We love pecan pie and we love the flavor of maple so this is the perfect combination! These bars are so good and come together with ease. They set up really well and we enjoyed them for a family gathering and everyone agreed they were great. They also keep well in an air tight container. This is a recipe you can make a day in advance; we actually thought they were better the next day.
SWAPS
We use rolled oats but you could use instant oats too. We also used 2 cups of all-purpose flour, but you could do 1 cup of whole wheat and 1 cup of all-purpose. We like the whole pecans but you could chop them up if you like.

I did put these in the fridge to help them set and they set up perfect. I had to let them sit to room temperature to cut them. These were an immediate hit!

In a mixing bowl combine the graham cracker crumbs, all-purpose flour, rolled oats and brown sugar. Whisk together with wire whisk. Cut in the butter until mixture is like coarse crumbs. Spray a 9 x 13 baking dish with cooking spray and press crust into bottom of dish. Bake in preheated 350 degree oven for 15 minutes. Remove and set aside,
Topping Instructions:
Combine brown sugar, maple syrup, melted butter, vanilla extract, and salt in a bowl and mix well with a spoon. Add in eggs and continue mixing with spoon. Add pecans and mix. Spread mixture over the crust. Bake in preheated 400 degree oven for 10 minutes, reduce heat to 350 and bake 30 more minutes until filling is set. Let cool before cutting in squares.

Well.. we love this recipe because we love pumpkin and we love pecans and this recipe just works. Itâs moist and loaded in flavor and so easy to make! No mixer needed and comes together quickly. This recipe calls for buttermilk and we suggest you use it to make this recipe. Buttermilk adds a level of fat to this recipe, making it even more moist. You could use walnuts in this recipe as well. Someone commented they drizzled caramel sauce over the top and it was a hit. Another person commented they doubled the pumpkin pie spice. If you love the extra spice then by all means double it!

Recently remade this bread and used parchment paper in the pan. It was an easy way to remove the bread from the pan in one piece. It worked perfectly. This brea also rises quite a bit but it didnât run over at all. This is also made with 100% pumpkin puree, not pumpkin mix. Make sure you get the correct kind. One of the key parts of this recipe is putting the streusel topping in the refrigerator the way it says in the directions.

Streusel Topping Ingredients:

Prepare your streusel topping: add the 1/4 the cup brown sugar and the melted butter to a bowl, and using a fork, mix to blend; add in the flour, and gently toss/fluff the mixture with the fork until the flour is incorporated, and the mixture looks like a bit like âwet sandâ crumbles; set the streusel into the fridge to chill. Set aside the other 1/4th cup of brown sugar and pecans.
Preheat oven to 350 degrees. Whisk together flour, baking soda, cinnamon, pumpkin pie spice and salt in a large bowl and set aside. Combine melted butter, sugar, pumpkin, eggs and vanilla extract. Stir together with a spoon. Add to flour mixture and mix well with spoon. Stir in buttermilk. Spray a 9 x 5 loaf pan with cooking spray and add batter to pan.
Remove streusel from fridge and add the pecans and remaining brown sugar. Mix together and sprinkle over top of bread. Pat down a little with a fork so it will stick to the batter.
Cook for 60 minutes or until center test done.
If you think youâll have a tough time removing the bread from the pan, you can always spray your bread pan with nonstick spray and then line it with parchment paper. Make sure your piece of parchment paper is around three times the size of your loaf pan so that thereâs an overhang on the two long sides. Then add in your batter. This will help in removing your bread when itâs done. This bread is made with 100% pure pumpkin puree (I used Libbyâs canned pumpkin), not canned pumpkin pie MIX.

â¤ď¸WHY WE LOVE THIS RECIPE
We have always been big fans of the Payday Candy Bar, and this is pretty much the homemade version. We all agree itâs even better and that itâs only a few ingredients that make it an even bigger winner! You can make these in about 15 minutes and then just put them in the refrigerator to chill. We have made these for a few gatherings and so easy, just cut them in small pieces and enjoy!
SWAPS
We once made these with fat-free sweetened condensed milk, and they turned out good. You can also add in some Reeseâs Pieces on the top if you like, or M&Mâs. We like them made the original way but they are versatile. Some people use other nuts like pecans and switch up the peanut butter chips for butterscotch or chocolate, but if you want them to taste like payday, stick with this recipe.

These can be hard right out of the fridge, so we set them out for 5-10 minutes and then cut them. You can freeze them in an air-tight container up to a few months, just thaw and enjoy.

In a pan on top of the stove melt the butter and chips together. Add in marshmallows and milk and bring to a boil stirring constantly. Turn heat down to a low boil and cook for 5 minutes stirring the entire time. Remove from heat and stir in vanilla extract.
Spray a 9 x 9 baking dish with cooking spray and put half the peanuts in the bottom of the dish. Pour melted ingredients over the peanuts and spread to cover. Add the other half of the peanuts to the top and kind of mash into the cooked ingredients. Refrigerate for at least a couple hours.
Remove and cut into squares or bars. Makes 1 to 1 1/2 dozen pieces depending on size you cut them.

You could put in the refrigerator or even the freezer for a while. Once they are hard keep in an airtight container in a cool place. I have kept them up to two weeks.

Step 1 Cover a baking sheet with foil or parchment paper and spray with cooking spray. I used an 18 x 13 x 1 inch pan. You need the lip on the pan to keep liquid from running off in your oven. Spread the crackers on the pan like in the photo below. In a pan on top of the stove combine the butter and brown sugar. Bring to a boil on medium heat and then boil for 3 minutes. DO NOT STIR WHILE BOILING.
Step 2 Remove from stove after boiling 3 minutes and spread over the saltine crackers with a knife. The mixture should be at soft ball stage or should make a soft ball when a little is dropped in ice water. Have your oven preheated to 400 degrees.  Read more below.

This toffee will last a bit so you can easily make it in advance and store it in a air tight container. You can also make a pan and mix up the toppings, do half the pan with nuts, the other half without, etc.

They call it earthquake cake because it will crack in the middle in some recipes. This one does not crack because I do it a little different. I canât leave this cake alone when I make it because I love chocolate and this is a chocolate lovers dream. This cake will melt in your mouth!

These are easy to make but do take a little prep, itâs worth it though and your family will love these.

These sliders arenât hard to make but do take a little prep. The best way to make these is to organize all of your ingredients before you get started. Then you can work your way through the process.
COOKING STEPS
Step 1 Preheat oven to 350 degrees. Cut down the center of the Hawaiian buns and place the bottom in a baking pan. You can also just buy the Hawaiian Slider Buns to make this easier. Grate about 2 tablespoons of onion and set aside, juice and all. Chop the remaining half of the onion. Combine mayonnaise, grated onion and juice, sugar, sweet pickle relish, 1/2 teaspoon of salt, vinegar, mustard, smoked paprika, and onion powder in a bowl and combine well.Â
Step 2 In a skillet, brown ground beef over medium heat, add chopped onion, Worcestershire sauce,remaining salt, pepper, and cook for a minute or so. Remove from heat and stir in 1/2 cup of grated cheese and 2/3 cup of the sauce.Â
Step 3 Pour meat mixture over the bottom of the slider buns, top with remaining cheddar cheese, shredded lettuce and drizzle on the rest of the sauce. Add the tops of buns, brush on melted butter then sprinkle on sesame seeds. Bake in oven for about 10-12 minutes. Remove and enjoy.Â

Preheat oven to 350 degrees. Cut down the center of the Hawaiian buns and place the bottom in a baking pan. You can also just buy the Hawaiian Slider Buns to make this easier. Grate about 2 tablespoons of onion and set aside, juice and all. Chop the remaining half of the onion. Combine mayonnaise, grated onion and juice, sugar, sweet pickle relish, 1/2 teaspoon of salt, vinegar, mustard, smoked paprika, and onion powder in a bowl and combine well.
In a skillet, brown ground beef over medium heat, add chopped onion, Worcestershire sauce,remaining salt, pepper, and cook for a minute or so. Remove from heat and stir in 1/2 cup of grated cheese and 2/3 cup of the sauce.
Pour meat mixture over the bottom of the slider buns, top with remaining cheddar cheese, shredded lettuce and drizzle on the rest of the sauce. Add the tops of buns, brush on melted butter then sprinkle on sesame seeds. Bake in oven for about 10-12 minutes. Remove and enjoy.

These cookies are really easy to make which is one of the things we love about them. Then you have to wait for them to set and thatâs the hardest part!
COOKING STEPS
Step 1 Mix sugar, milk, and butter in saucepan. Bring to a rolling boil and then boil for 1 minute. Remove from heat and stir in peanut butter and vanilla. Fold in cocoa and rolled oats.
Step 2 Drop from tablespoon onto waxed paper and let cool. No baking is necessary.
âTIP
You can make these whatever size you want! We have made them bite size which is great for a gathering.
If they are not getting hard, you probably didnât boil the mixture to a roiling boil. It needs to be really boiling for one minute.

If your dough is dry add more buttermilk. Add biscuit dough to dish on top of the melted butter. Use a spatula or your hands to spread out dough.
Step 3 Cut the dough into 9 squares. You may not be able to cut them all the way through. This will help with cutting later when the biscuits are baked. Mix together the topping ingredients and sprinkle over biscuits. Bake on 450 for about 25-30 minutes. If they are looking to brown you can tent them with foil. We love this dish because it is loaded with flavor, lots of vegetables, spices, meat, and potatoes. I will admit this dish takes some time, it doesnât come together super quickly but it is hearty and delicious. It reheats well too!

Like I stated above this dish takes a little time, peeling and cutting up the potatoes, boiling them, etc. However, I like to try to make all the things at the same time, and then it comes together quicker.
COOKING STEPS
Step 1 Boil the potatoes (already sliced) in water (add salt) for about 5 minutes or until they begin to feel soft. Drain and let cool. First, we want to add the baking soda and water to a large bowl and mix well; this will help us keep the ground beef from drying out. Add the ground beef to the bowl, plus the salt and mix well. In a hot skillet, add beef, and cook until brown. Remove beef from pan and drain grease.
Step 2 Add celery, carrots, and onions to the skillet and saute until they soften, then add beef back to the skillet. Add in the beef broth and Worcestershire sauce. Increase the heat until the beef mixture begins to boil, and continue to stir until it begins to become thick. Add parsley, mushrooms, salt and pepper as needed. Turn down, cover and let simmer for 30 minutes or until beef mixture is nice and tender.
Step 3 Preheat oven to 425 degrees. Pour beef mixture into a greased 9X13 baking dish. Top with sliced potatoes. Next make the scalloped potato topping. Combine the flour and cream, then heat it on the stove and add all the spices with salt and pepper. Add enough heat that this thickens; normally, a simmer will do. Pour over the potatoes and then top with parmesan and cheddar cheese. Bake in preheated oven for 30 minutes or until potatoes have a nice brown top.
âTIP
You can use whatever cheese your like and add or take out vegetables. This is a very versatile.
