ingredients to make Chicken Meatballs in a bowl

    Ingredients in Chicken Meatballs

Chicken – I use lean ground chicken to make juicy meatballs. Extra-lean is made with chicken breast, and while it will work, ensure that you don’t overcook them. You can replace the meat with ground turkey.

Breadcrumbs – Seasoned breadcrumbs have a finer texture and add extra flavor, but Panko breadcrumbs work as well. They’re added to bind the ingredients together and make them juicy as they soak up some of the juices while they bake.

Flavor – Parmesan cheese gives these chicken meatballs some extra flavor. Feel free to add a little Italian seasoning or red pepper flakes if you’d like.

    How to Make Chicken Meatballs

    1. Mix all ingredients in a large bowl according to the recipe below.
    2. Roll mixture into meatballs and place on a prepared baking sheet.
    3. Bake until they are just cooked through.

KITCHEN TIP: Ensure meatballs are the same size so they cook evenly. A cookie scoop makes this quick and easy!

    How to Freeze Chicken Meatballs

Prepare the meatballs as directed and freeze on a parchment paper lined baking sheet. Once frozen, transfer the meatballs to an airtight container or freezer bag and freeze for up to 4 months.

    • To bake raw meatballs from frozen: Cook for 25 to 28 minutes
    • To bake cooked meatballs from frozen: Cook for 18 to 20 minutes.

    Ingredients for Dry Rub Wings

Chicken – To save time, purchase fresh split chicken wings that are already split into flats and drums (with the wing tips discarded). If you have whole chicken wings, they should be split by cutting them apart at the joints.

Dry Rub – Pull out a few seasonings from the spice cabinet for this uniquely delicious spice blend! Add more or less chili powder or cayenne to suit your heat preference. A sugar-free substitute for brown sugar can be used as well.

    Variations

    • Add your own favorite seasonings or spices.
    • This blend is great on baked chicken thighs or breasts as well.

How to Make Dry Rub Chicken Wings

Dry rub wings come out crispy and juicy with a light, sweet spicy flavor cooked right in!

    1. Stir together the rub ingredients.
    2. Prepare wings as directed in the recipe below.
    3. Toss wings in dry rub mixture (reserve 1 tablespoon).

    Air Fryer:

    1. Place wings in a single layer in a preheated air fryer and cook until crisp and cooked through.
    2. Sprinkle wings with reserved dry rub before serving.

    Oven Baked:

    1. Toss wings with 1 tablespoon of flour and 1 tablespoon of baking powder.
    2. Chill wings for 30 minutes in the refrigerator.
    3. Toss wings with oil and dry rub.
    4. Place wings in a single layer on a prepared baking rack and bake until crispy and cooked through.
    5. Sprinkle wings with reserved dry rub before serving.

    Dips & Sauces for Wings

Serve dry rub chicken wings on their own with carrots and celery or serve them with your favorite dipping sauces.

    Keeping Chicken Wings Crispy

    • For best results, patting the wings dry before seasoning is an important step to ensuring the oil and dry rub evenly and thoroughly coat the wings. This helps remove excess moisture so the skin stays extra crispy.
    • Placing wings in a single layer with space between them in the Air Fryer ensures the hot air will circulate all around them, cooking them evenly. This same method applies to wings baked on a rack instead of directly on a baking sheet.
    • Store leftover dry rub chicken wings in a covered container for up to 4 days and reheat them in a preheated Air Fryer or under the broiler.

    • Pork chops are versatile, affordable, and can be enjoyed hot or cold. Make extra to enjoy all week long.

Ingredients for Air Fryer Pork Chops

Pork Chops – This recipe uses boneless pork chops about ¾-inch thick. If using thinner pork chops, you’ll need to cook them for less time, while bone-in chops will need a few minutes more.

Brine (optional) – A brine is a mixture of water, salt, and sugar that makes pork chops tender and flavorful. This brine is optional but it is recommended for the best results. No time to brine? Add a teaspoon of salt to the rub mixture instead.

Rub – In addition to salt and pepper – brown sugar, chili powder, and garlic powder add great flavor. You can add other herbs/spices like paprika or onion powder.

    Two seasoned pork chops

How to Make Air Fryer Pork Chops

Air fryer pork chops are fast and easy.

    1. If using the optional brine, cool it and brine the chops for at least 30 minutes, up to 2 hours.
    2. Season pork chops with the brown sugar rub.
    3. Cook pork chops according to the recipe below (400°F for 12 minutes).
    4. Rest for 5 minutes before serving.

Pork chops are easy to make in the oven too!

    Juicy Baked Pork Chops

These easy baked pork chops are brined, seasoned, and broiled a perfect bite every time! You can bake them at different temperatures, so they’re a great main dish to go with all kinds of sides!

    Tips for Perfect Pork Chops

    • Avoid crowding the basket so the hot air can freely circulate around the food.
    • Cook times depend on the thickness of the meat; it’s easy to overcook pork chops so check them early.
    • For juicy pork chops, cook to an internal temperature of 145°F.
    • Remove them from the air fryer at 140°F as the temperature will rise as they rest (carryover cooking).

    Leftovers?

Keep leftover air-fried pork chops in an airtight container in the fridge for up to 4 days. Reheat in the air fryer.

Serve as-is or slice and add to a veggie stir fry, ramen noodles, or a chilled Asian salad.

    Air Fryer Pork Chops

Brined pork chops are rubbed with spices and air-fried until juicy & tender!

    Prep Time 10 minutes

    Cook Time 12 minutes

    Brine time 30 minutes

    Total Time 52 minutes

    Brine (optional, see notes)

    For the Brine (OPTIONAL)

    • In a medium saucepan, combine water, salt, sugar and peppercorns. Bring to a boil over high heat. Once the salt and sugar are dissolved, remove from heat and cool completely.

    • Place the pork chops in a large bowl or freezer bag. Pour the cooled brine over the pork chops and let sit in the refrigerator for at least 30 minutes or up to 2 hours.

    • Drain well, discard the bring and pat the pork chops dry with a paper towel.

To Air Fry The Pork Chops

    • Preheat the air fryer to 400°F.

    • In a small bowl, combine brown sugar, chili powder, garlic powder, and black pepper (if you are not using the brine, add 1 teaspoon of kosher salt).

    • Using a sharp knife, cut a few slits in the fat cap on the sides of the pork chops. Massage the brine into both sides of the pork chops.

    • Place pork chops in a single layer in the air fryer basket and cook 12 minutes, turning after 6 minutes or until chops reach 140°F. Do not overcook.

    • Transfer the chops to a plate and let rest for 5 minutes before cutting.

Brine: The brine is optional but recommended. To cool it quickly, use less water in the brine and add ice.
Salt: If you skip the brine, add kosher salt to the rub mixture, if using table salt, reduce the amount.
Cooking time: Thinner chops will need less time while thicker chops may need an extra minute or two. Use a meat thermometer to ensure the pork chops do not overcook.
Internal temperature: The pork should be cooked to 145°F. I remove the pork at 140°F as the temperature will continue to rise as it rests. Do not overcook.

When it comes to easy starters that are big on flavor, this bacon-wrapped shrimp recipe tops of the list.

    We Love Bacon Wrapped Shrimp!

    • This shrimp recipe seems fancy, but it’s actually easy to make.
    • They are fast to prepare and you can air fry, grill, or bake them in the oven.
    • Prep them ahead of time and cook just before serving.

    Ingredients for Bacon Wrapped Shrimp

Shrimp – Use jumbo or large shrimp for best results, and leave the tail to look nice. Frozen shrimp should be thawed, peeled, and deveined before using.

Bacon – Bacon can be any variety, from hickory smoke-flavored to maple bacon. Regular-cut bacon works best, thick cut doesn’t have enough time to crisp.

Sauce – This sauce is a bit sweet and a bit spicy, use your favorite flavor of bbq sauce. Make them mild by skipping the sriracha.

For smaller shrimp, pre-cook the bacon slightly. This ensures it crisps up nicely, as small shrimp cook quickly.

Pair with homemade fresh tomato soup for a delicious and comforting meal.

ingredients to make Air Fryer Grilled Cheese

Ingredients for Air Fryer Grilled Cheese Sandwiches

Bread – Any type bread will work. Try white sandwich breadFrench bread, or sour dough.

Butter – Lightly spread butter or mayonnaise on the outside of each slice. Replace butter with cooking spray or olive oil.

Cheese – Choose cheese slices over shredded cheese if possible – real sharp cheddar cheese or processed cheese slices are both great (my favorite is to include a slice of each).

    Variations

    • Swap out cheddar cheese for American cheese, provolone, gouda, gruyere, or Swiss.
    • Add thin slices of apple or pears – sharp or bold flavors are the best cheeses with fruit.
    • Add a tomato slice, crispy bacon, thin slices of ham, or jalapenos.

How to Make Grilled Cheese in the Air Fryer

    1. Butter both slices of bread and place two slices in the air fryer basket, butter side down.
    2. Top with cheese and another piece of buttered bread.
    3. Air fry for 4-6 minutes until golden brown.

Cooking time can vary slightly based on your air fryer so check it early.

If the bread (or cheese) is thin or light, it might blow off the sandwich while cooking.

To ensure your sandwich stays together, use thicker bread and cheese slices or secure it with toothpicks until the cheese begins to melt.

plated Air Fryer Grilled Cheese with pickle slices on top
    • No need to flip the sandwiches, the air fryer will toast it evenly on both sides.
    • Mayo can be used in place of butter.
    • Use a toothpick to secure the layers until the cheese melts.

    Reheating Leftovers

    • Keep leftover sandwiches in a covered container in the refrigerator for up to 4 days.
    • Reheat them in the air fryer for a couple of minutes.

Cube leftover sandwiches, toast them in the oven, and make them into cheesy croutons for tomato soup!

    • Place the sandwiches in the air fryer basket in a single layer. Optional: Add a toothpick to each sandwich to hold the bread in place until the cheese melts.

    • Cook at 350°F for 4 to 6 minutes, or until the bread is golden brown and the cheese is melted.

Tip: If the bread (or cheese) is thin or light, it might blow off the sandwich while cooking. To ensure your sandwich stays together, use thicker slices of bread and cheese or lightly butter both sides of the bread. You may also secure it with toothpicks. Cooking time: Air fryers can vary, you may need to cook your sandwiches for a minute more or less.  Variations: Swap out the cheddar for any cheese you have on hand. A pinch of garlic powder can be added to the outside of the bread. Add in your favorites. Bacon, tomato slices, jalapenos, the possibilities are endless.

  • Baked Buffalo Wings

    Baked Buffalo Wings

    [ad_1]

On appetizer night, everyone loves crispy baked buffalo wings!

This crowd-pleasing recipe skips the deep fryer and delivers the crispiest and juiciest chicken wings ever – straight from the oven.

    easy plated Baked Buffalo Wings

    Crispy Baked Buffalo Wings

    • Skip the deep fryer – the oven makes for easy prep and quick cleanup.
    • These are the best baked buffalo wings because they’re nice and crispy.

Serve them up just like they do in Buffalo, NY, with celery sticks and blue cheese dressing – or sub in ranch if you prefer.

    Ingredients for Buffalo Wings

Chicken Wings – Use fresh split bone-in wings. Split wings means that the drums and flats are separated and the wing tip has been discarded.

Coating & Seasonings – Spices and all-purpose flour create a coating that makes the chicken crispy and gives the buffalo sauce something to grab onto. For an extra kick, add in a bit of cayenne pepper.

Buffalo Sauce – I prefer homemade buffalo sauce with just hot sauce and unsalted butter; however, you can purchase buffalo sauce at the store if you’d prefer.

Did you know that you can purchase a mild buffalo sauce?

If spicy flavors aren’t to your taste, look for mild buffalo sauce to add a gentle, flavorful kick to your wings recipe.

    How to Make Buffalo Wings

    1. Pat the wings dry with a paper towel.
    2. In a large bowl, combine wings with flour and seasonings (per recipe below).
    3. On a large parchment-lined baking sheet, place wings in a single layer (no wire rack required) and bake, turning halfway.
    4. Remove and toss in buffalo sauce.

Once you’ve tossed the chicken wings in buffalo sauce, you can serve them or return them to the oven for an additional 10 minutes.

The final baking with buffalo sauce helps the sauce to caramelize on the outside of the wings while seeping into the wings. YUM!

    Dipping and Dunking!

This is the best buffalo wings recipe – crispy and spicy! Serve them New York style with blue cheese or try ranch. Any dip with sour cream will balance the wings’ spicy heat, enhancing their flavor. Add a side of fries for a full meal deal!

    Tips for Crispy Wings

    • Pat the wings dry before dredging in flour.
    • Use baking powder, not baking soda, for a crispier coating.
    • Place the flour-coated wings in a single layer in the refrigerator for an hour to dry out for an even crisper skin.

    Storing Wings

    • Leftover buffalo wings can be stored in the refrigerator for up to 4 days or up to 6 months in the freezer. Thaw in the refrigerator before reheating.
    • To re-crisp, avoid the microwave. Place the wings in a single layer in a preheated oven for 15 minutes, under the broiler for 2-3 minutes per side, or in the air fryer for a few minutes.

    Crock Pot Turkey Breast

‘Tis the season for easy turkey recipes, and this juicy Crock Pot Turkey Breast is perfect for a small holiday feast!

A slow-cooker turkey breast just needs some broth and veggies, and it comes out perfectly juicy every time!

    sliced Crock Pot Turkey Breast

    A Tender Turkey Dinner

    • I love easy Crockpot recipes because they’re prepped ahead and the low and slow cooking results in tender meat.
    • Oven-roasted turkey is great for a crowd, but a slow cooker turkey breast is great for a weeknight meal or a smaller family.
    • Making a turkey breast is an easy way to prepare turkey dinner, add it to the crock pot and forget about it until it’s done!
ingredients to make Crock Pot Turkey Breast

Ingredients for Crock Pot Turkey Breast

Turkey Breast – I use a 2lb boneless turkey breast with skin on. If the turkey breast is a bit bigger, you’ll need to add some extra cooking time (cook times included below).

Veggies – These are optional but do add extra flavor. In place of veggies, you can use a small rack for the turkey breast. Celery, carrots, and onions (use all 3 or what you have on hand) flavor the broth nicely and lift the turkey breast out of the broth.

Fresh Herbs – If you have them add some in, I like to buy an inexpensive mix of “poultry herbs” at the local grocery store. This usually includes parsley, thyme, rosemary, and sage. If you have any or all of these, add a sprig or two to the broth.

GRAVY Use the broth and drippings to make a flavorful gravy. If using packaged gravy, the drippings can be added in place of water for extra flavor.

A thermometer is an inexpensive way to ensure the meat is cooked correctly and comes out juicy every time! An instant read thermometer is great for a quick temperature check and to ensure meat is cooked to perfection. When roasting for longer periods, I prefer one similar to this that I leave in the meat.

brushing sauce on turkey to make Crockpot Turkey Breast

How to Cook a Turkey Breast in a Crockpot

    1. Prepare the turkey breast with herbs and butter (or olive oil) per the recipe below.
    2. Place vegetables in the crockpot and top with the turkey breast.
    3. Cook ‘low and slow’ according to recipe times below until the turkey breast reaches an internal temperature of 160° F.
    4. Remove the turkey breast and allow it to rest for 10 minutes before slicing (the temperature will rise to 165°F).

With a smaller turkey breast, the vegetables may not be tender enough in the time it takes to cook the turkey. They do add great flavor to the broth and the turkey breast itself. If you’d like to eat the vegetables, chop them and simmer in the broth on the stove while the turkey rests until they’re tender. They can also be refrigerated and added to soups or stews later.

    Turkey Breast Crockpot Cooking Times

This recipe uses a 2 lb skin-on boneless turkey breast, but here are a few other cooking times for turkeys of different weights:

    • 2lb turkey breast – 2hrs 45 minutes to 3 hrs 15 minutes
    • 3 lb turkey breast – 3 hours 45 minutes to 4 hours 15 minutes.
    • 4 lb turkey breast – 4 hours 45 minutes to 5 hours 15 minutes.

Be sure to use a meat thermometer; the internal temperature should always reach 165°F. Check the turkey breast early to ensure it does not overcook.

TURKEY TIP: Once the turkey has finished cooking it should rest for about 10 minutes before slicing. Remove it from the slow cooker while it rests so it doesn’t continue cooking in the steam and juices.

Crock Pot Turkey Breast with vegetables in the pot

Pair this up with your favorite turkey dinner side dishes and some homemade gravy for the perfect meal.

    Tips for Juicy Turkey Breast

    • The best Crockpot turkey breast is slow-cooked to perfection.
    • Check the temperature EARLY so your turkey doesn’t overcook.
    • Test the temperature at the thickest part of the meat (away from the bone for bone-in breasts).
    • Remove the meat from the slow cooker to rest so it doesn’t continue cooking.
    • Rest the turkey for at least 5-10 minutes before slicing.

    Homemade Taco Seasoning Recipe

    [ad_1]

I love homemade seasoning mixes so I can adjust the salt and spice levels.

This easy Taco Seasoning recipe is the perfect way to spice up your chicken or beef with ingredients you likely have in your pantry.

I keep a large batch of this taco seasoning at all times to quickly cook up tasty tacos.

    jar of Homemade Taco Seasoning

    For More Than Just Tacos

    • Store-bought seasoning is convenient but contains additives and lots of salt. Making your own taco seasoning at home means you can reduce the salt or add extra heat if you’d like.
    • It’s quick to make and can be doubled or tripled and stored in the pantry.

    Ingredients in Taco Seasoning

It’s a blend of spices, most of which you likely have in your pantry. It’s the perfect way to season meat for tacos and beyond.

    • Chili Powder: It’s not just for chili, it adds depth, warmth, and heat. You can use mild or hot chili powder.
    • Ground Cumin: Adds a slightly nutty warm flavor
    • Garlic Powder: Adds color, sweetness, and classic taco flavor.
    • Onion Powder and Dried Oregano: Adds savory depth of flavor.
    • Seasoning: Salt & pepper can be adjusted to taste.
    • Options: A pinch of cayenne pepper or red pepper flakes add heat. A pinch of smoked paprika adds a nice smoky flavor.
Homemade Taco Seasoning ingredients in metal cups

    Variations

    • To make a low sodium verison, add less salt (or no salt) based on your dietary needs.
    • To make mild taco seasoning, leave out the cayenne pepper and/or chili flakes.
    • To make it spicy, double the cayenne or add other dried chili peppers to your liking.
    • Since this is made from spices, it’s naturally gluten-free, double check that your chili powder and other spices are gluten-free.

How Much Taco Seasoning to Use

Once you try it homemade, you’ll never want to go back to store-bought packets of taco seasoning.

    • To replace a store-bought packet, use 2 tablespoons of homemade taco seasoning.
    • Use 2 tablespoons of homemade taco seasoning for 1 pound of ground beef. Add 1/2 cup of water with the seasoning and let it simmer.
    • Options: Add 1/2 diced onion to the meat while browning. Once browned, stir in a tablespoon of tomato paste or a diced tomato if you’d like.

Other Way to Use Taco Seasoning Mix

Of course, it’s great for ground beef tacos, but this DIY taco seasoning recipe can also be used for other types of tacos or as a seasoning for meat and vegetables.

    • 1 pound of ground meat: ground beef, ground chicken, or ground turkey
    • Sprinkle it on shrimp or chicken before grilling.

I love using this recipe to make Dorito taco salad and slow cooker chicken tacos.

    Juicy Baked Pork Chops

This recipe makes the juiciest baked pork chops you’ve ever had.

Moist, tender, and packed with flavor, these baked pork chops are seasoned with pantry staples and are quick to make.

    Ingredients for Baked Pork Chops

    • Easy to prep and perfectly juicy, oven-baked pork chops are delicious.
    • A quick brine ensures that the chops are perfectly seasoned and extra tender.
    • The homemade pork rub helps them to caramelize beautifully.

Pork Chops – Choose lean ¾-inch center cut pork chops or pork loin chops. If the chops are thinner or thicker than ¾-inch, the cooking time will need to be adjusted.

Brine – A pork chop brine is a blend of salt and sugar with water and it breaks down tougher proteins while allowing the meat to absorb the flavors. A brine is not required but I do recommend it for the most tender and flavorful pork chops.

Seasonings – A simple blend of seasonings makes a quick rub. Brown sugar for sweetness, garlic powder & mustard powder for flavor, and paprika for a hint of savory flavor.

You can change things up with honey in place of brown sugar, try onion powder instead of garlic powder, or add oregano, black pepper, or other fresh herbs to the mix.

If there’s no time for brining, add one teaspoon of kosher salt to the rub.

How Long to Bake Pork Chops

Depending on the side dish being baked with these pork chops you can alter the cooking times for the oven temperature.

    • 450°F – bake 14-16 minutes
    • 400°F – bake 17-19 minutes
    • 375°F – bake 22-25 minutes
    • 350°F – bake 35 minutes

Tips for The Best Baked Pork Chops

    • This pork chop recipe uses ¾-inch thick boneless loin chops, if your chops are thicker or thinner, the time will need to be adjusted. Bone-in pork chops will need a little bit of a longer cooking time.
    • The brine makes chops tender and adds flavor – if you skip the brine, add salt to the rub.
    • Just like pork tenderloin, it’s okay if the chops are a little bit pink in the middle.

Do not overcook: The baking time will depend on thickness, use a meat thermometer to test for doneness. Pork chops should be baked to an internal temp of 145°F. Remove them from the oven at 140°F as the temperature will rise as they rest (carryover cooking).

    Juicy Baked Pork Chops

These easy baked pork chops come out incredibly tender and juicy every time.

    Prep Time 10 minutes

    Cook Time 20 minutes

    Marinate Time 30 minutes

    Total Time 1 hour

    • In a small saucepan, combine the water, salt, brown sugar, and peppercorns. Bring to a boil over high heat and boil until the sugar and salt have dissolved. Add the ice to the brine and cool completely.

    • In a large bowl or freezer bag, pour the cooled brine over the pork chops and refrigerate for at least 30 minutes or up to 2 hours.

    • Preheat the oven to 400°F and line a baking sheet with aluminum foil for easy cleanup.

    • Remove pork chops from the brine and pat them dry with a paper towel. If the pork chops have a fat cap on one side, make small cuts into the fat to help them cook evenly.

    • In a small bowl, combine the brown sugar, garlic powder, mustard powder, and paprika. Apply the rub to both sides of the pork chops and massage it into the meat.

    • Place the seasoned pork chops on the prepared baking sheet and bake for 16 minutes.

    • Turn the oven to broil, and broil the pork chops, 4 to 6 inches from the heat, for an additional 2-4 minutes, or until they reach an internal temperature of 140°F.

    • Remove the pork chops from the oven and place them on a plate to rest for 5 minutes before serving, allowing the temperature to rise to 145°F.

Choosing Pork Chops: Choose lean chops, ¾-inch thick.
Skipping the brine? If time allows, the brine is recommended. If you’re short on time,  you can skip the brine and add 1 teaspoon kosher salt to the rub mixture.
Cooking Time: Thicker chops will need extra time, while thinner chops will cook faster. Use a meat thermometer to test for doneness. Pork chops should be baked to an internal temp of 145°F. Remove them from the oven at 140°F as they will continue to rise in temperature as they rest. Pork chops can (and should!) be a little bit pink in the middle.
