  • PEANUT BUTTER PIE

    [ad_1]

This old-fashioned peanut butter pie is one your family will love. It’s absolutely delicious.

    ❤️WHY WE LOVE THIS RECIPE

If you love peanut butter, this pie is for you, and I assure you… It’s fantastic! The creamy peanut butter layer, combined with the crunch of the crumbs, gives this pie the best texture and flavor. The meringue on this pie is unique since it’s not fluffy. This pie is essentially made with a layer of meringue, as you add the crumb topping and then bake it. We all agree that the merignue really is an excellent addition to this pie.

    ⭐TIP

The mixture should start to thicken while it is cooking. I don’t let it get as thick as pudding before removing from the heat, as it will continue to thicken as it cools until it is about the consistency of pudding when cool. The mixture doesn’t need to cool before you pour it over the crumb mixture.

    • 1 9 inch pie shell, baked according to package directions or if you make your own, it should be baked
    • 3/4 cup crunchy peanut butter could use creamy
    • 1 1/4 cups confectionery sugar
    • 2 tablespoons butter
    • 1 12 fl. ounce can evaporated milk
    • 1/2 teaspoon salt
    • 1/4 cup cornstarch
    • 3 eggs separated
    • 1/2 cup regular sugar
    • 1 teaspoon vanilla flavoring
    • In a bowl, mix the sugar and peanut butter together using a fork until mixture looks like coarse crumbs. Remove 1/2 cup crumbs and set aside. Spread the rest of the crumbs in the baked pie shell. Mix together 2 tablespoons margarine, evaporated milk, salt, the 3 egg yolks (keep the whites for the meringue), 1/4 cup cornstarch, 1/2 cup sugar and 1 teaspoon vanilla in a pan. Cook on medium heat on top of the stove stirring constantly until thickens. (about 5 to 7 minutes). I remove as soon as it starts to thicken. (This will burn easily so watch it closely).

    • Pour this over the crumb mixture in the pie shell. Beat the 3 egg whites until stiff and spread over the pie. Spread remaining crumbs on top of the meringue.

    • Bake in preheated 350 degree oven about 20 minutes. (I usually turn the broiler on for a few seconds before removing the pie but watch it constantly or it will burn on top).

    ❤️WHY WE LOVE THIS RECIPE

This recipe was made popular during the Great Depression era. We love this recipe because the taste is wonderful! It’s hard to leave this candy alone and we love to make it for Christmas. ⭐TIPS & NOTES

Do not use granulated sugar, it must be powdered sugar for this recipe to work. The amount of powdered sugar matters and it can vary depending on how much potato you use. This is an old fashioned recipe, so you will need to start with a small potato and just continue to work with the powdered sugar until you get the consistency you need. You don’t want it to crack when you roll it out, you want it to be more clay like. Work quickly the dough will dry out.

If you roll the dough and feel it needs to be chilled before slicing, cut the roll in half and store in the fridge for a bit. Then remove and slice.

    ⭐TIP

Don’t like raisins, simply leave them out. Many have posted they have made this bread without it and thought it was fantastic. Also, if you love raisins, you can soak them in water to plump them up before you add them to the bread.

    SORGHUM CORNBREAD

    [ad_1]

This Sorghum Cornbread is a wonderful addition to any meal! We love to top it with butter and extra sorghum for a real treat!

    Sorghum CornbreadSorghum Cornbread

If you love this recipe, you will also love our delicious Pumpkin Cornbread. It’s a wonderful Fall treat and goes great with chili!

    ❤️WHY WE LOVE THIS RECIPE

If you have followed our site for any amount of time you know we are huge sorghum fans. When Leigh and I were little we grew up in a community that had a wonderful fall festival and they made sorghum at the festival. It always smelled so good! This cornbread is delicious with butter and a cup of coffee.

    🍴KEY INGREDIENTS

    • Self-rising cornmeal
    • All-purpose flour
    • Ground cinnamon
    • Ground ginger
    • Salt
    • Ground cloves
    • Ground nutmeg
    • Brown sugar
    • Buttermilk
    • Eggs
    • Vanilla extract
    • Sorghum syrup
    • Butter

    🍽️HOW TO MAKE

The hardest part about this recipe is organizing your ingredients. I always like to get everything out and measured correctly before I start.

    COOKING STEPS

    Step 1
Whisk together the cornmeal, flour, cinnamon, ginger, salt, ground cloves, ground nutmeg and sugar until well mixed. Add eggs and buttermilk plus vanilla extract and sorghum syrup. Stir well with a spoon.

    Step 2
Spray a 10 inch iron skillet with cooking spray. Add the butter and put skillet into preheated 425 degree oven until butter melts. Add the cornbread mix and bake at the same 425 degree temperature 25 to 30 minutes.

    Sorghum CornbreadSorghum Cornbread

    ⭐TIP

This recipe calls for buttermilk and many people will ask if you can use a buttermilk substitute. You can but it will change the fat content of the cornbread. The buttermilk adds fat which is what makes the cornbread delicious.

You can also use a 2 quart baking pan, but be sure and check on how quickly it is cooking and you would need to spray the pan instead of melting the butter in it.

If you love chocolate, you will definitely want to try this delicious Chocolate Chess Pie! It’s the perfect addition to any gathering.

    ❤️WHY WE LOVE THIS RECIPE

This recipe for Turtle Cake has been around for a while but seems to always be a hit at my house when I make it. Serve it with some vanilla ice cream on top for a great dessert for friends and family. This turtle cake tastes like a brownie with caramel inside. You may also want to try this delicious Cheddar Bay Biscuit Bread! It’s one of our favorites and one you will love too.

    ❤️WHY WE LOVE THIS RECIPE

Cheese bread served hot right from the oven with a big bowl of soup will become one of your favorites.   This is an easy, quick recipe and the cheese bread is delicious.  Serve this cheese bread to your family and friends and it won’t last long.  One of my favorite quotes about bread:  “Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of feasts” —James Beard

    🍴KEY INGREDIENTS

    • all-purpose flour
    • shredded sharp cheddar cheese or could use your favorite cheese
    • sugar
    • baking powder
    • baking soda
    • teaspoon salt
    • teaspoon coarsely ground black pepper
    • buttermilk
    • butter
    • eggs

    SWAPS

Its inevitable that someone will ask if you can use regular milk instead of buttermilk. I am sure you can, but it WILL change the fat content of the bread. Buttermilk is high in fat and gives a different texture than regular milk.

    🍽️HOW TO MAKE

Since this bread is a quick bread and doesn’t use yeast, it really comes together quickly. We love quick breads for the exact reason.

    COOKING STEPS

    Step 1
In a large bowl combine flour, cheese, sugar, baking powder, baking soda, salt and pepper. In a smaller bowl beat eggs, melted butter and buttermilk together with a whisk. Add to flour mixture and mix with a spoon just enough to wet all the ingredients.

    Step 2
Pour mixture into a 9 x 5 inch loaf pan that has just the bottom of the pan sprayed or greased. Bake in a preheated 350 degree oven for 35 to 40 minutes. Allow to cool for 15 minutes before removing from pan. Store in refrigerator.

    Peppery Cheese BreadPeppery Cheese Bread

    ⭐TIP

Optional ingredients: 1/2 teaspoon garlic powder and 1/2 teaspoon dried onion flakes. This adds a little more flavor! This is a versatile bread and you can add what you like to make it more your taste.

This bread goes great with a spring salad for a big bowl of chili or potato soup. It’s very versatile and a recipe you can enjoy year round.
