Ingredients Needed for Hot Water Gingerbread:

Boiling water

Shortening

White sugar

Molasses (I used sorghum. Can use any molasses)

Eggs

All-purpose flour

Baking powder

Baking soda

Ground cinnamon

Ginger

Ground cloves

Salt

Lemon Glaze Topping

Lemon juice

Lemon zest

Powdered sugar

Recipe Notes: this gingerbread makes around 9 servings. The lemon glaze is delicious, but so is a dusting of powdered sugar.

Hot Water Gingerbread

  • 1/2 cup boiling water
  • 1/2 cup shortening
  • 1/2 cup white sugar
  • 3/4 cup molasses I used sorghum. Can use any molasses
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Lemon Glaze Topping

  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 or more cups powdered sugar
  • Pour hot water over shortening. Add sugar and molasses and mix well with mixer. Add eggs and continue mixing.  Mix together flour, baking powder, baking soda, cinnamon, ginger, cloves and salt with a wire whisk and add to molasses mixture. Mix just till all ingredients are wet. Pour into a sprayed 9 x 9 inch pan and bake in preheated 350 degree oven for 35 to 40 minutes until center is done.  Makes about 9 servings.  Can add a lemon glaze or whipped cream.
