This prime rib sliders recipe, made with caramelized onions, creamy provolone, a garlic butter topping, and a side of au jus for dipping, is the perfect way to use up leftover prime rib.
These sliders transform leftover prime rib into something extraordinary by layering tender slices of beef roast on soft slider buns brushed with a rich garlic butter topping and baked until golden brown.
Serve them with warm prime rib au jus for dipping, and you’ve got a quick, flavorful, and satisfying way to give yesterday’s prime rib new life.

Leftover Prime Rib
The star of this slider recipe is slices of leftover prime rib. You can use any delicious prime rib recipe to prepare this leftover prime rib idea, but all my testing used my viral 5-star prime rib, sous vide prime rib, or smoked prime rib.
The prime rib seasoning used in these recipes complements the flavor of these mini sandwiches beautifully.
Since prime rib is so expensive, I prefer using slices of roast beef rather than chopped beef. Using slices of prime rib steaks keeps the integrity and texture of the original recipe.

Ingredients and Variations

- Prime Rib- Use leftover prime rib, steak, roast beef, or sliced deli meat to make prime rib French dip sliders. They all work exceptionally well.
- Caramelized Onions- You can use any onion here. If you don’t have fresh thyme, you can use dried thyme or rosemary as a substitute to flavor.
- Cheese Slices- While I stick to provolone cheese slices, you can use your favorite meltable cheese instead.
- Slider Bread- King’s brand Hawaiian Rolls are, by far, my favorite, but basic dinner rolls and mini hamburger buns also work well.
- Dipping Sauce- Prime Rib Au Jus is the classic dipping sauce, but Prime Rib Gravy, homemade au jus gravy mix, or store-bought au jus mix will also work.
Horseradish Lovers! Slather horseradish cream sauce in the inside of the slider buns before cooking for the classic pairing of prime rib and horseradish.

Prime Rib Sliders With Caramelized Onions

Instructions
CARAMELIZE THE ONIONS

In a large skillet over medium-low heat, melt 2 tbsp of butter. Add the onions and toss to coat. Cook, stirring occasionally, for about 15 minutes until the onions are soft and browned. Make sure they don't burn.

Stir in the fresh thyme, and kosher salt. Remove from the heat and set aside.
MAKE THE GARLIC BUTTER SAUCE

In a small saucepan over medium heat, melt the remaining butter. Whisk in 1 tbsp of dry au jus mix, Worcestershire sauce, and minced garlic. Cook for 1-2 minutes until well combined.
ASSEMBLE AND BAKE THE PRIME RIB SLIDERS

Cut the slider rolls in half horizontally, keeping the individual rolls attached.

Place the bottom half of the slider bread on a greased sheet pan or baking dish. Top with 6 slices of cheese, sliced prime rib, caramelized onions, and the remaining slices of cheese. Place the top of the rolls on the sliders.

Evenly brush the tops of the sliders with the garlic butter sauce.

Cover with aluminum foil and bake for 15 minutes. Remove the foil and bake for another 10 minutes, until the cheese is melted and the prime rib is reheated throughout.

Let the sliders rest for 5 minutes before slicing and serving. Serve with dipping cups of au jus sauce.
MAKE THE AU JUS

While the sliders are baking, add the remaining packet of au jus mix to a small saucepan over medium heat. Add the cold water amount listed on the au jus package and whisk. Bring to a slow boil, then simmer until ready to serve.
