Best Chili Recipe – Oh Sweet Basil

    [ad_1]

The best chili recipe I have ever made! It’s packed with ground beef, bacon and 3 kinds of beans with just the right combination of spices for the perfect flavor! Top it off with a little sour cream and shredded cheese, Yum!

You all have been loving our award winning Instant Pot chili for quite some time now, but this one is better. I can’t believe I’m saying that because the Instant Pot version is the bomb, but this is THE BEST!

Now, I’ve actually never been a chili fan. Spicy is not my thing and growing up I didn’t like ground beef and wasn’t a huge bean fan so chili was definitely not my favorite. But then I became intrigued, and all from one story…

My sister once called me later at night and I was juuust about to go to sleep. I knew she’d just been on a date so I answered to hear the details. No. No this was not a, “best date ever” call, but a “you will not believe the awkwardness” call.

He had called last minute and asked if she could pick him up. “Oh sure” she replied, totally not worrying about it as they were nearing the end of college and maybe his car was out of luck. So she picks him up and he tells her he actually doesn’t have a car, or a job, nor is he actually in school. Instead he’s pursuing breakdancing. 😬😬

    Best Thing I’ve Ever Eaten

Which is fine, there’s probably some good ones out there, but as he later showed her, he wasn’t one of them. But I’m distracted. So this kind boy tells her, I’m taking you out for the very best thing I’ve ever eaten. “You’re going to love it,” he says. Right at the light, then head straight down main. Take a left at this light and straight again until it’s on the left hand side. Wendy’s.

Well again, she’s so kind and gives him a chance. They get inside and he orders two baked potatoes with chili. Whhhhhaaaaaa?

This is the BEST thing you’ve ever eaten?

That date didn’t end up going anywhere, haha, but it sure sparked something in me! I vowed to discover the best chili ever and while it started as a funny joke I ended up falling in love with chili! Jokes on me!

What Ingredients Do I Need to Make the Best Chili?

So I thought I had found the best chili ever in our Instant Pot chili recipe, but then I made this stove top version, and this is the absolute best. If you are familiar with our IP version, the ingredients are similar with just a couple of additions for this recipe. This is what you will need:

    • Meats: Ground Beef (90% lean ground beef or 85% works too) and Bacon
    • Beans: Kidney Beans, Pinto Beans and Black Beans
    • Veggies: Fire Roasted Tomatoes, Tomato Paste, Red Onion, Red Bell Pepper, Jalapeno and Garlic
    • Liquids: Beef Broth and Worcestershire Sauce
    • Spices: Oregano, Ground Cumin, Kosher Salt, Black Pepper, Smoked Paprika, Coriander, Chili Powder
    • Cocoa Powder

The measurements for each ingredient can be found in the recipe card down below.

    For Garnish

    • Sour Cream
    • Cilantro
    • Cheddar Cheese (or any type of cheese your family loves)

These are our favorite toppings, but you could honestly do anything your family enjoys. Other options might include: tortilla chips, Fritos, green onions, black olives, avocado, corn, tomatoes, etc.

How to Make the Best Chili Recipe

Making this homemade chili is so simple and the depth of flavor is fabulous. I’m so obsessed! Here are the basic steps:

    1. Cook the bacon until crisp in a large pot, then remove to a plate lined with a paper towel.
    2. Add the onions and pepper and cook until tender.
    3. Add the ground beef and cook until browned.
    4. Drain any grease.
    5. Add the remaining ingredients and 3/4 of the bacon stirring everything to combine.
    6. Let it simmer over medium low heat.
    7. Serve with your favorite chili garnishes, including the extra bacon, and side of skillet cornbread!

All the details can be found in the recipe card at the end of the post.

What Ingredients Deepen the Flavor of Chili?

We carefully considered each ingredient when making this chili recipe, but we found as we tested that certain ingredients really deepened the flavor. Cocoa powder, bacon, and tomato paste all add to the depth of flavor, especially the longer it simmers. It’s actually even better the second day!

Does Chili Have To Have Beans?

Some chilis, such as Texas chili, actually forbid the use of beans.

Other chili recipes call for beans. I love the heartiness that beans add!

What is the Difference Between and Yellow Onion and a Red Onion?

A red onion has a slightly more mild flavor than a yellow onion when served raw and can help to mellow out a tomato based dish instead of the more bold yellow or white onion.

    Variations

Protein: change up the protein and using ground chicken or turkey (though if you want to go a little lighter, you should try our Instant Pot Turkey Chili) or use swap 1/2 pound of sausage for some of the ground beef

Spiciness: add heat with a dash of cayenne powder or red pepper flakes

Veggies: toss in some green beans, corn, zucchini or squash for extra nutrients

Quantity: make a double batch to feed a crown and serve of baked potatoes for a baked potato bar

    How Long Will Chili Keep?

Chili will keep for 3-4 days in the refrigerator in an airtight container.

    Can Chili Be Frozen?

Chili freezes extremely well. Cool chili completely.

Place in container with a tight fitting lid, or in freezer bags and freeze for 4-6 months.

Let it thaw in the fridge overnight and then warm up on the stove top or in the microwave (for individual servings).

So no one ever needs to take a date to Wendy’s for the “best thing you’ve ever eaten” because you can just make the best chili recipe right at home and it’s so simple and tastes incredible! Now excuse me while I go work on my breakdancing moves and work off that second bowl of chili I just ate! Lol!

The BEST Instant Pot Chili {Award Winning} Recipe – Oh Sweet Basil

    [ad_1]

Instant Pot Chili that is award winning and bringing home cook-off victories across the country. You don’t want to miss diving into a bowl of our best chili!

If you want from scratch, our traditional chili is your answer. It took us 10 years to discover an award winning recipe and this is finally it, plus it’s an instant pot recipe which means it’s all done in less than 1 hour (with instructions for cooking on the stove top or crock pot as well)!! It is full of bacon, ground beef, beans, classic chili spices and all the toppings you want!

Let’s talk about how to make this homemade chili step by step, and discuss what goes well with it, and how to freeze it to eat later. So much to talk about, so let’s get going!

We attended a chili cook-off and brought this awesome Cheesy Ground Beef Enchilada Chili. It was so good, but soooo many arteries were clogged that night. It’s pretty unhealthy, but I heard a rumor that if you don’t eat it alone the calories don’t count.

    Pretty sure that’s true.

If you want a healthy chili recipe, you should definitely try our award winning healthy turkey instant pot version, which uses ground turkey instead of beef. And imho, all chili, healthy or not so healthy, should be accompanied with a side of cornbread or our crazy easy 7-Up biscuits!

    Chili Cook-Off Idea!

Oh! And listen to this, at the chili cook-off a couple of people brought muffin tins and then placed a sample scoop of each kind in the well so they could try them all and vote without going back or over eating. GENIUS. That’s seriously the smartest thing ever.

Next to figuring out this award winning instant pot chili recipe, right?! 😉

We hurried and made you all a video to help with the questions. Thank you for all of your love and support with making this the #1 chili out there!

How to Make Chili in an Instant Pot

Making this recipe in an instant pot is really easy because there’s an actual setting for chili and beans (if you don’t have that setting, you can totally use “manual”). That pretty much takes all of the thinking out of this, and everything can be done in the instant pot, which means only one dish to clean!!

Let’s go through it step by step:

    1. Turn your instant pot to “saute” and cook the bacon until crispy.
    2. Remove the bacon and saute the bell peppers and onions until tender.
    3. Add the ground beef and cook until browned and drain any excess grease.
    4. Add all the remaining ingredients and stir everything together
    5. Place the lid on the instant pot and set to “chili” mode (“manual” can be used too).
    6. Cook for 18-20 minutes and allow a natural release for 10-15 minutes. If you get the burn notice, please see the section below.
    7. Once it is cooked, serve it up and top with all your favorite toppings.

All these instructions can also be found in the recipe card at the end of this post.

What to Eat with Homemade Chili

Really any sort of bread will get the job done beautifully, but if you are making this in an instant pot, then you probably want dinner done in a hurry, so these 1 Hour Rolls are your answer! I often like something light and fresh with my chili like this garden balsamic avocado salad. I’ve also heard that people eat cinnamon rolls with chili, and I fully endorse this! Try our World’s Best Cinnamon Rolls!

    Burn Notice on Instant Pot

We’ve had a lot of questions, comments and concerns about the burn notice on the instant pot. We really think it just depends on your Instant Pot. Some are more sensitive than others. We have not ever had a burn notice on ours, but if you are getting them, here are a few tips and tricks…

    Cooking the Bacon Burn Notice

    • Is your bacon extra thin or lacking fat? Both of these can cause the bacon to stick to the bottom of the pot and cause a burn notice. Those browned bits stuck to the pot because of the lack of fat can make the pressure cooker think that you’ve walked away and left meat to burn.
    • To counter this, please use a good quality bacon and stir often to keep it from sticking. You can also add a little oil to the pot if not much fat is rendering off the bacon.

    Clean Pot

    • Prior browned bits on the pot- If your pot had previous food stuck to the bottom of the pot it will continue to cook and confuse the pot to thinking that something is burning. Clean your pot well after every use. Bar Keeper’s Friend is my go-to cleaner for browned bits in pots and pans.

Burn Notice After the Chili Has Been Combined

    • If your chili has been combined and then you get the burn notice you probably didn’t thoroughly stir everything together or something is stuck to the bottom of the pot. This is why that bacon step is important. If you added those heavy ingredients and added the lid something will probably stick and burn. Stir well, make sure you measured properly.

If none of these tips work, you should contact instant pot as you may have a model that needs to be replaced.

    Can this Recipe be Doubled?

This recipe is too big to be doubled in both a 6 qt Instant Pot and an 8qt. It can be one and a halved in an 8qt Instant Pot. We also been told you can double it in an 8qt Instant Pot if you take out 1 or 2 cans of beans.

How to Brown Meat for our Chili in an Instant Pot

    1. Alright, start with your bacon. Always.
Whenever bacon is going in a dish we crisp it first, drain the fat and leave the browned bits in the pan. All it does is add extra flavor to whatever comes next.
Start by pressing the “saute” button and once you can feel the heat, add the chopped bacon, stirring occasionally until crisp. Remove to a paper towel lined plate and drain the fat.
    2. Next, grab your ground beef. Any kind is fine for chili since other flavors are in there, but there’s more flavor in an 80/20 versus 90/10, though you will need to drain out the fat before continuing on.
Make sure you stir occasionally in order to crumble the meat instead of having big chunks. Chili shouldn’t be big and chunky. Leave that to the hippopotamuses.  (Totally had to spell check that one. Who knew hippos could be so difficult.)

How to Make our Best Chili Recipe in a Slow Cooker or Crock Pot

To make slow cooker chili (I linked up to the brand and model we prefer) or of course make chili in a crock pot if that’s what you have, you’ll need to cook the bacon and ground beef in a pan, then add the peppers and onions to sauté them all nice and tender.
Then dump it all in a slow cooker and we prefer 5-6 hours on low or 3 hours on high, though I have probably only used the high function twice.
Low and slow really allows the spices to bloom, or in other words to open up and really do their thing.

    Toppings for Homemade Chili

The toppings you choose for your chili is totally up to you! You can add more crunch, creaminess, heat, freshness, acidity…really anything that makes you happy! Here are a few of our favorites:

    • Cheese
    • Sour Cream
    • Sliced Jalapenos
    • Green Onions
    • Cilantro
    • Tortilla Chips or Fritos

    Storage Tips

Leftover chili should be stored in the refrigerator in an airtight container. It will keep for up to 5 days.

If you want it to last a little longer, classic chili is really easy to freeze. Cool your chili completely and store in ziplocs with all the air pressed out, or we prefer to use our Food Saver. You can store individual servings to eat for lunch or larger portions to feed the whole family later. They will last in the freezer for up to 3 months.

To reheat the chili, let it thaw in the fridge overnight and then warm it up in a pot on the stove top.

When it comes to classic chili, I want it to be full of flavor, bold and comforting! Friends, this recipe is the result of me making dozens of recipes in order to find the greatest of all time. So I tell you hands down this is the VERY BEST CHILI!

Award Winning Healthy Turkey Instant Pot Chili – Oh Sweet Basil

    [ad_1]

Our Instant Pot Award Winning Chili Recipe is going viral but we couldn’t help but create a healthy instant pot turkey chili recipe for all of you looking for healthy instant pot recipes!

We hear you loud and clear. Cade and I are sitting on the couch watching the Olympics while the kids are in bed (Women’s Snowboarding to be exact, and Chloe Kim is KILLING IT!!!) and writing this Award Winning Healthy Turkey Instant Pot Chili recipe for you all because holy moly, the requests just keep pouring in!!

We almost didn’t post our classic chili recipe because we figured that everyone was totally set in their ways with their own favorite chili recipes, but boy were we wrong! It’s going crazy on our site!

Immediately we started hearing that we needed a vegetarian and a healthy chili recipe, but we can only test so much, so first up, our Award Winning Healthy Turkey Instant Pot Chili! It’s turkey bacon to still give that hint of bacon goodness, but in a more lean way, along with ground turkey, and lots of tomato flavor.

Alright, friends if it was you wanting a healthy Instant Pot dinner recipe, this turkey chili in an Instant Pot is for you!

A metal bowl of ground turkey chili full of beans, red onions that have been chopped, chopped peppers , jalapeno slices on melted cheese next to a dollop of sour cream with a dash of cilantro and a grey napkin underneath with two wooden handled spoons to the side.

What’s in Instant Pot Turkey Chili?

For this healthy Instant Pot chili recipe, you’ll need ground turkey, turkey bacon, a mixture of black and pinto beans, fire roasted diced tomatoes, tomato paste, three kinds of peppers, red onion, chicken stock, and a variety of dried herbs and spices.

We really wanted to create an Instant Pot turkey chili recipe that could be made with ingredients you already have on hand. You might need to pick up a few of these healthy turkey chili ingredients at the store, but I’m sure you have most of them in your pantry already. Instant pot chili isn’t hard to make, and we wanted to ingredients list to reflect that!

How to Make Ground Turkey Chili in an Instant Pot

Turn your instant pot to sauté and cook bacon until crisp. Once cooked, remove the bacon and place on a paper towel-lined plate to absorb any extra grease.

Add the onions and peppers to the electric pressure cooker and cook until tender. Then, add the ground turkey and brown. At this point, you’ll want to drain off any excess grease before adding in all of the remaining ingredients.

Then, simply turn the Instant Pot to “chili” and cook! If you don’t have a “chili” setting, then just use the high pressure setting. Once cooked, you’ll need to allow the pressure to release for 10-15 minutes or quick release with the vent.

Serve nice and hot with your favorite chili toppings! We love to eat it with sour cream, shredded cheddar cheese, avocado, jalapeno slices, Fritos, tortilla chips, or some green onion slices on top!

How Long Should You Cook Instant Pot Turkey Chili?

Most batches of this award winning turkey chili will be done after 18 minutes. However, we’ve had a few times when the flavor just wasn’t there yet, so feel free to pressure cook a little longer for more flavor, or if your beans are not as tender as you’d like.

What Size Instant Pot Do I Need?

What size of Instant Pot is this healthy turkey chili recipe for? We used a 6qt 7 Function Instant Pot, but you could use a bigger model just fine.

Tips for Making Turkey Chili in an Instant Pot

When creating this healthy Instant Pot chili, we ditched the red kidney beans to lighten things up a little more as kidney beans have a heavier flavor. If desired, you can double the pinto beans, if you prefer your turkey chili to have more beans.

PRO TIP: Because turkey bacon is leaner, you’ll want to add in a drizzle of olive oil while it’s cooking or you’ll possibly trigger the burn error.

    Instant Pot FAQs

If you’ve got any questions about cooking in an Instant Pot that aren’t answered below, please refer to our Award Winning Instant Pot Chili Recipe.

What Instant Pot is Best for a Small Family?

We get a lot of questions about what Instant Pot to buy, especially for small families like our own and we still stand by the 6 qt 9 Function Instant Pot. If you have more than three children and they are older then yes, go for the bigger model, but we don’t think you need a bigger size otherwise. We especially like this model because it has the chili function as well as the yogurt. And you know how we are obsessed with our Instant Pot Homemade Yogurt!

What Does Instant Pot Burn Error Mean?

If you’re cooking your chili or our beef stroganoff for example, and you get the burn error that merely means that your Instant Pot is experiencing an overheat error. Your Instant Pot has a feature built in that recognizes when the bottom is getting too hot, dry and overcooked so it will stop the heating process to avoid any further issues.

Why Does it Say Burn on My Instant Pot?

Before we go any further into the recipe, let’s chat about the number one question we’ve been getting about cooking in an Instant Pot: why does it say “burn” on my Instant Pot, or “ovht” error on my Instant Pot?
If you get this error you probably don’t have enough liquid at the bottom of the pot. For example, in chili if you get it when cooking your bacon you probably don’t have enough fat rendering out or the pan got too hot before adding the meat so it immediately burned it.

Common Mistakes for Burn Error on Instant Pot

    Sauté Function on Instant Pot

Probably the most common mistake leading to the burn error comes from using the sauté function. Instant Pot is awesome in that you can sauté directly in the inner pot, but that means that little brown bits will be stuck to the  bottom of the pan which not everyone takes the time to properly clean off those bits before turning it to pressure cook.

Not Turning the Venting Knob to Sealing Position

One of the biggest mistakes that new Instant Pot users make, but later correct quite quickly is forgetting to turn the venting knob to sealing position. Because all of that moisture is now escaping out of the vent you’ll end up with a dry pot bottom and burned food.

How to Clean an Instant Pot

There are actually a few different things you need to do to clean your Instant Pot, but not all are necessary after every use.

Cleaning the Pot of an Instant Pot

After making dinner you should clean the pot of your Instant Pot. Handle this just like any other pot and give it a quick scrub down in the sink. We always prefer the sink over a dishwasher in order to get those little bits off of the bottom.

How to Clean the Lid of an Instant Pot

    • Remove the vent knob and check inside for any food or residue and use a  small brush to clean it out if necessary.
    • Remove the Float Valve, the hole next to the vent knob is the float valve found under the lid. Make sure it’s wiped clean.
    • Remove the anti-block shield, found right next to the float valve and wipe clean.
    • The silicone sealing ring (the silicone sealing ring is that cloudy, silicone ring under the lid) should be removed every now and again to remove lingering smells and to make sure everything is functioning and not damaged. If you notice cracking or deformation of the sealing ring, you should replace it right away. (Here’s where you can buy replacement Instant Pot Sealing Rings.)
    • The silicone ring can be washed in the dishwasher or soaked in vinegar first to remove odors.

How to Remove the Discolored Finish on Instant Pot Inner Pot

To remove the common rain-bowing effect on the stainless steel inner pot you’ll want to use vinegar.

How to Clean an Instant Pot with Vinegar

Wipe your Instant Pot inner pot clean. Pour in enough white vinegar to cover the bottom of the pot. Let the vinegar sit for 5-7 minutes. Now scrub clean as normal.

Never use steel wool to clean an Instant Pot, as it will scratch the surface of the Instant Pot inner pot.

      Sour Cream, Cilantro, Cheese

    • Most batches will be done after 18 minutes, however we’ve had a few times when the flavor just wasn’t there yet, so feel free to pressure cook a little longer for more flavor or if your beans are not as tender as you’d like.

    • For the stove: Cook everything in the pot just like you do for the instant pot and then allow to simmer on low heat for 3 hours.

    • For the slow cooker: Cook the bacon and set aside on a plate. Cook the onion and peppers and set aside on another plate. Drain any excess grease and add the meat, cooking until browned. Add everything into the pot, leaving out a little bacon for garnish and cook on low for 5-6 hours or on high for 3 hours.

To freeze, cool the chili completely. Place in a large ziploc bag or FoodSaver, removing all air and freeze by laying flat for up to 2 months.
