Quick Blueberry Cobbler is one of my favorite desserts. I always make this blueberry cobbler when I want a great dessert to serve family and friends and have blueberries on hand.  This recipe turns out delicious and is wonderful with whipped cream or ice cream on top.  Take this anywhere and you won’t bring any home.  It keeps well for several days in the refrigerator.  You can eat it cold or heat in the oven or microwave.  You could also double this recipe to feed more people and use different fruits like blackberries or raspberries.  You might also like our pineapple blueberry muffins made from canned cinnamon rolls.

Quick Blueberry cobbler Ingredients Needed:

Fresh or frozen blueberries

All-purpose flour

Baking powder

White granulated sugar

Evaporated milk (could use regular milk)

Butter, melted

Vanilla extract

Topping Ingredients Needed:

White granulated sugar

Cornstarch

Salt

Water

This cobbler is so easy to make and the perfect dessert for a small gathering since it’s made in an 9X9. The topping is so good and it gets a little crispy which is the perfect contrast to the blueberries. This dessert is wonderful served warm and topped with ice cream. A delicious treat any time of the year!

  • 2 1/2 to 3 cups of fresh or frozen blueberries
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup white granulated sugar
  • 1 cup evaporated milk could use regular milk
  • 3 tablespoons butter melted
  • 1 teaspoon vanilla extract

Topping Ingredients:

  • 1/2 cup white granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup boiling water
  • Spread blueberries in the bottom of a 9 x 9 baking dish. In a bowl whisk together all-purpose flour and baking powder, add sugar to flour along with milk, melted butter and vanilla extract. Stir all ingredients with a spoon and spread over blueberries in baking dish.

  • Combine the 1/2 cup sugar, the cornstarch and the salt and sprinkle over the flour mixture. Do not stir, just sprinkle on. Boil the 1/2 cup water and pour over all the ingredients. Do not stir.

  • Bake in preheated 350 degree oven for 40 to 45 minutes. Brown top under broiler the last couple of minutes.
