    As someone who usually cooks for just myself and can’t be bothered with waiting around for an oven, the air fryer is one of my most-used kitchen gadgets. In a quick zap, my food’s browned and crispy in no time — way quicker than dealing with a stove that takes forever. Well, let me spill the tea — as a Kitchn editor who’s tried out a bunch of gadgets, I have an air fryer that’s been heavily used in my household for two years. It’s one of my favorite kitchen essentials that I recommend to all my friends, and now to you too.

It even has a spacious 6.8-quart basket with claims of holding 17 chicken wings in one go. (Although I’ve never tested this, I believe it!) Plus, you can control it with the VeSync app, which monitors cooking and even has voice activation through Amazon Alexa and Google Assistant. This air fryer really does a little bit of everything and even has curated recipes within its app that covers appetizers, entrees, and desserts for all your cooking needs. It’s not just a regular air fryer; it’s a cool air fryer.

    Why I Love the Cosori Pro III Air Fryer

    There aren’t a lot of items that are built to last these days, so when it comes to my kitchen, quality is the number one thing I look for in a small appliance. I don’t want to replace something a handful of times after I get it, so when this air fryer appeared on my Amazon feed with rave reviews about its cleanup, quality, and speed, I knew I needed it. Flash forward two years, and it’s been a staple in my kitchen that I use for everything: eggs, meats, pizza, and more. It makes all my meals at the perfect crisp and heats up so fast I don’t have to think about preheating. My only gripe is that it takes up a decent amount of counter real estate, but I find that well worth it, considering how often I use it. I even enjoy its VeSync app, which does many things, but most notably sends you a notification when your food is done cooking. The best part? When it’s time for a wash, I can stick its basket directly in the dishwasher — no need for scrubbing!

I recently stocked up on several boxes to last me throughout the holiday season and made what is perhaps my favorite pairing for a warm, wintry beverage: biscotti. 

    These spice cake mix biscotti make for a crunchy, dippable afternoon snack or accompaniment for morning coffee. Prepare the mix according to boxed instructions — swapping the oil for unsalted butter, and adding flour in place of water to create a dough. I shape and bake as I would with most any biscotti, and once cooled, drizzle mine with a layer of white chocolate. You could also mix some pecans, dried cranberries, or candied ginger into the batter for some extra pizzazz. 

    If you’re looking to branch out from biscotti, spice cake mix can become the basis for a variety of minimal-effort treats. Paired with a can of pumpkin, you can whip up the easiest 2-ingredient muffins — then, stuff said muffins with a spread of cream cheese frosting for the easiest pumpkin spice whoopie pies. Speaking of pumpkin, for easy entertaining, the cake portion of this pumpkin roll could easily be swapped for the boxed mix to create a dessert that’s bound to impress.

    The mix also creates the perfect foundation for different flavor profiles. Add molasses and cloves for gingerbread, applesauce for apple cake, or, a personal favorite, carrots, raisins, and walnuts for carrot cake. 

    After discovering all of the simple, straightforward, and customizable possibilities, I’ll be baking through my boxes for sweet, spiced treats the rest of the season.

    To be fully transparent, we used to believe that if you weren’t roasting a full bird (a turkey or a chicken) all that often, you didn’t need to buy a roasting pan. If you had to roast a turkey for Thanksgiving, we were big proponents of borrowing a pan or getting by with whatever you happened to have on hand (see: No Roasting Pan? 5 Alternatives Already In Your Kitchen). But that has changed! We now fully believe that everyone needs this carbon steel pan from Made In, and to sweeten the deal, it’s on sale right now!

    What’s so great about it?

    “It’s really lightweight but still manages to heat incredibly well. The size is great for roasting a standard chicken or a large-ish turkey — it’s smaller than my other roasting pan so I don’t feel like things are swimming in it. And it’s naturally nonstick, so cleanup was super easy.”

    And while you can use other roasting pans for things beyond roasting, this pan is especially versatile because it’s got super-high walls, features stainless steel handles (that are angled for holding and tenting tinfoil), and is oven safe up to 1,200 degrees (!!!). So beyond poultry, this pan is really great for roasting vegetables, braising, baking, making deep casseroles, and so much more. (The company suggests using it to make a deep-dish pizza and we couldn’t be more into the idea.)

    Just one thing to note: This pan is made of carbon steel, which creates an extremely tough surface that heats quickly and evenly. It’s very cast iron-y — just lighter! And like cast iron, it requires a little extra love when it comes to cleaning it, but it’s also virtually indestructible.
