    MAPLE WALNUT FUDGE

    If you are a maple fan this is for you! You can make this maple fudge with walnuts or pecans and it’s the perfect treat.

    If you have followed our site for any amount of time, then you know we are huge fans of fudge! We have many different variations on our website and they are all delicious. Our most popular is our Five Minute Fudge which we used to make this recipe too.

    ❤️WHY WE LOVE THIS RECIPE

    We love maple and we love fudge so this recipe was a no brainer for us. Maple just says Fall and the holiday season and we are a huge fan of that time of year. This fudge also makes a wonderful gift and comes together very quickly, which is always a plus.

    🍴KEY INGREDIENTS

    • Brown sugar
    • Miniature marshmallows 
    • Evaporated milk
    • Butter
    • Salt
    • White baking chips
    • Walnuts (can use pecans)
    • Maple extract

    🍽️HOW TO MAKE

    This fudge is really easy to make which is one of the reasons we love it. Five minute fudge takes all the guessing out of it and makes this one simple! Such a versatile recipe.

    COOKING STEPS

    Step 1
    Combine sugar, marshmallows, milk, butter and salt in a pan.  Bring to boil, reduce to medium and cook about 5 minutes or until reaches soft ball stage.  I just boil mine 5 minutes stirring constantly to prevent burning.

    Step 2
    Remove pan from stove, stir in baking chips until melted and smooth. Stir in walnuts and maple extract.  Spray an 8 x 8 baking dish with cooking spray and add fudge mix. Refrigerate about 2 hours or until hardens.  Cut in pieces and enjoy!

    ⭐TIP

    You can use salted or unsalted butter in this recipe. We usually use unsalted since we add salt to the fudge.

    PEANUT BUTTER AND BANANA MUFFINS

    These Peanut Butter and Banana Muffins are super easy to make and a great way to use bananas. We love them with a little butter on them and a cup of coffee.

    IF you are a fan of breakfast muffins, try these Cheesy Sausage Muffins! Easy to make and reheat really well.

    ❤️WHY WE LOVE THIS RECIPE

    Peanut Butter and Banana Muffins for breakfast with coffee is a favorite with my family.  We use lots of peanut butter at my house. I can’t seem to keep in this staple.  The kids will love them with milk as a snack, too.  They keep great and can be reheated in the microwave for a quick treat anytime.

    🍴KEY INGREDIENTS

    • All-purpose flour
    • Baking powder
    • Baking soda
    • Butter 
    • Eggs
    • Bananas, mashed
    • Honey
    • Sour cream
    • Peanut butter (I used crunchy can use smooth, too)
    • Vanilla extract

    🍽️HOW TO MAKE

    These muffins are easy to make and doesn’t take a lot of prep work, which is always a plus!

    COOKING STEPS

    Step 1
    Whisk together flour, baking powder and baking soda, set aside. Beat butter, eggs, bananas, honey, sour cream, peanut butter and vanilla with mixer until well blended. 

    Step 2
    Add flour mixture and mix.   Spray a 12 cup muffin tin with cooking spray.  Fill cups within 1/4 inch of top.  

    Step 3
    Bake in preheated 350 degree oven 25 to 30 minutes until brown on top. I did sprinkle a little sugar on the top for texture.  Makes 12 muffins.

    Do not over mix your muffins, it can lead to them being very dry. We don’t use muffin liners but you can if you prefer.

    Southern Candied Pecans are perfect for any occasion but we especially love them during the Fall and the holiday season. They make a great gift or your family and friends too!

    Candied Pecans

    If you love simple, handy kitchen tips, you may want to save this “How to Make Brown Sugar”. It comes in super handy if you want to make these pecans!

    ❤️WHY WE LOVE THIS RECIPE

    We love these pecans as a snack and they make great gifts for friends or relatives when you want to show someone you are thinking of them or just do a good deed.  They are wonderful on ice cream, put them in dessert recipes or add to salads.  You won’t be able to stop eating them and they make your house smell wonderful while baking

    🍴KEY INGREDIENTS

    • Pecans
    • Egg white
    • Vanilla extract
    • White granulated sugar
    • Brown sugar
    • Salt
    • Ground cinnamon

    SWAPS

    You can easily make this with almonds, walnuts, etc. The photo shows almonds and pecans. The coating is delicious on ALL nuts, and we love to combine them during the holiday season.

    🍽️HOW TO MAKE

    This is a super simple recipe and one you can make up quickly, however they do need to be in the oven for about 45 minutes.

    COOKING STEPS

    Step 1
    Whisk together the white sugar, brown sugar, salt and cinnamon.  Set aside.  Mix the egg white with the vanilla extract in another bowl.  Put the pecans in the egg white and mix well with a spoon to coat all the pecans.  

    Step 2
    Pour the pecans into the sugar mixture and mix until all the sugar has coated the nuts.  Spread on a baking sheet covered with parchment paper.  

    Step 3
    Bake in preheated 300 degree oven for 40 to 45 minutes.  Stirring well every 15 minutes.  Remove from oven and let cool.

    CHICKEN FRIED STEAK AND GRAVY

    Chicken Fried Steak and Gravy is the ultimate comfort food and is always a hit! Add some mashed potatoes and you have a delicious meal.

    If you love delicious chicken recipes, you will want to try our No Peek Chicken! It’s a wonderful dish everyone loves.

    ❤️WHY WE LOVE THIS RECIPE

    This dish is the ultimate comfort food and such a classic! You will find it in many diners and hole-in-the-wall places along the way, and it’s so good with gravy and a side of mashed potatoes! When I lived in Georgia, there was a little cabin restaurant that sold the best chicken fried steak on Wednesdays. It was such a treat!

    🍴KEY INGREDIENTS

    • Cube Steak
    • All Purpose Flour
    • Salt
    • Black Pepper
    • Eggs
    • Cooking Oil
    • Milk
    • Cayenne (optional)

    🍽️HOW TO MAKE

    There are a few steps in this dish but you will love the outcome!

    COOKING STEPS

    Step 1
    In a flat dish or pan (I use a pie pan) combine flour, salt, black pepper, garlic powder and cayenne.  Whisk together.  Break the 2 eggs into a separate bowl and beat till smooth.  

    Step 2
    Dip steaks in egg and then flour mixture. (I only do this once but some people dip in the egg, then flour, then egg again and flour again).  Make sure they are well coated with flour.  In a skillet on top of the stove heat oil to sizzling.(When you put a drop of water in oil it sizzles). 

    Step 3
    Add steaks to hot oil being very careful since oil is so hot.  Cook 4 to 6 minutes on each side until golden brown.  Remove steaks to a plate and cover to keep warm.

    ❤️WHY WE LOVE THIS RECIPE

    It tastes like sweet and sour chicken to me. Everyone in my family loves it. Plus, you literally just throw a can of pineapple, BBQ sauce and some chicken in a slow cooker and you have dinner. These meals are so important in our house especially when we are so busy. I love having dinner done and I didn’t even have to do anything! Isn’t that the best?  This recipe is very versatile in that you can serve it over rice, pasta, potatoes or any way you can come up with.  I like it alone served with vegetables, too.

    🍴KEY INGREDIENTS

    • Chicken Breast
    • Can of Pineapple Chunks
    • BBQ Sauce

    🍽️HOW TO MAKE

    This recipe requires zero prep work and is so simple. You just throw it in the crock pot and get on with your day. We love this served over rice or baked potato, but it would be delicious over pasta, too.

    I didn’t shred the chicken for the photos, so you can see how it looks but we do shred it before we add it over rice. You can also top it with sesame seeds and add soy sauce.

    ⭐TIP

    I have used sugar free bbq sauce in this recipe and it was still delicious! I like to use the pineapple in that isn’t in syrup to cut down on the sugar content. This recipe is good the next day so you an easily make it and enjoy it for a few days.

    This Pineapple BBQ Chicken is only 3 simple ingredients and absolutely delicious. We make this in the crock pot and serve it over rice. If you are a fan of sweet and sour chicken, this has a similar taste.

    • 3-4 boneless skinless chicken breast (can be frozen)
    • 1 18 oz bottle of BBQ sauce can be any flavor you like!
    • 1 20 oz can of pineapple chunks drained (you can use crushed pineapple if you like)
    • Place the chicken breast in the slow cooker, cover with pineapple and the bottle of BBQ and cook on high for 2-3 hours or on low for 4-6.

    • Serve over rice or baked potato or just enjoy it in a bowl.

    I have made this with frozen chicken breasts, I cooked mine on high for about 3.5 hours. It was perfect.

    We love this recipe because it is all made in one dish, and it’s loaded with flavor. You can make a big salad and you have a great meal.     Cover tightly with foil and bake in preheated 350 degree oven for one hour.

    Do not peek or remove foil during cooking as steam in dish is what cooks and makes the chicken tender.

    We love how simple this recipe is to make. It comes together quickly and reheats well, too. You make all of this in one pot, and it’s so good! You can throw in any vegetables you like, but try it with the spinach. It’s a great addition. Then you add the whipping cream and cheese, and it comes out creamy and delicious.

    This soup is really easy to make and one you will make time and time again. We like to use a big dutch oven to make this and let it all cook in one pot so the flavors really simmer well.

    COOKING STEPS

    Step 1
    In a dutch oven over medium heat brown sausage or turkey, about 8 -10 minutes and drain off any grease. 

    Step 2
    Next add diced onions and cook for 3 minutes over medium heat. Add diced tomatoes, tomato paste, chicken broth and all of the seasonings. Let simmer 15-20 minutes. 

    Step 3
    Add tortellini, whipping cream and fresh spinach. Simmer around 10 minutes or until the spinach is wilted and the tortellini is tender.  Garnish with Parmesan cheese. 

    ⭐TIP

    Some people add Kale to this soup instead of the spinach. We personally like the spinach but this is a great soup recipe to experiment with and make your own.

    The Simplest Homemade Blueberry Jam

    Blueberry season is very important for our family. Specifically, wild blueberries. The adventure usually begins in early August when wild blueberries first start appearing in stores and markets. My husband Josh begins by getting a base price for an 11-quart wood basket. The prices start higher when the berries first come out and over the course of the month, gradually come down. It’s a tricky game to play. You want to get the optimal value, but if you wait too long, you miss out completely and you’re out of luck until the following year – which means you’ll have fewer berries with which to make this homemade blueberry jam.

    Josh takes his wild blueberry game very seriously. In 2017, he went so far as to drive over to the food terminal with our one-month-old son to get his annual bulk buy (while I got an hour of sleep).

    Now to be clear, I love all blueberries. They are powerhouses of antioxidants, protecting us from free radical damage, whether it be from the sunshine or from the stress we create in our own minds. There is, however, some extra power in the wild variety.

    Wild foods, like wild blueberries, need to be able to sustain themselves in the wild without the help of farmers or person-made fertilizers.  Compared to their cultivated counterpart, wild blueberries have a higher concentration of the antioxidant anthocyanin and therefore have a greater antioxidant capacity per serving than the cultivated variety. These antioxidants, as part of the diet, possess anti-inflammatory and anti-cancer properties, and they’re also noted for their benefit in preventing cardiovascular disease. My favourite benefit of antioxidants is their natural sun-protection abilities – eating wild blueberries in the summer can be protective against the damaging rays of the sun.

    Don’t be fooled by labels on frozen berries in stores. You’d be hard-pressed to find true wild blueberries for sale in mass quantities. Recently, a Canadian food store changed their misleading labelling on frozen blueberries from wild to “cultivated high bush”.

    True wild blueberries are the berries you’ll find at your local market for a short time each summer, often selling from eight dollars to 12 dollars per quart. They grow in the wild, usually on rocky outcrops, are labour-intensive, and time-consuming to harvest. They are also worth every penny when we consider the nutrients and flavour punch of each little gem of goodness.

    Again, I will take blueberries in any chemical-free form. This summer I have even begun my blueberry growing adventure. As I write this, my family of three has indulged in a generous harvest of eight berries.

    Favourite ways to enjoy blueberries

    The best way to eat blueberries is, of course, by the handful. Second, I’ll take them in a smoothie, a muffin, topping some homemade ice cream, in a raw cheesecake, or a crumble, and these dehydrated blueberry ‘pancakes’ are a winner all around.

    And for the sake of today, and for the sake of the two boys I share my house with, I will add jam to the list of favourites. There’s a small part of me that dislikes taking something so fresh and nutrient powered and cooking it down, as you do with a jam. But there’s a bigger part of me that just can’t buy sugar-laden jam, a sweetener with sugar and fruit concentrate in the store. So, even though I’m still on my pause from added sweetener in my life, I did make this jam for the boys to enjoy.

    I love this recipe because it’s so easy to make, is free of refined ingredients and you get to control the consistency.

    Pectin

    Pectin is part of what gives jam that jelly/jammy sticky texture. It’s what holds jam together.  Commercial store-bought packets of pectin are actually dextrose, a sugar derived from corn, one of the most genetically modified crops on the planet. So, I prefer to use an original whole source in my jam – apples. Blueberries also happen to be quite high in pectin as well, so that makes this a super jam-friendly berry.

    Shelf Stability

    My blueberry jam recipe below is not shelf-stable. It’s what I’d call a freezer jam. You can make loads, but your best bet is to store it in the freezer. In order to make a jam truly shelf-stable, you do require a lot more sugar than I want to use to ensure a specific pH level to prevent fur growth and whatnot. I am happy to make this in small batches and freeze the jars, or just freeze the berries whole and defrost some when it’s time to make a new batch of jam.

    Description

    A simple homemade blueberry jam, naturally sweetened and no fillers.


    • 45 cups wild blueberries or regular blueberries
    • 1 cup of applesauce (organic + unsweetened, or make your own)
    • 2 Tbsp lemon juice
    • ½ cup (or more to taste) sucanat or coconut sugar


    1. In a pot, combine berries, applesauce, lemon juice and sugar of choice.
    2. Bring to a boil while stirring (uncovered).
    3. Reduce to a simmer, uncovered, and continue to stir occasionally.
    4. Leave it to cook down to about 1/3–1/4 of its original volume (around 45 minutes). It will thicken as it cools.
    5. Once you are close to desired consistency, have a taste and add more sweetener if needed.
    6. Transfer to a glass jar and store in the fridge once cooled.
    7. Will keep in the fridge unopened for two weeks, once open, consume within 8–10 days. Keeps in the freezer for months!

    Step 1
    Do not make this cake according to the directions on the cake mix box.  Mix the cake mix, eggs, melted butter and vanilla extract by hand in a mixing bowl.  

    Step 2
    Spray a 9 x 13 cake pan with cooking spray and press the cake mixture into the pan.  This makes the bottom layer of the cake.

    Step 3
    Mix the topping ingredients with a mixer and spread over bottom cake layer. Bake cake in a preheated 350 degree oven for 40 to 45 minutes until top of the cake is golden brown.  Cut in squares to serve.

    This pie’s ingredients are no-bake, but adding the delicious homemade crust takes it to the next level. It’s really good and super refreshing. You can easily make this pie a day in advance, too, which is always handy. If you like it extra lime, then add a little more juice!

    🍴KEY INGREDIENTS

    • Graham Crackers
    • Quick Cooking Oats
    • Walnuts or pecans
    • Brown Sugar
    • Butter
    • Cream Cheese
    • Condensed Milk
    • Key lime juice or regular lime juice
    • Lime zest
    • Cool Whip

    SWAPS

    If you use three packages of cream cheese, you could make this in a deep-dish crust. You can also use a bought graham cracker crust instead of making your own.     This pie is super easy to make, and while you can use a store-bought graham cracker crust to save time, I fully believe the homemade crust is what makes this one even better!

    COOKING STEPS

    Step 1
    Combine all crust ingredients. Press into 9 inch regular pie shell. Bake in preheated 350 degree oven for 15 minutes. Let cool before adding pie filling.

    Step 2
    Beat softened cream cheese until smooth with a mixer. Add condensed milk, lime juice and lime zest and continue mixing until combined. Fold in thawed cool whip. Pour into cooled crust and chill 4 to 5 hours or overnight until set. Can garnish with lime slices and lime zest.

    I haven’t tried it, but I do think this would work with just 2 packages of cream cheese. You may have to adjust the lime juice if you do. You can always add more or take some away depending on your desired lime flavor.

    • 1 14 ounce can condensed milk
    • 3/4 cup key lime juice or regular lime juice
    • 1 tablespoon lime zest
    • 8 ounces thawed cool whip

    Filling Instructions

    We love the simplicity of this dip! You only need 4 simple things to make this Pineapple Cream Cheese Dip and you have a creamy delicious dip that anyone will love. This dip would be the perfect addition to any summer gathering, great beside the pool and you can make it in advance.

    🍴KEY INGREDIENTS

    • Pineapple tidbits, chunks or crushed pineapple

    SWAPS OR ADDITIONS

    You can swap our the vanilla wafers for graham crackers. It’s delicious with both. I also think you could easily add shredded coconut for a more tropical taste. Even chopped mandarin oranges would be great.

    🍽️HOW TO MAKE

    This recipe couldn’t be easier, you just combine all the ingredients and mix with a mixer. Then chill in the fridge for a few hours and serve!

    ❤️WHY WE LOVE THIS RECIPE

    This ice box coleslaw is a tangy slaw that keeps in the refrigerator for up to a week or longer and goes great with just about any meal as a side dish. I love making this to go with baked beans on the 4th of July but it is good for any holiday.   Just because it keeps for so long is good because you have it on hand to go with sandwiches, hot dogs and burgers anytime.  Each time I make this slaw I have forgotten how much we enjoy it and I hope you do, too.

    🍴KEY INGREDIENTS

    • Large head of cabbage 
    • Red onion
    • Green pepper
    • Carrot
    • Celery seeds
    • Salt
    • Black pepper
    • White granulated sugar
    • White vinegar
    • Oil
    • Dry mustard

    SWAPS

    You can use regular onion and sweet peppers (red, orange, yellow). This is a very versatile recipe.

    🍽️HOW TO MAKE

    The hardest part of this recipe is chopping up all the vegetables. If you have a chopper this will save you lots of time!

    COOKING STEPS

    Step 1
    Combine cabbage, onion, green pepper, carrot, celery seeds, salt and pepper in a large bowl.  Set aside.  

    Step 2
    Combine sugar, vinegar, oil and dry mustard in a saucepan and bring to a boil on top of the stove. 

    Step 3
    Remove and let cool.  Toss dressing with slaw mixture.  Refrigerate several hours or overnight. Makes 7 to 8 cups coleslaw. Keeps up to a week refrigerated.

    This Peach Pecan Pie is one of our summer favorites! When the fresh peaches are available this is one of our first desserts. You can use frozen too!

    ❤️WHY WE LOVE THIS RECIPE

    This Pecan Peach Pie is the perfect summer desert. Super easy to make and delicious with ice cream. This pie would be a wonderful addition to any gathering. We think the crumble topping really takes this pie up a notch and then you add whipped topping or ice cream and it’s perfect!

    🍴KEY INGREDIENTS

    • 9 Inch pie shell
    • All Purpose Flour
    • Sour Cream
    • Sugar
    • Cinnamon
    • All Spice
    • Vanilla
    • Egg
    • Salt
    • Pecans
    • Fresh or Frozen Peaches
    • Brown Sugar
    • Butter

    🍽️HOW TO MAKE

    This pie is actually very easy to make and takes nothing to throw together especially if you use a premade pie shell. We have used them in the past and we love the ones made by Pillsbury.

    COOKING STEPS

    Step 1
    Preheat oven to 400. In a large bowl mix sour cream, flour, sugar, cinnamon, all spice, salt, vanilla and egg. Fold in peaches and pecans and pour in pie pan.

    Step 2
    Topping Instructions: In a small bowl cut butter into flour and sugar.  I use a fork and just kind of mash it all up together.  Stir nuts in to the topping and sprinkle topping over the entire pie before baking.

    Step 3
    Bake on 400 for 15 minutes. Turn oven down to 350 and bake for another 45 minutes until pie tests done. Let pie sit for at least an hour before slicing.

    If you use frozen peaches, let them thaw first. Don’t put them in the pie frozen.

    • 3/4 cup of sour cream
    • 3 tablespoons of all-purpose flour1 cup of sugar

    ❤️WHY WE LOVE THIS RECIPE

    We love how simple it is—only a handful of ingredients. You can make it in advance, and it’s always better the next day. Plus, it’s so good! I have never made this salad, and people don’t love it. Every gathering I have ever taken this to, I always come home with an empty bowl!

    🍴KEY INGREDIENTS

    • Raw Cauliflower
    • Iceberg Lettuce
    • Parmesan Cheese
    • Onion
    • Bacon (real or bacon bits)
    • Mayonnaise

    SWAPS

    We have made this with real bacon or real bacon bits and it’s delicious either way. I have never tried it with any other lettuce and honestly feel the iceberg lettuce makes this salad.

    🍽️HOW TO MAKE

    This salad is so easy to make and all you have to do is chop up the vegetables and add everything to a bowl and mix. Of course if you use real bacon you must make that first, but it really doesn’t get much easier than that.

    You can grate your own parmesan if you like or buy it grated, we have done both and it’s delicious both ways. This salad is much better cold, so make it a few hours before any gathering so it has time to chill in the refrigerator.

    • Cut lettuce, cauliflower and onion into small pieces. Add Parmesan cheese, bacon bits and mayonnaise. Mix all ingredients in a large bowl. (Has a better flavor if mixed a few hours before served and kept refrigerated.)

    BLUEBERRY SHORTCAKE

    This Blueberry Shortcake is made with a shortcake-style biscuit and a delicious blueberry sauce topped with whipped cream. It’s a delicious summer treat!

    ❤️WHY WE LOVE THIS RECIPE

    This blueberry shortcake is an easy dessert and so good. The sweetness of the blueberries with the shortcake is absolutely delicious. it’s so good topped with whipped topping or ice cream! This dessert comes together quickly and the shortcake will keep so you can make it up in advance.

    🍴KEY INGREDIENTS

    • All-purpose flour
    • Sugar
    • Baking powder
    • Salt
    • Butter
    • Egg
    • Milk
    • Blueberry Sauce Ingredients Needed:
    • Sugar
    • Cornstarch
    • Water
    • Blueberries
    • Lemon juice
    • Butter

    SWAPS

    You can try this with other fruits, such as blackberries or raspberries. The sauce will be delicious made with those too.

    🍽️HOW TO MAKE

    This dessert is easy to make and the shortcake is a great recipe that you can use with other recipes.

    COOKING STEPS

    Step 1
    Whisk together flour, sugar, baking powder and salt. Cut in butter and add egg and milk.  Make into a dough that you can pat or roll out on a dough board. Can add more flour if needed.

    Step 2
    Cut out with a biscuit cutter and bake on a sprayed baking sheet in preheated 400 degree oven for 25 to 30 minutes or until the tops are brown and done in the middle. Makes approximately 10 to 12 shortcakes depending on size. (Sometimes, I use a tin can to cut out and make them bigger.)

    Step 3
    Whisk together sugar, cornstarch, and water in a pot on top of the stove.  Bring to a boil and add the 2 cups of blueberries.  Cook about 5 minutes and remove from stove.  Add lemon juice and butter.

    Step 4
    To serve:  Split one of the shortcakes, add a few uncooked, fresh blueberries in the middle.  Place the top back on the shortcake and drizzle blueberry sauce over the entire cake. Add whipped cream or ice cream on top.

    ⭐TIP

    This sauce is great on many things! Wonderful on pancakes, waffles and ice cream. If you have some leftover you can definitely use it for other things.

    Cheese bread served hot right from the oven with a big bowl of soup will become one of your favorites.   This is an easy, quick recipe and the cheese bread is delicious.  Serve this cheese bread to your family and friends and it won’t last long.  One of my favorite quotes about bread:  “Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of feasts” —James Beard

    🍴KEY INGREDIENTS

    • all-purpose flour
    • shredded sharp cheddar cheese or could use your favorite cheese
    • sugar
    • baking powder
    • baking soda
    • teaspoon salt
    • teaspoon coarsely ground black pepper
    • buttermilk
    • butter
    • eggs

    SWAPS

    Its inevitable that someone will ask if you can use regular milk instead of buttermilk. I am sure you can, but it WILL change the fat content of the bread. Buttermilk is high in fat and gives a different texture than regular milk.

    🍽️HOW TO MAKE

    Since this bread is a quick bread and doesn’t use yeast, it really comes together quickly. We love quick breads for the exact reason.

    COOKING STEPS

    Step 1
    In a large bowl combine flour, cheese, sugar, baking powder, baking soda, salt and pepper. In a smaller bowl beat eggs, melted butter and buttermilk together with a whisk. Add to flour mixture and mix with a spoon just enough to wet all the ingredients.

    Step 2
    Pour mixture into a 9 x 5 inch loaf pan that has just the bottom of the pan sprayed or greased. Bake in a preheated 350 degree oven for 35 to 40 minutes. Allow to cool for 15 minutes before removing from pan. Store in refrigerator.

    • In a large bowl combine flour, cheese, sugar, baking powder, baking soda, salt and pepper. In a smaller bowl beat eggs, melted butter and buttermilk together with a whisk. Add to flour mixture and mix with a spoon just enough to wet all the ingredients.

    • Pour mixture into a 9 x 5 inch loaf pan that has just the bottom of the pan sprayed or greased. Bake in a preheated 350 degree oven for 35 to 40 minutes. Allow to cool for 15 minutes before removing from pan. Store in refrigerator. *

    Optional ingredients: 1/2 teaspoon garlic powder and 1/2 teaspoon dried onion flakes.

    SAUSAGE SPINACH CRUSTLESS QUICHE

    This Sausage Spinach Quiche is made without a crust. Great to make on a Sunday and enjoy throughout the week. It’s super versatile too and my family loves it!

    ❤️WHY WE LOVE THIS RECIPE

    This sausage spinach crustless quiche is a family favorite and so easy to throw together if you had a busy day or just want something quick.  You can add ingredients you like or use different meats and cheeses in this quiche and make it your own.  I like that I don’t have to have a crust or have to make one but you could make this in a crust if you want.  It is good reheated in the microwave. 

    🍴KEY INGREDIENTS

    • Pork sausage
    • Fresh spinach
    • Can chopped mushrooms, drained
    • Mozzarella cheese
    • Green or regular onion
    • Eggs
    • Milk
    • Sour cream
    • Garlic powder
    • Black pepper
    • Salt

    SWAPS

    You can switch out the cheese and spices in this recipe. If you are not a fan of mushrooms, simply leave them out. This is a versatile recipe! You could also use turkey breakfast sausage for a lighter version.

    🍽️HOW TO MAKE

    This is a very simple recipe and since it’s crustless it takes nothing to put together. We love having a quiche in the fridge for a easy breakfast!

    COOKING STEPS

    Step 1
    Cook sausage on top of the stove and drain.  In a large bowl toss sausage with chopped spinach, onions, mushrooms and 1/2 cup of cheese.  

    Step 2
    Spray a baking dish with cooking oil and add sausage mixture.  I used a 10 inch pie plate to make this.  In the same bowl you used to toss sausage and spinach whisk together the eggs, milk, sour cream, garlic powder, black pepper and salt.  

    Step 3
    Pour this over the sausage mixture in the baking dish.  Sprinkle on the other 1/2 cup shredded cheese.  Bake in preheated 400 degree oven for 40 to 45 minutes until center is set and top is browned.

    ⭐TIP

    This quiche will puff up in the oven and once removed and cool will fall some. That is nothing to worry about!

    Cover the sliced or chopped sweet potatoes with water and boil just long enough to soften. This takes about 10 minutes. They should be soft enough that you can stick a fork through them. Drain and save 1 1/2 cups of the water from boiling the sweet potatoes. In a bowl whisk together the sugar, salt, cinnamon, nutmeg and flour.

    Step 2
    Spray a 10 inch iron skillet with cooking spray or you could use a 9 x 13 baking dish. Dump in the cooked sweet potatoes, pour the 1 1/2 cups water over the potatoes. Mix in vanilla extract. Sprinkle on the sugar and spices. Cut up the 5 tablespoons butter in pieces on top. Then make your crust or you could use a bought pie crust on top.

    • 4 medium sweet potatoes peeled and sliced or chopped (about 6 or 7 cups)
    • 1 cup white granulated sugar
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 3 tablespoons all-purpose flour
    • 1 1/2 cups water from cooked sweet potatoes
    • 5 tablespoons butter
    • 2 teaspoons vanilla extract

    Crust Ingredients

    • 1/4 teaspoon salt
    • 5 tablespoons butter softened
    • About 10 tablespoons ice water

    Crust Instructions

    • Mix salt into flour. Cut butter into flour until resembles course crumbs. Add water until you can work with dough. Roll out on a floured surface and place over cobbler in skillet or baking dish.

    • Bake cobbler in a preheated 400 degree oven for 35 to 40 minutes until crust is brown on top. Can brush crust with melted butter or egg white for better browning.
