    A simple marinade tenderizes and flavors the chicken, and then we grill it to add that smoky bbq flavor. Warm up some Vista brand corn tortillas (these are our FAVORITE), add the grilled chicken and then top with homemade pico de gallo. So easy!

    I grew up on tacos, but when I say that we have to take it with a grain of salt because my mother was raised on a farm in Idaho, which means not only was it always ground beef, flour tortillas, and shredded iceberg lettuce with occasional tomatoes or cheese, but the ground beef for sure 100% had potatoes grated into it, I’m not kidding. We call them Idaho tacos!

    Once I was married, my world really started to expand in the world of tacos, but it’s kind of harder than you think when you start off cooking for yourself you want all the flavor, but you’re just not totally sure how everyone achieves it. You can find all sorts of crazy ingredients and marinating times out there, but I’ve found that simplicity is the answer and that’s exactly what these tacos are what you want for dinner tonight.

    Ingredients for Grilled Chicken Tacos Recipe

    You’ll need just a few ingredients to make the marinade, and you’ll have most of the items in the pantry already. Here is everything you will need:

    • Chicken Breasts: Marinate and grill the chicken whole and then chop it into bite-size pieces right before serving.
    • Garlic: Adds flavor.
    • Lime Juice: Fresh is best of course, and it helps tenderize the chicken and adds flavor.
    • Olive Oil: Adds flavor and moisture to the meat and helps tenderize it.
    • Seasonings: Chili Powder, Cumin, Smoked Paprika, Black Pepper, and Salt
    • Corn Tortillas: We don’t use anything but Vista brand tortillas these days, but you can use whatever brand you love.
    • Pico De Gallo: Tomatoes, Jalapenos, Limes, Garlic, Red Onion, Salt, Pepper and Cilantro

    How to Make Grilled Chicken Tacos

    We are going to crank this taco recipe out in 30 minutes and I’m going to show you how to do it. This recipe is such a great option for a healthy and protein packed dinner! Here are the basic steps:

    1. Marinate: Combine the chicken, garlic, olive oil, lime juice and seasonings in a large dish or zip top bag and stir or squish to combine. Let it marinate in the fridge for at least 10 minutes or up to 5 hours.
    2. Prep: Pull the chicken from the refrigerator and let it sit for a few minutes while you preheat the grill to take the chill off. Oil the grill grates and place the chicken on the grill.
    3. Grill: Cook for 5 minutes, then flip and cook another 5-7 minutes.
    4. Rest: Remove the chicken from the grill and let it rest for 5 minutes.
    5. Chop: Cut the chicken breasts in to bite sized pieces.
    6. Assemble: Spoon the chicken into corn tortillas that have been warmed up and top with pico de gallo.

    We love these tacos with just simple pico de gallo, but you could add any toppings you want! Here are a few ideas:

    Tips for a Perfect Taco

    It seems a little silly to share tips for a perfect tacos, but we have really found that there are few tricks that make all the difference.

    First, warm up the tortillas with a little oil in a frying pan, then keep store them in a tortilla warmer until you are ready to serve them. Especially with corn tortillas, warming them up will help them soften and to not crack. Toasting them a little also adds great flavor!

    Second, don’t overload the tortillas with the filling. Tacos that are too full will end up in a mess. Use less filling and eat more tacos! Ha!

    Third, eat your tacos over an open, empty tortilla and collect anything that falls out in the empty tortilla. Then you have new taco ready to go!

    What to Eat with Chicken Tacos

    I love tacos and all Mexican main dishes and one of the best things about it is the sides! Some of the most popular side dishes on the blog are our Mexican inspired sides, including Elote Grilled Mexican Corn Salad, Cilantro Lime Rice, our Most Delicious Black Beans. Some other great options would be refried beans, avocado salad, chorizo potatoes, Pinto beans, chips and salsa, or Spanish rice.

    Can Chicken Be Eaten Cold?

    You can safely eat cooked chicken cold. Chicken leftovers are safe to eat up to three to four days in the refrigerator.

    Using Leftovers

    This chicken makes great leftovers! I love to use leftover chicken in quesadillas, on salads, on nachos, or in bowls for lunch the next day.

    Can Grilled Chicken Tacos Be Made on the Stove Top?

    Yes, you can absolutely make these in the house. Just use a grill pan when you cook the chicken and follow the same directions as written. If you don’t have a grill pan, just a regular sauté pan or cast iron skillet would work just fine as well.

    Storage Tips

    Once tacos are assembled, they don’t store super well. The tortilla will get soggy. Tacos should be store with the filling and tortillas stored separately. For these tacos, the chicken, pico de gallo and tortillas should all be stored separately in airtight containers. The chicken can be reheated in the microwave or on the stove top. We prefer reheating it on the stove top with a little oil to crisp it up again.

    I am fully prepared for the teasing that might ensue. After these next words I write… I absolutely love hotdogs with all of my heart, and will often choose one over a cheeseburger! Gasp!

    I don’t even understand what it is completely, but I know that there is something about that snap and pop when you bite into it the juicy deliciousness of the meat and dare I say it’s the combination of both that soft bun and simple ketchup, that is irresistible for me.

    I don’t know where I’ve been all these years but when our daughter requested hotdogs for dinner, one night, I started to tell Claire they are so much better on a grill during the summer when it dawned on me, the air fryer could knock this out of the park and sure enough it 100% did.

    The outside gets a little crispy while the inside stays juicy. And with the scored top on them, they get little crispy edges. Mmmmmm…I’m totally obsessed with airfryer hotdogs!

    What Do I Need to Make Air Fryer Hot Dogs?

    All you need is hotdogs and hot dog buns! That’s it! And then whatever toppings you want to add.

    How to Make Hot Dogs in the Air Fryer

    Get ready for a quick and easy dinner recipe because dinner is going to be on the table in less than 15 minutes! Here are the basic steps:

    1. Preheat the airfryer.
    2. Score the tops of the hotdogs and place them in the air fryer basket for 6 minutes.
    3. Open the airfryer and place each hotdog in a bun and return them to the airfryer for another minute.
    4. Remove the hotdogs from the airfryer and serve with all your favorite toppings.

    Tips for the Best Fried Hot Dogs

    You will want to be sure to buy the right hot dogs and buns for the best results for this recipe. I am a huge fan of Nathan’s hot dogs with Hebrew National. For the bun, the brioche buns by Nature’s Own are my all time favorite. Warming the bun in the air fryer with the hot dog is total game changer!

    If you want a little different flavor profile, spread a little butter on each side of the bun and toast them in the broiler before adding the hotdogs to buns. Toasted buns are so delicious!

    Score the top of the hot dogs, but make sure not to cut too deep. You don’t want the hot dogs to break as they cook in the air fryer. I love the extra texture having the scores in the top adds, but the scoring is totally optional. I do feel like the scoring adds little nooks and crannies that hold on to the ketchup or sauces you add to the top.

    Use a silicone air fryer liner for easy clean up.

    The hotdogs are totally customizable to your liking with the toppings you add. I like my hotdogs simple with just ketchup (Hunt’s natural ketchup is my favorite), but you can totally go with whatever toppings you love.

    Yes! Frozen hotdogs cook up just great in the airfryer. They just need a little lower temperature and a couple of extra minutes.

    1. Preheat the airfryer to 350 degrees.
    2. Place the frozen hot dogs in the air fryer and cook for 7 to 8 minutes.
    3. Add the buns and let them cook for 1 more minute and then add the toppings and enjoy!

    Storing and Reheating

    Hotdogs on their own store extremely well. I would keep them separate from the toppings and buns for storing as the buns will start to get soggy. They should be stored in the refrigerator in an airtight container.

    To reheat hotdogs cooked in the air fryer, you’ll want to use the air fryer again for the best results. Preheat the air fryer to 350 degrees and cook for 4-5 minutes.

    This 20 minute cherry tomato and basil angel hair pasta recipe comes together in a jiffy, and will satisfy the whole family, even the kids!

    Every time the holidays are over and new year rolls around, I’m immediately drawn to a simpler way of cooking – lighter, healthier meals, fresh ingredients, less ingredients, and just an all around relaxed attitude. I don’t like anything too fussy or involved, and this 20 Minute Cherry Tomato and Basil Angel Hair pasta is the perfect example of what you might find on our dinner table this month.

    Cooking Class in Italy

    I’ve made a variation of this sauce for years – ever since I studied abroad in Italy. On the back end of my trip, my family came over, and my Mom and I took a cooking class for four days on the Amalfi coast in a little town called Positano. We learned the basics of Italian cooking – how to make the best margarita pizza with only the freshest ingredients, how to make pasta dough with our bare hands, and how to make a killer tomato sauce using only cherry tomatoes, olive oil and garlic.

    I can still remember closing my eyes while I ate, and wondering if I’d ever taste something as delicious as that sauce back at home – or if I’d even come close to being able replicate it myself.

    Less Than 30 Minute Dinner Recipe

    Since then, I’ve made a bazillion different variations, all equally as delicious as they were in Italy. I’ve used it as a topping on fish or grilled chicken, slathered it on garlic-rubbed crostinis and tossed it with scrambled eggs, but I think today’s version may be my favorite adaptation yet. Not only because it’s simple and delicious, but because the cooking time from start to finish is less than 30 minutes – pure gold in my book.

    Ingredients for Tomato Basil Angel Hair Pasta

    You will only need 8 simple ingredients to make this easy angel hair pasta recipe! A whole meal with just 8 ingredients in less than a half hour…you can’t get much better than that! Here is what you will need:

    • Angel Hair Pasta: it cooks up quickly and soaks up the flavor of the tomatoes and garlic
    • Olive Oil: used to sauté the tomatoes and garlic, extra virgin olive oil is preferred for best flavor
    • Garlic: adds bold delicious flavor
    • Cherry Tomatoes: or grape tomatoes
    • Fresh Basil: adds bright fresh flavor, if you don’t have fresh basil, use 2 teaspoons of dried basil
    • Salt: adds flavor
    • Granulated Parmesan: adds depth of flavor
    • Lemon: a pop of citrus rounds out the dish perfectly

    How to Make Cherry Tomato and Basil Angel Hair Pasta

    You will want to start by cooking the angel hair pasta. Get a large pot of salted water going on the stove top until the water is boiling. Add the pasta and cook according to the package instructions until al dente. It will cook pretty quick so don’t overcook it. While the pasta is cooking, get the sauce going.

    The sauce starts with a small army of thinly sliced garlic that take a bath in hot, but not screaming hot olive oil. Two pounds of cherry (or grape) tomatoes are then thrown in, the heat is cranked up, and you just watch as the hot oil works it’s magic on the tomatoes, making them blister and explode as they cook.

    Simple Tomato Sauce

    I like to help the process along a little bit by adding a ladle full of starchy pasta water and a good amount of kosher salt. The sauce simmers for a few minutes, and then slightly undercooked angel hair is tossed with the burst tomatoes. Since the cooked pasta is just slightly underdone, it finishes cooking in the sauce, infusing SO much flavor into each strand of pasta.

    Once everything is melded together, I toss in a good handful of parmesan cheese, about a cup of fresh basil and more pasta water if need be.

    Simple. Fresh. And seriously delicious.

    What is the Difference Between Cherry and Grape Tomatoes

    I used to think that small red tomatoes were all cherry tomatoes. I didn’t really take the time to notice that some were more oval and that they tasted slightly different. But they are different and I’m a grape tomato fan.

    If you don’t like one tomato you may like the other, so let’s take a look at what is the difference between cherry and grape tomatoes.

    Grape tomatoes are oblong and shaped like, well like grapes. They’re about half the size of cherry tomatoes, with thicker skins. Grape tomatoes aren’t as sweet as cherry tomatoes, but they still have that great tomato flavor, and their flesh is meatier and less watery.

    We especially like that they are less watery as it’s more about the flavor than all of those clear juices running out.

    What is the Difference Between Angel Hair Pasta and Spaghetti?

    Angel hair pasta, or capellini pasta, is a little different than your typical pasta as it’s very thin and happens to be our preferred pasta. We like how light the pasta is and it allows whatever ingredients you add to it to really shine versus a heavier spaghetti.

    Spaghetti is a little thicker than angel hair is is meant for heartier sauces.

    How Much Angel Hair Noodles Per Person

    The general rule is 2 ounces per person, so if you have the package and it’s usually 16 ounces a package then you can half it, split that into quarters and you’ve got 2 ounces but if you’re like me and end up with pasta in containers it can be tricky.

    I grew up learning the finger method for measuring pasta which I think works pretty well. You can watch how to measure dry pasta with this video.

    Variations

    As is, this a vegetarian recipe, but you can definitely add to it if you want to make it more of a hearty main course. You could add a protein or more vegetables and here are a few ideas:

    Protein – shrimp, chicken breast, or sausage (all should be cooked prior to adding)

    Veggies – zucchini, asparagus, broccoli, mushrooms or peas

    Storage Tips

    Leftovers of this recipe store extremely well in an airtight container in the fridge. They will keep for up to 5 days.

    I actually like eating the leftovers cold but they can definitely be zapped in the microwave to warm them back up.

    • Bring a large pot of water to a rolling boil.

    • Add in a good handful of salt. Add pasta. Cook al dente or until pasta is slightly undercooked.

      1/2 pound Angel Hair Pasta

    • Using tongs remove pasta from water into a colander. Reserve cooking liquid.

    • While pasta is cooking, add garlic and olive oil to a very large skillet and stir to keep from sticking.

      5 Garlic Cloves, 2 Tablespoons Olive Oil

    • Turn the medium heat and cook until garlic becomes soft, about two minutes.

    • Turn the heat to a medium-high and add tomatoes and salt to the pan. Cook two minutes.

      2 pounds Cherry or Grape Tomatoes, 3/4 teaspoon Salt

    • Add 1/2 cup of starchy cooking liquid leftover from pasta. Bring the mixture to a boil and reduce to a simmer for five minutes — the tomatoes should be starting to burst. If they haven’t gently push on them using the back of a wooden spoon. You only want about half to burst.

    • Add pasta, cook another two minutes.

    • Turn the heat off, add basil and parmesan cheese.

      1 Cup Basil, 1/2 Cup Granulated Parmesan

    • Toss to coat.

    • If needed add more starchy pasta water.

    • Season to taste with salt and pepper and a squeeze of lemon.

      1/2 Lemon

    • Serve with extra grated parmesan cheese.

    The best decision you could make with this recipe is to pulse a chopped up hunk of parmesan in a blender. This will give you granulated parmesan which is life-changing vs grated in this dish.
    Pasta can be stored in the refrigerator for 3-5 days.
