Whiskey can be smoky, sweet, smooth, peated, or spicy. The type of wood used to make the barrels the whiskey ages in will dramatically affect its flavor.
- For a darker or smoky flavor, some producers burn their barrels (charring) to change the character of the wood.
- For a sweeter whiskey, oak wood can bring in caramel and vanilla notes. The type of grains also can convey a fruity flavor.
- Smoothness depends on how well the malt has been distilled and how long it has been matured.
