    Zach and Alyssa Ladner – along with partner Carl Quagliata – opened Paloma two years ago at Van Aken District in Shaker Heights. Now, after earning a reputation as a casual but chef-driven taco restaurant, the team is preparing to make a shift. On September 14th, the restaurant will close its doors for 10 days to usher in changes both to space and menu. The goal is to elevate the entire experience, says Zach.

    “We’re looking at this as more of an evolution of the concept,” the chef explains. “We’re taking what we have and we’re building on it. We want to grow beyond just being thought of as a place to go to get really good tacos.”

    Much of the motivation for the changes, adds Ladner, stems from the roster of talent that he feels is being underutilized. The goal is to give people like chef de cuisine Kytana Bradley – a 13-year veteran – more room to showcase her range.

    “We have a really great staff with a lot of talent – and I want to let these people shine,” Ladner says. “I want to allow them more freedom to express themselves.”

    Already, guests have been experiencing as nightly specials some of the new dishes, which retain their Latin roots while aiming for higher culinary ground. The tacos will remain, albeit sequestered to the bar menu, replaced in the dining room by new small plates and entrees, many of which are vegetarian.

    Some of the new items include trumpet mushrooms with salsa macha and toasted pumpkin seeds, smoked cauliflower “burnt ends” with fig-chipotle BBQ sauce, Alaskan black cod in banana leaves with annatto and orange, smoked lamb shank with salsa verde, and shrimp Diablo with chorizo, chilies and lime. There will also be a handful of steaks from sister business The Village Butcher.

    To facilitate these changes, a partition separating the bar and dining room will be installed. The dining room will be upgraded with new furniture and a private dining room. A new wine and cocktail list will also debut upon reopening.

    Guests who visit after the reopening will discover a new “guacamole bar,” a station dedicated to crafting “the best guac in Cleveland.” The made-to-order guacamole will be served with salsa rojo and housemade chips. Add-ons like blue cheese and jalapeno bacon, charred zucchini, Maine lobster and smoked brisket will be available.

    “I like doing things that help make an experience more memorable for a guest – but memorable in a way that is meaningful and not fake or gimmicky,” says Ladner.

    Paloma will reopen Sept. 24th.

    Mai Tai

    While it is a huge travel weekend, not everyone can slip away. But this cocktail will let you mentally escape to the tropics. It is said it was concocted in 1944, according to Victor Jules Bergeron, aka Trader Vic, the owner of a tiki restaurant of the same name and one of the founders of tiki culture. Apparently he took a flavorful Jamaican rum and needed to mix it with something, so he took a fresh lime, some orange curaçao, a dash of rock candy sugar, and a bit of French orgeat syrup. He shook the mixture with shaved ice, placed half the lime shell on top of the drink and added a branch of mint to it to represent an island. The guest tasted it and declared, “Mai Tai-Roa Aé,” which means “Out of this world-the best” in Tahitian. There is where he decided to call the drink Mai Tai. Here is an easy version to enjoy.

    Ingredients

    • 1 cup ice cubes
    • 3 fluid ounces pineapple juice
    • 2 fluid ounces orange juice
    • 1 (1.5 fluid ounce) jigger spiced rum
    • ½ (1.5 fluid ounce) jigger coconut-flavored rum
    • 1 teaspoon grenadine syrup
    • 1 Maraschino cherry

    Create

    1. Fill a cocktail shaker with ice cubes
    2. Combine pineapple juice, orange juice, spiced rum, coconut rum, and grenadine in the shaker then shake vigorously
    3. Strain into a glass full of ice
    4. Add cherry for garnish

    The Amazon

    Soju is Korea’s most iconic and consumed alcohol. While the average Korean downs 53 bottles a year, it is just becoming popular in the US and Canada. Made from distilled grains, it has 12 to 25 percent ABV (although there are stronger ones). It’s the best-selling liquor in the world, with 100 million nine-liter cases sold in 2022, which out-sold Smirnoff vodka. This is a popular drink in cities across North America and named after the company whose employees made it so.

    Ingredients

    • 2 oz Soju
    • 1 oz Sprite
    • 1 oz Grapefruit juice
    • Orange slice

    Create

    1. Fill cocktail glass with ice
    2. Pour in Soju, Sprite and grapefruit juice and mix
    3. Add orange slice as garnish

    The Paloma

    Known as the working man drink, what better thing to drink this weekend? It’s believed the drink was named after the 1860s folk song “La Paloma,” Spanish for “the dove.” And who doesn’t need a little peace after a long day’s at work?

    Ingredients

    • 2 oz tequila
    • 1/2 oz grapefruit
    • 1/2 oz soda

    Create

    1. Fill rocks glass with ice
    2. Combine ingredients in glass, stir
    3. Enjoy

    The Godfather

    • 2 ounces blended scotch or bourbon
    • 1/4 ounce amaretto

    1. Fill a mixing glass 2/3 full of ice. Add the scotch and amaretto and stir until well-chilled.

    This Michigan summer has been hot. So why not beat the heat with an icy adult beverage? I cannot think of a better way.

    A Paloma is a tequila based cocktail mixed with tart grapefruit juice and lime. Freeze some grapefruit juice into cubes and pureeing everything in a blender for a slushy version of the classic cocktail. Easy and delicious!

    To Make This Paloma Slush You Will Need:

    • grapefruit juice
    • salt
    • grapefruit (cold pressed or freshly squeezed)
    • tequila
    • simple syrup
    • lime juice
    • ice

    Fill an ice cube tray or two with grapefruit juice and freeze for a few hours or over night.

    When you’re ready to make the cocktails, start by adding a little salt to a shallow dish. For this drink, I’m using fine pink Himalayan salt, however you can use margarita salt too.

    Rim your glasses with a wedge of grapefruit or lime.

    Dip in the salt.

    Repeat with remaining glasses.

    In your blender pour 1 cup grapefruit juice. Fresh squeezed, cold pressed… whichever.

    Then add 1/2 to 3/4 cup tequila (depending how strong you want it), 1/4 cup freshly squeezed lime juice and 1/2 cup simple syrup. Add 3 to 4 heaping cups of grapefruit juice ice cubes.

    And puree until slushy. If too thin add more ice. However if you find it too icy, add a splash of grapfruit juice until the mixture is slushy and pourable.

    • fine salt, I used pink Himalayan
    • 1 grapefruit, cut into wedges
    • 1/2 cup tequila blanco
    • 1/2 cup simple syrup, see notes
    • 1/4 cup lime juice
    • In advance: Fill an ice cube tray with grapefruit juice and freeze for a few hours until solid or overnight.

    • When ready to serve: Fill a small shallow dish with salt.

    • Run a wedge of grapefruit (or use lime) around the rim of each glass. Dip the wet rim into the salt and set aside.

    • In a blender add; grapfruit juice, tequila, simple syrup and lime juice.

    • Add 3 to 4 cups grapefruit ice cubes and blend. Add more ice if needed. If too icy, add a splash of grapfruit juice until the mixture is slushy and pourable.

    • Pour into prepared glasses, garnish with a wedge of grapfruit (if desired) and serve immediately.

    Paloma

    This is a classic simple cocktail to make you happy.  The oragin is a bit murky but is generally credited to Javier Delgado Corona, owner of the oldest bar in Jalisco – La Capilla. More importantly – you will be just thankful for this drink and it its refreshing feeling.

    Ingredients

    • 2 ounces tequila
    • 2 ounces fresh grapefruit juice, plus wedges for garnish
    • 2 ounces sparkling water
    • ½ ounce lime juice
    • ¼ ounce agave nectar or simple syrup, or to taste
    • Coarse sea salt, for the rim of the glasses
    • Ice

    Create

    • Salt the rim of the glass by rubbing a grapefruit wedge around the edge and dipping it onto a small plate of salt.

    • Mix the tequila, grapefruit juice, sparkling water, lime juice, and agave nectar into the glass. Fill the remainder of the glass with ice. Adjust sweetness to taste. Garnish with grapefruit wedge.

    Mexican Mule

    The Moscow Mule is a go to for some…but what about a warmer more flavorful replacement?

    Ingredients

    • 1 ½ oz. Tequila Silver or Reposado
    • 1 lime wedge
    • 1 wedge pineapple
    • 4 oz. ginger beer

    Create

    1. Combine the lime wedge and pineapple (if using) in the bottom of a chilled glass  or moscow mule mug
    2. Muddle the lime with the pineapple
    3. Add tequila and stir
    4. Add ice and top with the ginger beer
