Perfect for serving a crowd or gathering or meal prepping for the week – I would halve the recipe for meal prep. And these could be lunch, served with veggies and chips or pretzels. OR it could be breakfast! Either way they are quick and easy, simple and delicious.

    To Make These Baked Ham and Cheese Croissant Sandwiches You Will Need:

    • mayonnaiseLends moisture and creaminess.

    Preheat your oven to 375°F (or 190°C).

    Lightly spray two 9×13 pans or a 9×13 and an 8×11 with olive oil baking spray. Alternatively, you could spray a nonstick rimmed baking sheet as well.

    On the bottom half, layer a slice of provolone, 2 to 3 slices of thinly sliced ham and top with a slice of baby Swiss cheese. Replace the top and set the sandwich into one of the prepared pans and repeat with the remaining sandwiches.

    In a small bowl or cup, combine 1 egg white with a generous splash of water.

    Use a pastry brush to brush the tops of each sandwich with the egg white mixture. This will give the sandwiches a crispier top and glossy look.

    Inspired by these wicked back beans, I decided to make a healthier, lighter and spicier version of the traditional sloppy Joe recipe. In the filling, lean ground turkey, bell pepper, jalapeño and crushed pineapple simmer in a simple, sweet and tangy homemade sloppy Joe sauce. I like to serve these on toasted sweet Hawaiian hamburger buns with melted pepper jack cheese and top with thinly sliced red onion and pickled jalapeños.

    To Make These Spicy Hawaiian Sloppy Janes You Will Need:

    • olive oilLends fat for sautéing vegetables.

    To the pan, add in 1¼ cup ketchup, 8 ounces (drained) crushed pineapple, 1/4 cup water, 1 tablespoon prepared yellow mustard, 1/2 teaspoon distilled white vinegar, 2 tablespoons dark brown sugar, 1/2 teaspoon each kosher salt and freshly ground black pepper and 1/4 teaspoon paprika.

    Stir to combine and bring to a simmer. Reduce heat to low and simmer for 30 minutes.

    Build The Sloppy Janes:

    Toast the sweet Hawaiian hamburger buns in your toaster. Meanwhile, move the oven rack to the second highest position and preheat your broiler. Top the toasted bottom bun with a few generous spoonfuls of the sloppy Jane mixture and top with pepper jack cheese – I cut each piece in half and then over lap so it will fit better.

    • 1/2 teaspoon distilled white vinegar
    • 1 tablespoon prepared yellow mustard
    • 2 tablespoons dark brown sugar
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon freshly ground black pepper
    • 1/4 teaspoon paprika

    FOR SERVING:

    • 8 slices pepper jack cheese, or havarti
    • 8 sweet Hawaiian hamburger buns, toasted
    • pickled jalapeños
    • thinly sliced red onion
    • Add oil to a deep-sided skillet and heat over medium. Add in onion, bell pepper and jalapeño with a pinch of salt. Stir and cook until tender, about 6 minutes. Add in ground turkey and use a spatula to break up the meat, cooking until no longer pink and fully cooked. Drain off any fat if needed.

    • Measure and add in ketchup, crushed pineapple, water, vinegar, mustard, brown sugar, salt, pepper and paprika. Stir well to combine, and simmer over low heat for 30 minutes.

    • Meanwhile, toast Hawaiian buns.

    • Move oven rack to the second highest position in your oven and preheat your broiler.Place the toasted bottom buns on a rimmed baking sheet lined with foil. Top with desired amount of sloppy Jane mixture and a slice of pepper jack cheese. Broil for 1 minute or until the cheese has melted, watching carefully to avoid burning.
    • Remove, top with red onion, jalapeños and top half of the bun and serve with fries or potato chips.

  • Sandwich shop owed more than $40,000 in taxes before seizure, city says

    Long-running Denver lunch spot Mr. Lucky’s Sandwiches, which closed in December after Denver’s Department of Finance seized its two locations, owes more than $40,000 in unpaid taxes, according to the city agency. Galen Juracek, who owns the shops in Capitol Hill and the Highland neighborhood, specifically owes $40,556.11.

    Multiple notices posted to the door of Mr. Lucky’s Capitol Hill location showed that the city demanded payment for the back taxes starting in July. But the city’s “distraint warrant” — a legal notice that a business owner owes a specific amount, and that the business could be seized if they don’t pay it — notes the shops, at 711 E. 6th Ave. and 3326 Tejon St., were forced to close on Tuesday, Dec. 23.

    Mr. Lucky’s had already decided it would close its two locations by the end of 2025, said Laura Swartz, communications director for the Department of Finance. But the city’s seizure of the business shows that it had not been keeping up on basic requirements, with a $39,956 bill for unpaid sales taxes and $600.11 in “occupational privilege” taxes, which fund local services and allow a business to operate within a specific area.

    “When businesses charge customers sales tax but then do not submit that sales tax to the city, the city is responsible for becoming involved,” she said in an email to The Denver Post

    Juracek did not respond to multiple phone calls from The Denver Post requesting comment. His business, which is described on its website as a “go-to spot for handcrafted sandwiches since 1999, roasting our meats in-house and making every bite unforgettable,” is listed on the documents as G&J Concepts.

    After two years in business, Bodega has been slapped with a cease-and-desist.

    The cult-favorite brunch spot in Denver’s neighborhood Sunnyside has changed its name to Odie B’s, after a Kansas City restaurant called La Bodega sent it a legal notice, according to a message that the restaurant, at 2651 W. 38th Ave., posted on Instagram Monday.

    “It’s already hard enough to run restaurants and it’s tragic when other independent operators are out to get ya, too,” the restaurant wrote. “While change can suck and cause heartache, we have finally leaned into it. Even though we have happily been existing in Denver with several other bodegas, we would like to set ourselves apart and end all the confusion as we grow.”

    Bodega is known for its highly craveable breakfast sandwiches, as well as its burritos and burgers (which landed on The Denver Post’s list of favorites). Owner Cliff Blauvelt grew up in Sunnyside and wanted to offer the neighborhood an easy and playful, rather than pretentious, spot for breakfast and lunch. Blauvelt plans to open a second location in RiNo this fall.

    • Tuna in water
    • Celery
    • Onion

    • Swiss Cheese

    SWAPS

    You could always swap out the meat or the cheese in these sliders. Or make half turkey and cheese and half ham and swiss. I do think the sweetness of the ham is what makes these so good!

    🍽️HOW TO MAKE

    These sliders are so easy to throw together, the hardest part is just getting the ingredients out. You can throw these together in five minutes.

    COOKING STEPS

    Step 1
    Make your sandwiches by splitting the rolls, spreading with mayo, adding a piece of cheese and ham. Add tops and place in a 9X13 baking dish.

    Step 2
    Melt the butter in a small bowl in the microwave, add poppy seeds, mustard, onion flakes and Worcestershire sauce.  Whisk together with wire whisk.  Brush the tops of the rolls using all the mixture.  Sprinkle the brown sugar over the tops after brushing with butter.  Note: I didn’t have any poppy seeds when I remade these for photos, so they are not in the picture and they are optional either way.

    Step 3
    Bake in preheated 350 degree oven for 15 to 20 minutes.  Remove the foil and bake uncovered for about 5 minutes.  Makes 12 sandwiches.

    ⭐TIP

    Hawaiian King Rolls now makes slider buns and so does Pepperidge Farm, which I think makes this much easier than having to split the rolls. I suggest buying those if you can find them.

    RECIPE VARIATIONS

    If you love sliders, then give these Chili Dog Sliders a try! They are so easy to make and you could easily make those at the same time you make these.

    If you are making sliders then you will more than likely need other appetizers. We love these Mexican Sausage Balls, Homemade Fried Dill Pickles and Crock Pot Cranberry Smokies.

    Why were my buns soggy?

    Once you add the butter mixture, you need to bake them immediately so they won’t be soggy.

    Do you have to use the poppy seeds?

    No, you can easily leave them out.

    STORING AND REHEATING

    We just store these in tupperware in the fridge and reheat in the microwave, unless we are heating the ALL back up we do it in the oven. 350 for a 5-8 minutes should work.

    • 12 rolls I use whatever is available or you can use the sweet Hawaiian rolls
    • 12 pieces of cooked ham we use deli ham
    • 12 pieces of swiss cheese
    • Mayonnaise or Miracle Whip Enough to spread on both sides of rolls
    • 1 tablespoon poppy seeds optional
    • 1 tablespoon yellow mustard Could use honey mustard or spicy mustard
    • 1 stick butter or 8 tablespoons or 1/2 cup
    • 1 teaspoon onion flakes
    • 1 teaspoon Worcestershire sauce
    • About 2 tablespoons brown sugar
    • Make your sandwiches by splitting the rolls, spreading with mayo, adding a piece of cheese and ham. Add tops of buns and place in a 9 x 13 baking dish.

    • Melt the butter in a small bowl in the microwave, add poppy seeds, mustard, onion flakes and Worcestershire sauce. Whisk together with wire whisk. Brush the tops of the rolls using all the mixture. Sprinkle the brown sugar over the tops after brushing with butter.

    • Cover with foil and let sit for one hour in the fridge or overnight if you want to make them ahead of time. You can also cook immediately. Bake in preheated 350 degree oven for 15 to 20 minutes. Remove the foil and bake uncovered for about 5 minutes.

    You can also make these with turkey or chicken.

    To Make These Spicy Sloppy Joes You Will Need:

    Make the Sauce:

    Start by heating 1 teaspoon of olive oil in a dutch oven over medium to medium-low heat. Add in 1 cup diced yellow onion, 1 diced jalapeño (seeds and ribs removed for less heat) and 2 minced cloves of garlic with a pinch of kosher salt.

    Stir and cook 5 to 8 minutes or until the onions and jalapeños are soft.

    Toast your hamburger buns, top with a few spoonfuls of the spicy sloppy joe mixture. Top with a slice of muenster cheese and slide underneath your broiler for 30 to 45 seconds. It doesn’t take long for the cheese to melt.

    Lastly, top with a few more spoonfuls of the meat mixture (they’re called sloppy for a reason!), sliced jalapeño and crispy fried onions.

    • 1/2 cup water
    • tablespoons white vinegar
    • 1 tablespoon yellow mustard
    • 3 dashes Worcestershire sauce
    • 2 tablespoons sugar
    • 3/4 teaspoon kosher salt
    • 3/4 teaspoon cayenne pepper
    • 1/2 teaspoon paprika
    • 1/4 teaspoon black pepper, freshly ground

    FOR SERVING:

    • 8 brioche hamburger buns
    • 8 slices muenster cheese
    • 2 jalapeños, sliced or chopped, for serving (optional)

    • Meanwhile toast hamburger buns or rolls and place on a rimmed, metal baking sheet.

    • Top with a few spoonfuls of the meat mixture and top with slices of muenster cheese. Slip under the broiler for 30 to 45 seconds or until melted.

    • Top with a spoonful more of the meat mixture, then add slices of jalapeño and crispy fried onions. Replace the top bun and serve.

    Subway is stepping up its sandwich game in a big way.

    The sandwich franchise is set to forgo its signature pre-sliced deli meats for fresh-cut proteins with the addition of meat slicers in all U.S. restaurants. Beginning July 5, about 20,000 US locations will start serving freshly sliced deli meats, including turkey, pepperoni, roast beef, ham and salami, with 80% of stores displaying $6,000 slicers depending on the counter space, according to CNN.

    Subway first announced the change up to Restaurant Business Online in August 2022, and told customers they can expect freshly-sliced meats by summer 2023.

    The transition is “part of Subway’s ongoing transformation journey,” a Subway spokesperson said in a statement to People, adding that the brand is on a quest to “[elevate] the quality of our protein offerings even further.”

    Restaurant Business Online previously reported that Subway’s new slicers will be automatic and can be operated with the push of a button. The initiative is expected to bring down labor costs as the company will no longer have to outsource to slice its proteins. Additionally, the machinery will be placed at the front of stores so customers can see the process and be assured they are receiving fresh meats.

    Subway’s revamped deli meats come after the brand was sued in 2021 for claiming its tuna was “100% real.” Various DNA testing proved there were “no detectable tuna DNA sequences whatsoever” in 19 out of 20 samples collected from Subway locations in Southern California, with all 20 samples containing “detectable sequences of chicken DNA.”

    While Subway’s defense claimed the DNA results could have been impacted by cross-contamination, a judge ruled in July 2022 that the company can be sued for claiming they offer “100% tuna.”

    All 22,000 Subway restaurants are expected to implement the new meat slicers.
