This Burrata Chopped Salad is a mash up of a cucumber and tomato salad mixed with lots of fresh herbs and a big pile of burrata on top. It’s perfect the perfect bright and easy summer side salad to serve with everything from chicken to steak.

I live for a chopped salad in the summer, whether it’s an Easy Chickpea Chopped Salad or a Chopped Greek Salad; salads just always taste better when they’re finely chopped. Today we’re adding a new chop salad to the rotation that I promise will be your new go-to.

The next thing you should know about me is that if I could eat nothing but tomatoes, burrata cheese, some stone fruit, and maybe some pizza for the next four months of summer, I WOULD BE THRILLED. Variations and Substitutions

Cherry Tomatoes – feel free to swap cherry tomatoes for grape tomatoes or cubed heirloom tomatoes.

Orange Bell Pepper – red or yellow bell peppers are great substitutes. Just no green bell peppers please 🙂

Scallions – you could also use chives instead.

How to Make a Burrata Chopped Salad

This Burrata Chopped Salad is so simple and easy to make. Combine all of the chopped vegetables in a bowl. Then whisk together all the ingredients for the dressing. Drizzle it on top of the chopped vegetables and toss. Add some burrata on top and garnish with flaky sea salt cracked pepper and an extra drizzle of olive oil.
