    3. Spread the mashed potatoes evenly on top (full recipe below) and cook.

    Before serving, let it rest so it thickens before scooping.

    • Whisk the sauce mixture until the cornstarch fully dissolves to avoid thick pockets.
    • Spread the potatoes edge-to-edge to help keep steam from breaking through the topping.
    • Placing a paper towel under the lid absorbs condensation, so extra moisture doesn’t drip back into the gravy and thin the gravy.
    • For a more finished topping, brush with butter after cooking and let it sit uncovered for a few minutes to dry slightly.
    • Let the finished dish rest 15 to 30 minutes so the gravy can set for cleaner scoops.

    • Brown the ground beef and onion in a large skillet on medium-high heat until no pink remains. Drain any fat, season with salt and pepper, and transfer to the bottom of a 4 or 6-quart slow cooker.

    • Place the frozen vegetables on top.

    • In a medium bowl, whisk together the broth, gravy mix, Worcestershire sauce, tomato paste, cornstarch, garlic powder, and thyme. Pour over the vegetables and stir well to combine.

    • Spoon the mashed potatoes over top and spread into an even layer. Do not stir.

    • Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours.

    • Uncover and rest 15 to 30 minutes before serving.

    Make sure your potatoes are not runny before adding them to the slow cooker. For browned edges, place a double layer of paper towels over the slow cooker so it isn’t touching the potatoes, and place the lid on top. This will absorb excess moisture. 
    Optional: While the shepherds pie is resting, brush the top of the mashed potatoes with melted butter, if desired.
    Shortcut Sauce

    • 1 can (10.5 ounces) condensed cream of mushroom soup
    • 1 packet brown gravy mix
    • 2/3 cup water

    In a medium bowl, whisk the soups (without added water or milk), gravy packet, and water until smooth. Pour the sauce over the meat and vegetables.
    Keep leftovers in an airtight container in the refrigerator for 3 days and in the freezer for 4 months.

    Ingredients for Shepherd’s Pie

    Shepherd’s Pie can be prepared fresh, but it’s also a great way to use up any leftover meat, veggies, gravy, or mashed potatoes.

    Ground Meat –You can use any ground meat in this recipe. Lamb is traditional for a shepherds pie recipe, although I most often use ground beef (which technically makes this a cottage pie). Leftover roast meat also works well.

    Vegetables – Frozen mixed vegetables make preparation quick and easy, but you can use leftover roasted veggies too. If using fresh vegetables, steam them until tender or cook them with the beef before adding them to the dish.

    Sauce – Shepherd’s Pie is versatile, and I’ve provided a couple of shortcut sauces in the recipe below. However, you can use leftover gravy (or gravy mix) and tomato sauce, or any sauce you like.

    Mashed PotatoesTraditional mashed potatoes are what I most often use, but garlic mashed potatoes add great flavor to this dish! If you’re in a hurry, you can use store-bought mashed potatoes. While it’s not traditional and it’s totally optional, I love cheese on top.

    How to Make Shepherd’s Pie

    1. Make Mashed Potatoes: If you have leftover mashed potatoes, use those. Simmer baking potatoes in a large pot of salted water until tender. Mash them with butter and cream. Tater tots make a great topping too!
    2. Brown Meat: Brown lamb (or beef) in a skillet with onion. If using fresh veggies, they can be diced and cooked along with the beef and onion.
    3. Add Sauce: Stir in the seasonings and sauce per the recipe below. Stir in the veggies.
    4. Layer and Bake: Pile the potatoes on top. A sprinkle of cheese is not traditional, but it is delicious!

    Prep Ahead and Tips for Shepherd’s Pie

    • From Scratch: This recipe is a shortcut recipe; if you’d like, you can find my homemade version here.
    • Layering: After prepping the meat mixture, cool it and chill it in the fridge for 20 minutes to keep the mashed potato layer separated.
    • Prep Ahead: Assemble the Shepherd’s Pie up to one day in advance and refrigerate it. Let it come to room temperature for 30 minutes before baking.
    • Quick Clean Up: If your baking dish is very full, place it on a parchment-lined baking sheet to avoid any juices spilling into the bottom of the oven.

    How to Freeze Shepherd’s Pie

    • Prepare as directed and cool completely. Wrap tightly in plastic wrap and then in foil. Freeze.
    • Thaw overnight in the fridge. Bake for 45 minutes covered and 15 minutes uncovered.

    Shepherd’s pie is a delicious combo of ground lamb (although many people use beef) that has been cooked with vegetables in a gravy or sauce. The lamb mixture is then topped with a crust of creamy mashed potatoes and baked.

    Can You Make Shepherd’s Pie With Ground Beef?

    This casserole is traditionally made with ground lamb. Many people make this recipe with ground beef however, if you use ground beef it’s actually called Cottage Pie! (You can also replace the meat with a vegetarian lentil version).

    Does Shepherd’s Pie Have Cheese on Top?

    Traditionally, a shepherd’s pie is not topped with cheese. That said, cheese is my love language, so I like to add a bit on top. If you’d prefer, brush the potatoes with some butter and skip the cheese.

    How Do You Bake Shepherd’s Pie?

    Bake this easy shepherd’s pie recipe for 25-30 minutes. If you’ve made it ahead of time and it’s chilly from being in the fridge, bake it a bit longer, about 30-35 minutes, or leave it out on the counter for 30 minutes before baking.

    Can You Make Shepherd’s Pie With Sweet Potatoes?

    Absolutely!! Make mashed sweet potatoes using this recipe and pile them high!

    What to Serve with Shepherd’s Pie

    This Shepherd’s Pie is a twist on the classic Irish dish. It’s made with ground lamb, peas, and carrots, topped with mashed potatoes & cheddar cheese!

    Prep Time 20 minutes

    Cook Time 40 minutes

    Total Time 1 hour

    • Preheat the oven to 400°F.

    • In a large skillet or Dutch oven, cook lamb (or beef), onion, and garlic over medium heat until no pink remains. Drain any fat.

    • Stir in mixed vegetables, tomato soup, Worcestershire sauce, salt, basil, and pepper.

    • Transfer the ground beef mixture into a 3-quart or 9×13 inch casserole dish and spread into an even layer.

    • Spoon mashed potatoes over top and sprinkle with cheese if using.

    • Baked for 25-30 minutes or until bubbly. Broil 2 minutes if desired.

    • Remove from the oven and cool for 5 to 10 minutes before serving.

    Substitute the tomato soup in this recipe for one of the following:

    Why is it called Shepherd’s Pie?

    Originally a meat pie made with minced (or ground) meat and mashed potatoes was known as a Cottage Pie (and it was even sometimes made with pastry many years ago). It is very popular in Ireland, Scotland, and England as well!   In the late 1800s, the pie was named Shepherd’s Pie if made with lamb (since the shepherd looked after the sheep) and if made with beef it was called Cottage Pie.

    Regardless of the name, this recipe is a classic Shepherd’s Pie recipe loaded with flavor and the perfect make-ahead meal to serve all year long!

    I make these all the time because these flavorful mashed potatoes will go with just about anything. In this recipe, roasted garlic is mashed with redskin potatoes, butter and half & half and seasoned with salt and lots of freshly ground black pepper.

    I serve them with a little (okay, a lot) of butter drizzled over top and sprinkled with snipped fresh chives.

    To Make These Roasted Garlic Mashed Potatoes You Will Need:

    • head of garlicTry to find large head of garlic with firm unblemished cloves.

    • kosher saltEnhances flavor and aids in softening while roasting.
    • redskin potatoesThe base to these mashed potatoes.
    • butterI use salted for this recipe.
    • half & halfWhich is essentially 1 part whole milk and 1 part heavy cream.
    • sour creamLends creaminess and delicious tangy flavor.
    • freshly ground black pepperThis will add some subtle bite and flavor.

    Roast The Garlic:

    Preheat your oven to 400° (or 200℃).

    Cut off the top third of a whole head of garlic and place on a piece of foil. Drizzle with olive oil and season with a pinch of salt.

    Fold up the edges, crimping tightly to form a pouch or purse and roast in your preheated oven for 40 to 50 minutes.

    Remove and let cool.

    Make The Mashed Potatoes:

    Meanwhile, quarter 2 pounds redskin potatoes and add to a large, heavy bottom pot. Add in a 1 teaspoon of kosher salt.

    Cover with cold water, covering the potatoes by 2 inches. Cover and bring to a boil. Reduce to medium to medium high and cook until fork tender.  About 20 t0 25. minutes.

    Drain the potatoes, leaving them in the pot. Then add in 1/2 cup butter, 3/4 cup half &  half, 1 teaspoon kosher salt and squeeze in the roasted garlic cloves.

    WHAT IS HALF & HALF?

    Half & half is commonly found in the dairy section of most American grocery stores. It is equal parts whole milk and heavy cream.

    Cover and let sit on the stovetop with the burner off for 10 to 15 minutes. Then use a masher to smash the potatoes and roasted garlic in with the butter and half & half.

    Mash until you’ve reached a desired consistency.

    Add in 1/2 cup of sour cream and lots of freshly ground black pepper.

    How to Make Mashed Potatoes in Advance:

    You can make this mashed potato recipe up to 2 days in advance. Simply prepare mashed potatoes as directed (excluding the toppings). Allow the mashed potatoes to cool before transferring to a container with a tight fitting lid and storing in the refrigerator.

    How To Reheat Mashed Potatoes:

    Transfer the cold mashed potatoes to a saucepan or dutch oven. Cover and reheat over low heat, stirring occasionally until heated through. Serve with melted butter on top and the snipped chives.

    • 1 head garlic
    • 1 teaspoon olive oil
    • kosher salt
    • 2 pounds redskin potatoes, wash, pat dry and quarter
    • 1/2 cup butter
    • 3/4 cup half & half
    • 1/2 cup sour cream
    • freshly ground black
    • melted butter, for serving (optional)
    • chives, for serving (optional)

    ROAST THE GARLIC:

    • Preheat your oven to 400° (or 200℃).

    • Cut the top third portion off of the head garlic and place on a piece of foil. Drizzle with oil and sprinkle with salt. Fold up the edges and crimp tightly (forming a pouch) and roast for 40 to 50 minutes. Let cool until safe to handle.

    MAKE THE MASHED POTATOES:

    • Add the potatoes and 1 teaspoon kosher salt into a dutch oven or medium to large sauce pot. Cover with cold water, covering the potatoes by 2 inches. Cover and bring to a boil. Reduce to medium to medium high and cook until fork tender – about 20. to 25 minutes.

    • Drain the potatoes, leaving them in the pot. Then add in the butter, half &  half, 1 teaspoon kosher salt and squeeze out the roasted garlic cloves. Cover and let sit on the stovetop with the burner off for 10 to 15 minutes.

    • Then use a masher to smash the potatoes and roasted garlic in with the butter and half & half. Mash until you’ve reached a desired consistency.

    • Add in the sour cream and lots of freshly ground black pepper. Stir well until combined. Taste and season with more salt and black pepper if desired.

    Use your Instant Pot for these delicious mashed potatoes your entire family will enjoy. This step-by-step recipe will help you get the perfect consistency and taste.

    Ingredients for Instant Pot Mashed Potatoes

    You only need 5 ingredients to make these perfect mashed potatoes. Here is what you will need:

    • Yukon Gold Potatoes: You will need about 8 potatoes (or 4-5 large).
      • PRO TIP: You can also use Russet potatoes if desired, but the taste of Yukon gold is unbeatable.
    • Salt: Adds flavor
    • Cream Cheese: Use full fat, no low fat or fat free.
    • Whole Milk: Cream can also be used.
    • Butter: Adds flavor and richness

    How to Make the Best Mashed Potatoes

    Here are the step-by-step instructions for making mashed potatoes in the Instant Pot. It’s easy peasy!

    1. Set the cream cheese out to come to room temperature.
    2. Melt the butter on the stove top or in the microwave.
    3. Peel and quarter the potatoes.
    4. Add the potatoes to the Instant Pot and add enough water to cover them. Add the salt.
    5. Put the lid on the Instant Pot and seal it. Set to manual high heat and pressure cook for 8 minutes.
    6. Measure the milk in a glass measuring cup and warm the milk in the microwave.
    7. When the potatoes are done, quick release the IP and drain the potatoes. Leave the potatoes in the pot and let them steam dry for a few minutes.
    8. Smash the potatoes with a potato masher or ricer. Then add the butter and stir, and then add the cream cheese and warmed milk.
    9. Season to taste.

    The best potatoes for mashing are the starchy potatoes – Yukon gold, Russet or Idaho. They have a fluffy texture that breaks down easily while mashing.

    Variations

    If you want to add additional flavors to these creamy mashed potatoes, you could add cooked crumbled bacon bits after cooking and mashing the potatoes. You could also add sauteed or roasted minced garlic. Adding any type of fresh herb would also be a great option…minced rosemary, thyme, parsley, chives, etc. One more possibility would be to add cheese. A nice sharp cheddar that has been grated finely would melt beautifully and add great flavor.

    How to Store and Reheat Mashed Potatoes

    Mashed potatoes should be stored in an airtight container in the refrigerator. They will keep for 4-5 day.

    To reheat mashed potatoes, place them in a pan or dutch oven on the stove top and warm them up over low heat stirring occasionally. You can also reheat them in the oven in a baking dish, covered with foil at 350 degrees for 15-20 minutes.

      4 oz Cream Cheese

    • Place the butter in a small saucepan to melt.

      3 Tablespoons Butter

    • Peel the potatoes and quarter them.

      2 lbs Yukon Gold Potatoes

    • Add the potatoes to the Instant pot and pour in water just to cover them.

    • Add the salt and stir gently.

      1 teaspoon Salt

    • Press Manual, high heat and seal the lid.

    • Pressure cook for 8 minutes.

    • Meanwhile, measure the milk in a glass measuring cup and warm the milk in the microwave.

      1/2 Cup Whole Milk
