    These Sriracha Steak Lettuce Wraps are loaded with saucy steak and fresh veggies nestled in crisp lettuce leaves. If desired,  top with a drizzle of yum yum sauce, cilantro, jalapeño and green onion for a deliciously spicy meal.  Yields 4 (four lettuce wrap) servings.

    Actually, it’s Anne, but spicy would be my middle name if I had any say when my birth certificate was being typed up. However Laurie Spicy McNamara does sound a bit ridiculous now doesn’t it (or do you like it? It is starting to grow on me).

    Speaking of spicy. These steak lettuce wraps are SO good and (in my opinion) have the perfect amount of heat. For this recipe, I like to use diced cube steak and once browned I toss it in a sweet and spicy sauce that has flecks of fresh ginger and garlic. I then fill tender Bibb lettuce leaves with a plethora of colorful veggies and add the sriracha steak filling, drizzle it all with yum yum sauce and top with green onion, cilantro and jalapeños.

    To Make These Sriracha Steak Lettuce Wraps You Will Need:

    for the sauce:

    • light brown sugar – Lends sweetness and subtle caramel flavor.
    • cornstarch – Aids in thickening the sauce.
    • ginger (fresh) – Lends a pungent, spicy and sweet flavor.
    • garlic (fresh) – Adds distinct punchy flavor.
    • coconut aminos – Can substitute with low-sodium soy sauce or tamari for gluten free. (more on coconut aminos below)
    • lime juice – Adds acidity and bright citrus flavor.
    • sriracha – For delicious heat.
    • toasted sesame oil – Adds distinct flavor and nuttiness.

    • cube steak
    • lettuce leaves

    • carrot
    • cucumber
    • red bell pepper

    optional toppings:

    • yum yum sauce
    • black sesame seeds
    • sliced jalapeno

    Make The Sauce:

    Start by adding 3 tablespoons of light brown sugar, 1-1/2 teaspoons cornstarch, 1 tablespoon each finely chopped ginger and fresh garlic, 3 tablespoons of coconut aminos, the juice from 1 lime, 1 tablespoon of sriracha and 1 teaspoon toasted sesame oil.

    WHAT IS COCONUT AMINOS?

    Coconut aminos is a flavorful and salty sauce made from the fermented sap of coconut palm and sea salt, yet it does not taste like coconut at all. Its consistency and deeply brown color is similar to soy sauce. It’s also happens to be soy, gluten and wheat-free too. With that said, coconut aminos is a healthy substitute for those with a restrictive diet.

    Give that a whisk to combine.

    Prep The Veggies:

    I like to peel ribbons of carrot, sliced red pepper and cucumber into strips, shred]purple cabbage, slice green onions and jalapeños.

    Prep the Steak:

    Working with one cube steak at a time, slice into strips and then finely chop. It will look all crumbly, similar to ground beef.

    What Is Cube Steak?

    Cube steak is usually the top round or sirloin cut, pounded with a meat tenderizer or ran through a fancy machine. And I’m here to tell you cube steak isn’t just for chicken frying. Nope. It’s so tender that when you run your knife through it a couple times it resembles ground beef, yet it’s steak. Steak which just so happens to be perfect in lettuce wraps.

    Heat a large 12-inch skillet or wok over medium-high to high heat. Once hot, add 1 teaspoon of avocado oil and the chopped cube steak.

    Cook for about 6 to 8 minutes until fully cooked and golden brown in spots. Remove and discard any fat that has rendered out.

    Spicy Sriracha Steak Lettuce Wraps

    FOR THE SAUCE:

    • 3 tablespoons light brown sugar
    • teaspoons cornstarch
    • 1 tablespoon fresh ginger, finely chopped
    • 1 tablespoon garlic, finely chopped
    • 1 to 2 tablespoons sriracha
    • 3 tablespoons coconut aminos, or tamari or low-sodium soy sauce
    • 1 large lime, juiced

    FOR THE LETTUCE WRAPS:

    • 1 teaspoon avocado oil, or extra light olive oil
    • pounds cube steak, finely diced
    • 16 lettuce leaves, bib, iceberg or romaine
    • 2 cup shredded purple cabbage
    • 1 carrot, peeled into ribbons
    • 2 persian cucumbers, cut into strips
    • 1 red bell pepper, sliced into strips

    OPTIONAL TOPPINGS:

    • yum yum sauce
    • black sesame seeds
    • cilantro leaves
    • sliced green onions
    • sliced jalapeño

    MAKE THE SAUCE:

    • In a liquid measuring cup (or medium bowl with a spout) add brown sugar, cornstarch, ginger and garlic, coconut aminos, lime juice, sriracha and toasted sesame oil. Whisk well to combine.

    MAKE THE LETTUCE WRAPS:

    • Prep the veggies and any desired toppings.

    • Heat a large 12 to 14-inch skillet or wok over high heat. Once hot, add the avocado oil and the diced cube steak.

    • Cook for about 6 to 8 minutes, stirring often, until fully cooked and golden brown in spots. Remove and discard any fat that has rendered out.

    • Next pour in the sauce and stir until thickened. This should only take a minute or two.

    • Fill your lettuce leaves with the veggies you desire, top with some of the sriracha steak filling and top with yum yum sauce, green onions and jalapeños (if desired).

    There are a few reasons why we love this recipe. It’s super easy to make which is always a plus, the flavor is incredible and it’s versatile. The meat really has a great taste and we also love it served over a sweet potato. Something about the sweetness of the potato with this recipe is really good. We love to serve this for family gatherings, we will make it up and put it in the crock pot and anyone can make a sandwich when the want. Just add some potato chips and you have a simple and delicious meal!

    The Best and tasty Flank Steak Recipe – Oh Sweet Basil

    There’s nothing quite like a perfect grilled steak and so I’m sharing my secrets on Grilled Flank Steak and my favorite balsamic marinade. 

    We went over to one of our friends’ home the other night for dinner. We brought the meat and salad and they supplied side and dessert (oh my gosh it was the most delicious strawberry shortcake. A true favorite of mine!)

    I got this recipe from a girl I went to Elementary and Junior High School with. Fast forward 5,000 years, we became friends on facebook and the rest is history! 

    Anyway, this is hands down our new favorite way to cook flank steak. If there is one meat recipe you try from me this weekend, make it this one. You will love it forever.

    What is Flank Steak?

    Flank steak is a somewhat tough but lean cut of beef that is long and flat. It is still quite flavorful but it mostly benefits from a marinade that tenderizes the meat.

    Prepared this way, marinated, cooked quickly at high heat, and thinly sliced, flank steak practically melts in your mouth.

    What’s in the Marinade?

    At first glance, this flank steak recipe might look like a lot of ingredients, but you’ll likely have most of them in your pantry or fridge already. Here is everything you will need…

    • Soy Sauce– This adds a lot of flavor and a touch of salt to balance out the sweetness in the marinade.
    • Oil– Vegetable is what we use, but you could use olive oil.
    • Dark Brown Sugar– Dark brown sugar gives a touch of sweet and balances the salty of the soy sauce, but we prefer dark brown sugar to add a little more depth of flavor.
    • Worcestershire Sauce– Umami is the flavor you forget about. Yes, there’s sweet, salty, bitter, sour but did you know umami is that earthy goodness? Worcestershire enhances that in a beef marinade.
    • Dijon Mustard– A strong but not bitter mustard that helps to enhance flavor.
    • Garlic– Garlic breaks up the muddled flavors in a beef dish, adding a stitch of a bite.
    • Chives- A more mild onion flavor that also adds a little freshness.
    • Pepper- While we don’t need to add salt thanks to the soy sauce we do need a little heat from the pepper.
    • Balsamic Vinegar- Acid is one of the key components in cooking as you’ll read in our cookbook, Raised in the Kitchen. It cuts through the flavors, tenderizes the meat and adds a sweet but tangy flavor.

    What to Use if You Can’t Find Flank Steak

    A great substitution for flank steak is a skirt steak or flat iron steak. We loooove skirt steak!!

    What is Another Name for Flank Steak?

    Some butchers sell flank steak under the name “London Broil,” while others use that term for cuts from the round.

    How to Keep Flank Steak Tender

    Flank steak has a lot of muscle fibers running through it, and it is a fairly lean cut of meat. It has an intense beefy flavor, but it can be a little tough.

    • It should be thinly sliced and cut against the grain. Look for which way the lines are running through the meat and cut the opposite direction. This will give it maximum tenderness.
    • Marinades can also help it to be tender. 
    • Let it rest! Once it has cooked, remove it from the grill and set it aside to rest for about 5 minutes. This allows juices to redistribute and the meat will be more flavorful and tender. 

    How Should Flank Steak be Cooked

    • Grilling is the best way to cook flank steak, as it caramelizes the flavor on the outside, adding a nice sear but you can still control the inner temperature.
    • To keep your flank steak grill time to a minimum. Start with a high heat to sear both sides then turn it down to medium and only cook for about 9-12 minutes total.
    • Because this is a lean cut, it is best cooked rare, medium-rare, or medium. I would never cook a flank steak to well done. 
    • Additionally, you can also pan-sear it in a skillet or broil it in your oven, but you will lack flavor.

    What to Eat with Flank Steak

    We like to eat flank steak as the main dish with a side of mashed potatoes or roasted fingerlings. A side salad or any vegetable also makes a great side dish like grilled corn on the cob or roasted garlic veggies.

    This steak can also be used to make a great steak salad or sliced thin and served in flank steak tacos.

    This balsamic flank steak marinade is bold in flavor and makes the most tender, juicy steak! It’s a staple in our summer grilling rotation! 

    Servings: 4

    Prep Time: 8 hours 10 minutes

    Cook Time: 15 minutes

    Total Time: 8 hours 25 minutes

    A delicious flank steak marinade that brings the often tough flank steak to a mouthwateringly tender cut of steak.

    Prevent your screen from going dark

    • Mix all ingredients together in a ziploc or a large dish.

      1/2 Cup Soy Sauce, 1/3 Cup Vegetable Oil, 2 Tablespoons Dark Brown Sugar, 1/4 Cup Worcestershire Sauce, 1 teaspoon Dijon Mustard, 4 Cloves Garlic, 2 Tablespoons Chives, 1 1/2 teaspoons Ground Black Pepper, 2 teaspoons Balsamic Vinegar

    • Add the flank steak and marinate (covered) in the fridge overnight or at least all day.

      2 Pounds Flank Steak

    • Heat the gas grill to high heat. Remove the steak from the marinade and lay on the grill for 2 minutes per side. Then turn down to medium and cook another 7-10 minutes, flipping halfway again, or until an internal temperature of 130 degrees F (using a meat thermometer) for medium rare, or longer for medium etc. Remove and set aside to rest on a cutting board with foil draped over the top.
    • Meanwhile, place 1/2 of the remaining marinade in a sauce pan over medium heat.

    • Bring the marinade to a simmer for 10 minutes, set aside.

    • Slice the steak against the grain and serve with a drizzle of additional sauce if desired.

    Flank steak is a lower quality of meat so cooking to well done will make it more chewy. It’s incredibly flavorful and delicious when cooked properly!!
    Store left overs for 3-4 days in the refrigerator.

    • Beef: The best beef for stir fry is either sirloin or flank steak because it is tasty, affordable, and easy to tenderize. Other cuts of beef such as chuck steak or ribeye can also be used.
    • Veggies: Use whatever vegetables you have on hand, personal favorites are broccoli, snap peas, and bell peppers.

    For the Stir-Fry Sauce

    • Ginger/Garlic: Freshly minced garlic and ginger add tons of flavor. Jarred minced garlic or ginger can be used in this recipe.
    • Orange juice: Adds a sweet and tangy flavor to the sauce. Replace the oj with pineapple juice or apple juice.
    • Soy sauce: Adds umami (savory flavor).
    • Brown sugar: Adds a hint of sweetness. Use either light or dark brown sugar.
    • Sesame oil: Adds a nutty flavor.

    Save time, skip the chopping, and use frozen mixed vegetables, or check the produce section at the grocery store for pre-cut stir-fry vegetables. Shredded coleslaw mix is another easy addition to stir-fry!

    How to Make Beef Stir Fry

    1. Cut and then toss the beef with cornstarch. Pan fry (recipe below) and then set aside.
    2. Stir-fry the vegetables and transfer to the bowl with the beef.
    3. Mix the sauce ingredients. Cook the sauce in the pan.
    4. Slowly add cornstarch. Add the vegetables and beef.

    How to Keep The Beef Tender

    • To make tender strips of beef, trim any silverskin, connective tissue, or large bits of fat, and then ensure you’re cutting slices across the grain (¼-inch thick).
    • Don’t skip the step of tossing the beef with cornstarch as it tenderizes the meat and adds a crust for the sauce to stick to.

    Tips for a Great Stir Fry

    • For easier slicing, place the beef in the freezer for 15 minutes before cutting.
    • Prepare all ingredients ahead of time, as a stir fry comes together quickly.
    • Don’t overcrowd the pan, or the beef won’t crisp.
    • The meat, vegetables, and sauce can be prepared and stored separately for up to 48 hours before cooking.

    Store leftovers in an airtight container in the fridge for 3-4 days.

    This easy beef stir fry recipe is a Chinese restaurant-quality dish, made right at home!

    Prep Time 20 minutes

    Cook Time 30 minutes

    • Whisk the sauce ingredients except corn starch in a bowl. Set aside.

    • Trim any silverskin, connective tissue, or large bits of fat from the beef. Cut ¼-inch slices across the grain.

    • Season the beef with salt & pepper and toss with cornstarch. Set aside while you prepare the vegetables.

    • Cut the vegetables into bite-sized pieces.

    • Heat 1 tablespoon of oil over medium-high heat in a wok or large skillet. Add half of the beef and cook until browned, about 2-3 minutes (beef does not need to be cooked through). Transfer to a bowl and repeat with the remaining beef.

    • Add the vegetables to the skillet, adding more oil if needed, and cook until tender-crisp, about 4-5 minutes. Transfer to the bowl with the beef.

    • To make the sauce, reduce the heat to medium. Stir the sauce, pour it into the skillet, and bring to a simmer. In a small bowl, combine cornstarch with 3 tablespoons water (or broth).

    • Gradually add the cornstarch slurry to the simmering sauce while whisking to reach the desired consistency, you may not use all of the cornstarch mixture. Let simmer for 2 minutes. 

    • Add the vegetables and beef with any juices to the pan and cook until heated through. Garnish with green onions and sesame seeds if desired.

These Instant pot beef short ribs smothered in mustard Carolina sauce is our latest and greatest! And our mustard sauce is the best with a couple of surprising ingredients you won’t believe!

    You all have loved our world’s best Carolina pulled pork, so you’re going to go crazy for these short ribs! Pile them on top of some steakhouse smashed potatoes!

    So make a side of Southern macaroni and cheese or this Southern English pea salad, and get all your favorite people around the table the for this one!

    Ingredients for Mustard BBQ Beef Short Ribs

    Before we jump into the recipe for these Instant Pot short ribs, you need to make the Carolina Barbecue Sauce. It is the most fabulous combination of ingredients you’re already going to have on hand. Here is what you need:

    • Yellow Mustard
    • Honey
    • Apple Cider Vinegar
    • Ketchup
    • Brown Sugar
    • Worcestershire Sauce
    • Texas Pete’s or Franks Hot Sauce
    • Butter
    • Nutmeg
    • Liquid Smoke

    Those surprise ingredients…melted butter and nutmeg! I could almost drink this stuff it’s so good! Once the mustard sauce is made, you just need a few more ingredients…

    • Beef Short Ribs
    • Pineapple Juice: braising liquid
    • BBQ Rub: Kosher Salt, Brown Sugar, Black Pepper, Garlic Powder, Onion Powder, Chili Powder, Smoked Paprika, Thyme, Ground Cumin and Nutmeg

    We love our BBQ rub because it’s the best ever, but feel free to use whatever your favorite BBQ rub is! Once the sauce and rub are ready, then we can start the ribs!

    How to Make Mustard Carolina BBQ Short Ribs

    Our oven braised beef short ribs has been a popular recipe on the site for years, so we are speeding things up with this recipe and cooking them in the Instant Pot. Here are the basic steps…

    1. Prep the ribs
      • Sprinkle the ribs on all sides with the BBQ rub.
      • Turn the Instant Pot to “saute” mode and put a little oil into the pot. Sear the ribs on each side and then remove them to a plate.
      • Pro tip: Don’t crowd the ribs when you are browning them. You are going to have to do them in a few batches, so be patient!
    2. Cook the ribs
      • Pour the pineapple juice in the Instant Pot and add the trivet to keep the ribs up out of the juice. Place the ribs on the trivet and pour some of the Carolina sauce all over them
      • Add the lid, set the valve to seal, and turn the Instant Pot to high pressure for 30 minutes
      • Allow for a 15 minute natural release
    3. Crisp the ribs
      • Once the short ribs are done, remove them from the Instant Pot and place them on a cookie sheet and stick them in the broiler for a couple of minutes so they get all crispy delicious.
      • Then brush some more Carolina mustard BBQ sauce all over those babies and serve them immediately. They will be fork-tender delicious!

    Can Carolina Short Ribs Be Made Ahead?

    Yes! I actually think Carolina beef short ribs taste better the next day, and they reheat super well. If you have the patience of Job and can resist eating them right away, store them in an airtight container in their juices. Scrape off solidified fat, and reheat them the next day on the stove top at a low simmer.

    Are Carolina Short Ribs Different Than BBQ Short Ribs?

    If you’ve had our sticky BBQ beef short ribs, you will find that the only difference between those and these Carolina style short ribs is the sauce used. The BBQ short ribs use a ketchup and brown sugar based sauce while the Carolina style is uses the mustard based sauce.

    How Long Will Short Ribs Keep?

    Uncooked short ribs will keep in the freezer for 6 to 12 months if they are stored properly. Once they are cooked, they will keep in the fridge for 4-5 days. They can also be stored in the freezer once they are cooked for up to 3 months.

    Reheat beef short ribs in the oven with a little beef broth in a baking dish or dutch oven and covered with foil. Preheat the oven to 350 degrees and warm them up until heated through.

    Are Carolina Short Ribs Baked?

    Carolina short ribs can be cooked in an oven using a technique called braising. Follow the instructions in our Korean oven braised short ribs recipe but use the Carolina mustard BBQ sauce in place of all the Korean ingredients.

    Can Carolina Short Ribs Be Cooked In A Slow Cooker?

    Yes! Follow all the same instructions and then cook the boneless short ribs in a slow cooker on low for 4-5 hours and no more than 8. I still like to crisp them in the broiler right before eating them to get those crispy delicious bits!

    Can BBQ Sauce Be Frozen?

    Left over BBQ sauce can be frozen for up to 3 months.

    How Long Will BBQ Sauce Keep?

    Homemade BBQ sauces don’t have the shelf life that store bought sauces have. This Carolina mustard sauce will last about a week in the refrigerator. And yes, it should be refrigerated!

    How Do You Get BBQ Sauce Out of Clothes?

    I have found that club soda does the best job at getting mustard based stains out of clothes. If that doesn’t work, then I always go for Oxy Clean…it is a miracle worker in my book!

    A tangy mustard based bbq sauce from South Carolina smeared all over tender, fall apart beef short ribs and you only need 30 minutes and an instant pot!

    Prevent your screen from going dark

    • Prepare the bbq rub and set aside.

    • Prepare the mustard bbq sauce and set aside.

    • Sprinkle the rub (see note) on all sides of the ribs.

      [3 Tablespoons BBQ Rub]

    • Heat the instant pot to the saute mode on more. Drizzle in a little oil and brown the ribs on each side. Remove to a plate.

      4 Pounds Short Ribs

    • Pour in the juice and add a trivet to keep the meat off of the bottom of the pan.

      1/2 Cup Pineapple Juice

    • Set in all of the ribs and pour over 1 cup of the Carolina sauce. Add the lid and set the valve to seal. Turn the instant pot to high pressure for 30 minutes and allow a 15 minute natural release.

      [Carolina Mustard BBQ Sauce]

    • Remove the ribs to a pan and place under the broiler for 2 minutes to re-crisp the meat.

    • Take the pan from the oven and brush with more sauce. Serve immediately.

    You can use any bbq rub that you like, we just prefer our rub recipe because it’s the best. 😉
    Short ribs will keep for 3-4 days in the refrigerator.

    Sexyy Red has a new mixtape out today. The 14-track In Sexyy We Trust includes a new song with the St. Louis rapper’s “Rich Baby Daddy” collaborator Drake. Listen to the song, “U My Everything,” below.

    Tay Keith and Drumatized served as the executive producers of In Sexyy We Trust, and Keith, in particular, produced “U My Everything.” Midway through Drake’s verse, however, a familiar beat pops up: “BBL Drizzy,” the diss instrumental that St. Louis producer Metro Boomin made available for free earlier this month. At that point in the track, Drake acknowledges the beat, rapping, “BBL Drizzy, they want a new body, they ask me for it.”

    Metro Boomin dropped “BBL Drizzy” after Drake dissed him on “Family Matters.” The producer encouraged artists to make their own songs using the instrumental.

    With their full-lengths We Don’t Trust You and We Still Don’t Trust You, Metro Boomin and his collaborator Future kickstarted the beef that has engrossed the hip-hop world this spring. Both albums are believed to be filled with veiled shots at Drake, and Kendrick Lamar used his guest verse on the first record’s “Like That” to take aim at the Canadian rapper. An array of diss tracks ensued, including Lamar’s “Euphoria,” which features the line, “When I see you stand by Sexyy Red, I believe you see two bad bitches.”

    Tensions between Drake and Kendrick Lamar have, for the most part, cooled, but you can catch up on the whole situation with Alphonse Pierre’s “Drake and Kendrick’s Beef Is the Most Miserable Spectacle in Rap History.”

    Easy 3 Ingredient Chorizo Potatoes – Oh Sweet Basil

    We went to Mexico a few year ago and these easy 3 ingredient chorizo potatoes had to be recreated for a savory breakfast or side!

    We had the most amazing meals while staying in Mexico. Maybe the location helped a bit, maybe it was the sun, the pool at our side and the absolute peace of having nothing on our schedules to distract us from just loving and being together, but either way these Easy 3 Ingredient Chorizo Potatoes tasted like one of the most simply delicious things ever. We just had to recreate them!

    Let me tell you a little bit about what I’m talking about. Cade and I did a speaking tour a few years ago. It was amazing. Have you heard of Time Out for Women before? It really is the most amazing weekend to go and fill up your tank to be a better person.

    However, when you’re one of the speakers that comes with an extra load to carry as it means finding sitters to stay with your kids while you fly out of town. Praying and writing to come up with the best talk to give to the women who have sacrificed time, money and efforts to be there. It means staying up late and getting up early, worrying and working through nerves, etc.

    It was the best experience of our lives, but by the end of the tour we knew we needed to get away as a family. And get away we did!!

    We are going to be writing an entire post on why we chose the location we chose, where we stayed (Casa Mariposa is already being booked by our family for next year it was seriously that amazing!!!!) and what we did, but for now let me say this, it was everything you’ve always dreamed a vacation would be.

    At Casa Mariposa there is a small staff to help you with what you need, the concierge is Carlos and Lupita does all the cooking. I’ll be honest with you, I thought for sure that we wouldn’t use them. Cade and I are so easy going and we love to cook and go out to eat so why would we need anyone?

    We were wrong.

    Lupita cooked breakfast and lunch for us every day, and it was not only delicious but made for an unforgettable experience. One morning she made us these easy 3 ingredient chorizo potatoes with simple huevos rancheros and I’m pretty sure Cade fell in love.

    Easy 3 Ingredient Chorizo Potatoes

    So what are Lupita’s papas con chorizo (or chorizo con papas)? Well, to be fair, we forgot to ask her how she made them, but I carefully ate them, savoring every bite and while our chorizo probably isn’t as good as theirs I’m pretty sure hers was the same as this recipe, or only slightly different.

    All you need is 3 Ingredients:

    1. Yukon Gold Potatoes
    2. Minced, Fresh Garlic
    3. Chorizo

    How to Make Chorizo Potatoes

    These potatoes are first pan fried creating a roasted, caramelized flavor on the potatoes, and then spicy chorizo is thrown in along with a little garlic to bring out everything you’d want in a simple Mexican breakfast. Here is a little more detail:

    1. Place a large skillet over medium heat, add a drizzle of olive oil and potatoes. Place a lid on the pan. Stir occasionally until the potatoes are roasted and tender.
    2. Remove the lid, add more oil if needed, and continue to cook the potatoes. Increase to medium-high heat if needed to get the potatoes browned and crispy.
    3. In a separate pan, add the chorizo and garlic and stir occasionally. Use a splatter screen over the pan if you have one.
    4. Drain any excess grease from the chorizo, then add the chorizo and garlic and stir together.
    5. Season with salt and pepper to taste.

    What is the Difference Between Mexican and Spanish Chorizo?

    • Mexican Chorizo- Mexican chorizo is a spicy ground meat sausage that is most commonly sold fresh and uncooked. As you cook the chorizo you’ll notice the deep red color like a brick, the meat is ground like ground hamburger and it is very fragrant and flavorful.
    • Spanish Chorizo– Spanish chorizo is a dried and cured sausage in casing. It can be usually found with other ready-to-eat cured meat products like salami etc by the deli. These chorizos can be smoked or unsmoked, and may be sweet or spicy depending on what you buy.

    What Meat is Chorizo?

    Mexican Chorizo is usually made of pork but it can be made in a vegan and beef form as well.

    Mexican chorizo is a highly seasoned fatty sausage. Most versions are bright or dark red in color due to the seasonings. There is also green chorizo, which gets its color from chiles and cilantro.

    Can Chorizo Be Eaten Raw?

    No. Oh, please don’t eat Mexican Chorizo raw as it is literally raw meat and that will make you sick.

    If you buy a dry cured chorizo sausage that meat has been smoked or cured so you can slice and eat it. A good rule of thumb is if it’s hard like a smoked salami, slice and eat. If it is loose like ground beef, cook that sucker.

    When is Mexican Chorizo Done?

    Oh, isn’t that so hard when you first start cooking Chorizo?! Mexican Chorizo is a little hard to be able to determine if the meat has been cooked through and is done, ready to be eaten and enjoyed. This is because of all of the fat from the sausage and spices that heavily color the meat.

    It takes about 4-5 minutes to cook raw, Mexican Chorizo. Watch for the meat to appear more dry and hold together in bits. You may want to drain some of the fats before adding chorizo to other ingredients.

    Is Chorizo Healthy?

    I so badly want to tell you that pork chorizo is healthy and good for you, but the truth is, chorizo is a fatty sausage, therefore making it high in fat. Try to limit the amount of chorizo you eat and add in lots of healthy options to your plate to help you maintain a balanced diet.

    Can Chorizo Cause Heartburn?

    Because spicy foods and fatty foods can irritate the lining of the esophagus, chorizo can cause heartburn. It all depends though, you could get a Mexican Chorizo that isn’t as spicy or fatty and may not suffer. However, another brand or chorizo may cause you irritation.

    How Long Will Chorizo Last in the Fridge?

    You can check the expiration date on most chorizo packages, but in case you don’t see one:

    • Chorizo generally lasts for up to 2 weeks in the refrigerator.
    • Remember to keep it away from other meats and veggies as it is a raw meat product.

    Can Chorizo be Frozen?

    We freeze chorizo all the time as we generally only use a portion of the meat. To do this, place unused chorizo in a ziploc bag and press out all of the air. Freeze for up to 6 weeks before using it.

    Where to Buy Chorizo

    Mexican chorizo is most commonly found in the butcher or meat department. In our local grocery stores they are in two places.

    1. The first being the regular meat department usually at one end or the other.
    2. The second, a specialty Mexican cooler that has salsas, Mexican cheeses, tortillas and chorizo.

    If you can’t find it you can always track down a local Mexican market in town. Those are sure to have great products.

    What to Eat with Chorizo and Potatoes

    Drake has yet to answer Kendrick Lamar’s latest diss, the late-night “Meet the Grahams,” but that’s not stopped Lamar from dropping another new song. The latest, “Not Like Us,” is produced by Mustard. Listen to the track below.

    Along with his now-expected Drake disses on “Not Like Us,” Lamar takes aim at some of the rapper’s October’s Very Own (OVO) affiliates. Among the targets are security guard Chubbs (“They tell me Chubbs the only one that get your hand-me-downs”), PartyNextDoor (“And Party at the party playin’ wit’ his nose now”), and sometime rapper Baka Not Nice (“And Baka got a weird case/Why is he around?/Certified Lover Boys, certified pedophiles”).

    “Meet the Grahams” arrived within an hour of Drake’s latest Lamar diss, “Family Matters.” At the time, the Canadian musician was responding to Lamar’s successive “Euphoria” and “6:16 in LA.” The whole beef got jumpstarted with Lamar’s “Like That” in March.

    Drake and Kendrick Lamar Is the Last Great Rap Beef. Thank God.

    Editor’s note: This piece was published about an hour before Kendrick dropped another Drake diss—“Not Like Us”—his fourth in four days and third in 36 hours. We can assume it won’t be his last—in fact, he raps on the latest track: “How many stocks do I really have in stock? / One, two, three, four, five, plus five,” so that means we may be getting 10 … total? Ten more? You have to admire this level of dedication to pettiness, even if it’s running our copy editors and production team ragged.


    Rap isn’t the NBA. There’s no Anthony Edwards or Jamal Murray capable of sending our washed stars to Cancun. Bronny’s biggest opps are bored NBA writers and the ESPN ticker tape. Meanwhile, Adonis has witnessed two generational MCs scold his father for his child-raising abilities while taking buzz saws to his family tree before the age of 7. Commercial hip-hop—like most of the modern music industry—has become too fat, old, neutered, and niche to launch a new household name and thus more desperate and existentially bloody. This is what happens when the old guard becomes the only guard.

    In 2024, with Kanye solely devoted to harvesting Ty Dolla $ign’s life force, only two rappers are capable of hoarding this much cultural real estate. Over the past month, Beyoncé dropped a country record, Quavo and Chris Brown are beefing over who terrorizes women more, and Taylor Swift tried to drive her DeLorean to the 1830s (apparently without all the slavery). Yet all of these moments pale in comparison to what unfolded Friday night when two members of rap’s “Big Three” finally unleashed their Trinity test.

    After weeks of threatening theoretical nukes, Drake finally donned the Oppenheimer hat with “Family Matters.” On the seering, seven-minute diss track Aubrey says that Kendrick assaulted his wife, while Kendrick’s close friend and label cofounder Dave Free sired a child with her. Seeing the mushroom cloud from Lucali’s, Kenny S. Truman said “bet” and immediately dropped a bomb on Drake’s head with the deranged and highly cursed “Meet the Grahams.” The top-level notes are brutal: In Kendrick’s telling, Drake is hiding another child and is the head of a Toronto child sex-trafficking ring. Meanwhile, Drake says that Kendrick hired a crisis-management team to hide the fact he physically abused his partner. If you’re asking why two of the biggest pop stars of their generation are debasing themselves in a bossip beef—all of the details of which, as of press time, have not been verified—while throwing women and kids on the front line, in the words of Kendrick: “I’ma get back to that, for the record.”

    In terms of size, scale, and capital, we’re witnessing the last rap beef of this magnitude. And while too much critical ink is wasted on the monoculture—or lack thereof—it bears mentioning there will never be another rapper that occupies the same cultural space as Drake or Kendrick. There probably won’t even be another J. Cole. (Some subscribe to the belief that Jermaine belongs in the same conversation as Drake and Kendrick … I don’t.) As hip-hop becomes more diffuse and hyper-regional, Drake and Kendrick represent the last artists popular enough to suck up this much oxygen, even as the quality of their music has dipped to the point of feeling irrelevant next to their all-consuming celebrity.

    The shenanigans started in March, when Future and Metro Boomin dropped their first of two albums this year, We Don’t Trust You. The main headline from it was Kendrick finally emerging from the therapy haze of Mr. Morale & the Big Steppers with a feature on “Like That,” in which Kendrick proceeds to do to Drake what the Canadian has done to his peers and well-endowed exes: turn a barn-burning diss into an inescapable smash hit. “Like That” spent five weeks atop the Hot 100, becoming Kendrick’s longest-running no. 1 in the process. It wasn’t long before an emboldened Metro Hoffa unionized the aging vets of the blog era against Big Drake and OVO industries. A$AP Rocky, the Weekend, Kanye, and Rick Ross happily jumped in.

    J. Cole was the first to take the Kendrick bait on the underbaked “7 Minute Drill.” Over two rushed and wonky beats, hip-hop’s resident laundry man got high off the fumes of his overhyped feature run and claimed he wasn’t that jealous of Kendrick before mentioning that 2015’s To Pimp a Butterfly is trash. But just days later, Jermaine decided to Summer Jam–screen himself at his annual hometown festival by admitting to a crowd of thousands that he was tossing and turning at night over the entire debacle. After (prolly) letting Nas and the general public down once again, Cole smartly ceded his time and the floor to the Big Two.

    Since then, Drake and Kendrick have traded six records back and forth of varying degrees of quality and lucidity. Drake called Kendrick a short, hobbit-sized cuck, so Lamar lobbed back that Toronto’s finest has his braids pulled too tight and isn’t allowed to say the N-word anymore. One man desecrated Tupac’s grave with AI, while the other pissed all over a timestamp record while reportedly getting fed information from Roy Woods and OB O’Brien. “Push-Ups” and “Taylor Made” bled into “Euphoria” and “6:16 in L.A.” But after Friday’s squabble, all of them have been rendered inconsequential. To continue with the nuclear analogy: With “Meet the Grahams” and “Family Matters,” the Doomsday Machine has been activated, so maybe it’s best to hide underground. (J. Cole certainly agrees.)

    If this all sounds exhausting, it should. Drake is 37 and Kendrick is about to be. Both these men have kids and families they could be tending to, but instead we’re treated to a beef that started over essentially nothing—if we’re to believe Kendrick, over Drake and Cole linking up in “First Person Shooter” and invoking the idea of a rap “Big Three.” But not a single song released since “Like That” lives up to the expectations each of these men stoked through their years-long Cold War. Nothing measures up to the base-level quality of “Control,” “Back to Back,” or “Stay Schemin.” Instead, we’re treated to two aging rappers squabbling over … who’s cornier? Or maybe it’s about who is or isn’t Kobe? Or even who should be able to buy Tupac’s ring at Sotheby’s for a million dollars?

    Even the beef’s most damaging revelations are disingenuous at best—and outright craven at the worst. Drake’s faux-outrage over the account of Kendrick’s treatment of his partner doesn’t mean much when Drake was cosigning Chris Brown’s gang ties a few bars earlier and was caping for Tory Lanez to be freed a few months ago. Similarly, if Kendrick is so concerned with sexual assault and protecting young women from the OVO compound, why did he spend his last album crying about cancel culture and propping up Kodak Black?

    Drake and Kendrick don’t have the politics to be doing all this. Is Drake wrong that Kendrick, “always rappin’ like you ’bout to get the slaves freed?” Not really. But also Drake stands for nothing and has never committed an interesting political thought to record in his life. And if Kendrick knows incriminating information about Drake, why has he withheld it until it was this advantageous? As with most hip-hop beefs, we’ve ended up where we were always destined to—men using women, wives, baby mothers, parents, and children in increasingly gross and depraved ways to satisfy their rabid egos.

    The microaggressions, subliminals, and shots that got us to this moment date back to a time when GQ still had enough juice to terrorize rappers into dressing like Williamsburg hipsters. What person under 30 even recalls that Drake invited peers like Kendrick, Rocky, Cole, and Meek to open for him on tour in 2012 and then spent the next decade treating the aforementioned like his sons for taking him up on the offer? How many people still remember all the blog mainstays Kendrick shot at on 2013’s “Control”? If Drake is still upset because Compton’s resident good kid threatened to “tuck him into his pajamas clothes” during a BET cypher, there’s no helping my man. The only entities profiting from this scuffle are Universal Music Group, the Joe Budden extended podcast universe, a bunch of teenage streamers I refuse to Google, and the collection of rap publications that haven’t been nuked by private equity firms.

    The most straightforward and generous read of this entire beef is that Drake and Kendrick are rappers lost to time. They’re formalists in a genre that’s moved past the tradition. They came up in a time when cosigns were necessary (Lil Wayne, Dr. Dre), radio runs were crucial, and albums still mattered. Drake belongs to a long lineage of rappers turned pop stars (e.g., LL Cool J, Nelly, 50 Cent), while Kendrick is marketed as a conscious alternative (e.g., Nas, pre-MAGA Kanye, Tupac). Even the duo would love you to believe this is Michael Jackson vs. Prince—numbers vs. “real” art.

    Perhaps that’s why the beef feels so toothless. Drake and Kendrick aren’t fighting the same war; they’re two grown men arguing past one another because there’s no one left to challenge. One views dominance—via streaming numbers and celebrity—as inextricable from the art, while the other envisions himself as a purist responsible for upholding a grand tradition. And yet, each rapper has ended up in a similar place.

    There’s very little compelling about two men who signed to major labels in their 20s debating who got extorted when the most obvious answer is both. Drake mocking Kendrick for his cringeworthy Taylor Swift and Maroon 5 features doesn’t mean much when he was spitting water-carrying lyrics like “Taylor Swift the only nigga that I ever rated” a year ago and starring in Apple commercials with the pop star. Similarly, can Kendrick really talk about Drake running to Yachty (the recovering “King of the Teens”) for swag, when he found his own nepo-version of the Atlanta rapper in Baby Keem?

    At the time of publication, Kendrick is in the lead in this battle, even if that distinction feels hollow. Drake has dropped 13 projects in 13 years, compared to Kendrick’s six. Of course when Cornrow Kenneth descends from his Pulitzer perch to wrestle in the mud with the other aging degenerates it’s going to mean more. But Kendrick is also beating his rival in a way that would have seemed unthinkable a few years ago.

    When Drake triumphed over Meek Mill in 2015 it was because he understood the internet better than any of his peers. Meme culture was new and novel. The impact of “Hotline Bling” and the dancing Drake GIF apocalypse was still months away. Meek was having an argument about authenticity when his own label boss triumphed over 50 Cent years priors despite being outed as a correctional officer. A ghostwriter reveal and an alleged incident in which a T.I. associate pissed on Drake’s leg should’ve been enough for the Philadelphia rapper to eke out a win, but Meek wasn’t ready to accept that the internet (and by extension the nerds) won.

    Almost eight years later, Kendrick has rendered Drake’s biggest advantage obsolete. The meme economy got a reality TV show host elected to the White House and almost toppled American democracy in the process. Our relationship in 2024 to hyper-online celebrities is no longer cute and interesting. It’s not just that Kendrick has been funnier—“is it the braids?” is an all-timer—it’s that he’s less accessible than Drake. Unless you have the comedic timing of Rick Ross, taunting another man over IG stories is never going to be as cool as someone who refuses to use the internet. The quality of the most recent diss tracks became irrelevant the minute Kendrick outmaneuvered Drake by releasing “Meet the Grahams” about an hour after “Family Matters” dropped. (And especially after Drake was left deflecting Kendrick’s “hiding another child” accusations on Instagram instead of taking a victory lap for his own track.)

    Barring a RICO case or something even more horrific—and potentially verifiable—coming to light, nothing released in the past two months will help or hinder either man’s legacy. Unless Drake and Kendrick are half as sick, perverted, abusive, and morally repugnant as these records claim, the most likely outcome is that UMG will cut both a massive check for the streaming boom this animosity fueled. But this is a post-truth beef. Kendrick stans will believe that Drake has a kindergarten class of unclaimed sons and daughters because it’s funny and convenient. And unless a more reputable source than The OVO Post finds that Kendrick does have a history of physically assaulting women, the chances of it impacting his sales and critical stature are practically nonexistent.

    Cover-art Ozempic receipts aside, most of the scars from this tantrum will be reserved for the family and friends who have now been immortalized in rushed and harried songs that have already begun to lose their luster. And the only rapper who has sustained real damage thus far did it to himself, and his stans are still convinced rap’s Charlie Brown will kick the football next time. But Drake and Kendrick aren’t held to the same standard as other artists. They aren’t just the most popular rappers of their generation—one could argue they’re among the most consequential musicians of the 21st century. A Canadian child actor and Tupac’s shortest stan went from the Zippyshare trenches to the last remaining superstars of a genre that’s going the way of rock. The perch seems lonely—two rappers bold enough to use their government names unable to connect with the only other person in the world who could relate. Call it poetic justice.

    Kendrick Lamar is already back with another Drake diss. “Meet the Grahams,” the Compton artist’s third track of the week—following “Euphoria” and “6:16 in LA”—arrives within an hour of Drake’s barbed response, “Family Matters.” Find the latest new song below.

    Lamar opens “Meet the Grahams” by addressing Drake’s son, Adonis Graham:

    Dear Adonis, I’m sorry that that man is your father, let me be honest
    It takes a man to be a man, your dad is not responsive
    I look at him and wish your grandpa woulda wore a condom
    I’m sorry that you gotta grow up and then stand behind him

    Next, Lamar address Drake’s mother, Sandra Graham: “Dear Sandra, your son got some habits/I hope you don’t undermine them.” He saves some harsh words for Drake’s father, Dennis Graham—“You raised a horrible fuckin’ person/The nerve of you, Dennis”—before turning back to Sandra: “Your son’s a sick man with sick thoughts/I think n—-s like him should die/Him and Weinstein should get fucked up in a cell for the rest of they life.” He continues, “And we’ve gotta raise our daughters knowing there’s predators like him lurkin’/Fuck a rap battle, he should die, so all of these women can live with a purpose.”

    Later, Lamar raps to a figure he calls “baby girl”: “I’d like to say it’s not your fault that he’s hiding another child/Give him grace/That’s the reason I made Mr. Morale.” The lyrics are, at the very least, in reference to Pusha T’s famous Drake diss “The Story of Adidon.”

    Addressing Drake directly, Lamar explains that he’s gone so viciously after Drake because he brought the Californian’s family into the rap beef. “Why you had to stoop so low to discredit some decent people?” he asks, “Guess integrity is lost when the metaphors doesn’t reach you.” He closes the track, “Fuck a rap battle/This a lifelong battle with yourself.”

    Drake Fires Back at Kendrick Lamar on New Song “Family Matters”

    The ball is back in Drake’s court. After Kendrick Lamar’s back-to-back diss tracks, “Euphoria” and “6:16 in LA,” the For All the Dogs rapper has taken verbal shots at his nemesis with the new song “Family Matters.” Listen to it below.

    On “Family Matters,” Drake responds to some of Lamar’s “Euphoria” lyrics. For instance, Lamar questioned Drake’s quality as a father, and Drake answers, “You mentioned my seed, now deal with his dad/I gotta go bad, I gotta go bad.” He also taunts Lamar with name-drops of some of his closest collaborators, Dave Free, Anthony “Top Dawg” Tiffith, and Baby Keem (“K.Dot shit is only hitting hard when Baby Keem put his pen to it”).

    Beyond Lamar, Drake calls out some of the other hip-hop figures who’ve taken him to task in recent weeks. He has bars for Metro Boomin (“Leland Wayne, he a fuckin’ lame, so I know he had to be an influence”), Future (“Pluto shit make me sick to my stomach/We ain’t never really been through it”), and Rick Ross (“Ross callin’ me the white boy, and the shit kinda got a ring to it/’Cause all these rappers wavin’ white flags while the whole fuckin’ club sing to it”).

    Drake also addresses the legal aftermath of his “Taylor Made Freestyle.” The track, which has been removed from the Canadian musician’s social media pages, was the subject of a cease-and-desist letter from 2Pac’s estate, due to the song’s use of artificial intelligence to emulate the late California rapper’s vocals. On his new track, Drake raps, “A cease-and-desist is for hoes/Can’t listen to lies that come out of your mouth/You called the 2Pac Estate/And begged ’em to sue me and get that shit down.”

    One of Drake’s most personal attacks against Lamar comes toward the song’s end when he seems to allege that the Compton artist has domestically abused a partner. “They hired a crisis management team/To clean up the fact that you beat on your queen,” he raps, “The picture you painted ain’t what it seems.” (Beyond Drake’s lines, Kendrick Lamar has not faced public accusations of domestic violence.)

    “Family Matters” is Drake’s third anti-Lamar song of the spring, following “Push Ups” and “Taylor Made Freestyle.” He’s been newly upset with Lamar (and Future and Metro Boomin) since the We Don’t Trust You song “Like That.”

We like ours with cilantro lime rice topped with grilled Mexicali seasoned steak, caramelized onions and peppers, guacamole, pico de Gallo, charred corn, lettuce and cheese, drizzled with a homemade cilantro ranch.

    Who doesn’t love a burrito bowl?

    As I mentioned in my last post, at the end of March Pat and I went with good friends of ours to Panama City, Florida for a week of fun and sun. And 3 of the 7 days we ate at Diegos, a Mexican inspired restaurant. This place is responsible for me falling in love with cilantro ranch and also inspired me to make a version of their steak burrito bowl.

    At the restaurant, you could build your own bowl by going through a provided list and picking your choice of protein (chicken, steak, shrimp etc.) and add-ins (pico, corn salsa, lettuce, cheese etc.). I had steak (double steak actually) every single time.

    Immediately when I got home I started making my own version just so I could share it here and it’s just in time for Cinco de Mayo. Although I already know these bowls are going too be a staple all summer long.

    Toppings You May Want For Your Burrito Bowls:

    Give yourself plenty of time to prepare any add-ins (rice, salsa, guacamole, pico etc.) prior to grilling the steaks. Sometimes I make a few of these the day before. Below is what we like adding to our burrito bowls.

    To Make Grilled The Mexicali Steak You Will Need:

    • steak – Use sirloin, skirt or flank steak.
    • olive oil – Or substitute with avocado oil.
    • lime juice – Freshly squeezed is best.
    • Mexicali seasoning – A robust homemade spice blend of cilantro, chili powder, cumin, chipotle powder, cilantro, oregano, and both garlic and onion powder

    In a large bowl, measure and add 2 tablespoons Mexicali seasoning, 1 tablespoon avocado oil and the juice of 1 lime.

    Add in your steak(s) and toss well to coat evenly.

    Preheat your grill to 500°F or 260°C.

    Once your grill has preheated, place steak onto grill and close the lid. Grill for 5 to 6 minutes (this will depend on thickness), flip and continue to grill for 3 to 4 more minutes or until the internal temperature reads 145°F or 60-62°F.

    Allow the steak to rest 6 to 8 minutes (tented with foil to keep warm) before slicing and dicing.

    Typically I start by adding rice and lettuce as the base, then add steak in the middle and add any toppings or add-ins around the steak. Lastly drizzle with cilantro ranch and sprinkle with chopped cilantro. I like to serve these burrito bowls with tortilla chips.

    Kendrick Lamar has responded to Drake’s latest diss tracks with the new song “Euphoria.” Listen to the new song below.

    Lamar re-escalated a long-simmering beef with Drake with some pointed lyrics on “Like That.” (The track also had some words for J. Cole, who responded with his own “7 Minute Drill,” but the North Carolina musician has since apologized for his diss song and pulled it from digital streaming platforms.) Drake went back at Lamar on “Push Ups” and “Taylor Made Freestyle.” The latter track used artificial intelligence to emulate vocals from 2Pac, which prompted a threatening response from the late rapper’s estate. As a result, Drake removed the song from his social media pages.

    Kendrick Lamar’s “Euphoria” begins softly, and the rapper doesn’t address Drake directly until the final lines of his first verse: “Know you a master manipulator and habitual liar, too/But don’t tell no lie ’bout me, and I won’t tell truths ’bout you.”

    The beat picks up and Lamar is sharper in his words against the Toronto artist. For instance, he plays on Drake’s name and the Draco Pistol when he raps, “The very first time I shot me a Drac’, the homie had told me to aim it this way/I didn’t point down enough/Today, I show you I learned from those mistakes.” He also makes direct reference to “Taylor Made Freestyle” when he says, “Somebody had told me that you got a ring/On God, I’m ready to double the wage/I’d rather do that than let a Canadian n—a make ’Pac turn in his grave.”

    Later, after mentioning J. Cole and Drake by name, Lamar brings up another major Drake nemesis, Pusha T, and questions Drake’s aptitude as a father—something Pusha T famously did on “The Story of Adidon.”

    Longtime Lamar collaborator Jay Rock praised “Euphoria” on X, writing, “Now this ain’t no AI… see I know Kdot!! Euphoria.”

    Terrence “Punch” Henderson, the president of Lamar’s former label home, Top Dawg Entertainment, posted simply, “Well.”

    Anthony “Top Dawg” Tiffith, the founder and CEO of Top Dawg Entertainment, added on X, “We saw everybody that showed their hand. This the family. Dot still the King. TDE.”

    Without acknowledging “Euphoria” explicitly, Kendrick Lamar’s “Like That” collaborator Metro Boomin posted on X, “Thank God for the day!” and, “😂😂😂😂😂😂😂😂.”

    Drake Takes Down Kendrick Lamar Diss After Legal Threat From 2Pac Estate

    After posting “Taylor Made Freestyle” on social media last week, Drake has seemingly taken down the Kendrick Lamar diss track, Billboard notes. The song, which included AI renderings of 2Pac and Snoop Dogg’s voices, was subject to a legal letter from 2Pac’s estate, which cited the “misappropriation and misuse of Tupac Shakur personality rights.” The estate, the letter noted, was “deeply dismayed and disappointed” by the unauthorized usage, adding that it was “a blatant abuse of the legacy of one of the greatest hip-hop artists of all time.” A Drake representative declined to comment, and Drake gave no reason for the song’s removal.

    The letter also noted Lamar’s longstanding affinity with the late rapper, calling Lamar “a good friend to the Estate who has given nothing but respect to Tupac and his legacy publicly and privately.” In “Taylor Made Freestyle,” Drake had portrayed 2Pac egging on Lamar to respond to his diss. “Kendrick, we need ya, the West Coast savior/Engraving your name in some hip-hop history,” the voice raps. “Fuck this Canadian light-skin, Dot/We need a no-debated West Coast victory, man.”

    In his own verse in the track, Drake draws Taylor Swift into the back-and-forth. “But now we gotta wait a fucking week ’cause Taylor Swift is your new Top,” he raps, referring to Anthony “Top Dawg” Tiffith, the head of Lamar’s former label, Top Dawg Entertainment. “And if you ’bout to drop, she gotta approve.”

    Awhile ago, I pinned a sloppy Joe bowl recipe on Pinterest and it has lived rent free in my mind ever since.  So last week I made my own version by making sweet potato home fries and my go-to sloppy joe sauce. In our house, we love toppings so I sliced up some (Claussen aka the best pickles ever) and jalapeños, grabbed some chives from my herb garden and brought out a jar of homemade pickled red onions. You could also add chopped lettuce, more veggies (like roasted broccoli) and or add cheese.

    Either way, you’re going too love this filling bowl of comfort.

    For The Sweet Potatoes You Will Need:

    • sweet potatoesPeel or don’t peel, it’s up to you.
    • avocado oilOr use an oil with a high smoke point.
    • parmesan cheeseAdds texture and flavor to the sweet potatoes.
    • all-purpose season saltThis is like Lawry’s but homemade.
    • dried parsleyFor bright and herbaceous flavor.
    • freshly ground black pepperThis adds subtle bite and flavor.

    Place a large, rimmed baking sheet in you oven and preheat both to 400℉ (or 200℃).

    In a large bowl add 2-1/2 pounds diced sweet potato (diced about 1-inch in diameter), 3 tablespoons avocado oil, 1 tablespoon all-purpose season salt, 1 teaspoon dried parsley, 1/2 teaspoon freshly ground black pepper and 1/4 cup freshly grated parmesan cheese. I like to leave the skin on the sweet potato (just give it a really good scrub), but feel free to peel.

    Once the oven and pan have preheated, use oven mitts to remove the pan and quickly spray with avocado oil (ghee oil or extra light olive oil) spray. Quickly add and spread the sweet potato mixture in an even layer on the hot pan.

    Bake for 20-25 minutes, rotating halfway though, until the sweet potatoes are fork tender and caramelized in spots. Time will depend on the size of your sweet potatoes.

    To Make The Sloppy Joe Mixture You Will Need:

    • avocado oilOr use olive oil.
    • lean ground beefI like to use either 90/10 or 92/8.
    • ketchupHomemade or store-bought.
    • white vinegar Lends subtle tang to this recipe.
    • sugarAdds sweetness.
    • mustard (prepared) – Adds a tart and tangy flavor.
    • kosher saltEnhances the flavors in this recipe.
    • freshly ground black pepperThis adds subtle bite and flavor.
    • paprikaAdds color and subtle flavor.

    In a large pan or shallow pot, add 2 teaspoons oil and 1-1/2 pounds (lean) ground beef.

    Sloppy Joe Sweet Potato Bowls Recipe Variations:

    • Cheesy: If you like to add cheese to your sloppy joes, consider adding a little cheddar jack or pepper jack cheese.
    • Less Sugar: Use sugar free ketchup (I like Primal Kitchen or G. Hughes).
    • Lighter: Swap the lean ground beef for ground turkey or chicken.
    • Shortcut: Use frozen sweet potato fries! Seasoned sweet potato waffle fries made by Alexia Foods or Rooots Farm Fresh sweet potato fries, croutons or toasts are all SO good!
    • Spicy: Sauté diced jalapeños in with the meat mixture.
    • Additional yet Optional Add-ins: Roasted broccoli, chopped lettuce, diced avocado or hot sauce.

    • nonstick spray, like avocado oil, ghee oil or extra-light olive oil
    • pounds sweet potatoes, diced

    • 1/2 teaspoon freshly ground black pepper
    • 1/4 cup parmesan cheese, freshly grated

    • 1 tablespoon prepared mustard
    • 1/2 teaspoon white vinegar

    OPTIONAL TOPPINGS:

    • sliced dill pickles
    • pickled red onions
    • sliced raw jalapeños
    • snipped chives or sliced green onions

    MAKE THE SWEET POTATOES:

    • Place a large, rimmed baking sheet in you oven and preheat both to 400℉ (or 200℃).

    Drake Taunts Kendrick Lamar Again on Diss Song With AI 2Pac and Snoop Dogg Verses

    Yesterday (April 19), Drake officially released the new song “Push Ups,” his response to Kendrick Lamar’s pointed verse on the chart-topping “Like That.” He’s followed it up with another Lamar taunt, “Taylor Made Freestyle.” The track, shared on social media, opens with verses made to sound like 2Pac and Snoop Dogg. A third verse comes from Drake without obvious artificial intelligence vocal manipulation. Find the “Taylor Made Freestyle” on X.

    In the opening verse, the AI 2Pac goads Kendrick Lamar into responding to Drake. “Kendrick, we need ya, the West Coast savior/Engraving your name in some hip-hop history,” the voice raps. “Fuck this Canadian light-skin, Dot/We need a no-debated West Coast victory, man.”

    The AI Snoop Dogg continues by questioning Lamar’s street credentials while also encouraging him to beef with Drake: “I know you never been to jail, or wore jumpsuits and shower shoes/Never shot nobody, never stabbed nobody/Never did nothing violent to no one, it’s the homies that empower you/But, still, you gotta show this fucking owl who’s boss on the West/Now’s a time to really make a power move.”

    To close the song, Drake disses Lamar more and also praises Taylor Swift, Lamar’s “Bad Blood” collaborator who released the massive double album The Tortured Poets Department: The Anthology hours before Drake’s “Push Ups”: “But now we gotta wait a fucking week ’cause Taylor Swift is your new Top/And if you ’bout to drop, she gotta approve.” He adds later, “Yeah, shoutout to Taylor Swift/Biggest gangster in the music game right now/You know, I moved my album when she dropped.”


    Drake’s evocation of 2Pac calls to mind the closing track on Kendrick Lamar’s To Pimp a Butterfly, “Mortal Man.” On that song, Lamar used archival audio of 2Pac to have a conversation with the late California rapper. Beyond the album, Lamar has long expressed his admiration for 2Pac, writing to him in 2015, “The people that you touched on that small intersection changed lives forever.”

    And Drake’s use of AI Snoop Dogg vocals has already gotten a response from the real, living Snoop Dogg. The Long Beach artist, who also appeared on To Pimp a Butterfly, on “Institutionalized,” acknowledged “Taylor Made Freestyle” in a video he posted on social media. “They did what? When? How? Are you sure?” he asks. “Y’all have a good night.”


    Kendrick Lamar reignited a feud with Drake with a barbed verse on Metro Boomin and Future’s “Like That.” The track prompted a response from J. Cole, another target on the track, who shared his own “7 Minute Drill.” Cole quickly distanced himself from the beef, apologizing publicly for the track and pulling it from digital streaming platforms.
