Like my very popular Red Pepper Jelly, Captain Rodney’s sauce combines heat from Jamaican scotch bonnet peppers and bell peppers with a rich sweetness, making it versatile for savory and sweet dishes. If you like Cowboy Candy you’ll love this dip.

Captain Rodney’s Glaze, their original famous glaze, can be used for meats and vegetables or as a drizzle over appetizers like dip recipes.

There are countless ways to use Captain Rodney’s Glaze. Whether it’s over cream cheese, as a dip for coconut shrimp, fried green tomatoes, or even as a glaze for smoked chicken wings, this versatile glaze can elevate any dish. Anywhere you serve red pepper jelly, you can use this glaze.

You can purchase a bottle of Captain Rodney on Amazon or directly from the company. If all else fails, you can use Red Pepper Jelly instead.

Ingredients 

There aren’t too many ingredients needed to make this recipe for Captain Rodney’s Dip:

  • Captain Rodney’s Boucan Glaze
  • Cream Cheese – full-fat cream cheese melts best. You can even sub in Smoked Cream Cheese.
  • Cheddar Cheese – grab a block of cheddar cheese and shred it yourself for the best texture.
  • Bacon – I prefer to make bacon to crumble, but bacon bits also work.
  • Mayonnaise – make sure to use a high-quality mayo you enjoy the flavor of. Most folks like Duke’s, since this hails from the South, but dare I say I can’t stand it? I use Hellmans.
  • Green Onions or Chives
  • Butter Crackers – Ritz crackers, Club crackers, Townhouse crackers,

How to make Captain Rodney’s Cheese Bake

With less than 10 minutes of prep time and just 15 minutes in the oven, you’ll be ready to enjoy this delicious dip in no time. It’s a breeze to make!

Mix The Cheese Dip: Stir together the cream cheese, cheddar cheese, mayo, half the bacon, green onions, and half the glaze. 

Build the Dip: Spread the mixture into a greased 9-inch pie dish or a similar oven-safe dish. A greased quiche pan will also work well. Top with the crushed cracker crumbs.

Bake The Dip: Bake for 20 minutes at 350°F until golden brown. 

Garnish and Serve: Drizzle with the remaining spicy sauce, and sprinkle with the remaining bacon and green onions.

Serving Ideas

I prefer to serve Captain Rodney’s cheese bake with the rest of the butter crackers since I already have them on hand, but here are a few other great ways to serve it:

  • Frito Scoops 
  • Pretzels

  • Vegetable Sticks

Tips & Tricks

  • Cream Cheese: Remove the cream cheese from the refrigerator an hour before using it to make it easier to blend. 
  • Storage: Leftover Captain Rodney’s Dip can be stored in an airtight container in the refrigerator for up to 3-4 days.

Ingredients

  • 8 oz cream cheese, softened
  • 8 oz cheddar cheese, shredded
  • ¾ cup Captain Rodney’s Boucan Glaze, divided (*Note 1)
  • ½ cup mayonnaise
  • 8 slices cooked and crumbled bacon, divided
  • 3 green onions, sliced, divided
  • ½ cup butter cracker crumbles (about 8-10 crackers)

Instructions

  • Preheat oven to 350°F.

  • In a large mixing bowl, stir together the softened cream cheese, cheddar cheese, ½ cup of glaze, mayo, half the bacon, and half the green onions. Use a hand or stand mixer, if needed.

  • Spread the mixture into a greased 9-inch pie dish or a similar oven-safe dish. Top with the crushed cracker crumbs.

  • Bake for 20 minutes or until the crackers are golden brown.

  • Remove from the oven and drizzle with the remaining glaze, and top with the remaining bacon and green onions. Serve immediately for best results. 

Notes

Note 1 – You can use red pepper jelly in place of the glaze, if desired.
