    Ingredients for Salmon Burgers

    Salmon: Fresh salmon or frozen filets are great for salmon burgers. Canned salmon works well too, but check for small ‘pin-bones’ and drain thoroughly.

    Breadcrumbs: I use breadcrumbs in this recipe to help bind the ingredients together. Use plain or seasoned Panko bread crumbs or make your own.

    Seasonings: I love using Dijon mustard, a little lemon juice, Old Bay seasoning, and garlic powder to give these salmon burgers a zesty and mildly spicy flavor.

    Variations

    • Mix in some diced red bell peppers or shredded zucchini for a pop of color and extra moisture.
    • Add some fresh dill or other herbs, homemade lemon pepper seasoning, or even lemon zest.
    • Toss in some shredded parmesan or cheddar cheese for extra richness.

    How to Make Salmon Burgers

    Salmon burgers can be made into a full-size burger patty or shaped into sliders!

    1. Pulse 1/3 of the salmon with seasonings in a food processor until smooth (but not pasty).
    2. Transfer the mixture to a large bowl and add the remaining salmon, parsley, breadcrumbs, salt, and pepper (recipe below).
    3. Form mixture into patties and chill.
    4. Pan-fry salmon burgers in oil until golden brown.

    Assemble salmon burgers with lettuce and tartar sauce between hamburger buns.

    While the salmon burgers are cooling, butter and toast the cut sides of the burger buns in the pan while it’s still hot.

    Storing Salmon Burgers

    Store leftover salmon burgers separate from buns in a covered container in the refrigerator for up to 2 days. Reheat them in the microwave, then re-crisp them in a dry saute pan or reheat them in the air fryer.

    Once cooled, freeze salmon burgers between pieces of parchment paper in a zippered bag for up to 3 months.

    Salmon Burgers

    Salmon burgers are the perfect option when craving a light and flavorful meal.

    • Cut the salmon into ¼-inch pieces. Place ⅓ of the salmon in a food processor bowl with mustard, lemon juice, Old Bay seasoning, and garlic powder. Pulse until combined and almost smooth and well mixed.
    • Transfer the salmon mixture to a medium bowl. Add the remaining chopped salmon, breadcrumbs, parsley, salt, and pepper. Gently mix to combine.

    • Wet your hands with water and gently form the salmon into four patties, 4-inches wide. Place the patties on a plate and refrigerate for at least 30 minutes.

    • In a large nonstick skillet over medium heat, heat the olive oil. Add the patties and cook for 3 to 4 minutes per side or until golden brown.

    • To serve, top each bun with tartar sauce, lettuce, and a salmon patty.

    Leftover salmon patties can be stored (separately from the buns) in an airtight container in the fridge for up to 2 days. 
    Reheat in a skillet on the stovetop or in the air fryer.

    Ingredients For Grilled Chicken Sandwiches

    Chicken: Use boneless skinless chicken breasts or boneless skinless chicken thighs in this recipe. Pound chicken breasts to an even thickness and if they’re extra large, they can be cut in half.

    Marinade: The marinade is made with a light-flavored oil, such as vegetable oil or olive oil. Cider vinegar tenderizes the chicken, while brown sugar helps it caramelize.

    Buns: I love either toasted hamburger buns or brioche. If you’re feeling fancy, you can brush the buns with garlic butter before toasting.

    Sauce: The sauce is a simple homemade honey mustard style sauce and it’s delicious. You can add any sauce you’d like BBQ sauce or aioli.

    How to Make a Grilled Chicken Sandwich

    1. Make the marinade. Pound the chicken. Add to the marinade.
    2. Preheat the grill and cook the chicken (recipe below).
    3. Add the grilled chicken breast to the bun with lettuce, pickles, and slices of tomato or onion. Drizzle with sauce and enjoy.

    Serve with sweet potato fries, grilled corn on the cob, or coleslaw.

    Tips for Success

    • Use a meat mallet to pound the chicken to ½-inch thickness.
    • Marinate for 30 minutes or up to 4 hours. Any longer than that and the meat won’t have the same consistency after cooking since the marinade will start to “cook” the meat.
    • Cook grilled chicken breast just until the chicken reaches 165°F.
    • To broil in the oven, adjust the rack to 4 inches below the broiler. Broil for 5-7 minutes per side.

    • Place the chicken breast on a cutting board and lightly cover with plastic wrap. Use the flat side of a meat mallet to pound chicken breasts to ½-inch thickness.

    • Combine all marinade ingredients in a bowl or freezer bag. Add chicken and toss well to combine. Marinate for at least 30 minutes or up to 4 hours.

    • Preheat the grill to medium-high heat (375°F).

    • Remove the chicken from the marinade allowing excess to drip off and discard the marinade.

    • Add the chicken to the grill and cook for 5-6 minutes per side or until no pink remains and the chicken reaches an internal temperature of 165°F.

    • While chicken is cooking, brush the cut side of the buns with olive oil and place face down on the grill. Cook until lightly toasted.

    • Spread each bun with honey mustard and add lettuce, tomatoes and onions if desired. Top with chicken and serve.

    If your chicken breasts are larger, they can be cut to make 4 portions.
    Do not overcook the chicken, it is pounded to cook evenly and only needs about 10-12 minutes.
    Chicken breasts can be replaced with boneless skinless chicken thighs.

    Homemade Honey Mustard: Combine ⅓ cup mayonnaise, 1 ½ tablespoons yellow mustard, 1 ½ tablespoons honey &  ½ teaspoon garlic powder.
    Leftover chicken can be stored for up to 4 days in an airtight container.

    Pizza Burgers are a fun combination of juicy burgers and cheesy pizza, all in one bite!

    • In a medium skillet, cook the pepperoni and green pepper over medium heat until the green pepper is tender, about 4 minutes. Cool completely.

    • In a medium bowl, combine ground beef, parmesan cheese, Italian seasoning, garlic powder, and the pepperoni mixture. Form into 4 ½-inch thick patties.

    • Heat the olive oil in an oven-proof skillet over medium heat and add the patties. Cook 4-6 minutes per side or until they reach 150°F. (see notes for other cooking methods)

    • Meanwhile, heat the pizza sauce on the stovetop or in the microwave.

    • Turn the broiler on to high. Spoon 1 tablespoon of pizza sauce over each patty and top with mozzarella cheese and pepperoni slices. Broil 1-2 minutes or until cheese melts and begins to brown. Rest for 3 minutes or until the beef patties reach 160°F.

    • Meanwhile, spread garlic butter on the buns and broil 1-2 minutes or until lightly toasted.

    • Place a beef patty on each bun to serve. Warm additional pizza sauce for dipping if desired.

    To Prepare on the Grill:
    Preheat grill to medium-high heat.
    Prepare the beef patties as directed and grill for 6-8 minutes per side or until cooked through.
    Turn the grill off and top with the warmed sauce, cheese, and pepperoni. Close the lid of the grill and let the patties rest until the cheese has melted.

    Chill leftover pizza burgers for 3-4 days in the fridge. Freeze them without cheese or sauce between parchment for up to 4 months. Reheat in the oven, then broil with sauce and toppings.
