The mineral zinc is also present in spinach. Vitamins K and E are antioxidants that protect cell membranes from damage by free radicals generated during oxidation reactions occurring in the body as it breaks down food components for energy or burns fat for fuel. Awash with chlorophyll which makes red blood cells more efficient at carrying oxygen to tissues throughout the body.

Although raw spinach has so many health benefits, there are bacterial strains which are associated with the consumption of raw spinach. These bacteria, called Anaerobic lactobacilli produce histamine gas, resulting in symptoms such as sudden dizziness, headaches, abdominal pain and diarrhea.

There is an increased risk for developing these symptoms if the spinach has not been washed thoroughly before consumption. This can be avoided by washing hands after handling raw vegetables then immediately rinsing off any dirty parts of produce (cut off outermost leaves) before it enters your mouth or other parts that might touch germs picked up from the ground during harvesting/handling.

Some people might experience various side effects of eating raw spinach, but, the more likely culprit for some people is actually oxalic acid. Oxalic acid can be found in spinach as well as other leafy green vegetables. The body uses it to prevent the absorption of too much calcium; however, excess oxalates will contribute to kidney stones and interfere with vitamin K absorption.
