Grilled Hamburger Temperature Chart

This printable provides guidance on the various levels of doneness for cooked hamburgers, from rare to well-done, based on internal temperatures.

By using a meat thermometer, in addition to the reference chart, you can accurately gauge the doneness of your hamburger, ensuring both safety and desired taste and texture. My favorite digital thermometer, after extensively testing them all, is the ThermaPro.

Internal Temperatures

Here are the hamburger internal temps to go by when grilling up beef patties. Please note these temps are in Fahrenheit.

Safety Tip – The USDA recommends a minimum internal temperature of 160°F to avoid foodborne illnesses.

Rare 120°F-125°F (Not Recommended)
Medium Rare 130°F-135°F (Not Recommended)
Medium 140°F-145°F
Medium Well 150°F-155°F
Well Done 160°F-165°F

 Not sure what doneness to cook to? Here’s a visual guide to help you select your ideal temperature:

  • Rare:  bright pink throughout and cool center
  • Medium Rare Hamburger: bright pint throughout with slight grey edges, and cool center
  • Medium Hamburger: slightly pink and warm throughout
  • Medium Well Hamburger little pink coloring, firm texture, drier consistency
  • Well Done Hamburger: No pink coloring, very firm texture and rather dry

Medium and medium well are the most popular internal temperatures. Both provide the perfect balance between texture, firmness and juiciness. Medium is how hamburgers are usually served in restaurants, unless you ask for it to be cooked at another temp. 

My preferred doneness is medium-well, which is much higher than what I enjoy my steaks to be. I like a little bite to my burger. If you’re unsure of what temp you prefer, go with medium-well.

Cooking Times

Cooking times will vary depending on the cut, thickness, and cooking method. Be sure to use a meat thermometer to ensure accurate temperature readings.

Darcey’s Tips

Here are some helpful tips to ensure your burgers are cooked to perfection every time:

  • To ensure even cooking, make sure the beef patties are the same thickness.
  • Rest for 3 minutes before enjoying! This allows the juices to redistribute. There is no need to let it rest as long as steak or a beef roast.
  • The digital thermometer should be inserted into the thickest part of the patty.
