There’s no reason for you to let leftover ingredients go to waste. That time period following the holidays often means a surplus of food like pineapple and ham. But considering just how well these two’s sourness and sweetness go together, you should definitely utilize them for another dish. That is why I compiled more delicious components to create the ever vibrant, flavorful Pineapple Fried Rice!

What does pineapple fried rice taste like?

You can expect a greater mix of flavors aside from our Holiday Ham and pineapple tidbits, particularly coming from minced garlic, chopped onion, green onions, soy sauce, and it does not end there. The beauty of fried rice is that it almost always operates on the principle of “the more the merrier!” But we also have a great balance so that the savor of certain ingredients are not too overpowering. This is perfectly contrasted by the zesty, refreshing flavor of pineapple.

A pleasant variety in texture also comes into play with our roasted cashew nuts and green peas. Don’t forget to make use of leftover rice as it is more dry, as well as less starchy. This makes it better for cooking again alongside other components.

  • Slicing the egg – Take out your egg, and then slice this into smaller pieces.

2. Sautéing some ingredients

  • Cooking the garlic and onion – We will get another pan, and heat up the oil we have left, which would be about 3 tablespoons. Then add the 1 onion you’ve chopped, and 4 cloves of garlic you’ve minced. Sauté these together.
  • Adding pineapple and ham – Place some pineapple tidbits on the other side of the pan, and just sauté this. Then push your ingredients aside again to make space for your 300 grams of CDO Holiday Ham. We will keep sautéing for 2 minutes more. 
  • Integrating more of our ingredients – Let’s now add 2 bell peppers we’ve diced, ½ cup of roasted cashew nuts and ¼ cup of green peas. Stir everything together.

3. Adding the rice, and seasoning the dish

  • Cooking the dish with leftover rice – It’s time to incorporate one of the main ingredients! Toss in your 4 cups of leftover rice. Then stir fry the mixture for 1 minute. 
  • Adding seasonings – Pour some soy sauce, and place your ¼ cup of chopped green onions inside as well. Then just sprinkle in as much salt and ground black pepper as you like.
  • Plating the dish – We can now get our sliced egg from earlier, and just mix that into the dish. Place your beautiful fried rice on a serving plate of choice, which could be the handy pineapple shell. And you’re done!

Pineapple Fried Rice

Ingredients

  • 300 grams CDO Holiday Ham
  • 4 cups leftover rice
  • Pineapple Tidbits
  • 1/4 cup green peas
  • 1/2 cup roasted cashew nuts
  • 2 bell pepper diced
  • 1/4 cup green onion chopped
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 egg
  • 5 tablespoons cooking oil
  • Salt and ground black pepper to taste

Instructions

  • Beat the egg. Heat 2 tablespoons of cooking oil in a pan. Pour the beaten egg and fry until firm. Turn it over and do the same to the other side. Remove the egg and slice into smaller pieces.

  • Heat oil in a pan. Saute garlic and onion.

  • Add pineapple tidbits. Saute for 1 minute.

  • Add CDO Holiday Ham. Continue sauteing for 2 minutes.

  • Add bell pepper, cashew, and green peas. Stir.

  • Add leftover rice. Toss and then stir fry for 1 minute.

  • Pour soy sauce and add green onions.

  • Season with salt and ground black pepper and then add sliced egg. Transfer the pineapple fried rice to a serving plate. Serve. Share and enjoy.
