Growing up, my mom would make homemade meatballs. However, she would make hers as slow cooker meatballs. Her reasoning was by cooking the meatballs in a slow cooker, you could eat all day long when you want to.

The prep she would do to make her slow cooker meatballs is a little labored, and when you’re busy like me, I need a shortcut, like using frozen meatballs.

Most people know frozen meatballs in crockpot as an appetizer recipe. Plus with frozen meatballs, it can really be a budget saver, besides a time saver.

Frozen meatballs, for me, are my go-to when I need a fast and easy recipe. Plus adding in the slow cooker, well that helps me when I need time as well. So in a way, frozen meatballs are a life-saving recipe for someone busy, like me.

When I asked around about a sub sandwich. The most common answer I got was a meatball sub recipe. There is nothing like a sub sandwich with meatballs!

Plus, a meatball sub recipe is simple all you need is

  • Meatballs
  • Sauce
  • Cheese
  • Sub rolls

Sounds easy right? Well, the meatball sub recipe is, but what ways can we make the sub sandwich better? Since I love using frozen meatballs, what if we use fresh ingredients on in this meatball sub recipe?

Ingredients like fresh mozzarella and fresh basil. A Caprese recipe but on a sub sandwich. The idea is not only creative but resulted in very tasty meatball subs. Plus it is just an easy sandwich recipe!

Ingredients

  • 1 bag Frozen Italian Style Meatballs
  • 1 Jar Tomato and Basil Sauce 32 ounces
  • 1 Fresh Mozzarella Ball
  • 1 bunch Fresh Basil Leaves
  • Dried Oregano For garnish
  • Balsamic Vinegar optional
  • 8 Sausage Rolls

Instructions

  1. In a slow cooker add the jar of sauce to it.

  2. Next, add the frozen meatballs to the slow cooker.

  3. Place the lid on the slow cooker and let the meatballs and sauce cook on high for about 2 hours.

  4. When the meatballs are done, mix them up in the sauce and place them into the sausage buns to start creating the sandwich

  5. Slice up the mozzarella ball into slices.

  6. Place the mozzarella slices on top of the meatballs in the subs.

  7. Place the fresh basil leaves on top the mozzarella

  8. Garnish with a little dried oregano

  9. Drizzle on a little balsamic if desired

  10. Then serve them up and ENJOY!
