Summer salad: Butter lettuce, chopped celery, toasted chopped pecans, sliced peaches, chopped scallions, chopped avocado and a simple olive oil, lemon, S+P vinaigrette.
Grilled peaches: Cut a peach in half, paint with olive oil and salt, grill on a veggie grill pan and serve next to grilled chicken or fish.
Peach salsa: Mexican version…black beans, red pepper, scallions, jalapeno pepper, chopped peaches, cilantro, lime juice and olive oil. S+P to taste. Very forgiving recipe on measurements and oh so tasty.
