    Dailey admits that she doesn’t think they would get the same support and appreciation from the community anywhere else in the country.

    “But I think we have a really authentic connection with the community,” she said.

    Friends of Chef Keith “Buttons” Hicks Host Benefit Concert

    Longtime North Texas culinary fixture Keith “Buttons” Hicks — a chef known for his infectious personality and joy — has made significant contributions to the community with his Southern cooking. Over the years, he’s helmed the kitchens at The Worthington Hotel, The Italian Villa, Mercury Chophouse, The Rim and his namesake restaurant, Buttons Food and Music for the Soul.

    Hicks is now battling end-stage COPD (chronic obstructive pulmonary disease). He is under palliative care and in need of a double lung transplant. His friends, family and current and former staff members are hosting a special concert and benefit dinner to show their support for the chef and his family.

    The Buttons Family Affair Benefit Concert event will take place from 5 p.m. to midnight on Wednesday, Jan. 31, at the Ridglea Theater, 6025 Camp Bowie Blvd. in Fort Worth.

    Tickets for the event range from $25 for general admission to $400 for VIP tables. Tickets can be purchased through Eventbrite. For those who cannot attend the concert, donations can be made through GoFundMe.

    Throughout his career, Hicks’ restaurants have been loved by guests and critics alike, which has given him a platform to give back to others.

    “We’ve hosted countless benefit events and celebrations at Buttons’ restaurant, due to our love and compassion for the community. I am asking the community to support Chef Keith by attending this benefit concert in his honor,” said Carolyn Hughes, a former co-owner of Buttons restaurant. “For so many years, he brought so much ‘Love, Peace and Gritz’ to each of our lives, and now he needs us.”

    Musical guests at the event will include many who have played at Buttons’ restaurants throughout the years, including Rob Holbert Band, Natural Change, Melanie Dutton, Paul Cannon, Kenya Crawford, Bergette Rideau, Lori Dawn and many more. Musical performances are set to begin at 6 p.m.

    Attendees can look forward to popular Southern appetizers from Buttons’ original menu that will be prepared by former Buttons chefs Billy Kidd and Ty Frazier. Food trucks will be stationed onsite to serve additional items, including Fat Face Full by Angie Edwards, Angi’s Louisiana Kitchen and The Rim Restaurant Waterside.

    For those who haven’t had the pleasure of knowingHicks, his infectious and joyful personality has been described in countless articles. In a 2016 article by KERA, the chef explained that “’Buttons’ was the nickname my grandmother gave me as a kid ‘cause I was cute as a button,” adding that for him, cooking is an intuitive and spiritual process that he learned from watching his mother.

    Chicken tater tot casserole is delicious! It’s full of chicken, bacon, cheese, Ranch seasoning, tater tots, diced tomatoes, and green chiles mixed together in a creamy sauce. You won’t believe how quickly this simple meal comes together.

    Preparing dishes with tater tots is one of our favorites! Be sure and try our Mexican tater tot casserole, Cajun tater tot breakfast casserole, and tater tot sausage casserole.

    WHY WE LOVE THIS RECIPE

    This chicken tater tot casserole is so simple. It makes the perfect weeknight meal because it’s a “one pot” dish and comes together so quickly. You basically mix, pour, and bake. How easy is that? You can use shredded rotisserie chicken, which makes it even quicker. This is a meal in itself, so no need to worry about any side dishes!

    🍴KEY INGREDIENTS

    • Cooked diced chicken-you can easily use turkey.
    • Cream of chicken soup, undiluted
    • Sour cream
    • Ranch Dressing seasoning
    • Diced cooked bacon
    • Mild Rotel diced tomatoes and green chiles-we like Rotels but you can use any brand you like.
    • Frozen tater tots
    • Shredded sharp cheddar cheese

    SWAPS

    Feel free to use any type of cheese that your family enjoys. You can easily make it with pepper jack to add a kick. I have also made this with turkey bacon and it was fantastic.

    HOW TO MAKE

    This is the easiest dish ever! I’m telling you, tater tot casseroles are just so simple; once you make one, you’ll want to make them again and again.

    COOKING STEPS

    Step 1: Preheat oven to 350.

    Step 2: Mix chicken, cream of chicken soup, sour cream, Ranch seasoning, bacon, Rotel tomatoes, and shredded cheese together in a bowl.

    Step 3: Add in frozen tater tots and pour into a sprayed 9X13 casserole dish.

    Step 4: Bake uncovered for 40-45 minutes or until it starts to brown a bit on top.

    TIP

    To add a touch of crisp to the tater tots, place the dish under the broiler for 2-3 minutes. Please be sure and watch it; it can burn quickly!

    RECIPE VARIATIONS

    You could easily add a can of corn to this dish. Instead of Ranch seasoning, you could add taco seasoning.

    SERVE THIS DISH WITH

    This dish is fine alone. It really doesn’t need anything, but it would be great with our broccoli raisin salad or cucumber tomato salad.

    FREQUENTLY ASKED QUESTIONS

    Do you have to thaw the tater tots or can you use them frozen?

    No, they don’t need to be thawed out. They are perfectly fine to cook them while frozen.

    I don’t like to use canned cream of soup; can I leave it out?

    No, I wouldn’t leave it out. You can always make your own. Here is the recipe.

    STORING AND REHEATING

    Keep leftovers in an airtight container in the refrigerator for 3-4 days. You can easily reheat any tater toter casserole by placing it in the oven on 325 until it is warmed through. You can also reheat in the microwave.

    • 1 32 ounce bag frozen tater tots
    • 2 cups shredded sharp cheddar cheese
    • Preheat oven to 350 degrees.

    • Mix chicken, cream of chicken soup, sour cream, Ranch seasoning, bacon, Rotel tomatoes and shredded cheese together in a bowl.

    • Add in frozen tater tots and pour into a sprayed 9X13 casserole dish.

    • Bake uncovered for 40-45 minutes or until it starts to brown a bit on top.

    You don’t need to thaw the tater tots. You can easily use any kind of shredded cheese that you like.
