was closing at the end of March and that chef Aaron Adams was planning a new concept for the space that he promised would make devotees “cry tears of joy” once it was revealed. Well, that time has arrived—Adams has announced an upcoming plant-based, non-traditional Italian restaurant called Il Paffuto, which will employ seasonal and local ingredients and fermentation techniques to produce dishes like koji focaccia, sprouted grain pappardelle, and cultured cashew cheese ravioli. The restaurant’s grand opening will take place on April 16.
