Barflies who hung around the Boardwalk on Waterloo will recall a well-worn dive bar with a pool table, jukebox and handsome wooden bar that ran the length of the boxy room. The Boardwalk closed its doors early last year. A few months later, Martin Millonzi and Max Kogan scooped it up.
While the bar remains, as does the same general layout, the interior is decidedly different. The new owners spent nearly a year transforming the former neighborhood saloon into an elegant 45-seat restaurant called Roux, which opened in May.
“It’s super chill but there’s an upscale element to it,” says Millonzi. “It’s refined, it’s upscale but it’s not fine dining.”
Millonzi, who has worked in hospitality for more than a decade, serves as the chef. He describes the menu as “modern coastal American,” with plenty of seafood, but also approachable fare such as wings, burgers, pierogies and a grilled steak.
“We want to make sure that everyone who is coming to the street – and everybody who is a part of the street already – is being included,” he says.
To start, there are raw oysters, a Mexican-style shrimp cocktail, fried calamari and five different varieties of baked oysters. Pierogi, too, come in a handful of different iterations, ranging from potato and cabbage to a surf and turf with scallops and chicken liver pate. Larger plates include chopped steak with whipped potatoes, two burgers, steak frites and a daily fish.
Roux on Waterloo is open for dinner Wednesday through Sunday, but will be converting Sunday dinner service to Sunday brunch in the coming days.
