If You Only Buy One Thing at Costco This Month, Let It Be This Elegant Brunch Staple

As one of Costco’s biggest fans, I enjoy scouring the store every month (okay, okay every week), finding the best items for the season. In turn, you can make it in and out of the warehouse quickly and enjoy the warmer weather outside instead. While Costco shoppers have a reputation for spending big for bulk buys, this spring I’ve had my eye on budget-friendly items. With egg prices still high, I thought I’d have to skip one of my favorite spring dishes: quiche. Luckily Costco has me covered with La Terra Fina Quiche 2-Pack.

Quiche is a classic brunch dish made of eggs, dairy, and fillings baked in a buttery pastry crust. This two-pack of quiche saves me the time and expense of making quiche from scratch. In true Costco fashion, you get not one, but two quiche per package. 

The varieties in each package are spinach and artichoke and fire roasted vegetable medley. The crust bakes up golden and crisp, while the custard is creamy, elegant, and studded with vegetables. The filling is made from cage-free egg whites, which gives it a lighter consistency than quiche made from whole eggs. Every slice is still creamy, studded with vegetables, and perfectly seasoned. Both varieties are perfect for serving at a springtime brunch and seasonal holidays like Mother’s Day and Easter. 

The prepared quiche is in the refrigerated section of the store. You can serve quiche warm or at room temperature, but it must be heated to 165°F before serving. I recommend following the oven heating instructions for the best crust and custard consistency. I like to serve slices of quiche with a fresh fruit salad or with spring greens and a homemade vinaigrette. If I’m hosting a larger gathering, I might include muffins, crispy bacon, and mimosas.
