  • Don & Jo’s Sees Boost in Business After In-N-Out Opens in Ridgefield – KXL

    RIDGEFIELD, Wash. — Don & Jo’s Drive-In has been doing what they do since 1968.  The family owned restaurant serves burgers, fries and shakes but also other soups and food and drink.  And their Operations Manager Courtney Zumstein tells KXL’s News Partner KGW they’ve been pretty much swamped ever since national burger giant In-N-Out added a location in their town of Ridgefield.

    She says instead of hurting their business, the long lines at In-N-Out have provided Don & Jo’s the chance to serve some new people.

    The family owned restaurant has been run by family members like Courtney for years.  She says they are currently training the next generation to keep the Don & Jo’s tradition alive for years to come.

    Chicago’s Iconic Big Baby Burger Goes Vegan on the South Side

    Nicky’s of Beverly is not a vegan restaurant. Since 1997 and across two different locations (three years ago they moved to 105th Street and Western), chef-owner Paul Kostopanagiotou has built a formidable following of carnivorous and plant-based eaters alike. A fast-casual neighborhood spot featuring “elevated street food, the restaurant’s massive menu features everything from salads, smoked brisket, filet mignon sliders, Nashville hot chicken, and even a lobster roll.

    There’s also Nicky’s version of the Big Baby, an underrated Chicago classic that originated in the South Side, featuring twin beef patties with cheese and topped with grilled onions. Ketchup, mustard, and pickles slide under the patties.

    Kostopanagiotou sees an opportunity to introduce non-meat eaters to the specialty. On Friday, November 1, Nicky’s will enthusiastically participate in World Vegan Day with a vegan version of the Big Baby featuring Beyond Meat patties and Daiya dairy-free cheddar taking center stage.

    “We’ve been growing the vegan category at the restaurant for years. I just think vegans are a great customer base, and there was a void in the area for that,” Kostopanagiotou says.

    While he’s not a vegan himself (though he and his team do enjoy plant-based dishes), he’s made a point of connecting with plant-based eaters in the community, like the Chicago Southside & South Suburban Vegans. “I know some of the founding members and admins. We lean on them a lot as a partnership, as they have suggestions and recommendations and vegan meetups,” Kostopanagiotou explains.

    Through those contacts, he’s discovered a variety of plant-based producers, like Good2Go Veggie and Chunk Foods, as well as institutions that help animals. That’s where he learned about the Tiny Hooves Sanctuary, a woman-led nonprofit animal sanctuary located across state lines in Union Grove, Wisconsin. The institution focuses on providing a safe haven — a “forever sanctuary,” as their website calls it — to “abandoned, abused, neglected, and unwanted farm animals while inspiring positive change through the human and animal bond.” Kostopanagiotou said he listened to his local vegan friends when they told him, ‘’This is a solid group — you should look into donating to them.’” On Friday, Nicky’s of Beverly will donate a portion of proceeds from all vegan menu items to the Tiny Hooves Sanctuary.

    The heat lamps can squeeze a little more out of patio season.

    A lot of restaurants will simply throw on a veggie burger, fried cauliflower, or maybe a half-hearted pizza to appease vegan diners who happen to wind up there, but investing in the plant-based portion of his menu is something to which Kostopanagiotou is seriously committed. Nicky’s of Beverly offers close to two dozen vegan items, such as a vegan shrimp po boy, vegan nachos, vegan Buffalo chicken salad, a vegan banh mi, and much more. There’s coconut milk-based peanut butter gelato and even a vegan shake.

    Kostopanagiotou points out that he develops the vegan part of the menu side-by-side with everything else to make sure there’s plenty to enjoy for everyone. “It just continuously expands, and is creative,” he says. “I’m very mindful as I expand the normal menu that I can do that for the vegan menu also.”

    There’s plenty to experience at Nicky’s of Beverly, whether customers like vegan food or not. They also have a weekday happy hour, live music, and a gelato bar.

    DC’s Z-Burger makes USA Today Readers’ Choice List (and its got big expansion plans) – WTOP News

    D.C.-based Z-Burger, which plans to double the number of its locations, finds itself in good company with its No. 4 ranking by USA Today’s Readers’ Choice Awards for best regional fast food restaurants.

    D.C.-based Z-Burger, which plans to double the number of its locations, finds itself in good company with its No. 4 ranking by USA Today’s Readers’ Choice Awards for best regional fast food restaurants.

    Z-Burger outranked regional burger chain stalwarts, including In-N-Out Burger (No. 8) and Whataburger (No.9). It is the first year Z-Burger has made the USA Today list.

    USA Today readers like Z-Burger’s hearty sandwiches, like its bacon cheeseburger and spicy chicken sandwich, and its hand-spun milkshakes with 75 different flavor choices.

    “We go to great lengths to make amazing hamburgers, using a special blend of sirloin, chuck, rib eye and brisket, which can’t be beat, and obviously the public agrees,” said Z-Burger founder Peter Tabibian.

    Z-Burger also made WTOP’s 2023 Top 10 list of Best Burgers.

    The first Z-Burger opened in Northwest D.C.’s Tenleytown in 2008. It now has 12 locations in D.C., the Maryland suburbs and Northern Virginia. Another location opens soon in Towson, Maryland.

    Tabibian has plans for as many as 25 new locations, including new restaurants opening soon in Centreville, Manassas, Reston Town Center, and Northeast D.C.’s Trinidad neighborhood.

    Earlier this month, the Tenleytown Z-Burger location hosted its 15th-annual Independence Day Burger Eating Championship, and went through 5,000 burger patties on competition day.

    Topping the Readers’ Choice list for best regional fast food restaurants are Skyline Chili in Ohio, North Carolina’s Biscuitville, and Seattle’s Dick’s Drive-In.

    It is the big American holiday – but did you know these things?

    The 4th of July is when the US celebrates its Independence Day. It is the huge summer holiday filled with bbq, fireworks, parades and more.  But did you know these things about the holiday?  The first organized celebration took place in 1777 in Philadelphia and Boston.  Four years later, Massachusetts made it an official state holiday. It wasn’t until almost a hundred years later when made it a federal holiday in 1870.  It was part of a package including New Year’s Day, Thanksgiving, and Christmas.

    Almost 87% of people plan to celebrate the day.  A whopping 47% plan on purchasing alcohol as one way to mark the founding of the country.  Beer is the top choice, followed by wine and then alcohol.

    But despite those big numbers – did you know this is the most popular thing about the holiday – fireworks. They were there at the beginning and remain popular with 60% looking to watch the show. And not just the planned community as seen on TV fireworks. Since Covid, firework sales in America have grown to $2.3 billion, local American pyromaniacs spent three times more on fireworks in 2023 than they did in 2012.

    And did you know blue is one of the hardest colors to make in a firework? The Italians in the 1800s figured out how to add colors. Putting metal salts which would glow and emit bright colors when heated created the dazzling spectrums of lights. While the boom is made by the explosion of gunpowder, the snap, crackle and pop are made with a little chemistry. The campfire-like crackle comes from small granules of bismuth compounds. The granules burn quickly, one after the other, giving the famed crackling sound.

    The holiday is filled filled with food and 58% of the country will be grilling or barbecuing.  Grocery stories are making a killing selling top favorites of burger patties, hot dogs, deli salads, vegetable trays and mixed fresh vegetables, and potato chips (in that order). In a survey, ketchup is a top condiment for burgers followed by mustard, then mayo. When is comes to what to put on the burger cheese is at 67%, followed by lettuce then tomatoes.

    For extreme eating, Nathan’s National Hot Dog Eating Contest can fill you up! The first was held in 1972 and continues at the original location on Coney Island. In the late 1990s and early 2000s, the competition was dominated by the Japanese, but winners have branched out since. It is part of Major League Eating (MLE), the organization overseeing professional competitive eating events and television specials. While there are 150 million hot dogs eaten on the 4th, the world record at the contest is 76 within 10 minutes. Condiments are not allowed.

    While the Flintstone’s did a July 4th special when they were in prime time (pre-streaming), the holiday also received a classic Rankin Bass stop-motion special. They squeezed the famous holiday characters Frosty the Snowman and Rudolph the Red Nose Reindeer into a special to save the 4th. They mixed in a circus, magic, Mrs. Claus and more.

    On the other end of the entertainment spectrum is the famous Boston Symphony Fireworks concert. Started originally in 1929 with the first free Esplanade Concert, it was revived in 1974 and continues on TV to the delight of music lovers.

    Smash Burger Recipe- Oh Sweet Basil

    Nothing says summer quite like a good burger! This time we are teaching you how to make a perfect smash burger and there’s one secret that is life-changing. If it’s a summer BBQ with friends, a family reunion or a 4th of July bash, this smash burger recipe is the way to go!

    Serve it with a fresh tomato cucumber salad, a giant pot of BBQ baked beans, watermelon slices and you’re set !

    Why Smash a Burger

    Look, I don’t know why smashing a burger, literally the one thing you should NEVER do to meat totally works in this recipe, but it does. Ok, I do actually know why, it’s because it caramelizes every single piece of that patty thus making for more flavor in each bite, but the point is, it doesn’t make sense and so therefore you should absolutely eat it.

    It’s kind of like that crazy wedge salad story; it’s simple and therefore it’s the beeeeeest!

    Cade and I discovered smash burgers when we were in our first few years of marriage and I think it’s actually what kind of turned me from burger hater to burger enjoyer and now lover. I still loooove a crispy chicken sandwich, don’t you get me wrong, but a smash burger will always make my mouth water.

    They are juicy, buttery, and have those crispy edges that are the star of this burger show. And the best thing about this is that smash burgers are simple and cook so fast…exactly what you want to feed the fam on a busy summer weeknight or to feed a crowd for your 4th of July festivities!

    Ingredients for Smash Burgers

    There’s nothing crazy going on with these ingredients. The crazy comes in the cooking technique, so your ingredient list looks like this:

    Burger Patties

    • Canola Oil
    • Burger Buns: Potato buns taste great or brioche buns also work well.
    • Butter
    • Ground Beef (60/40): this probably sounds crazy, but just ask your butcher and trust me on this one…all the flavor comes in the higher fat content!
    • Salt
    • Pepper

    Toppings

    How to Make a Smash Burger

    We have a post already on the secrets to the best hamburger, which is amazing and true, but throw all those rules out the window for these smash burgers. Your first step in making these burgers is going to be at the grocery store. As your butcher for a pound of ground beef that is 60% ground chuck and 40% ground brisket (or sirloin). It’s going to blow your mind how much flavor that combination of beef has!

    1. Divide the pound of ground beef into loose 2″ balls and set them in the freezer on plate for 15 minutes.
      • PRO TIP: The less you handle the meat, the better. Keep the balls loose with jagged edges so that there are more edge area to get crispy and delicious!
    2. Toast the buns on a cast iron skillet and set aside.
    3. Pull the meat out of the freezer and flatten each ball on the skillet using a metal spatula or a burger press and season one side with salt and pepper.
      • PRO TIP: High heat at first so that you instantly char that meat but then turn it down a little to medium so you don’t burn the meat.
    4. Place the burgers onto the cast iron pan seasoned side down and then season the other side.
    5. Cook until it caramelizes and flip. Add the cheese slices.
    6. Cover the pan with a lid to melt the cheese.
    7. Place your burgers on the toasted hamburger buns and add your toppings.

    Why Do You Put the Meat in the Freezer Before Cooking?

    This is the secret to making the smash burgers perfectly! With the meat nice and cold, it cooks a little slower while still letting the edges get caramelized and crispy. If the meat is too warm, it cooks too fast and dries out while the edges caramelize.

    When you think of burgers, you think summer, and you should, but with a smash burger, you can make it all year round right on the stove top. They are juicy and crispy and the best burger I’ve had in ages! I’m dying for you to try it!

    Description

    Nothing says summer quite like a good burger! This time we are teaching you how to make a perfect smash burger and there’s one secret that is life-changing.

    Prevent your screen from going dark

    • Form ¼ pound beef into loose 2″ balls. Set aside in the freezer on a plate.

      1 Pound Ground Beef Blend

    • Brush a 12-inch cast iron skillet with oil and set it over medium heat until shimmering.

      1 Tablespoon Canola Oil

    • Add the butter to the pan and place the buns, cut side down on the hot skillet. Cook just until the buns are nicely toasted and set the buns aside.

      2 Tablespoons Butter, 4 Potato Burger Buns

    • Remove the meat from the freezer and season with salt and pepper. Place in a preheat, slightly oiled cast iron skillet and press down firmly and evenly to flatten the meat. Generously season the other side of the patty with salt & pepper.

      Salt and Pepper

    • Cook until caramelization begins, about 1 minute. Flip and add the cheese.

      American Cheese

    • Place a large lid over the burgers the last 30 seconds to melt the cheese. If you want the burgers more done wait a minute before adding the cheese.

    • Spread your burger sauce and lettuce over the bottom bun. Top with 1-2 patties and pickles and onion before enjoying.

    Simple Ways To Beef Up Your Basic Burger

     

    The burger is a staple of meals, so delicious, messy, full of proteins and veggies (sometimes) and it hits the spots. And it is the all weather perfect meal. And certain places just nail the perfect burger.  In-N-Out has a reputation for doing it right with onions, others go all out with truffle, exotic ingredients, or artisan buns.  Restaurants have plenty of resources, but at home you can use a few hacks to make yours even better.  Here are some simple ways to beef up your basic burger.

    1. Cold Hands 

    The heat of your hands “melts” the hamburger, creating a sticky mess that makes it super challenging to make a killer patty. Dip ’em in ice water first and watch your patties shine!

    2. Grate Your Onions

    Don’t bother slicing those suckers. Grate them directly into the hamburger. The onion juices will incorporate nicely into the raw meat.

    3. Put a Thumb on It

    Place a thumb print in the center of the patty to allow it to fill up with flavorful juices while it’s cooking. It will stay moist by evaporating its own delicious meat nectar.

    4. Put an Egg in It

    So basic, but such a winning tip. Before cooking, cut out the middle of a patty (a cookie cutter, mason jar lid or cup works great) and crack an egg into the center, like a Toad In the Hole but with meat instead of bread.

    4. Chill Out

    Unlike a steak that cooks best at room temperature, you want your burger patties to be chilled before cooking to retain the firmness of the fat, like a stick of butter, so it won’t melt off when cooking.

    5. Don’t Cook Frozen Meat

    Thaw a patty in minutes, just like you would a steak, by placing the sealed bag it’s in between a pot of water and a sheet pan. After it’s thawed, stick it in the fridge to chill (see #4). It really is that easy.

    6. Make a Cheese Dog

    Who says your hamburger has to be in patty form? Press the meat into a rectangle, lay down some cheese strips, then roll that thing into a hot dog and serve it in a bun.

    7. Get Fat

    Skip the lean meats for fattier ones (looks for a ratio of about 80/20 —  lean vs fat) to make sure your burgers have flavor. If you’re that worried about calories (for one, you should’t be eating hamburgers), just make smaller patties. You’ll ultimately feel more satisfied anyway.

    8. Don’t Flip Out

    Patience, young Grasshopper. The burgers will lose their juices if you keep flipping them. Try to limit yourself to just a single flip. Otherwise, you risk having a dry burger.

    9. Spice Is Nice

    Add some jalapeños, red peppers, hot peppers or any kind of pepper to your raw burger mixture to add a little extra heat to your hot grill.

    Fast-Food Fans May Face Liver Damage

    Jan. 13, 2023 – A new study that shows the harm to the liver of eating fast food might provide people with motivation to eat less of it in the new year. 

    The study found that eating at least 20% of total daily calories from fast food can increase the risk of nonalcoholic fatty liver disease, a potentially life-threatening condition where fat builds up in the liver. The disease can lead to cirrhosis and its complications, including liver failure and liver cancer. 

    People with obesity or diabetes are more vulnerable to the harmful effects of fast food on the liver, although the general population is not immune to the harm. 

    “My hope is that this study encourages people to seek out more nutritious, healthy food options,” says lead investigator Ani Kardashian, MD, with Keck Medicine at the University of Southern California.  

    “At a policy level, public health efforts are needed to improve access to affordable, healthy, and nutritious food options across the U.S. This is especially important as more people have turned to fast foods during the pandemic and as the price of food as risen dramatically over the past year due to food inflation,” she says. 

    The researchers analyzed data on diet and fatty liver measurements for nearly 4,000 adults.

     Nearly 30% of them got 20% or more of their total daily calories from fast food, such as burgers, fries, pizza, and the like. 

    They found that people with obesity or diabetes who take in one-fifth or more of their daily calories from fast food had severely high levels of fat in their liver, compared with those who eat less or no fast food.

    The general population had moderate increases in liver fat when one-fifth or more of their diet was made up of fast food. 

    The findings are particularly “alarming” given the increase in fast-food consumption over the past 50 years, regardless of socioeconomic status, Kardashian says. 

    “If people eat one meal a day at a fast-food restaurant, they may think they aren’t doing harm. However, if that one meal equals at least one-fifth of their daily calories, they are putting their livers at risk,” she says. 

    For people who have limited options and need to eat fast food, “there are healthy choices at most restaurants; you just need to be smart about reading labels, watching calories, and ordering the healthier options,” says Nancy Reau, MD, with Rush University Medical Center in Chicago,  who wasn’t involved in the study.

    Lisa Ganjhu, DO, with NYU Langone Health in New York City, agrees. 

    “I am a firm believer that fast food can cause fatty liver. It goes hand in hand, and I counsel and coach my patients on healthy diet and exercise, and I’ve been pretty successful,” she says. 

    “If my patient is eating at McDonald’s a lot, I basically walk through the menu with them and help them find something healthy. When patients see the benefits of cutting out fat and reducing carbohydrate, they are more apt to continue,.”
