    Ingredients for Homemade Truffle Fries

    Potatoes – Russet potatoes or starchy baking potatoes are the best choice for a crisp exterior and a fluffy interior. However, any potato will do and if you’re short on time, use a bag of thawed-out frozen fries in any shape!

    Truffle Oil – Truffle fries often come with a hefty price tag however, you can purchase inexpensive Truffle oil and a little goes a long way. Truffle oil spray is another great way to turn meals or sides into a gourmet treat!

    Seasonings – If you have it, leftover bacon grease is an excellent (and budget-friendly!) alternative to olive oil and will give truffle fries a slightly smoky flavor. Use this seasoned salt recipe and tailor the ingredients to your liking.

    How to Make Truffle Fries

    Parmesan truffle fries are perfectly seasoned and baked until golden and crispy!

    1. Chop and soak the potatoes (recipe below).
    2. Pat dry, toss with olive oil, and bake until crisp.
    3. Just before serving, toss the fries with truffle oil and garnish with Parmesan cheese.

    Truffle Fries

    Baked until golden crispy and tossed with truffle oil and parmesan, these truffle fries are a rich and earthy bistro-style upgrade!

    Prep Time 15 minutes

    Cook Time 45 minutes

    Soak Time 30 minutes

    Total Time 1 hour 30 minutes

    Prevent your screen from going dark

    • Scrub the potato skins or peel them if desired. Cut the potatoes into ½ inch slices and cut each slice into ½-inch french fries.

    • Add the potatoes to a large bowl filled with cold water and let soak for 30 minutes.

    • Preheat the oven to 375°F. Line a large rimmed baking pan with parchment paper.

    • Remove the fries from the water and dab very dry with a kitchen towel. Toss the fries with olive oil and salt.

    • Spread evenly in a single layer on the prepared baking sheet. Do not overcrowd the pan, use two pans if needed.

    • Bake the fries for 20 minutes. Increase the temperature to 425°F, toss the fries, and cook until golden, about 15 to 20 minutes more.

    • Once the fries are crisp, remove them from the oven and use a spatula to stir them. Immediately toss with truffle oil.

    • Garnish with Parmesan cheese and serve.

    Air Fryer: If desired, the fries can be cooked in the air fryer. Prepare as directed, and once dabbed dry, place the fries in a single layer in the air fryer. Cook at 390°F for 16 to 19 minutes, shaking after 10 minutes. Cook until the fries are crisp.

    Chicken – Buy chicken tenderloins or slice boneless skinless chicken breasts into ¾-inch slices.

    Breading – A combination of cornflakes and panko breadcrumbs add a deep-fried crunch to these chicken tenders without the mess! Replace the cornflakes with crushed crackers (like Ritz or saltines) or double up on the Panko.

    Variations—Play with the seasonings to change the flavor of these chicken strips. Try taco seasoning or a cajun seasoning.

    How to Make Chicken Tenders

    1. Prep chicken (if using breasts) as directed in the recipe below. PRO TIP: Freeze chicken breasts for about 20 minutes for easier slicing.
    2. Dredge chicken in seasoned flour then in egg, and finally into the panko mixture.
    3. Bake breaded tenders on a parchment-lined pan sprayed with pan release until golden brown, about 20 minutes.

    These chicken tenders are coated in a seasoned Panko mixture, then oven-baked until crispy!

    • Preheat the oven to 425°F. Line a baking sheet with parchment paper.

    • If using whole breasts, cut the ¾-inch strips. Season the strips or tenderloins with ¼ teaspoon each salt and pepper.

    • In a bowl, combine flour and seasoned salt. In a second bowl, whisk eggs with water.

    • In a third shallow dish, combine cornflake crumbs, panko bread crumbs, paprika, garlic powder, and ¼ teaspoon salt & pepper to taste.

    • Dip the chicken in flour, shaking of any excess, then dip in the egg mixture, and finally into the breadcrumb mixture gently pressing to adhere.

    • Place the chicken on the prepared pan and generously spray with cooking spray or oil.

    • Bake for 18-22 minutes or until cooked through.

    If using whole chicken breasts, freeze for 15-20 minutes before cutting.
    No Cornflakes? No Problem! If you do not have cornflake crumbs, you can use cracker crumbs or extra panko.
    Convection Oven: Reduce time to 15-18 minutes if using convection. Ensure the chicken reaches 165°F.
    Air Fryer Directions: Place chicken tenders in a single layer in the air fryer basket. Cook at 350°F for 10-12 minutes or until cooked through. The second batch may need a minute or two less as the air fryer will be preheated.

    While we love oven-baked french fries, we also love that Air fryer French fries are on the plate in about 15 minutes (without deep frying). They’re crispy on the outside and tender on the inside.

    • Quick to make, go from frozen to fresh in minutes!
    • This air fryer recipe requires little to no clean-up, especially if you use parchment paper!
    • No oil means crispy fries with fewer calories.
    • Easy to add flavor (eg. truffle oil, seasoned salt, ranch mix).

    How Long to Cook Frozen Fries in an Air Fryer

    Potatoes and salt, that’s all! Cooking time will vary based on the type of fry.

    • REGULAR OR CRINKLE CUT FRIES: 400°F for 12 to 14 minutes on air fry.
    • SHOESTRING FRIES: 400°F for 7 to 9 minutes on air fry.
    • WAFFLE FRIES: 400°F for 10 to 12 minutes on air fry.
    • SWEET POTATO FRIES: 400°F for 13 to 15 minutes on air fry.

    How to Air Fry Frozen French Fries

    There is no need to add extra oil to frozen fries. Simply place them in the basket and cook!

    1. Fill the air fryer basket with frozen fries.
    2. Cook halfway (per recipe below), remove the basket, and toss the fries.
    3. Cook until the fries are crispy and golden brown.
    • For best results, always preheat the air fryer.
    • Avoid overcrowding the air fryer so the hot air can circulate all sides of the fries.
    • If cooking in batches, prior to serving, add all batches back to the air fryer for 2 to 3 minutes to crisp and heat.

    We love fries with seasoned salt, but you can also make a homemade french fry seasoning by combining 2 teaspoons garlic salt, 1 teaspoon onion powder, 1 teaspoon salt, and ½ teaspoon each paprika and finely ground black pepper.

    Chicken Wings – Use fresh split bone-in wings. Split wings means that the drums and flats are separated and the wing tip has been discarded.

    Coating & Seasonings – Spices and all-purpose flour create a coating that makes the chicken crispy and gives the buffalo sauce something to grab onto. For an extra kick, add in a bit of cayenne pepper.

    Buffalo Sauce – I prefer homemade buffalo sauce with just hot sauce and unsalted butter; however, you can purchase buffalo sauce at the store if you’d prefer.

    3. On a large parchment-lined baking sheet, place wings in a single layer (no wire rack required) and bake, turning halfway.
    4. Remove and toss in buffalo sauce.

    Once you’ve tossed the chicken wings in buffalo sauce, you can serve them or return them to the oven for an additional 10 minutes.

    The final baking with buffalo sauce helps the sauce to caramelize on the outside of the wings while seeping into the wings. YUM!

    Dipping and Dunking!

    This is the best buffalo wings recipe – crispy and spicy! Serve them New York style with blue cheese or try ranch. Any dip with sour cream will balance the wings’ spicy heat, enhancing their flavor. Add a side of fries for a full meal deal!

    These baked buffalo wings are the ultimate game day feast. Crispy chicken wings are baked in the oven then tossed in a spicy buffalo sauce. 

    Prep Time 10 minutes

    Cook Time 45 minutes

    Chill Time 20 minutes

    Total Time 1 hour 15 minutes

    • Preheat oven to 425°F.

    • Pat the wings dry with a paper towel.

    • In a large bowl combine the chicken wings with flour, baking powder, garlic powder, salt, and pepper.

    • Line a large rimmed baking sheet with foil and place a piece of parchment paper on top. Place the seasoned wings in a single layer on the parchment paper.

    • If time allows, refrigerate the wings for 30 mintues.

    • Bake wings for 20 minutes, then flip and bake for an additional 15 minutes.

    • Remove wings from the oven and pour the sauce over top. Mix the wings on the parchment paper until coated. Slide parchment out from under the wings.

    • Turn oven to broil and broil wings until golden.

    Ingredients for Instant Pot Mac & Cheese

    Pasta Elbow macaroni noodles are my first choice but you can use other small varieties of pasta.

    Water and Seasonings – Season the cooking water in this recipe as it is absorbed by the pasta, adding great flavor. Do not drain the water; the starches from the pasta help thicken it and make a creamy sauce.

    Cheese – Sharp cheddar and Parmesan cheese make a rich cheese sauce. You can replace some or all of the cheddar with gruyere, gouda, fontina, or even Monterey jack. Skip the mozzarella cheese in this recipe, as it isn’t bold enough.

    Variations

    • Replace half of the cooking water with reduced sodium chicken broth & skip the salt.
    • Add seasonings like garlic powder, cayenne pepper or a dash of hot sauce.
    • For some extra nutrition, stir in vegetables like spinach or steamed broccoli.
    • Replace the milk with half and half or evaporated milk if desired.
    • Add rotisserie chicken, diced ham, or even ground beef or sprinkle with crisp bacon.

    How to Make Instant Pot Mac and Cheese

    The leftover pasta water from cooking adds starch to thicken it and help it stick to the pasta.

    1. Add elbows, water, & seasonings to the Instant Pot and cook on high.
    2. Quick-release the pressure (per the recipe below) do not drain.
    3. Stir in cream cheese, cheddar and parmesan.

    Storing & Reheating Leftovers

    • Store leftovers in an airtight container for up to 4 days.
    • When reheating, add a splash of milk or heavy cream (about 1 tbsp per cup of mac and cheese) to keep it creamy.

    Instant Pot Mac and Cheese

    Instant pot mac and cheese takes all of the creamy goodness of homemade mac and cheese and turns it into an easy one pot meal.

    Prep Time 10 minutes

    Cook Time 6 minutes

    Pressure Preheat 10 minutes

    Total Time 26 minutes

    • In a 6qt Instant Pot, add uncooked elbow noodles, water, butter, dry mustard, onion powder, seasoned salt, and pepper.

    • Add the lid and turn to seal. Select MANUAL – HIGH PRESSURE for 6 minutes.

    • Once completed, turn or press the valve to release any pressure (quick release). There will be cooking liquid in the Instant Pot – do not drain it.

    • Stir in the cream cheese until melted. Add ¼ cup milk slowly until blended.

    • Add the cheddar and parmesan cheeses and stir until melted, adding additional milk if needed to reach the desired consistency. You may not need all of the milk.

    • Serve immediately.

    This recipe can be made with other types of cheese, ensure you use a bold or sharp cheese for the best flavor.
    Shred the cheese yourself for the best results, pre-shredded cheeses have additives and they don’t always melt well.
    Other shapes of pasta can be used, but depending on the shape, cooking time may need to be adjusted slightly.
    You may not use all of the milk; add just a little bit at a time.
    6 minutes on high should be just right for most brands of pasta, if you use another small shape and find it isn’t cooked through, put the lid back on and let it rest for a few minutes.
