CAMBRIDGE, MASS. (WHDH) – Say cheese! 7’s Juliana Mazza takes us to Cambridge where a cheesy cave is creating Mass Appeal.

Formaggio’s Kitchen in Cambridge specializes in all things cheese.

Owner Julia Hallman said she travels the world in search of the most extraordinary dairy. She’s now showing off her funky finds by offering tours of Formaggio’s underground cheese cave.

“At any given time we have upwards of about 300 different kinds of cheese in the store,” said Hallman. “This one is rubbed in tomato paste from Italy, others have a traditional basket weave which affects the aging. Others are rubbed in ash or washed in a brine, and all that affects the flavor.”

The environment also affects the cheese’s flavor, so the cave is kept at 55 degrees and 90 percent humidity.

“There’s a smell, there’s a feel, it’s very humid in here,” said Hallman.

Each tour of the cave ends with a tasting, so guests can try all the flavors.
