If you’ve ever eaten a honeynut squash, you have James Beard Award-winning chef Dan Barber, co-owner of the famed farm-to-table New York restaurants Family Meal at Blue Hill and Blue Hill at Stone Barns, to thank. Barber set his sights on developing a sweeter, smaller version of the butternut squash and ended up doing just that in 2009 in collaboration with plant breeder and Cornell professor Michael R. Mazourek, with whom he later founded the seed company Row 7.
