    Ingredients for a Shamrock Poke Cake

    For the Cake

    • White Cake Mix: Provides a light, fluffy, neutral base that lets the lime Jello flavor and green color shine. White mix also absorbs the Jello beautifully when poked.
    • Eggs: Bind the ingredients together, add structure, and give richness to the cake.
    • Vegetable Oil: Keeps the cake moist and tender while helping it stay soft after chilling.
    • Water: Used to make the cake mix and to create the Jell-O.
    • Green Food Dye: Don’t use regular! Gel works 100x better.
    • Lime Jell-O: Infuses the cake with tart, citrusy flavor and a vibrant green color while adding a fun, moist texture.

    For the Frosting

    • Heavy Whipping Cream: Whipped to stiff peaks, it gives the frosting a fluffy, light texture.
    • Cream Cheese: Adds tangy richness and stability to the frosting, balancing the sweetness of the Jello and powdered sugar.

    How to Make a Poke Cake

    1. Make the Box Cake: Make the cake batter according to the instructions on the box and pour into a 7×11-inch baking dish. Add a few squeezes of green food coloring and mix it into the batter and then bake.
    2. Prepare the Jello: Let the cake cool for 15 minutes and make the jello in the meantime. Follow the directions for making the jello using the hot and cold water method.
    3. Poke and Pour: Once the cake has cooled for 15 minutes, poke it all over with a fork. Carefully pour the liquid jello all over the cake.
    4. Chill: Place the cake in the refrigerator for the jello to setup for 3-4 hours.
    5. Frost: Before serving the cake, make the whipped cream frosting and spread it over the top of the cake.

    Are Cake Mixes Smaller Now?

    The secret to using a cake mix is often in adding a few extra ingredients, but when you just want quick and easy there’s still one tip that will transform your cake… Make it in an 7×11″ pan instead of a 9×13″. This is helpful because while a cake mix used to be 18 ounces they are often 13-15 ounces now. To not end up with a flat cake merely use a slightly smaller baking dish.

    For the Cake

    • Prepare cake as directed on the box, adding a few squeezes of the food coloring gel and bake in an 7×11-inch baking dish.

      1 Box White Cake Mix, Green Food Dye

    • Let cool for 15 minutes on the counter. Using a fork, poke holes about ½-1″ apart on the cake.

    • Use the hot and cold water according to Jell-O directions to make the jello in a large glass measuring cup.

      3 oz Lime Jell-O, 1 Cup Boiling Water, 1 Cup Cold Water

    • Carefully, and slowly pour the liquid Jell-O over the cake until it is all absorbed.

    • Chill in the refrigerator for 3-4 hours.

    • Top with whipped cream cream cheese frosting.

    For the Frosting (see note)

    • Beat the whipping cream in a mixing bowl until stiff peaks form.

      1 ½ Cups Heavy Whipping Cream

    • Combine cream cheese, sugar, salt, and vanilla in a separate large bowl. Beat until smooth, then fold in whipped cream.

      8 oz Cream Cheese, 1 Cup Powdered Sugar, 1 Pinch Salt, 1 teaspoon Vanilla Extract

  • After 5 years, Denver’s breaking up with Lime and Bird

    Lime and Bird’s fleets of dockless bikes and scooters will leave Denver next year as the city brings in a new micromobility operator.

    Denver’s Department of Transportation and Infrastructure announced an exclusive contract last week with Veo, a micromobility company that launched in 2017 on Purdue University’s campus. 

    Veo will deploy its scooters and bikes in Denver this spring. Veo currently operates in Washington, New York City and Los Angeles.

    Meanwhile, the city’s license agreements with Bird and Lime are set to expire in May. 

    In a press release, DOTI said it’s negotiating a three-year license agreement with Veo, and that people enrolled in programs with Lime and Bird will transfer to Veo in 2026. The negotiations are “likely to last several months,” according to DOTI.

    It’s a significant change.

    Lime and Bird have offered thousands of scooters and bikes in Denver for years. Lime and Bird first deployed scooter fleets without authorization in 2018, causing an uproar and prompting the city to confiscate hundreds of two-wheelers.

    Later, several mobility companies, including Lime and Bird, worked out agreements with the city. Lime and Bird’s agreements were for five years.

    “Denver’s micromobility program is one of the most successful and popular in the nation,” said Amy Ford, executive director of DOTI, in a press release. “Our goal is to build on that success with an emphasis on safety for riders and pedestrians, keeping sidewalks clear and organized, and expanding access to micromobility to serve more residents and support the sustainability of our city with convenient, attractive, and affordable transportation options.”

    The previous Lime and Bird contracts were non-financial, meaning the city didn’t pay the companies, nor did the companies pay the city. But the agreements required free or subsidized rides for low-income residents and set other rules.  

    DOTI listed various reasons for choosing Veo, including its “diverse fleet of attractive scooters and bikes with leading safety and accessibility features, its commitment to affordability and its flexible equity program.”

    City officials said having a single company would be simpler for riders and the local government.

    Lime and Bird have contracts with the city and with RTD to offer various services around Denver, and both companies have different equity programs that allow for low-income or undocumented people to ride the vehicles for free or at a discounted rate. In 2026, the city says it will share information about how people currently enrolled in those programs can transfer over to Veo. 

    Once the negotiations are done, the Denver City Council will vote on the Veo contract. 

    Zach Williams, regional head of government relations forLime, said in a statement that the announcement came as a surprise. 

    “We are Denver’s longest-serving shared micromobility provider, strongly preferred by Denverites and Lime Access riders across the city. Equity in particular has always been at the center of Denver’s shared micromobility program, and we’re proud of the last five years we spent in partnership with the city to build one of the largest access programs in the world. As such we were surprised and disappointed by DOTI’s announcement last week,” he wrote.

    Micro-mobility scooters and bikes have been controversial since the beginning.

    The micromobility vehicles were deployed en masse to major cities over the last decade, drawing criticism that they were dangerous and unregulated.

    Denver has been cracking down on the services lately. In May, Denver City Council unanimously approved a new law to keep riders off city sidewalks and to ensure the scooters aren’t left in random or obstructing places.

    Under the new law, the city can fine the companies themselves for riders’ behavior. When city officials find a misplaced scooter, they can simply put the fine on the companies’ tab. The law also will require that riders pass a knowledge test before renting a scooter or e-bike.

    Meanwhile, the companies will have to make some changes to their vehicles and infrastructure, including sensors that can detect when a vehicle is operating on the sidewalk. When a scooter is on the sidewalk, the companies will have to take action — for example, by increasing the rider’s bill, slowing the scooter or sounding an alarm.

    The new law takes effect summer 2026, and Veo says it will follow the requirements, according to DOTI. 

    Bird and Lime operate more than 4,200 electric bikes and scooters in Denver.

    In response to community concerns and police observations, the motor assist feature on Lime and Veo e-bikes in D.C. is slowing down.

    The city’s thousands of undocked e-bikes will have a limit on how fast they can go. Now, the boost feature on Lime e-bikes won’t be able to go faster than 18 miles per hour, the company said in a statement. The assistance on Veo e-bikes will be capped at 15 miles per hour.

    The previous limit for both companies’ e-bikes was 20 miles per hour, a D.C. Department of Transportation spokesperson said.

    City leaders have been considering asking the companies to make a change since the spring, the DDOT spokesperson said. They recently asked, and the companies agreed.

    The switch comes in response to growing complaints about e-bike riders zipping by pedestrians on city sidewalks, which is not illegal in D.C. In some cases, e-bikes are being used by suspects in crimes to quickly get away.

    “I read a lot of police reports, so I know there’s some use, or I should say misuse, of the bikes,” Mayor Muriel Bowser said Wednesday at an unrelated event. “We want to make sure that all the bicycles can be available for the purpose that they are intended, and curb any misuse.”

    Meanwhile, a D.C. police spokesperson said Lime e-bikes and scooters are being used by juveniles who are suspects in robberies and assaults. However, the agency doesn’t have data on how common that circumstance is.

    “Anecdotally, we have some concerns about some of the shared transportation equipment being used to commit crimes,” Bowser said.

    While Capital Bikeshare, or CaBi, e-bikes have a pedal assist feature, the DDOT spokesperson said data shows the maximum boost is 17 miles per hour.

    In busy corridors, D.C. has put in place an 8 mile per hour boost limit. That’s in effect on U Street, in Chinatown and Navy Yard and at the Wharf, DDOT said.

    “We’re all trying to, in tandem with MPD, promote good behavior on our shared fleet devices,” said Sharon Kershbaum, DDOT’s director.

    Jacob Tugendrajch, a Lime spokesperson, said in a statement the company has “worked with the city to find what we hope will be an appropriate balance on speed limits and slow zones as have all micromobility operators in D.C. this year.”

    Veo implemented the 15 mile per hour speed limit in late October and is “working closely with the District to meet local transportation priorities and ensure our service remains a dependable option for residents traveling to work, connecting to transit, and visiting local businesses,” a spokesperson said in a statement.

    However, the Veo spokesperson said on Thursday the company found it “appropriate” to return the e-bikes’ speed to 18 mph “to maintain safe operations while meeting the needs of riders.”

    Chicken Tortilla Soup

    This chicken tortilla soup recipe is easy to make with just one pot!

    Tender chicken breasts are simmered in seasoned broth with beans and veggies and then topped with fried tortilla strips and avocado slices for an easy anytime meal.

    What You’ll Need To Make Chicken Tortilla Soup

    • Chicken: I use boneless skinless chicken breasts for this soup—they do not need to be pre-cooked or browned. You can replace it with chicken thighs or leftover rotisserie chicken (see recipe notes). Frozen chicken can also be used; just allow more time for cooking.
    • Seasoning: Use a packet or make homemade taco seasoning.
    • Vegetables: Onions, Rotel tomatoes, and corn add flavor to this chicken tortilla soup.
    • Broth: I prefer chicken broth in this recipe, but you can use beef or vegetable broth. Low-sodium chicken broth works well too.
    • Tortilla Strips: Homemade tortillas taste best in this recipe and are super easy to make, or you can buy them. Short on time? Crush up some tortilla chips or Fritos.
    • Stretch the chicken further by adding extra vegetables, like green bell pepper or zucchini, and broth.
    • Add 2 cups extra broth to the soup and add cooked white rice to the bottom of each bowl to stretch the soup further.

    How to Make Chicken Tortilla Soup

    1. Make tortilla strips (recipe below).
    2. Soften onion, garlic, and jalapeno. Add the remaining soup ingredients (including raw chicken breasts) and simmer.
    3. Remove chicken, shred, and return to the soup.
    4. Serve with desired toppings—see my favorites below.

    Chicken Tortilla Soup

    This chicken tortilla is hearty and comforting with just the perfect spicy kick.

    • For the tortilla strips, cut the tortillas into ¼-inch strips. In a small pan, heat ¼ cup of vegetable oil over medium-high heat.

    • Add the tortillas, in small batches to the oil and fry them until they are crisp, about 1 minute per side. Remove from the oil and drain on a paper towel. While warm, sprinkle with salt to taste.

    • In a large pot, heat olive oil over medium heat. Add the onion, garlic, and jalapeño to the pot, and cook until the onion is softened about 3 to 4 minutes.

    • Add in the chicken broth, black beans, crushed tomatoes, diced tomatoes with juices, corn, lime juice, cilantro, ground cumin, and chili powder. Stir to combine.

    • Add the chicken breasts and bring the soup to a boil over high heat. Reduce the heat to a simmer and cook uncovered for 20 minutes, or until the chicken is cooked through.

    • Remove the chicken from the pot and shred it with two forks. Add the shredded chicken back to the pot and simmer for an additional 3 minutes. Taste and season with salt and pepper.

    • Spoon soup into bowls and top with tortilla strips, lime wedges, and sliced avocado.

    Chicken: This recipe uses chicken breasts that are 6oz each. If your chicken is larger or smaller, adjust the cooking time as needed. The chicken is added to the soup raw and simmers in the soup.
    Toritlla Strips: Tortilla strips can be replaced with tortilla chips or they can be cooked in the air fryer or oven. Toss the strips with 1 ½ tablespoons of oil and salt. Cook in the air fryer at 350°F for 2-4 minutes or until crisp or bake at 350°F for 11-14 minutes. Check the strips early to ensure they don’t burn.
    Spice: Reduce the spice by replacing jalapeno with green chiles.
    Serving suggestion: Create a fun meal by serving it with a variety of toppings.
    Leftovers & Freezing: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave. To freeze, cool completely, transfer it to a freezer-safe container or resealable plastic bag for up to 4 months.

    What Does Cedarwood Soap Smell Like?

    When I think of cedarwood essential oil, my mind goes to a newly built deck, a fresh layer of mulch, an antique cedarwood chest, and perhaps most of all, pencils! Cedar trees have one of the strongest scents in nature and once it’s cut, you can smell it from many feet away.

    Over the years, cedarwood has turned into a more masculine scent as it is used in many aftershaves, deodorants, and other products tailored to men. While some may consider this a manly soap, I adore the scent and will use it any day of the week on myself.

    The best way I can describe the scent of cedarwood would be the feeling of a deep walk through the wood. Sweet and woody, it has balsamic undertones and smells a little spicier than other wood oils. Keep in mind, there are many different types of cedarwood trees and each oil will smell a little different.

    I can’t get enough of cedarwood. In fact, I have another cedarwood-inspired winter forest soap perfect for the holiday season.

    What is Cedarwood Soap Good For?

    We can put a big checkmark next to the scent of cedarwood soap, but what exactly is it good for? The cedarwood essential oil plays double duty in this recipe, providing both a refreshing scent as well as plenty of skin benefits.

    The scent itself is extremely strong and works well for deodorizing. You can use the soap to refresh after the gym or a long day working outside in the garden. Your skin will carry a lighter version of the scent and leave you smelling like a walk in the woods.

    The antibacterial properties of cedarwood essential oil also help to improve acne and other skin irritations by reducing pain, swelling, and inflammation.

    Some people also use the scent for meditation. It is said to have metaphysical properties that can help increase a spiritual connection. The oil is known for being a sedative, working to decrease anxiety and encourage a night of better sleep.

    A relatively affordable essential oil, lime is known most for its astringent and antiseptic properties. Many use it to purify and cleanse, as it’s known for treating skin irritations such as acne and soothe inflamed surfaces.

    While you can use this soap any time of the year, I especially like it for use in the winter.

    This recipe is a very moisturizing lime soap that will help to keep your hands from drying out. After all, winter has a nasty habit of sucking out every ounce of moisture from our skin. This can result in cracking skin, which can fill with unwanted bacteria and create more skin problems.

    But in comes the cleansing lime to save the day! Your winter skin will be more than happy to soak in the lather of this lime and cedarwood soap.

    Lime and Cedarwood Soap Recipe

    Delight the senses with this lime and cedar soap, perfect for mimicking the freshness of the cool season. This is one of the many soap recipes I have on Garden Therapy! For more detailed instructions, be sure to check out my basic cold process soap recipe.

    This cedar soap is coloured with spirulina powder. Spirulina powder is dried algae that has a deep blue-green colour. However, the colour fades over time.

    Add it generously (I use 1 tsp), knowing that the colour will become less prominent the older the soap gets. I also topped it with calendula petals and dried parsley, both of which hold their colour really well in soap!

    Ingredients

    This recipe makes 2 lbs of soap. See the recipe card for exact measurements.

    Materials

    Add a swirl with the spirulina powder for extra pretty soap.

    Make It!

    Before you get started, measure out all your ingredients beforehand with a kitchen scale.

    Melt all your oils and cocoa butter together over low heat. You want a temperature of 115° F.

    While your oils are heating, make your lye water in the heatproof glass. Stir continuously in a well-ventilated area until completely dissolved. Move the glass to an ice bath until it also cools to a temperature of 115° F.

    Ensure your oil and lye water are at the same temperature, and then slowly add the water to the oils in a large bowl. Use the immersion blender and blend until it reaches a light trace. Add in your essential oils and blend in well.

    Take a walk through the woods with this sweetly masculine lime and cedarwood soap recipe. This recipe makes 2 lbs of soap.

    • Measure out your ingredients on the scale.

    • Melt oils and cocoa butter to 115°F over low heat.

    • Make your lye water by combining lye and water in a heatproof glass. Stir until dissolved and then cool in an ice bath to 115°F.

    • Slowly add lye water to oils in a large bowl. Blend until it reaches a light trace.

    • Add in essential oils and blend again.
