  • Slow Cooker Buffalo Chicken Chili – Simply Scratch

    This Slow Cooker Buffalo Chicken Chili is a simple and delicious! Chicken breasts simmer with great northern beans, diced tomatoes and green chiles, buffalo sauce and spices. Before serving, quickly shred the chicken and stir in heavy cream and cream cheese. Serve in bowls and top with your favorite toppings. Yields 6 servings.

    It’s cold. And snowy. And did I mention cold??

    When the weather outside is in the negatives, I prefer to stay in doors. Typically you’ll find me under a heated blanket reading a book and sipping a cup of coffee. And if dinner is in the slow cooker, it only adds to the cozy vibes. This slow cooker buffalo chicken recipe was shared with me from a friend who found it on TikTok. She brought it to a get together and I absolutely fell in love with it. I made a few minor changes to it like, adding additional can of beans, reducing the amount of carrots and adding garlic powder. But the method is still the same; chicken cooks with white beans, diced tomatoes and green chiles with spices and broth. Then, right before serving, you shred the chicken, mix in the softened cream cheese and heavy cream. It literally couldn’t be any easier.

    What I love about this recipe, besides how easy and delicious it is, is that you can control how spicy you want it. Like extra heat? Use spicy ranch seasoning (or add 1/2 up to 1 teaspoon of cayenne to your homemade ranch mix) and use “hot” diced tomatoes and green chiles. Want it more tame? Use regular ranch mix and “mild” diced tomatoes and green chiles. Either way it’s incredible.

    Then serve in bowls, topped with your favorite chili toppings and tortilla chips!

    To Make This Slow Cooker Buffalo Chicken Chili You Will Need:

    • boneless skinless chicken breastsYou’ll need about 1¼ pound or about 2 large.
    • yellow onionAdds a sweet and subtle onion flavor.
    • carrotAdds color, texture and subtle sweetness.
    • diced tomatoes with green chilesUse hot or mild depending on what you prefer.
    • great northern beansFor ease, I use canned beans that have been rinsed well and drained.
    • low-sodium chicken brothUse homemade or store-bought.
    • buffalo sauceUse homemade or store-bought. If using store-bought, I like Kinder’s Buttery Buffalo (not sponsored).
    • ranch seasoningUse regular or spicy ranch mix. Or add 3/4 to 1 teaspoon cayenne to homemade ranch mix.
    • chili powderAdds flavor and can be mild to moderately spicy.
    • cumin (ground) – Lends earthiness and warmth, with an edge of citrus.
    • garlic powderAdds flavor that’s sweeter yet milder than fresh garlic.
    • onion powderLends additional bold oniony flavor.
    • cream cheese Gives the chili creamy texture and richness.
    • heavy creamAlso lends richness.

    optional toppings:

    • greek yogurt or sour cream
    • monterey jack cheese
    • avocado
    • green onion
    • tortilla chips

    Prep Slow Cooker The Buffalo Chicken Chili:

    Into your slow cooker, add 1¼ pounds of boneless skinless chicken breasts.

    Then add in 1 medium diced yellow onion, 3/4 cup diced carrot and 1 (15 ounce) can of diced of hot or mild diced tomatoes with green chiles (aka Rotel).

    Next, add 2 (15 ounce) cans of great northern beans that have been rinsed well and drained. Then pour in 2 cups low-sodium chicken broth.

    Pour in 3/4 cup of buffalo sauce. Use homemade or if using store-bought, Kinder’s buttery buffalo was recommended to me and it’s delicious.

    Next, season with 2 tablespoons ranch seasoning (1 packet if using store-bought), 1 tablespoon chili powder and 1 teaspoon each of ground cumin, garlic powder and onion powder.

    Slow Cook The Chili:

    Cover and slow cook on low for 6 to 8 hours or high for 4 to 5 hours.

    Finish The Chili:

    With 1 hour left on the slow cooker, remove 1 (8 ounce) package of cream cheese from your fridge and let soften at room temperature. After 30 minutes, add the cream cheese to the slow cooker, cover and let it get really soft for 30 minutes.

    After the cream cheese has been in the slow cooker for 30 minutes, remove the chicken breasts to a bowl or cutting board and shred using two forks. Set off to the side for a moment.

    To the slow cooker, pour 1/2 cup of heavy cream. Using a spatula, stir everything until its thoroughly combined.

    Serve The Buffalo Chicken Chili:

    Ladle chili into bowl and top with any and all desired toppings.

    We like ours with plain greek yogurt (or sour cream), shredded monterey jack cheese, sliced avocado and green onions and a few shakes of your favorite hot sauce. Also, I feel like I should note that I rarely use a spoon for this chili, any chili really, and use tortilla chips instead.

    How To Store Homemade Chili:

    Transfer the chili to bowl or bowls that has an air-tight lid. Allow the chili completely cool uncovered. The chili doesn’t have to be completely cold, just not hot or extremely warm as it can negatively affect the food surrounding it in the fridge.

    How Long Can Chili Last In the Fridge?

    If stored properly Chili will last for 4 to 5 days in the fridge.

    Can you Freeze Buffalo Chicken Chili?

    Yes! However, please note that the texture may change due to heavy cream and cream cheese being in the recipe. The cream and cream cheese can sometimes separate, become grainy, or lose its smooth, creamy consistency upon thawing.

    How long does Chili last in the freezer?

    Store chili in the freezer for up to 3 months. (see below)

    How To Freeze Chili And Reheat Later:

    • COOL:  It’s always best to make sure the chili is has cooled before freezing. Never place hot or very warm items in the freezer (or fridge!) as it can thaw and negatively affect the nearby food.
    • PORTION: Once cooled, divide chili into portions, leaving room for expansion. Whether it’s a single serving, two or four, portion the cooled chili into either freezer safe bags or air-tight containers. I prefer using freezer safe bags and removing as much air as possible, this helps with storing.
    • FLATTEN: After you’ve portioned out the chili, lay flat on a rimmed baking sheet and freeze for a few hours. Like how I did it in this post.
    • STORE: Now you can stack the flat frozen chili portions vertically or horizontally saving so much freezer space.
    • REHEAT: I prefer to thaw frozen chili overnight in the fridge. However you can soak in a sink of lukewarm water for 20 to 30 minutes – flip every so often and change out the water at least once or twice. When reheating chili with cream or cream cheese, reheat heat slowly to avoid separation and texture changes. You can also make the chili ahead of time, leaving out the cream and cream cheese, and then adding it in after reheating.

    • pounds boneless skinless chicken breasts, about 2 large
    • 1 medium yellow onion, diced
    • 3/4 cup finely chopped carrots
    • 15 ounces (canned) diced tomatoes with green chiles (like Rotel), hot or mild
    • 2 cups low-sodium chicken broth
    • 3/4 cup buffalo sauce
    • 30 ounces great northern beans, rinsed and drained (or 2 cans)
    • 2 tablespoons dry ranch seasoning, homemade or store-bought (regular or spicy)
    • 1 tablespoon chili powder
    • 1 teaspoon ground cumin
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 8 ounces cream cheese, softened
    • 1/2 cup heavy cream

    FOR SERVING (OPTIONA)L:

    • shredded monterey jack cheese, or pepper jack cheese
    • sliced green onions
    • avocado
    • sour cream or plain nonfat greek yogurt
    • chopped cilantro
    • corn tortilla chips, or fritos
    • Into your slow cooker, add whole chicken breasts, yellow onion, carrot and (hot or mild) diced tomatoes with green chiles, great northern beans. Pour in chicken broth and buffalo sauce. Season with dry ranch seasoning, chili powder, cumin, garlic powder and onion powder. Stir well to combine.

    • Cover and slow cook on low for 6 to 8 hours or high for 4 to 5 hours.

    Every year, this queso fundido recipe grows even more popular on our site. This chorizo dip is the best dip you’ll ever make and is our favorite appetizer!

    Whether you are looking for an irresistible dip for gameday or a new appetizer for Cinco de Mayo or New Years Eve, this recipe is a must! It is creamy, flavorful and the chorizo adds the most delicious flavor and heat.

    What is Queso Fundido?

    It is a melted cheese dip, kind of like a fondue. Queso fundido literally means “molten cheese” or “melted cheese”.

    Queso Fundido Ingredients

    This Mexican queso dip recipe uses just five ingredients. How amazing is that? Here’s everything we used in this spicy chorizo queso dip:

    • Shredded Mozzarella
    • Shredded Queso Quesadilla Cheese
    • Garlic
    • Chorizo
    • Tortilla Chips (for serving)

    The measurements needed for each ingredient can be found in the recipe card at the bottom of this post.

    What is Chorizo?

    Chorizo is a highly seasoned, spicy pork sausage that is common in both Mexican and Spanish cooking.

    How to Make Queso Fundido

    Just empty half the package of Mexican chorizo into a skillet with one minced garlic clove and cook on the stove-top over medium-high heat for about 5 minutes.

    Easy, right? And because of the kinds of cheese that we use they literally melt down perfectly just like a dip. It’s awesome! Just use the fine grater for cheese and grate mozzarella and queso quesadilla. Pile it up in a ceramic baking dish or cast iron skillet and place it in the oven.

    Once it’s all melty, scoop the chorizo onto the top and serve immediately. And by serve, I mean hide in the corner and stuff as much as you can into your face before your family discovers you and wants some. You can also sprinkle the top with minced jalapeños and/or cilantro for garnish.

    • Make sure to buy the best quality cheese you can afford. The cheese is the star of this dip, so you don’t want to skimp out and buy the cheapest kind at the store. Note that if you cannot find oaxaca or queso quesadilla, just use chihuahua cheese (which you can find in most stores now, including Costco) or Monterey jack cheese.
    • Also, make sure to buy ground fresh chorizo and not the kind that comes in a log. It’s typically sold in the meat section of the grocery store.
    • Lastly, this chorizo cheese dip is best enjoyed immediately. Melted cheese tends to harden quickly, so be sure to gobble this stuff up ASAP!

    How This Mexican Queso Fundido Came to Be

    We went to Glorias in downtown Salt Lake City and the food was delicious. My absolute favorite part, as I tend to loooove dips, was the chorizo dip. I don’t know exactly how they make it, but I do know that my version of chorizo cheese dip, or queso fundido, is equally delicious.

    It’s all thanks to one very special ingredient, Queso Quesadilla Cheese by Cacique. Most of our grocery stores carry it by the international foods (by the meat usually) or in the normal cheese section. It melts down perfectly and has a nice creamy, buttery flavor. You could also use oaxaca cheese, but that one is harder for me to get my little hands on.

    I am always a little shocked when someone hasn’t tried chorizo. It’s the best stuff ever because it’s ready in like 5 minutes and it has a ton of flavor without doing a darn thing. It can be spicy, so I tend to buy the milder one, but I am also a bonafide wimp. The real deal. I cannot handle spicy well at all.

    What to Serve with Queso Fundido

    Homemade queso pairs well with just about anything you can think of! A few of our favorite things to pair with this chorizo cheese dip are:

    • Tortilla chips
    • Roasted fingerling potatoes
    • Doritos
    • Potato chips
    • Toasted bread

    I know some of the foods listed about aren’t traditionally served with Mexican queso dip, but I figured I’d share them all since they taste so good!

    How Do You Reheat Queso Fundido?

    You can microwave individual servings with just a drop of milk.

    Warm a skillet over medium heat and stir until melted, adding a little milk to make it creamy.

    • Heat the oven to broil.

    • In a medium-sized skillet over medium heat, add the chorizo and garlic and cook through, about 5 minutes.

      8 Ounces Chorizo, 1 Clove Garlic

    • Drain and set aside.

    • In a small cast iron skillet or ceramic dish, add the cheese and broil until melted.

      1 Cup Shredded Mozzarella Cheese, 1 Cup Shredded Queso Quesadilla Cheese

    • Top with drained chorizo and serve immediately with chips.

      Tortilla Chips

    • If you cannot find oaxaca or queso quesadilla, just use chihuahua cheese or Monterey jack cheese.

    Dip will keep for 3-4 days in the refrigerator.

    I’m totally obsessed with Frank’s. Like really obsessed. I put it on just about everything.

    For example, in the past month I’ve put it in or on my tacos, nachos, wings, popcorn, eggs and now my pizza. I even had a little anxiety issue while pouring the very last of the bottle in order to make this recipe. Clearly I need therapy. But the retail kind not the sit down in a chair and gush about how I’m sickly addicted to Frank’s Red Hot I am.

    Because that would be crazy.

    These buffalo chicken flatbread pizzas or naanzas (did I just invent something here?) are just another way to fuel my love for Frank’s. They’re simple, delicious and only take 15 minutes!

    To Make These Buffalo Chicken Flatbread Pizzas You Will Need:

    • naanUse regular, garlic or whole wheat (store-bought or homemade)
    • olive oilHelps get the crust crisp and get nicely golden brown.
    • buffalo sauce –  Use homemade or store-bought.
    • monterrey jack cheeseOr for extra spice use pepper jack. Freshly grated is best!
    • leftover shredded cooked chickenLeftover roasted, grilled or use rotisserie.
    • blue cheeseUse your favorite!
    • green onionsAdds a pop of color and fresh onion flavor.
    • blue cheese dressing – Use this greek yogurt version or this blue cheese dip recipe and just thin it out with a little more buttermilk so it can be drizzled.

    Start by making the buffalo sauce. It’s pretty easy to throw together and only calls for a few ingredients. My buffalo wing sauce is semi-homemade because in our house, using anything other than Frank’s would be illegal. If you have Frank’s on hand, you also probably have butter, garlic powder and cayenne.

    Preheat your oven to 425℉ or 220℃.

    Place the naan onto a metal, rimmed baking sheet and lightly brush the top side with olive oil.

    Next add a couple of spoonfuls of the buffalo sauce onto each naan and spread out leaving a 1/2-inch edge.

    You’ll most likely have left over sauce that you can save for pretty much anything that or just double the rest of the pizza ingredients (keeping the sauce recipe the same) to make more pizzas.

    Then sprinkle each pizza with the 1-1/2 cups of shredded jack cheese and 1 cup of shredded cooked chicken.

    Lastly, sprinkle with freshly crumbled blue cheese.

    Next slide the pan onto the middle rack of your preheated oven. Bake for 10-12 minutes or until the cheese has melted and the crust is golden and crispy.

    Buffalo Chicken Flatbread Pizzas

    These Buffalo Chicken Flatbread Pizzas are perfect for a quick and easy dinner or as a fun snack. Naan is spread with homemade buffalo sauce, topped with cooked chicken, shredded jack cheese and crumbled blue cheese cheese. Once baked, serve drizzled with more buffalo sauce, blue cheese dressing and a sprinkle of sliced green onions.Makes 2 in about 15 minutes.
    • 2 naan, regular, whole wheat or roasted garlic
    • 1 teaspoon light olive oil, for brushing
    • 1/2 cup buffalo wing sauce, plus more for serving
    • 1 (heaping) cup monterey jack cheese, freshly grated
    • 1 cup cooked shredded chicken, from leftover roasted chicken or rotisserie
    • 2 tablespoons blue cheese, freshly crumbled
    • 2 tablespoons blue cheese dressing, for serving (more or less to taste)
    • freshly ground black pepper, for serving
    • 2 green onions, sliced for serving
    • Preheat your oven to 425℉ or 220℃.

    • Place the naan onto a metal, rimmed baking sheet and lightly brush or spray the flatbread lightly with olive oil.

    • Spread spoonfuls of the buffalo sauce onto the naan leaving a 1/2-inch edge. Then divide and top each with shredded cheese, cooked chicken, and sprinkle with the crumbled blue cheese.

    • Bake on the middle rack of your preheated oven and bake for 10 to 12 minutes or until the cheese has melted and the naan is golden brown.

    • Remove, let cool before slightly before drizzling a little more of the buffalo sauce and some blue cheese dressing. Sprinkle with freshly ground black pepper and sliced green onions.
